Consider it a boat parade. By the thousands, watercraft will head east from Alabama on July 11 and July 12 to stop in Pensacola Bay and surrounding waterways and islands to watch the US Navy Performance Squadron do its thing in the sky. Commonly known as the Blue Angels for the color of their F/A-18 aircraft, their base is at Pensacola, and while they travel the country
year round — when Congressional posturing over money doesn’t ground them — they have two home shows a year. The homecoming show is in November, and the show that draws the boat parade is in July. With a fully funded 2014 season, the Blue Angels are scheduled to fly 68 performances at 35 locations in North America during the 2014 season, making this the 28th year of flying the F/A-18 Hornet. If you are ground bound, the show is at Pensacola Beach and it’s free.
July 4 – 17, 2014 Thousands will fill the beach on July 11 for a dress rehearsal and July 12 for the actual show. The Blues will also fly on July 10 in a practice session at approximately 2 p.m. There will be scads of other airplanes and demonstrations prior

hen we think of eating at the beach, our minds often immediately turn to a delicious, full plate of fried seafood. But there are a few highvolume seafood restaurants, like The Steamer and Baked
Oyster Bar in Gulf Shores, that focus on steamed and grilled seafood — an experience that shouldn't be missed. The fun is found in the seafood trays and platters — heaping portions of royal reds, crab, shrimp, oysters and scallops served alongside corn, sausage and new potatoes. The Steamer’s Oysters Rockefeller are one of the seven baked oyster options. Loaded with cheese and seasoned to perfection, these oysters are a treat.
The restaurant's atmosphere is casual, complete with a bucket on the table to discard shells and a roll of paper towels to clean up messes. Sharing is encouraged, and prices are reasonable. The Steamer, which opened in 2010, is owned by Eddie Spence, who also owns Mikee's Seafood in Gulf Shores and the popular Shrimp Basket chain, which has 21 locations in three states. Mikee's was Spence's first restaurant and opened in 1987. It has a diverse menu, featuring seafood, chicken and beef entrees. Shrimp Basket focuses on affordable seafood and a quick turnaround. The Steamer is a completely different concept — one that was created out of necessity. “When we took over this building, the kitchen wasn't big enough for fryers,” Spence says. “About all we had room for was steamers. So we got some steamers and created a more condensed menu and decided to have a broad baked oyster menu. That ended up being a niche in the market that wasn't filled.”

or more than a decade, the City of Orange Beach has held a summer sailing camp for youth. Now under the Coastal Resources division, the camp has grown to accommodate about 250 kids during the course of one summer. I have had the privilege of teaching sailing for the past several years here, and I must say that it is such a rewarding experience for both the instructors and students. Our students learn tacking, jibing, upwind and downwind sailing, capsize recovery methods, proper boat handling and more. People are so electronically reliant in today’s world; therefore it is an asset for our community to be able to provide education for skills that are acquired by literally working with the wind, waves, current and weather. I believe it generates an appreciation for
things we normally would not recognize as being tools to maneuvering around. Activities such as sailing tap into a whole new knowledge base that circulates around the environment one is in, instead of being dependent on motorized power. I
t’s that wonderful time of year when our area offers outdoor enthusiasts warm weather, clear skies and opportunity to enjoy the waterways of South Alabama. As water temperatures heat up, inshore anglers head out in search of speckled trout, also known as spotted sea trout or “specks.” Speckled trout are a favorite catch for light tackle fishing enthusiasts because of the wide variety of fishing techniques one can use as well as the beauty and agility of the species. Not to mention, speckled trout have aggressive feeding habits, which makes tracking down and catching the fish a thrilling experience. Speckled trout migrate throughout coastal Alabama’s southern waterways, frequenting the inshore areas. As they migrate, speckled trout can be found in the shallower waters of local estuaries or deeper waters around the base of structures, like oil platforms. Speckled trout dine on a variety of food sources, ranging from smaller bait fish like mullet, croaker or menhaden to live shrimp and even artificial rigs. For those anglers without access to a boat, the area offers a variety of inshore fishing charters provided by expert local guides. Inshore fishing charters provide a great opportunity to experience the adventure of catching your first speckled trout without the

Find handmade, homegrown items at Market Days By Cliff McCollum cmccollum@gulfcoastnewspapers.com One of Bay Minette’s most popular public events, Market Days, is back. “The chamber has inherited Market Days from the Old Town Bay Minette Arts Council, and we hope to continue to grow the Market in our community,” said Ashley Jones, director of the North Baldwin Chamber of Commerce. Jones said she was pleased at the number of vendors and citizens who came out to enjoy the festivities at the first Market Days event of the summer, June 21. “We had a great crowd here and folks were excited to see the Market Day back, so we’re hoping that each coming event will gain more vendors and more customers,” Jones said.

COOKING WITH PEPPERS Southwest macaroni and cheese
Start to finish: 1 hour, 45 minutes (1 hour active) Serves 8–10 Ingredients 4 poblano peppers 1 pound elbow macaroni, cooked 4 tablespoons unsalted butter 4 cups cornbread, preferably a little dry/stale 1/4 cup all purpose-flour 4 cups whole milk 1/2 onion, finely diced 2 cloves garlic, minced 2 teaspoons oregano (preferably Mexican) 1 teaspoon chili powder 12 ounces extra-sharp cheddar, grated 10 ounces Monterey jack, grated 7-ounce can chopped green chili peppers 1 red bell pepper, finely diced Salt, to taste Preparation Broil the poblano peppers until they are thoroughly blistered, turning occasionally. Place in a covered bowl

for 10 minutes to cool and let the skin loosen. Peel, and remove core, stem, and seeds. Finely dice. Crumble the cornbread into small crumbs. You can use a food processor or your fingers. If you aren't using stale cornbread, place your crumbs on a baking sheet and dry them out in a 350 F oven for about 10 minutes. Grate the cheeses using a food processor. Preheat oven to 350 F and grease a large baking dish. In a medium saucepan, melt 4 tablespoons of butter over medium-low heat. Sprinkle in the flour and whisk pretty constantly for 3 minutes. Whisk in the milk. Add the onion, garlic, oregano and chili powder. Simmer, whisking occasionally until it begins to thicken. Gradually whisk in the grated cheeses, stirring each batch to incorporate. Taste the sauce, and adjust the seasoning to your preference. Remember that the sauce should be pretty intense because it is going to be diluted by a full pound of pasta. Stir the macaroni into the sauce. Pour the macaroni into the prepared pan. Mix in all three peppers. Taste again and make any final adjustments. Top with the cornbread crumbs. Cover with tinfoil and bake for about 30 minutes, until it is bubbling around the sides. Remove the tinfoil and bake 10 more minutes until the cornbread crumbs are turning golden brown. Let stand for 5-10 minutes and serve.

Go back in time and hunt to find knights, dinosaurs and “Bamahenge,” a Stonehenge replica at Barber Marina in Elberta. Driving to and from, you may spot something unusual. Is that a tyrannosaurus rex? A giant spider? Four dinosaurs are hidden in the brush along County Road 95. Just before the prehistoric creatures lies the Stonehenge replica. All sites are viewable from the road, but jump out of the car — get a closer look. Alligator Alley in Summerdale has alligator feedings three times a day. Try and schedule your trip around these — it’s something you don’t want to miss. Also visit the Baldwin County Heritage Museum in Elberta.

Folks come from around the world to see our white beaches. Besides going to the beach, you’ll find shopping and concerts at The Wharf in Orange Beach. For the more adventurous, try parasailing on the beach or zip-lining at the Gulf State Park. Paddle-board yoga is even offered Saturday mornings at the park. The zoo is perfect for all ages — check out their animal encounters and putt-putt course. With the arrival of summer, wine consumption tends to drop. Regardless of the reason, wine should not be overlooked as your beverage of choice during the summer months. People avoid wine during the hot months because it is associated as a drink to “warm your bones.” The warming sensation you get from drinking wine is actually your blood vessels dilating near the skin. This physiological activity allows the body to release heat, thereby actually lowering your body temperature. Finding the right opportunity to enjoy a bottle is as easy as going on a picnic. Grab you favorite picnic basket or light up the grill. Here’s a list of classic summer foods with a twist of wine. Chicken and Champagne (or any sparkling wine): Fried chicken is the ultimate picnic food. It’s quick and easy and relatively inexpensive to pick up a bucket and feed your crowd.
Why it works: The primary grapes used in the production of Champagne are Pinot Noir, Pinot Meunier and Chardonnay. The weighty texture of a big, fruity Chardonnay balances the fat percentage in fried chicken, and a bit of oak further strengthens the satisfying sensation. Burgers and Bordeauxs: Chances are you’ll light up the grill as least once this summer and throw on a burger or two. Why not add a glass of wine? Why it works: The classic grapes of Bordeaux are Cabernet Sauvignon, Merlot, Malbec, Cabernet Franc and Petit Verdot. All of which are classic pairings with red meats. For a variation, try a dry Bordeaux rosé. Pigs and Pinots: Pork tenderloin is another good choice for the grill. Combine it with Pinot Noir, a light bodied red wine. Together, they share a sweet succulence and smoky undertone. Pinot Noir balances both pork’s lean and fatty cuts because of its bright acidity and velvety texture. Ribs and Zin: Grilled ribs smothered with a sweet tangy barbecue sauce needs a bold wine as a counterbalance. The juicy dark berries and black pepper in Zinfandel make it perfect for ribs.

n honor of Independence Day, I want to show special reverence to the most popular beer consumed on the fourth of July. These are the gas station beers, the college beers and the lawn-mower beers. I’m talking about the ubiquitous Bud, Miller and Coors, or BMC for short. I’m sure you’re familiar with the brands. But what are they, really? Some are called American adjunct lagers. Beers like this are actually international in their popularity, but in ‘Merica, we can find Budweiser, Miller High Life and Coors Original. Up in Canada, they have Molson Golden, and down in Australia, they have Foster’s Lager. In Japan they drink Kirin Lager. Expect these beers to be very light in flavor. In fact, strong flavors are considered a fault in this style. You’d be hard pressed to find a beer that is more highly carbonated than this style, which gives a slight bite-on-the-tongue characteristic. The key to this style of beer is a hefty percentage of adjuncts; that is, in addition to the staple malted barley, these beers include either rice or corn to impart their characteristic light flavor. But the preferred example (at least in my mind) of these beers are the Lite American Lagers. These beers are ultimate-
ly intended to be refreshing, thirstquenching and appealing to the broadest range of the general public as possible. You know these guys as Miller Lite, Bud Light, and Coors Light. The basic difference between this style of beer and the American adjunct lager is simply less “stuff”: less alcohol, less International Bitterness Units (IBUs) and overall just a little less flavor. These beers are best served in a frosty glass or in a bottle or can straight from an iced down cooler. Keep in mind this is the ONLY beer style you want to serve in a frozen mug. You can pair these beers with pretty much any food and it kinda works, just like how a glass of water works with most any dish. But you likely already knew that. You can also pair it with a barbecue, cookout, NASCAR race, crawfish boil, hunting camp or yard work with good results. But ... you could also pair a more flavorful beer with those events and have even better results.
