Helping others is the focus of Alan’s life. We helped him get back to it. Pastor Alan McBride suffered a major arm injury as he was unhitching a trailer from his car. “I heard a sound as loud as a rifle shot,” he said, “and felt paralyzing pain.” Nothing helped until he went to see an orthopedic surgeon. “My doctor explained that my bicep tendon was almost completely torn from the bone,” said Alan. “He made things happen fast and performed surgery the very next day at South Baldwin. I received wonderful care and can use my arm with no limitations. I visit South Baldwin two or three times a week as a pastor and have been there several times as a patient. Everything I’ve experienced is A+. It’s a blessing in this community.” To learn more about surgical services at South Baldwin Regional Medical Center, visit SouthBaldwinRMC.com/SurgicalServices.

Alabama Festival of Flavor
The weather’s started cooling and that means festivals are everywhere. This issue is part one of our two-part festival Buzz issues. Fall into Fairhope is a weekend of cultural events beginning with the Coastal Birdfest, the Grand Festival of Art, Grand Festival of Books and ending with the Baldwin Pops Founders Day concert on the bluff. In Robertsdale, head over to Honeybee Park and celebrate the Honeybee Festival. Foley will host the first Gulf Coast Gospel Jubilee. Choirs, local musicians and artists from the area will be performing all day Oct. 4 at the Foley Soccer Complex. On Oct. 16, the Chicago Supper Club will host a farm-to-table feast leading to the Festival of Flavors on Oct. 18. South Baldwin County will host the L.A. Gumbo Festival and of course, the Annual National Shrimp Festival, Oct. 9 through 12. Bring your family for a weekend of food, arts and crafts booths, live music and kid’s area. As always, check out our columnists for the latest reviews, wine, beer, books, fishing, outdoor activities and family entertainment.

The fierce Gumbo Masters competition will begin Saturday, Oct. 4 at 10 a.m. and teams and noted chefs will compete for a $1,000 top prize for best gumbo. ctober 4 is the date for the next Gulf Coast Arts Alliance Art Market, held in partnership with the City of Gulf Shores. The Art Market will be from 10 a.m. until 5 p.m. at Meyer Park in Gulf Shores. The show features original work of local and regional artists and features musical entertainment, hands-on arts activities for children and concessions. One of the exhibiting artists is Celia Dionne, owner of Clara’s Loom located on County Road 10. Celia was originally known for rag weaving and hand spinning in Tennessee. She has been exhibiting prize-winning “fun wraps” since moving to Alabama in 1994. She weaves shawls and triangle-based garments on triangular frame looms of various sizes. “Weaving this way is pure tactile experience for there is no mechanical manipulation of the warp or weft as with a floor loom,” Dionne explains. Celia Dionne earned a BA from Sophie Newcomb College of Tulane University and a teaching certificate from Washington University in St Louis. Her formal education and teaching experiences include classical flute, French and English as a second language. Yet, she always wanted to weave and in the 1970s she took a basic weaving class and joined the Handweavers Guild of Nashville. From there, she opened her own business known as Clara’s Loom in Franklin, Tennessee and eventually moved it to Coastal Alabama.

labama offers a variety of opportunities for fishing enthusiasts to enjoy the beauty of the great outdoors. Anglers can take a short boat trip or car ride to fish for many different saltwater or freshwater species in a variety of natural settings. No matter what your favorite type of fishing, remember to follow state guidelines for licensing so you can “keep it legal” and prevent any potential headaches. It never fails that I forget to renew my fishing license by the August deadline. That date always slips up on me. So there I sit at 4 a.m. on the computer, bleary eyed with coffee in hand trying to renew my license online before the boat leaves the dock. It’s not a very fun experience, so here’s my friendly reminder to renew your fishing license. Aug. 31 is the magical date when all Alabama freshwater and saltwater annual recreational fishing licenses come up for renewal. Anglers can choose to renew licenses online, the Marine Resources office or some local retailers, like tackle shops. Be sure to take a few minutes to renew your licenses before your next fishing adventure. For those new to fishing our area, here’s what you should know. The state of Alabama requires any individual, resident or nonresident, between the ages of 16 and 65 who participate in fishing, cast netting, flounder

gigging and even recreational crab traps purchase a recreational fishing license. In lieu of the annual license, some anglers may opt to purchase a lifetime saltwater fishing licenses which helps save the hassle of remembering to renew every year. Anglers over the age of 65 or lifetime license holders are exempt from purchasing the annual saltwater fishing license; however they still must sign up annually for the Saltwater Angler Registry. Purchasing your license online is quick and easy to complete. Enjoy the cooling temperatures and great fishing along the beautiful Alabama Gulf Coast, but just be sure to “keep it legal.”

Band jamboree: a good time with good music
By Eric Mann emann@gulfcoastnewspapers.com nn c Ma Eri
O
ne of the best things about high school football in Baldwin County, aside from the exciting games and rivalries, are the marching bands. Baldwin County is home to some of the state’s best bands, from Foley’s Mighty Band from Lion Land to Daphne’s Sound of the Eastern Shore to Gulf Shores’ Pride of Pleasure Island.
MOVIES
Every Friday night fans of Baldwin County’s teams get to see those marching bands perform, but on Oct. 7 at 6 p.m. on the Hill at Spanish Fort, fans will have the chance to see all of them performing in one place. The Baldwin County Band Jamboree will feature all seven of Baldwin County’s public high school bands performing their halftime shows. As an added bonus, the University of South Alabama’s marching band will perform from 8:20 to 8:40 p.m. to cap off the night. The jamboree, which is free, is a great way to show support for our county’s bands and hear some awesome music.

Seafood lovers, get ready for the National Shrimp Festival
I
t's that time of year for the beach's famous National Shrimp Festival. Seafood lovers from all over travel to the shores of the Gulf to sample shrimp prepared any way you want it. The event, presented by Zatarain's, is during the second full weekend of October each year and attracts approximately 250,000 shrimp patrons to the area. More than 300 vendors will be offering arts and crafts, fine art and of course, food. An assortment of vendors will line the festival and serve up fried shrimp, shrimp kabobs, grilled shrimp and other delicious preparations. A variety of festival favorites will also
be sold at the event. Local artists will showcase their talent under a series of tents that will be lined up in the heart of the festival. Music will be continuously provided daily on two stages throughout the festival. Shrimp Festival Idol will take place on Saturday from 10 a.m. to noon. The contestants, representing each of our Baldwin County High Schools will compete for scholarships for themselves as well as matching funds for their schools. As for the kids, there will be Children’s Activity Village where children can create their own art and participate in other fun-filled activities. There will also be a family-friendly sand sculpture contest on Saturday at 11 a.m. on the west end of the public beach. Prizes include cash and trophies.
Children’s Activity Village
The Shrimp Festival is a family affair, and that means there’s plenty of excitement and entertainment for the little ones. Youngsters find all kinds of hands-on hoopla in this special area designed just for kids. Supervised activities include arts, crafts, games, entertainment, music and more. With all this frolicking fun, your little ones are sure to find something to keep them engaged. john mullen / staff

10K/5K Run
The history of the Annual National Shrimp Festival Run dates back to 1977. Having its start as a five-mile race that started and ended at Bayou Village in Gulf Shores. Over the years the race has made many transitions, even taking a temporary leave of absence in 2010. The race is an officially sanctioned event of the Annual National Shrimp Festival, produced by the Coastal Alabama Business Chamber. Working with a strong group of dedicated volunteers, the 2014 Annual National Shrimp Festival 10K Run is planning the best event to date! “All of the money from the run goes straight into Coastal Baldwin Education,” Mogan said. “Between the golf tournament and run last year, we raised right at $20,000.”

Shrimp Festival poster winner Bob Towson
T
he 43rd Annual National Shrimp Festival official winning poster was created and designed by Bob Towson of Pace, Fla. Towson, an airbrush and oil painting artist, is a past winner of the Gulf Coast Arts Festival and the Pensacola Jazz Festival poster contests. The winning poster was voted on by the Shrimp Festival Committee. The committee is made up of over 100 volunteers who help coordinate and organize the festival. It’s important to select a winning poster in advance to help advertise, promote and brand the upcoming festival. More than 30 different artists submitted entries. Posters were submitted from Ohio, Mississippi, Florida, Connecticut and Alabama. “I know there’s a lot of good art in this kind of competition and this illustration will be marketed quite extensively along the coast. It’s humbling and it feels great to win this prestigious poster competition,” Towson said. “The use of colors, lettering and sun makes the poster fun to look at,” said Matt Mogan, chairman of the Annual National Shrimp Festival. “It represents good times on the beach at Shrimp Festival. Who doesn’t like that?” The winning poster will be on sale online and at the Chamber’s offices in Gulf Shores. Towson will also be on hand during the festival to sign and number a limited supply of prints which will be available for purchase.

Cellar Wines are still made today at Caymus. Mac and his wife own an eight-acre vineyard where he grows his grapes, but he also sources grapes from other well-known vineyards including the famed Garys’ and Rosella’s Vineyards in the Santa Lucia Highlands. The affiliation he has with these vineyards and the Wagner family has helped his wines win awards over the years, he remains humbled. His motto is, “I don’t care if they’re drinking my wine; I just want them drinking some wine.” Vision Cellars is a boutique winery specializing in pinot noir. Mac also offers a Santa Lucia Highlands Blend Pinot Noir, A Las Alturas Vineyard Pinot Noir and a Rosella’s Vineyard Pinot Noir. His case lots are small and he only sells wine in parts of the country he likes to visit. Consider yourself lucky. n

ecently, I had the opportunity to sit down and taste wine again with Mac McDonald of Vision Cellars. Mac is one of only a handful of African-American vintners in the country and the most down-to-earth person you will ever meet. His standard business attire is faded overalls and his trademark straw hat, yet he is the most astute businessman when it comes to the discussion of grapes and wine making; particularly his favorite grape, pinot noir. Mac was born in Texas and mentored over the years from talented people including the Wagner Family of Caymus Vineyards in Rutherford. To this day, he credits his success to Charlie Wagner and his son, Chuck. In fact, Mac’s Vision

Mac calls this his “honeymoon wine” because his wife likes sauvignon blanc and he likes pinot gris. Vision Cellars 2010 Pinot Noir - Garys’ Vineyard Garys’ Vineyard is an ideal area for growing award winning pinot noir due to the location and soil. he history of beer n e v e r ceases to interest me. Let’s consider the elusive steam beer. If you’ve tried this style, you’ve likely had Anchor Steam Beer. Are there other versions out there? Yeah, but there’s only one that predates Prohibition, the great American alcohol sabbatical. But let’s go back even further. The first steam beer was brewed in the 1850s. Anchor’s brewers started making their version back around 1894 in San Francisco and were influenced by some key factors. Many were of eastern European descent. When they started to brew, they used familiar techniques and ingredients adapted to a
new location. They used a strain of lager yeast from the old world, but they had no way of keeping the fermenting beer in the optimal temperature range like they could back home. This meant the beer fermented warmer than it should have. But it was OK — what they inadvertently created was a hybrid beer. Not really an ale, but not really a lager. To carbonate the beer, they krausened, or blended, uncarbonated, mature beer with some amount of young fermenting beer and then put it into a cask. The young beer kept fermenting and producing carbon dioxide inside the sealed cask, which forced the carbon dioxide into solution, thereby carbonating the beer. When it came time to tap the cask, there was a tremendous amount of pressure released, and the patrons experienced a spectacle reminiscent of escaping steam. Bam. There you have it. Steam beer. Anchor Brewing trademarked the term “steam beer” back in the 1960s when they were the only brewery in the world producing this style of beer. All other similar beers can only be termed California Common.

ne of our loyal subscribers introduced me to local author Claude Keenam, husband of our longtime collaborator and columnist Nina, and his series of mystery novels. I’m thankful she did, as they are deserving of attention — a well-written, attention keeping set of books that are the perfect addition to your bookshelf. The first in the series, “The Secret in Deep Water Swamp,” carefully combines a sense of suspense and intrigue as the local reverend, Alabaster Armstrong, and FBI Director Samuel Adem investigate a local optical band and

end up uncovering a farreaching network of secrets that could spell danger for themselves and the quiet burg of Ocean Town. Set in a post-World War I America, the pace stays quick throughout the text, holding the reader spellbound as the characters uncover shocking revelation after shocking revelation. The book is available in paperback and for download, a perfect addition to your e-reader. I will say that “The Secret in Deep Water Swamp” is the literary equivalent of a can of Pringles — once you start, you won’t be able to stop.

love Cajun food. I love Italian food. So when I heard about La Rosso, I had to give it a try. Located in downtown Daphne, this little restaurant has a lot going for it. First of all, the atmosphere is so charming. The dim lighting, candles, wine racks, small room, delicious bread with butter and polite wait staff make La Rosso a great place to spend an evening with a small group of friends or your significant other, but the prices are reasonable enough for this not to be a “special occasion only” kind of place. The food is creative, combining concepts like Cajun, Italian, American and even Thai. I tried the Mardi Gras Fettuccine, which features blackened chicken and Conecuh sausage on top of fettuccine noodles tossed with a spicy roasted pepper cream sauce and green onions. Portions are huge — after eating a ton of bread, I finished about half of my entree and got a to-go box. Next time I visit La Rosso, I’m going to try the Thai Green Curry spaghetti. It has so many of my favorite things: spaghetti noodles, a green curry and coconut sauce, prawns, chicken, cherry tomatoes, roasted pineapple and fresh basil. I can’t wait!

The Mardi Gras Fettuccine is Cajun all the way. It’s got a kick, but isn’t too spicy, and I was happy that the blackened chicken strips outnumbered the sausage. I love sausage, but it can be overpowering.
La Rosso is located in downtown Daphne and boasts a charming atmosphere and an accommodating wait staff.

Stocking the freezer Jill

I
had a week off work, so I decided to use my free time to be productive and make some freezer meals we can eat during busier weeks. I also made homemade chicken stock, which makes everything so much more flavorful. I was a little apprehensive about getting started — do I cook the meal all the way and then reheat it? What foods freeze well? Fortunately, I was able to consult a couple of friends who were more experienced in freezer meal preparation, and it all worked out just fine. I now have about six meals in my freezer, ready to go.
Freezer meal tips 1. Make large quantities. If you're going to work hard to cook a meal you can't eat right away (so hard to do), double your recipe so you don't have to do it as often. Another option is to cook a meal to eat for dinner and freeze the leftovers. 2. If you choose to have a “cooking day” like I did, prep all your ingredients first — just like on cooking shows. That way, everything will be ready, and if you're making several recipes, you can cook some of them at the same time. 3. If you would normally bake it to cook it — enchiladas, casseroles, etc. — just prepare it normally and then instead of putting it in the oven, put it in the freezer. Write the cooking instructions on the top, and when you're ready to eat it, thaw it in the refrigerator and bake as directed. 4. For meals you normally cook on the stove or in a slow cooker, just

cook the recipe normally and then place it in the freezer. All you'll have to do with these is thaw and reheat. 5. If you're making soups, stews or chili, store in plastic freezer bags. Before you place the food in the bags, write the date it was prepared, what it is and what to serve with it (for example: serve with rice and garnish with cilantro). As you close the bag, flatten it so you can stack the bags. 6. If you're making casseroles, store in a disposable casserole dish that will be ready to pop in the oven, but won't tie up all of your dishes.

Try it at home
I adapted some of favorite recipes to save time and money. I love cooking with whole chickens, and I wanted to make stock, so instead of using boneless, skinless chicken breasts like this recipe originally called for, I cooked a chicken overnight in my slow cooker.
Chardonnay chicken and rice Ingredients n One whole chicken, cooked and bones removed n 2 cups white rice, cooked n 4 tablespoons butter n 1/2 cup all-purpose flour mixed with salt and pepper n 2/3 cup diced shallots n 2 cups sliced mushrooms n 1 cup chicken broth n 3/4 cup Chardonnay n 1 cup heavy cream n 4 tablespoons dijon mustard Place chicken in gallon plastic bag with flour mixture and shake to coat. Heat half of the butter in a large skillet. Place the chicken in the skillet and sear, stirring frequently, until browned and bits stick to the bottom of the pan, about 4 – 5 minutes. Remove chicken and place in a large bowl with desired amount of rice (I cooked 2 cups of rice and used almost all of it to get the desired chicken to rice ratio). Stir to combine. In the same skillet, add additional butter, shallots and sliced mushrooms and saute until shallots are tender and mushrooms are slightly browned, about 10 minutes. Deglaze the pan with the chicken stock and Chardonnay. Add the dijon mustard and heavy cream and cook on medium heat until the sauce is reduced and slightly thickened. Add sauce to chicken and rice and stir well. Allow to cool completely and place in freezer bags.
