Spring is FINALLY in the air. I don’t know about you, but there aren’t many things better than packing up a beach bag and heading to tan in a beach chair for the day. Spring break is on the horizon and that means the most fun events of the year are underway. Country band, Florida Georgia Line will kick off the long list of superstars performing at The Amphitheater at the Wharf this year, and local live music can be found every night at most venues on the Island. The Boat and Yacht Show brings thousands of boat lovers to our area each year, and guarantees to be a show that will entertain all captains of the sea. There are many exciting new restaurants opening at the beach such as The Diner and there are many plans for new venues in the near future. With the snow birds flying home and the spring breakers carpooling in. March brings the beginning of the “business boom” we here at the beach experience every spring. And it just might be my favorite time of the year.

Fun, art and music in Orange Beach
W
hile any day is a good day to go to the beach, the Coastal Arts Center of Orange Beach is offering a great excuse to visit Pleasure Island in March — the 41st Orange Beach Festival of Art is set for March 14 and 15. The festival will feature more than 100 booths of local and regional fine arts, plus stunning displays on the Performing Arts and Music and Songwriters stages. In addition to our Culinary Arts section, this year’s festival will feature a Specialty Foods Area that will include Southern Grind Coffee House, The Meat Mart of Orange Beach, Two Sisters Olive and Grape and Viper Sauce. The festival is a fine arts, juried event every second weekend in March on the joint grounds of the Coastal Arts Center of Orange Beach and Waterfront Park on Canal Road. Festival hours are Saturday from 10 a.m. to 5 p.m. and Sunday 10 a.m. to 4 p.m. Festival goers may also enjoy live, visual arts demonstrations including hot glass and clay, delight in tasty offerings from the Culinary Arts area and dive into hands-on experiences in Kids Art Alley. The festival is completely free with public parking located at The Wharf. Shuttle service for $2 to and from the festival will be available. No public parking will be allowed on-site except for those utilizing the Bicycle Village on the Arts Center grounds. With more than 100 artists working in a dazzling variety of mediums, festival-goers always have plenty to see, hear, touch, taste and smell as art vendors, musical performers and artist demonstrations deliver a multitude of sensory experiences. Desiree Blackwell, the arts center director, explained the quality of artwork to be found at the Festival. “Our visual artists were specially selected for this show and present only the highest quality art in their respective mediums,” she said. “Works in acrylic, oil, watercolor, glass, pottery, wood, jewelry, metal and more will be displayed and sold during the event.” The music line-up will include Roman Street, Three Bean Soup, Brent Burns, Coconut Radio, Lisa Christian, Cornbred and Lisa Zanghi. Performing artists in multiple genres will be featured on the Performing Arts Stage. Acts include the Coastal Arts Center of Orange Beach’s ASAP Theatre Troupe with preview numbers from their April show, “Dear Edwina;” artistic expressions set to music by the Coastal Ballet Academy; martial arts demonstrations; a ukulele group and more. Culinary selections featured at the festival offer gourmet flair, while still providing plenty of child-friendly options. Feast your eyes on beautifully presented culinary pieces while savoring the rich flavors of the Gulf Coast. Kid’s Art Alley offers young festival goers plenty of
hands-on fun. Children can dig fingers into pottery and bright paint, enjoy games, watch live demonstrations and take home their own works of art. Dauphin Island Sea Lab will bring their BayMobile lab for an up close look at marine life. Blackwell said that guests may also take this opportunity to learn about the new gallery building coming to the Arts Center’s cultural campus. “Guests will be able to ‘catch the vision’ of our new art gallery featured in our beautiful, new artist renderings; we believe construction will begin in June of this year and look forward to this exciting time of growth for the Arts Center,” she said. “As always, our grounds at the Coastal Arts Center provide a stunning scenic venue for this incredible event. Art Market to feature Poarch Band of Creek Indians
M
arch 7 will mark the beginning of a series of Art Markets in the beautiful Waterway Village district of Gulf Shores, located on E. 24th Ave. The Waterway Village Art Market is presented by the Gulf Coast Arts Alliance, in partnership with the City of Gulf Shores. The event will be from 10 a.m.-4 p.m. To celebrate the new location, the GCAA will host the Poarch Band of Creek Indians who will be performing original tribal dance in costume. They will perform at 11 a.m. and 3 p.m. The Poarch Band of Creek Indians is descended from a segment of the original Creek Nation, which once covered almost all of Alabama and Georgia. Unlike many southeastern Indian tribes, the Poarch Creeks were not removed from their tribal lands, and have lived together for more than 150 years. In the late 1700s, the Creek Confederacy consisted of Alabama land north of current day Stockton, with the heart of the Creek Nation centralized along the intersection of the Coosa and Tallapoosa Rivers near Montgomery. In 1984, the United States Government, Department of Interior, and the Bureau of Indian Affairs acknowledged that the Poarch Band of Creek Indians exists as an “Indian Tribe.” The Tribe is the only federally recognized Tribe in the State of Alabama. As of 2010, there were about 3,000 members of the Poarch Band, of which more than 1,000 live in the vicinity of Poarch, eight miles northwest of Atmore in rural Escambia County, and 57 miles east of Mobile. The Gulf Coast Arts Alliance is honored to present performances by the Poarch Band Indians, as well as musical performances by vocalist and guitarist, Destiny Brown, Chris Stevens and Brad Pethel along with many other musicians. This family-friendly Art Market will feature more than 40 local and regional artists who will display for sale their original works of art. Visitors can expect to enjoy a day filled with art, music and concessions. Graffiti walls have been constructed as a part of hands-on art activities for children. Anthony Jones ... Well Worth A Visit! Voted The Best Salon in Baldwin County in 2014
It was a beau�ful summer morning when we le� Fairhope, low humidity and not a cloud in the sky. We were on our way down to Orange Beach to check out a business that many of our friends have told us about, this Englishman who had opened a Hair Salon on the beach with his daughter Emma. My hair is very important to me and ge�ng a good haircut is a must, and that is what Anthony Jones is known for and excellent hair color to boot. We have both been very dissa�sfied with the last few a�empts on designing our hair to suit our lifestyles; most of the so called stylists did not take into considera�on our age or understand that we both want to look great without a lot of fuss and bother. The traffic was a bit heavy due to the summer visitors, but we arrived on �me to this charming yellow and white beach house on the beach road with a fabulous view of the Gulf of Mexico. We were greeted warmly by Anthony and Emma and they ask us if we would like a cold drink or a glass of wine before he started making us beau�ful. Pam, my friend, went first since I was a li�le chicken a�er the last experiences. Anthony directed her to a styling chair and went on to explain the ten most important rules in designing a custom hairstyle to suit her. He first looked at her face shape and explained that there are five face shapes out there and told her her face shape was oval. The next was bone structure and head shape, a�er that was the type of her hair, the texture of her hair, then what sort of condi�on her hair was in, followed by the way the hair grows out of the head, plus cow licks, then her likes and dislikes and fashion. Wow! What a lot of things to get right. So then Emma started with a relaxing shampoo and deep condi�oning, then for the next 30 minutes Anthony’s hands were a sea of mo�on, lastly a quick blow dry with hardly any fuss and presto she was finished! She was so happy and she could not believe the difference in her hair.
Now it was my turn, my hair especially in the summer gets very frizzy and dry; I have tried everything out there for my hair with no success! Anthony explained that commercial hair products are made different to professional hair products. Commercial shampoos are made of mild detergent and the condi�oners are based on petroleum oil. Where professional hair products are pure and natural and give back to the hair, he also went on to say that we should all wash our hair every day and condi�on our hair the same. Anthony explained that at all �mes our hair has to have at least 8% moisture in it the same as our skin, we should treat our hair the same way as we treat our skin, by moisturizing it every day which made a lot of sense to me, since the last stylist told me not to wash my hair every day because in her mind it would dry it out. Anthony explained to me that yes using some drug store products would dry your hair out if washed daily. A�er we went through the ten rules, he took me to the shampoo area and treated me to the best shampoo and condi�oning my hair had ever had. While shampooing, Emma explained to me what I should do in the morning in the shower, again stressing no over-the-counter hair products, that’s why my hair is dry and frizzy. A�er shampooing and before condi�oning, towel blot the hair because the hair is porous like a sponge, pu�ng any condi�oner on one’s hair when it is full of water will not go into the hair itself, so blot it first then apply the product and leave it in while you are washing yourself. Then before you leave the shower, rinse and count up to 10 slowly and stop, just rinse the excess and no more. A�er she explained to me the hows & whys, I understood. They are like hair doctors, if we listen and do what they says it works! Anthony has his own line of products and everything he used on me was his and believe me the stuff works. The cut he gave me was wonderful; I walked out a new woman and so did Pam, no more frizzes! Oh, by the way he used a great product before he dried my hair called “POTION.” It is a gel with a lot of healing features with body, fabulous! I bought a bo�le. Best money we ever spent and yes, we are definitely going back. He is a true professional.

on fishin’ with Phil Dortch Small craft advisory in effect until noon tomorrow with Northwest winds 20-25 knots (knots x 1.115 = MPH). Seas 4 to 7-feet. Great! Another week too rough to fish. The Sheepshead are stacked up around the rigs and I can’t get out there. Typical scenario here on the Alabama Gulf Coast. Mobile Bay is rolling, but the Gulf side looks calm as a lake. Don’t be fooled. Fortunately, I had one calm day this month. We headed for a bay rig with muddy water and tried the Gulf rigs past the Sand Island lighthouse. The plan was to anchor up current from the rig and drift a slipcork with fiddlers or live shrimp back to the hungry Sheepshead. There was absolutely no current, so we went to plan B. The water was so calm, we felt comfortable tying directly to the rig without danger of damaging the boat. This called for fishing straight down. Finally, we caught 10 nice ones and headed back to the dock. Now that we have some great table fare in the box, how do you clean them? My preferred method is to use an electric knife with a sharp, not rounded point. Option 2 are my Bubba Blade knives. Option 3 is my Rapala AC/DC knife kit. I made my own cutting board in case there was a chance to fillet my catch on my boat at the dock. Remember to dispose of the carcass responsibly, not in a dumpster. Just purchase a small cutting board, other than wood, then get an attachment from a boating store that will fit into the rod holder. Use stainless steel bolts and attach to the cutting board. This works great. Now for the filleting process. Since Sheepshead have a big head, rib cage and tough scales, here is the best method that works for me: STEP 1: With the head to my left, back facing me, I insert the knife close to the tail and as close as possible to the dorsal fin. There is a small gap between the fin and scales. With the knife blade flat, slide it toward to head until it stops. STEP 2: Turn knife blade upward making a short cut across to the top of the ribs. STEP 3: Turn blade facing the tail and follow the curve of the rib cage then force blade thru skin and fillet on out thru the tail. At this point, the fillet can be lifted, only attached by the skin. Note: Don’t remove the fillet yet. By leaving the fillet on the first side, it keeps the fish from sagging, thus yielding a better fillet on the other side. STEP 4: Flip fish and repeat steps 1-3 in reverse method. After step 3 is complete on side 2, simply cut through the skin around the rib cage. Repeat for side 1. STEP 5: Remove skin, cut out center bones and bloodline and it’s ready to cook. Using this method keeps from cutting through tough ribs and into the guts. Vacuum seal fillets for long-lasting quality. It took me years of cooking not so good meals to perfect successful frying. I like to cook in an iron pot. The temperature, which is critical, stays more consistent. Heat the oil of your choice to 350-375 degrees. Place fillets in a gallon Zip-loc bag with Zatarain’s fish fry. Only put 5-6
fillets, depending on the pot size, in at a time in the hot oil. Too many will cool the oil causing the fish to soak up excess oil. Always use a thermometer to monitor temperature. When fillets are done, they will float to the top. Wait till temperature reaches 350-375 before adding next batch. Important: Don’t put cooked fillets on paper. Instead, place on a wire cake rack that is placed on a cookie sheet with paper under the rack. This allows any excess oil to drip while leaving the underside crispy. Cocktail sauce is easily made by combining: 1 cup ketchup, 1/4 cup fresh ground horseradish, 1 teaspoon Worcestershire sauce and 1 teaspoon lemon juice. If your boat has been stored over the winter, always check batteries before getting to the ramp to launch. Here is a suggestion checklist: • Trailer tires • Water separator • Tackle, bait • Rig hook or rope • Anchor • Net • First aid kit and peroxide • Wire cutters in case a hook gets in your hand • PLB (personal locator beacon) • Ditch bag • Ice, food and water Always check weather conditions and wind direction. If the forecast is 1 to 2-feet, it can easily be 2 to 3-feet offshore. Don’t go alone. Accidents are never on purpose and health issues can suddenly arise. Make sure your VHF radio is working properly. You can get a free radio check from Sea Tow. Channel 26 for the Dauphin Island/ Fort Morgan area, or channel 27 for Orange Beach area. Tell a friend or family member your float plan and time to expect you home. Reminder: 10 fish per person is the limit. Sheepshead fishing is usually great from now on into May. Always be on the lookout for the Spring cobia migration.

rian Harsany declared his college major pretty much while he was in high school. Let’s say he discovered his passion. “Whatever you do in life follow what your passion is about,” he said. “Whatever you have passion with you’ll enjoy doing and everything else will fall into place.” Harsany found his passion as a teenager growing up in Tallahassee with one of the first jobs he ever had. “When I turned 16 I worked as a busboy and a dishwasher in an Italian restaurant in Tallahassee,” he said. “I did that for eight years and I majored in hospitality administration in business school at Florida State. I kind of declared my major in 11th or 12th grade and never changed. “In August I’ll start my 33rd year in the restaurant industry.” Harsany is the owner of two staples of that industry in Orange Beach, Cosmo’s on Canal Road and opulent Cobalt overlooking Perdido Pass. By year’s end he’ll open his third business named after one of his family dogs. Cosmo’s and Maggie’s Bottle and Tail, both in the woodsy, rustic setting on Canal Road, are the first of those. The third, Luna’s Eat and Drink, is in the works on the property directly west of Cosmo’s. Currently site work is being done, but the groundwork is laid and Harsany is working on getting all the paperwork — official and financial — ready for opening his new venture. As with his other two businesses the food will reflect the character of the restaurant but be a little more relaxed than Cosmo’s or Cobalt. “Luna’s will have a lower price point, there will be more a la carte,” Harsany said. “There will be very unique items where we take a normal item and put our spin on it and take it to another level. “You have to put your on feel and perspective on food and I think we do a real good job of that.” Part of the new restaurant will have a bit of sports bar feel, with Luna’s flair. “It’s going to be more casual, higher energy,” Harsany said. “A lot of focus on craft beers, less on wine that we do in the other restaurants. With that higher level of energy we’ll have more TVs in there I would hope we could do something with sports. We’re going to have basic, very well-known bar food but take it to another level. You know, sitting there watching the game and enjoying our food and our craft beer.” Harsany graduated with that degree from Florida State in 1991 and in 1994 came to Orange Beach to be the general manager at Bayside Grille at Sportsman Marina, where

He did that job for more than 10 years, was in a short partnership – about seven months - with two others in a pair of restaurants, the Giggling Grouper which is now Flipper’s, and SanRoc Diner which was in the space where Gulf Shores Steamer is now. After deciding to step out on his own, Harsany opened Cosmo’s in May of 2006 and followed that up by opening Cobalt in December of 2008. Both have been and are successful ventures. The wild success of Cosmo’s led almost directly to the idea of opening a new space next door. In the busy season cars piled onto the grass lawn of the little shopping complex on Canal Road, people parked across the street at the tire store and anywhere they could to get a seat in Cosmo’s. Harsany and Orange Beach officials knew more parking was needed. “I was fortunate to get the property next door but it’s much larger than what I need just for parking,” he said. “That got me to thinking about needs in the area as far as styles of restaurants and I think Luna’s will fit its own very unique niche,

create a niche different from Cosmo’s and offer a whole other dining experience for guests who come to the property.” Part of the reason for a new space was to give those flocking to Cosmo’s an alternative and part was to have a sweet shop and part to build a meeting space. “We’re going to have a Cosmo’s event center which will be able to do parties of up to 200,” Harsany said. “There’s definitely a need down here to do more of that and even though it’s going to be a large room it’s going to have lots of atmosphere and character.” Cobalt has a private room, but can seat only 70-80 people. In the new space a 14-foot peak in the ceiling will give the large room a welcome feel and have a porch on the back side of the property looking over a pretty garden area.

There will be a lot of photo ops for people having parties and a comfortable atmosphere.” The coffee shop called Buzzcats will have space in the front of the new structure. “We’ll have some breakfast items because people will come in early in the morning to get coffee and a bite to eat and we’ll have pastries, cookies, ice cream and things like that,” Harsany said. “That will help if we’re on a long wait here they can get a snack or go after they’ve eaten here or at Luna’s they can top it off with a nice ice cream or cookie or pastry.”

Elizabeth Blaylock will conduct a two-day oil workshop, Painting Fast and Loose, at the Gulf Coast Arts Alliance Art Gallery, 225 E. 24th Ave., Gulf Shores. Originally from Holly Springs, Mississippi, Elizabeth graduated from the University of Southern Mississippi with a Bachelor of Fine Arts in drawing and painting. This versatile artist works in oils, pastels and acrylics, painting figures, still life and beach scenes. Her work has won numerous awards and is in private collections worldwide. She and her husband are residents of Gulf Shores. The workshop will be March 13 and 14 from 9 a.m. – 3 p.m. each day. The coast of the workshop is $225. Rio Barlow, will teach a new class at Gulf Coast Arts Alliance that focuses on etiquette, dining etiquette and civility. These classes are not based on 19th century ballroom protocol. They focus on situations and challenges children face today. Using a combination of informative discussions and role-playing, all students will learn how to introduce themselves, interact with others, conduct proper phone behavior and apply correct table manners. Older students will be given instruction in attire, grooming habits, when and how to RSVP and travel tips. Mrs. Barlow stresses that proper etiquette is essential for success later in life. Whether in college or in business, the individual who knows how to communicate and behave properly and with style will stand out above the rest. Mrs. Barlow has taught this program in several school systems in Alabama as well as for home school organizations and community groups. Her after school class will be at the Gulf Coast Arts Alliance Art Gallery on Wednesday afternoons.

1) Tents (no larger than a 10x10 ft.) are allowed on the beach, but they have to be placed behind (North of) the designated sign marker post and should be removed before night. Tents cannot be placed between the sign post and the Gulf of Mexico. This is for designated emergency and safety access. 2) Pets are not allowed on the beach on the Gulf of Mexico or surrounding islands (Robinson, Bird, Walker). However they are allowed at the designated city Dog Park on Canal Rd. (Hwy 180) next to Sportsman Marina. All dogs should remain on a leash within the city limits. 3) Glass in any form (bottle, cup, container, etc.) is strictly prohibited on our beaches and islands. 4) A yellow or green flag posted along gulf beaches means to use caution while swimming in the gulf waters and is permitted. A red flag means danger and one should not swim in the waters. Double red flags mean that swimming in the waters is prohibited by law. Purple means WARNING! A jellyfish or other marine threat. 5) All trails and parks are free and open from daylight to dusk 7 days a week. 6) Fires or flames are strictly prohibited on the beach. This includes grills, tiki-torches, lanterns, open fire pits, candles, fireworks, etc. 7) Jet skis, boats, and any other motorized vessels, are prohibited from launching along the gulf front beaches.

Local Flavors West Beach Grille Shrimp K’argot Recipe by Chef Jody Recipe submitted by Bill Howard
Ingredients n 6 26/30 count shrimp n 1 teaspoon blackening seasoning n 1 ounce butter n 1 teaspoon fresh garlic n 2 ounces cream cheese n 1/4 teaspoon dill weed n 2 ounces mozzarella cheese n 2 ounces Parmesan cheese
Preparation Sprinkle shrimp with blackening seasoning lay in a foil bowl. Combine butter and garlic and add to bowl. Combine cream cheese and dill weed and add to bowl. Top with mozzarella cheese and bake for 12 minutes at 450 degrees. Remove from oven and top with parmesan cheese and broil until cheese is browned.
