Digital Diwali Celebrations D

iwali or Deepavali is a popular festival in India with various mythologies and rituals associated with it. Some celebrate the festival as the wedding anniversary of the Goddess Lakshmi with Lord Vishnu, some dedicate the festival to worship Goddess Kali. It also commemorates that blessed day on which Lord Rama returned to Ayodhya after defeating the demon king Ravana. Others remember this as the day when Lord Sri Krishna killed the demon Narakasura. Drwaing Rangoli, lighting lamps, doing Pujas (Worships), giving gifts and greeting dear ones are part of the Diwali rituals. Over the last two decades, just like any other celebration, the celebration of Diwali has also undergone tremendous changes in the digital era. We explore the rituals of Diwali in the non-digital and digital period through the words of some celebrants.

Rangoli (Floral designs on the floor) Gayathri Hariharan from Chennai detailed her memories and experiences of nondigital and digital Diwali. “My grandmother taught me the designs on the mud floor when I was young. Drawing rangoli on festive seasons was part of our tradition, and since it was considered auspicious. I can still feel her fingers on mine as I draw the Rangoli at my door step. I tried to teach the designs transmitted over the family to my daughter too. But, she is more interested in the easy designs taught over the internet. At least, she’s taking an interest in the traditions.”

Sweets Nivedita Pandey from Mumbai feels that the Internet has a beneficial impact on her Diwali kitchen. “I cannot say, how I used to wait for those ghee oozing jaggeries and fatty Laddoos on those days. As soon as the smell of these sweets come from the kitchen, I used to hang out there like a kitten.


Diwali especially for this season. They had to send gifts to many relatives and friends. This was a festival of togetherness as well as a festival of expenditure. Thanks to the Internet, I get many gift items on discount and have them delivered on time at my door step. I visit only my close relatives and friends during this season and I send messages on Whatsapp or Facebook to others.”

ichelin starred Chef. Vineet Bhatia is an acclaimed Indian Chef from UK whose innovative recipes are the blend of Indian techniques and International ingredients. Gulf Insider Media talks with him during a recent visit to, Rasoi by Vineet at the Gulf Hotel in the Kingdom.

You pursued the career as a Chef. when the Kitchen was still considered as the domain of women. What fascinated you into this field? Really? (Smiles). I never felt that. There are not many women Chefs even now. I would say only five percent of the Chefs in this industry are women. But, you are correct in the realm of domestic cooking that women rule the kitchen. I would also like

As for me, this was not my chosen profession. I grew up in an apartment near the airport at Mumbai and always wanted to be a Pilot. When that dream wasn’t accomplished, I tried to learn fabric designing for a short period. Later, I joined for a course in Hotel Management. Initially, I wanted to be a bartender, fascinated with the colours of the drinks and an opportunity to interact with people. However, I was assigned to the kitchen. I fell in love with the kitchen from the first moment I entered there. I loved the discipline, training and creativity in the cooking.

People have turned more diet conscious over the years. Have you changed your cuisines over the time? Yes, of course! Evolution and Progression is a natural process in this industry. In the ‘70s and ‘80s, people used to consume ghee and fatty products and they also used to burn away their fat with daily physical activities like walking, cycling or domestic works. In these days, many people won’t even get up from their desks. That is where the traditional recipes need to be reinvented. When you cook at home, you don’t use much oil or fatty products. However, when you order from a restaurant, you would expect to see a chunk of butter floating over the dish. You will not see that in our restaurants. We strive to provide quality dishes keeping health as the paramount. In our restaurant, the customers are provided with the food what we are also able to consume.

“My philosophy was very simple that I wanted to stand apart from the common stream and at the same time I remained honest to myself, my cooking, and the people whom I have employed.”

You have made innovative advances in the traditional Indian food and became successful. What is the philosophy that guided you all through? I worked in the French kitchen in

the initial days and later at Oberoi in Mumbai. During the mid-1980s, I learnt from many visiting International Chefs, who used to experiment with our Indian dishes. This inspired me to innovate our dishes to the International standards. I was inquisitive and curious to learn the new ways to make Indian curries appealing to the non-Indian palate. I didn’t have a mentor or Godfather. I asked questions and learnt from many people. I wanted to make an impact and improvement to the Indian dishes and that is what I have achieved. My philosophy was very simple that I wanted to stand apart from the common stream and at the same time I remained honest to myself, my cooking, and the people whom I have employed. At the end of the day, I want to return and peacefully sleep at my home with a clean consciousness. I have achieved that.

recount Diwali frenzy gripping on Mumbai, from the day the semester exam commences for students. The countdown for Diwali begins as the exam progresses. The festive atmosphere begins almost a month in advance. Colourful and fascinating lanterns take the place of pride in shop displays. Each lantern or ‘kandil’ as it is known in Marathi try to outsmart the others. They push for space everywhere. The festival of lights make its presence felt with the glittering light around the shops and temporary sheds selling these kandils. As children it used to be our daily routine on our way back from school to pick the appropriate kandil to be displayed outside our home. I used to specially envy my friends who were

What a treat it was to watch these kandils glittering and standing tall outside the shops advertising for themselves and waiting for the buyers. Kandils have a unique space in the memory of every Mumbaikar who takes pride in Diwali celebrations. Mothers at home used to have a gala time. The preparation of Diwali

By Anand Nair delicacies or faral was a celebration by itself. All of the ladies assemble in one house and help in preparing Diwali delicacies. Ladoos, karanji, shankarpali, chakli(muruku) ..to name a few. The next day the same set of ladies go to another house and prepare the whole thing again. In a months’ time; they visit several households and spread the message of cooperative cooking! My mouth still waters at the very thought of breaking my favourite chakli (muruku) and poping it into my mouth. The first touch on the tongue tip sends a unique feel and by the time we realize we may have consumed quite a number. My mother used to hide it in steel containers away from my reach so that stocks can last.

Crackers were the life of Diwali. We used to have varieties of it. My favourite was the Rocket. In an open area; place it in a bottle and light it. Up it goes and so does our dreams! It soars high. The enthusiasm as well as the fear that grips us when a rocket misfires or changes its course and goes parallel to the ground instead of going up is worth recollecting. The race to be the best was judged by the crackers we have. We shared crackers too and cared for each other. The three days of Diwali ensured unlimited fun. We visited each other and used to show off our new clothes. Whenever I visualize Heaven; it’s the Diwali evenings for me. House decked with flowers and beautiful rangolis outside the door, lanterns with colourful lights, lamps lit and crackers roaring. We hardly slept at night as getting ready for the next day. Over the years, life brought us more responsibilities. I came to Bahrain and my Diwali is confined to the four walls of the house. Unlike in Mumbai,

Bahrain has more of the South Indian population, whose Diwali celebrations are different as compared to the North Indians. The cultural diversity is very much evident here. The pomp and grandeur of Diwali; the festival of lights is missing. When I speak to my friends back in Mumbai, they say Diwali is not the same there now. Individuals are replacing groups and the concept of cooperative federalism is missing

there too. People are becoming more health conscious. The farals are now termed as high on cholesterol. Social awareness has led to decline of cracker usage and more and more people tend to have a quitter Diwali than louder ones. Some of the families have forgotten the art of making Diwali delicacies and they need the help of social media to educate them on it! Very soon this culture will become alien to us. Festivals are mirrors of culture. With the infux of time and modernity all festive celebrations are transforming into individual centric celebrations rather than a group centric. Author : Sukanya Ghosh Recipe Type : Dessert Cuisine : Indian Serves : 12 servings

Ingredients Grated carrot Finely grated fresh coconut Cardomom powder Jaggery powder Sugar Nutmeg powder Milk / coconut milk Khova Cashew and Raisins Ghee

: 2 cups : 2 cups : ¼ tsp : 1 cup : ½ cup or as required for the sweetness : a large pinch : ¼ cup : ½ cup : a handful : 3 tbsp or more Chopped pistachios for garnishing

Instructions 1. In a nonstick pan warm up the ghee, add the cashew and raisins. Fry them lightly. Add the grated carrot and fry them till the raw smell of carrot disappear. To this add the grated coconut along with milk. Give a nice stir and mix it well. Add further the jaggery powder, nutmeg powder, cardamom powder and khova. Mix them all together and keep stirring till everything incorporates well. 2. Lower the heat and cook further till the mixture becomes lumpy and comes together and dont stick to the pan. 3. Grease a tray, spread the mixture evenly, check for the thickness and let it set for an hour or more till it cools down. Cut it into desired shapes and enjoy. Bahrain101.com | October 2017

Diwali Recipe Malpua Malpua or the sugar syrup soaked pancake has its origin from the state of Orissa in India. People usually make Malpua in association with the festive season. Preparation Time Cooking Time

Ingredients: All Purpose Flour

: 500 gm

Sugar

: 750 gm

Milk

: 1/2 ltr.

Grated coconut

: 250 gm

Ghee/Oil

: 1 Ltr

How to Cook: 1. Brew milk until it becomes thick. Keep it aside to cool down. 2. Crush the dry fruits and powder the cardamoms. 3. Add All-purpose flour, sugar, dry fruits , coconut and Cardamom powder .Stir it till it becomes a paste. 4. Make banana paste and add it into the already prepared paste. 5. Hot oil in a pan. Make round shaped balls of the paste and flatten them with your hand. 6. Fry these till they turn red.
