DID YOU KNOW? While it might be synonymous with Santa Claus and cold weather, the North Pole is actually much warmer than the South Pole. That’s because the North Pole sits at a lower elevation than the South Pole, and it is located in the middle of an ocean. The South Pole, on the other hand, is located on the continent of Antarctica, which is covered in ice. But Santa fans mulling a trip to the North Pole to visit jolly old St. Nick might want to think otherwise, as temperatures at the North Pole are less than welcoming. Summertime temperatures at the North Pole, for example, hover right at the freezing point. In addition, because of the way Earth rotates, the North Pole experiences just one sunrise and one sunset each year. However, because the sun is always above the horizon in the summer and below the horizon in the winter, the North Pole actually experiences 24 hours of sunlight in summer and zero hours of sunlight in the winter. While children in North America know the North Pole as home to Santa Claus, that’s a relatively recent addition to the legend of Santa Claus, a story that some historians suggest traces its origins all the way back to the third century. Historians credit famed 19th century caricaturist and editorial cartoonist Thomas Nast with being the first to link Santa Claus and his workshop to the North Pole. Creamy Mashed Potato Casserole Ingredients: 3 pounds russet potatoes, peeled and diced into 1-inch pieces 1 package Simply Organic French Onion Dip Mix 1/2 cup sour cream 1/2 cup cream cheese 1/4 teaspoon salt 1/4 cup butter, cut into pieces Directions: Place potatoes in a large pot. Cover with water. Bring to a boil. Reduce heat and simmer for 15 to 20 minutes, or until tender when pierced with a fork. While potatoes are cooking, combine dip mix, sour cream, cream cheese, and salt. Stir until well mixed, and set aside. When potatoes are tender, drain off the water. Add the sour cream mixture and butter to the potatoes. Mash potatoes using a hand-held mixer or potato masher. Place in a greased 3-quart casserole dish. Bake at 350 degrees for 35 to 40 minutes, uncovered.

(ARA) - As families have gotten busier, traditional mealtimes have become more of a novelty than a necessity. While careers and activities keep many away from the family dinner, missing those meals is leaving more of an impact than many suspect. While many acknowledge that sitting down to eat creates family bonds and opens lines of communication, many don’t realize that missing those meals can contribute to childhood obesity. The most recent data from the Centers for Disease Control shows that more than a third of U.S. adults are obese. Perhaps more alarming is that the number of obese children has tripled in the past 30 years, to 17 percent. Because of all of the associated health risks of obesity, it is possible that the current generation of children may be the first generation whose life expectancy will not be greater than their parents. “In terms of healthy eating habits, family meals are one of the most powerful tools available. Research has consistently shown that children and adolescents who eat more family meals are less likely to be overweight or obese. In addition, children who eat dinner with their families consume more fruits and vegetables than those who don’t,” says Sherry Rieder, Ph.D., an obesity expert and assistant professor in Argosy University’s College of Psychology and Behavioral Sciences online programs. “If children learn about realistic food portions and healthy food options from a young age at family dinnertime, they are more likely to carry these habits with them into adulthood.” In addition, regular and routine family meals add needed structure to a child’s day. “In my family, we have a designated dinner time,” says Victoria Hooker, assistant director of Culinary Arts at The International Culinary School at The Art Institute of Dallas, a branch of South University. “There’s no snacking before dinner, which means I know my family will be ready to fill up on a good meal as opposed to eating junk food. Family meal time is something parents can do now to fight childhood obesity. What’s best is that they can do it without any outside advice or help.” Rieder agrees and adds, “Getting kids involved in preparing food is a great way to teach them about healthy and balanced eating. Children are far more likely to eat food that they helped prepare - so get them to help prepare vegetables. Focus on consuming fruits and vegetables whenever possible and avoid sweetened drinks like sodas and juices.” For busy families who may not have much time to cook, a little planning can go a long way. “Even if the whole family cannot sit down at one time, eating home made meals is often a better alternative than eating take out food,” says Rieder. “One trick is to try to stock up on some easy-to-prepare meals at home for those evenings when everyone is running late and feeling the stress of a long day. Another alternative is to prepare extra portions when cooking meals and freeze half.”

Why Is Alcohol Banned With Antibiotics? DEAR DR. ROACH: I’m confused about the medical rule not to drink any alcohol while on antibiotics. After doing Internet research on reputable sites, I found, to my surprise, that the overwhelming medical opinion is that moderate alcohol use does not render most antibiotics ineffective. I do understand that alcohol should not be used with specific antibiotics, e.g. Flagyl, because of adverse physical reactions. I read that the warning not to mix alcohol with antibiotics stems from doctors fearing patients taking antibiotics to cure STDs would have lowered inhibitions and engage in unprotected sex. Could you please set the record straight for the public on this subject? -- K.L. ANSWER: I never learned the rule that alcohol shouldn’t be taken while on antibiotics, with the exception of metronidazole (Flagyl), the combination of which causes extremely unpleasant nausea and vomiting, headache, shortness of breath and other symptoms. This reaction can happen to a lesser extent with sulfamethoxazole (a component of Bactrim or Septra) as well as other, less commonly used antibiotics such as tinidazole and some cephalosporins. The antituberculosis drug isoniazid can cause liver damage in combination with excess alcohol. In general, if you are sick enough to need antibiotics, it is prudent to avoid alcohol, and certainly to avoid excess alcohol. But alcohol does not render antibiotics ineffective. Preventing STDs is much better than treating them, since not all can be cured. Part of being sexually responsible is making good decisions. You are correct that people are more likely to make unwise decisions with even moderate amounts of alcohol. That’s true with or without antibiotics. *** DEAR DR. ROACH: I suffered from a very painful case of plantar fasciitis for longer than a year when my husband and I (both in our 40s) discovered that we were expecting a baby. I was terrified over the prospect for several reasons, including the already painful state of my feet. It turned out that my plantar fasciitis was completely cured by the end of my pregnancy. Now, at 47, with a darling 3-year-old, I’m wondering if there is any way of preventing the condition from returning. My OB/ GYN guessed that perhaps the hormones that make a pregnant woman more “stretchy” are behind my cure. Do you have any ideas about this? -- B.R. ANSWER: Plantar fasciitis is an inflammation in the strong band of connective tissue that runs from the heel to the toes and supports the foot. The major symptom is pain with walking, especially with the first step of the day. Pregnant women are indeed more likely to suffer from plantar fasciitis. Most authorities feel it is the relatively fast weight gain of a normal pregnancy, but some blame the hormone relaxin, which loosens the pelvic and other ligaments. This can change your gait and cause abnormal stresses on the feet, causing plantar fasciitis. Your obstetrician is suggesting that relaxin is acting on your already-existing plantar fasciitis, which I haven’t heard of, but it is an interesting thought. For prevention, regular stretching of the calf muscles, wearing shoes with good support and maintaining a healthy weight can help prevent recurrence. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible. Cooking for one or two Seniors face many changes as they move into their golden years. Downsizing living spaces and vehicles is common, as is implementing certain changes to improve quality of life. Many seniors also scale back in the kitchen, where some must make changes because of medical conditions. While it seems like reducing food portions would be easy, those used to prepping meals for a large family may find it difficult. The following tips can make meal preparation efficient and cost-effective. • Divide and store. Supermarkets are increasingly offering larger packages of food products as well as “family size” offerings to compete with warehouse clubs. Buying in bulk can help individuals save money, but it may not always be practical for people living alone or with just a spouse. If you must buy in bulk, invest in a food vacuum sealer or freezer storage bags. Immediately separate meats and poultry into smaller portions before storing them in the freezer. Otherwise, look for bulk items that are individually wrapped to maintain freshness. Many canned and jarred items can be covered and stored in the refrigerator after containers are opened. • Plan meals with similar ingredients. To reduce food waste, use leftovers to create casseroles or mix them in with new meals. Broiled or grilled chicken can be used to make soups, stir-fry dishes, fajitas, and sandwiches. The fewer ingredients you have to buy, the smaller the risk of spoilage.
• Cut recipes in half. Recipes can be cut down depending on how many mouths need to be fed. When baking, cutting back on proportions of ingredients can be challenging. Search online for recipe-scaling programs that can make the work easier. • Cook on the weekend. Use a weekend day to prepare food and package it into small containers in the refrigerator or freezer. Then the containers can be taken out as needed and heated quickly in the microwave for fast meals. • Organize a meal-sharing club. Get together with a few friends who also have empty nests and split cooking duties. If you’re accustomed to cooking larger portion sizes, do so and then spread the wealth with others in the group. Then sit back and relax when it is your opportunity to have meals delivered to you.

When and why did the relatively new custom of the bridal couple “smashing” pieces of their wedding cake into each other’s faces become acceptable, expected and/or cute? In most cases, within hours of the performance, the couple has stood “in the presence of God and this company” and promised to care for and honor each other. Are they breaking a solemn vow almost immediately? If at another time, they acted in a similar manner in any public place, at the least they would be asked to leave. In a more serious instance someone could be charged with assault/ battery. I think this is so hypocritical whenever I read about fundraisers for schools, sports & sponsored by healthcare organizations, and the tickets for sale note ‘alcoholic beverages’, like wine, beer, cocktails. Alcohol is becoming the top killer of young people and innocent victims. So many people need help through health care

facilities for alcohol addiction, and yet, fundraisers still include alcoholic beverages. In today’s tumultuous society, alcohol exasperates problems instead of reducing them. Is it time for “Alcohol-Free Communities”? It has worked for Smoke-Free communities, now we need to do the same for alcohol. Healthcare costs are higher from alcoholrelated costs, inc. domestic violence, addiction, diabetes, cirrhosis of the liver, mental health, car/boat accidents, etc. You may not agree with this young man’s protest, but the FIRST Amendment of the U.S. Constitution gives him and every other American the right (and some might point out also the duty) to free speech. Those who fought and died for this country fought and died for this very right. And exactly why does his protesting injustice mean he has to give up his living? The very fact that he is a famous football player gives him a larger voice to use in protest so that maybe more people will listen. Also, if you had bothered to “Google” his name, you would have found out that he was born in Milwaukee, WI, which, last time I checked, is still part of the U.S.A. The more you know...

The Churchville-Chili Chapter of National Honor Society (NHS) recently made school history by inducting 114 new members in a ceremony at the Churchville-Chili PAC. The school has never had so many outstanding students qualify for this honor before. The evening included a chance for members, families and guests to hear from the newly elected club officers who were selected in September and the 2016 Churchville-Chili Teacher of the Year, Kevin Mead. Senior officers for the 2016-2017 school year are: Dana Damiani (President); Kate Wilson (Vice President); Emma Bennett (Treasurer) and Anna Kostarellis (Secretary). Each of the officers shared a brief message with the audience on one of the four criteria for membership in NHS: leadership, character, service and scholarship. The Teacher of the Year award is an honor that goes to a teacher who makes a real difference in the lives of students. Music teacher Mead was nominated last spring by current members of the NHS and the final selection was made by the club officers. This is the second time Mead has received the award. During the ceremony, current members

escorted new members across the stage while biographies from their applications were read by the club officers. District Superintendent Lori Orologio, Senior High School Principal William Geraci and Teacher of the Year Mead greeted and congratulated each student personally. New members received a certificate and signed their name in the club registry. “This is always one of my favorite nights of the school year,” said NHS Advisor Paul Glor. “I’m excited about the volunteer opportunities coming up this year and the chance to work with this amazing group of young men and women.” The club is planning several group activities including fall yard work in the community, ringing bells for Salvation Army and participating in the Daniel’s 5K. The National Honor Society (NHS) is the nation’s premier organization established to recognize outstanding high school students. More than just an honor roll, NHS serves to recognize those students who have demonstrated excellence in the areas of scholarship, leadership, service, and character. These characteristics have been associated with membership in the organization since its beginning in 1921.

Bake a batch of sweet sugar cookies Holiday baking is a tradition that stretches through time. What person doesn’t look forward to the treats the season brings? Cookies are often gifted to friends and family members, and they usually help complete the dessert offerings after the holiday meal. Sugar cookies are an ideal holiday cookie because of their versatility. They can be dressed-up however you see fit, whether iced, covered in sprinkles or enjoyed as they are dunked in hot cocoa. To make successful sugar cookies, try this triple-tested recipe courtesy of Monica Buck and Good Housekeeping.
Sugar Cookies Yields: 5 dozen cookies 1 cup (2 sticks) butter (no substitutions), softened 1/2 cup sugar 1 large egg 1 tablespoon vanilla extract 3 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt Frosting (optional) Coarse sugar crystals, silver dragees, holiday decors (optional decorations) 1. Preheat oven to 350 F. In large bowl, with mixer on low speed, beat butter and sugar until blended. Increase speed to high; beat until light and creamy. On low speed, beat in egg and vanilla. Beat in flour, baking powder and salt until blended. 2. Divide dough into 4 equal pieces; flatten each piece into a disk. Wrap each disk with plastic wrap and refrigerate 1 hour or until dough is firm enough to roll. (Or place dough in freezer 30 minutes.) 3. On a lightly floured surface with a floured rolling pin, roll 1 piece of dough 1/8 inch thick. With floured 3-inch to 4-inch cookie cutters, cut dough into as many cookies as possible; wrap and refrigerate trimmings. Place cookies, 1 inch apart, on ungreased large cookie sheet. 4. Bake cookies 10 to 12 minutes or until lightly browned. Transfer cookies to wire rack to cool. Repeat with remaining dough and trimmings. 5. When cookies are cool, decorate with frosting if you like; use along with sugars and candies to decorate cookies. Set cookies aside to allow frosting to dry completely, about 1 hour. Store in tightly covered container (with waxed paper between layers if decorated) at room temperature up to 2 weeks, or in freezer up to 3 months.

The body, which converts the foods we eat into glucose that energizes our brains and promotes alertness, processes different types of foods differently. So the food you eat for lunch may affect your energy levels for the rest of the day. For example, eating pasta provides a quick burst of energy because pasta releases glucose quickly. But that burst is often followed by a noticeable downturn in energy levels sparked by fading glucose levels that make it difficult for the brain to focus. In contrast, fruits and vegetables aid in the production of dopamine, a neurotransmitter that helps the brain stay motivated and engaged. Including some fruits and vegetables in your lunch or snacks may just lead to a more productive workday.
Peer Bridger The Peer Bridger provides peer support services to people transitioning from psychiatric facilities into their own communities through individual and group peer support meetings. This is a PT position (20 hours per week) stationed in Batavia, NY that requires significant travel and use of own vehicle throughout Genesee and Orleans Counties. Responsibilities include working with individuals to form trust-based relationships that foster hope for positive change & personal empowerment; Maintains personal wellness; Completes detailed written documentation of activities; Attends trainings as required and assigned by supervisor; and performs other duties as required and assigned. Qualifications: Must be a peer (a person who has themselves struggled with a mental health condition, past or present) or a family member of a peer. Demonstrated experience with and knowledge of New York State mental health systems; Demonstrated knowledge of advocacy, self-help and empowerment programs for recipients of mental health services; Flexible schedule occasionally including evenings and weekends; Must have own vehicle, clean driving record, and adequate automobile insurance coverage; New York State Certified Peer Specialist certification preferred, but not required. $13.25 per hour with pro-rated PT benefits including approved mileage reimbursement.
