SPICY STEAK TAMPICO

4 beef tenderloin medallions (each 6 ounces and 3/4-inch thick)

2 tablespoons olive oil

Seasoned salt and freshly ground black pepper

1 cup roasted green chile peppers (see below)

1 cup shredded Monterey Jack cheese

1. Brush steaks thoroughly with olive oil. Season with salt and pepper

2. Place medallions on preheated grill, close lid and grill, turning once, until an instant-read thermometer registers 145 F for medium rare, 5 to 8 minutes per side. Transfer to a plate, tent with foil and let stand for 10 minutes.

3. Preheat broiler with rack 3 to 4 inches away from heat. Place steaks on individual ovenproof plates. Top each steak with equal amounts of chile and cheese. Broil until cheese melts, about 2 minutes. Serve immediately. To roast chiles: Preheat greased outdoor grill to medium or preheat an oven broiler. Place fresh chiles on outdoor grill or gas stovetop over medium heat or arrange on a baking sheet and place 2 to 3 inches away from heat under broiler. Grill or broil, turning often with tongs, until surfaces of skin are lightly charred and blistered. Immediately place peppers in a paper bag or an airtight container and close tightly. Let peppers cool for 12 to 15 minutes. Peel off charred skin and remove stems and seeds. Tear into strips or chop as needed according to the recipe. Wash your hands thoroughly after handling chiles. Refrigerate peppers for up to 3 days or freeze in airtight container for up to 6 months.

One of the ways homeowners can keep their lawns looking lush and green is to aerate the turf when the need arises. Aerators perforate the soil with small holes. These holes allow air, nutrients and water to penetrate all the way to the roots, helping them grow deep and strong. Deep, strong roots are essential to healthy, lush lawns. While aeration can help many lawns, not every lawn will necessarily need to be aerated. Lawns that get heavy use, such as those that are often played on by children or pets, will likely benefit from periodic aeration. Feeling the lawn also can help homeowners determine if it needs to be aerated. Lawns that dry out quickly or feel spongy may be overcome with thatch, which can prevent lawns from getting the air, water and nutrients they need to thrive. Lawncare professionals recommend aerating lawns that contain thatch that is more than one-half inch. Thatch also can foster grub infestations, providing another benefit to removing it and aerating a lawn. When to aerate depends on the type of grass. Homeowners should consult with a lawncare professional about the best time to aerate their particular lawns, but it’s generally recommended that cool-season grasses be aerated in early spring or fall, while it’s best to aerate warm season grasses in late spring.

What can I do to guarantee my perennials come back in the spring? For example, my lavender didn’t make it through this past winter. I planted last May and it had good blooms.

When it comes to gardening, guaranteeing anything can be risky business. There are just so many variables to consider. We can, however,doourresearchandincrease ourchancesof success.

When planting perennials, such as lavender, one of the first things to check includes hardiness of the particular variety or cultivar you are planting. Lavender originated in the

Mediterranean regions and prefers fullsun,dryair,andwell-drainedsoil. It does not require a lot of fertilizer. Sandyorgravellysoilwilldojustfine. Therootsneedtobreathe.

There are a number of different cultivars to choose from available from commercial nurseries. French lavender and Spanish varieties are not hardy in most of the Northeast (e.g. French lavender – zone 7-9). The less hardy cultivars may grow well and bloom for one summer season but will not survive our winters. Be sure to check the hardiness of any perennial you are considering planting. The World Health Organization notes that childhood obesity rates are on the rise across the globe, but things may be improving in the United States. According to the WHO, as of 2014, an estimated 41 million children under the age of five were overweight or obese. But while childhood obesity is on the rise in Asia and Africa, the U.S. has made strides in its efforts to curb childhood obesity. In 2004, 13.9 percent of children in the United States qualified as obese. By 2012, the figure had dropped to 8.4 percent. That’s welcome news in the U.S., as the WHO notes that children who are obese are likely to remain obese as adults, increasing their risk for heart disease, type 2 diabetes and asthma. There also are economic incentives to reducing childhood obesity, as the Robert Wood Johnson Foundation notes that the tab for America’s obesity epidemic is roughly $117 billion per year. Those costs include lost productivity at work and the medical expenses that can be directly linked to obesity.

KIDS AND SLEEP

School-aged children are busier than ever before, and some may be sacrificing sleep to accommodate their lifestyles. The National Sleep Foundation says school-aged children need between nine and 11 hours of sleep each night to function at a healthy level. Sleep deprivation can be linked to a host of health ailments, including issues affecting the development of the brain. Growing evidence suggests that lack of sleep can cause disturbances in metabolic rates that could affect the risk for cardiovascular disease, diabetes and obesity. A recent study from Johns Hopkins University found that, for each additional hour of sleep a child gets, the risk of that child becoming overweight or obese decreases by 9 percent. Children who slept the least, according to the research, had a 92 percent higher risk of being overweight or obese compared to children with longer sleep duration. The NSF adds that poor or inadequate sleep can lead to mood swings, behavioral problems and cognitive problems that impact kids’ ability to learn in school. Nurse Claims Wound

Must Heal From the Inside Over Time

DEAR DR. ROACH: Whenever I got a wound while I was young, my mother would take me to the hospital to get stitches. I am now 94. I went to get a wound seen, and the nurse said that it needed to heal from the inside. They treated it with gauze, wrapping and then a stocking. It took months to heal. Why the big change? Why couldn’t they have just put in stitches and saved me months of healing?

ANSWER: A wound can be sutured (stitched) closed when it is new, clean and regular. A wound cannot be closed if it is infected or irregular. Most chronic wounds cannot be closed by stitching. Also, if there is a lot of swelling around the wound, there may be so much pressure that the wound cannot be closed and must be allowed to heal over time. This is often the case with larger wounds.

Basic principles of wound healing are to treat and prevent infection by bacteria or other germs, control pain and bleeding, and avoid treatments that are toxic to open wounds. I hear very frequently from people who have mistreated wounds. Strong agents like hydrogen peroxide, iodine, bleach and even soaps will kill more of your body’s healing cells than bacteria, and they should not be used in open wounds.

I also hear people say wounds “need air,” but wounds heal faster when they are moist. A barrier like petrolatum (Vaseline or many other proper wound-care agents) and a clean cover will accelerate wound healing. Most wounds do not need topical antibiotics, and these should only be used when recommended by an expert. The best experts for wound care are wound-care nurses and, in extreme cases, vascular or plastic surgeons. It takes time for a wound to heal. How much time depends on many factors, but a time span of months is not unusual, especially with a person in their 90s, who may not have the same blood supply they had when they were much younger.

The demand for qualified, talented nurses figures to grow in the years to come.According to the U.S. Bureau of Labor Statistics, more than half a million nurses are expected to retire by 2022. Couple that with an existing nursing shortage, and the BLS projects a need for 1.1 million registered nurses in the near future. A shortage also figures to affect Canada, where the Canadian Nurses Association recently estimated that the country would be forced to confront a nursing shortage of roughly 60,000 nurses by 2022. Various factors are contributing to the nursing shortage in both countries, including an increasingly large aging population that will require more and more nurses to meet its health care needs. In the United States, the Affordable Care Act, which was passed in 2010, increased access to health care for millions of people across the country, thereby creating a greater need for nurses and other health care professionals. In addition, a greater emphasis on preventive care in many countries across the globe figures to compel more people to visit their physicians even when they’re otherwise feeling healthy. As more people prioritize preventive care, the need for more nurses will likely increase.

Should I Withhold Water From My Puppy to Aid Housetraining?

DEAR PAW’S CORNER: I purchased a puppy who is 2 months old from a breeder in another state. I’m having trouble housetraining her. She drinks water all day, but she can’t hold her pee and ends up wetting on the oor. I work from home, but I can’t catch her and correct her. Instead, I think I should just take the water bowl away for most of the day. Will that work? -Frustrated in Tallahassee

DEAR FRUSTRATED: Do not take away the water bowl. Pets should always have access to water, regardless of their housetraining status.

Puppies have really tiny bladders and cannot hold their water for very long. So they pee much more frequently than you realize. But they shouldn’t have to su er and be thirsty just because their accidents are inconvenient for you.

One great piece of advice here is to create a puppy playpen and line it with pee pads, as well as water-resistant chew toys. As your puppy grows and gets better at holding their bladder and understands your commands better, gradually take away pads until there is just one “target” in the pen.

Above all, be patient with your new puppy. She is starting out in a whole new world, in a tiny body that is constantly changing and growing. Set a routine with frequent outdoor potty breaks in the same spot. Reward her when she pees outside. She will get this -- eventually!

Shout out to the Mary Immaculate Parish Community in East Bethany for the delicious chicken BBQ Sunday, 5/21. The service from volunteers there is always so welcoming. It is great to see a supportive community come together. Thank you!

It’s the little things that brighten my day I love when I see people hold a door open for a stranger, pick up something a passerby dropped, or simply smile at each other. This life is hard enough without people ignoring each other and living in their own little worlds. I love seeing humanity shining on each other.

Thanks to the Avon Garden Club

Every year the members of this club do an amazing job planning, planting and weeding the gardens in and around our downtown and Circle Park. Much gratitude to those who give of their time and talents to make our town a more beautiful place.

I am a senior citizen with multiple health concerns and find it difficult to walk great distances. I rarely shop the big box stores because it is too difficult. I purchased a patio chair online with the option for curbside pick up. I checked in upon notification of readiness and was assigned a pick up slot. When I got to the store, the slot was not there and neither was a clerk. I do not text nor do I do apps so I was out of luck in getting help. I ended up having to walk into the store to get help which also was not available. PLEASE…could some consideration be given to us! Many of us still live in our homes and are consumers, but we choose not to text or to have smart phones. Yet we need help in accessing purchases. I told the kind clerk who did finally help me to pass on this message. Will it make a difference? I hope so but doubt it. - A senior who was quite frustrated!

Walking in the Woods

From one dog walker to another… I bet you love taking your dog for walks on trails around town as much as I do. Have you noticed all the lovely trillium, trout lilies, and may apple popping up this spring? Have you also noticed the brightly colored bags of dog poop dropped along our trails? Did you leave one, thinking you’d grab it on your way back? I hope you remember to do that, but even so, I’d rather not see it on my walk in the woods. Please carry it with you. I do and it’s no big deal. Thanks and see you on the trail!

Wasted Water

Our water supply is being threatened, especially in the west. Recently traveling and going through airport security, as usual, I had a half used bottle of water and had to discard it in order to pass through security. What a waste. There must be some way to reclaim this precious resource and not just at airports.

MEMORIAL DAY: REMEMBER THOSE WHO PAID THE ULTIMATE SACRIFICE

Memorial Day is a day to remember and honor the brave menandwomenwhoservedintheUSmilitarytoprotect our freedoms but who lost their lives in that service. Memorial Day serves as a solemn reminder of the sacri ces our servicemembers make each day.

Communities converge with school and local bands, honor guards, dignitaries, service groups, and other citizens and community organizations to celebrate and honor the fallen. But why do we celebrate as we do?

Memorial Day’s origins trace back to the years following the American Civil War, with its birthplace o cially designated as Waterloo, NY. e Seneca County town of 5,000, centrally located between Rochester, Syracuse, and Ithaca, became known for its role in the Women’s Rights movement because a lot of the planning for the famous 1848 Seneca Falls convention occurred in Waterloo at the Hunt and M’Clintock houses. However, in 1866, Waterloo held the nation’s rst formal remembrance of veterans who died in the Civil War, and the US government recognizes the town as the o cial birthplace of Memorial Day.

According to Waterloo history, in 1865, Henry C. Welles “watched as a lone widow walked to the cemetery to place owers on the grave of her deceased Civil War soldier husband. How soon they forget, Welles thought, resolving to do something to make sure that those who gave their lives in defense of their country would not be forgotten.” Welles suggested placing owers on the graves of the “patriotic dead” from the Civil War, but nothing happened that rst year.

When Welles mentioned it the following year to General John B. Murray, a patriotic Civil War hero, the two began plans for a local citizens’ committee to celebrate the soldiers who gave the ultimate sacri ce for their country (waterloony.com).

On May 5, 1866, with ags half-sta , the Village of Waterloo was “draped with evergreen and mourning black,” and a parade of veterans, civic groups, and residents marched to the three village cemeteries, where ceremonies celebrated soldiers whose graves were then decorated. So began the annual tradition of recognizing soldiers who served and died for the US.

In 1868, General John A. Logan, a “political general” in the Union Army, declared the rst national Decoration Day, May 30th, time to decorate the graves of the fallen and honor their sacri ces through ceremonies.AccordingtotheUnitedServiceOrganizations(USO), on May 20, 1868, more than 5,000 people decorated the graves of the 20,000 Union and Confederate soldiers buried at Arlington National Cemetery.

In May 1966, the State of New York o cially declared Waterloo, NY as the birthplace of Memorial Day, celebrating the centennial of the patriotic tradition. In 1971, the US Congress declared the federal holiday of Memorial Day to be celebrated on the last Monday each May.

Communities across the area and nation celebrate Memorial Day, coming together for parades and traditions. Waterloo retains its historic traditions, hosting a special Celebrate Commemorate Memorial Day event the weekend of May 26-28th. is event hosts Civil War reenactors from across the Eastern US, including infantry, signal corps, artillery, and fraternal organizations. Encampments with reenactors present Living Histories of Civil War camp life. Reenactors serve as dignitaries, President Lincoln, Frederick Douglass, Harriet Tubman, Dr. Mary Walker, and spy Belly Boyd, a Northern sympathizer, and Reverend Scott.

Saturday, May 27th features a parade with wounded warriors from the Canandaigua VA Hospital, motorcycle riders from the Patriot Guard and American Legion, as well as bands, oats, and military groups.

On May 30th, which Waterloo always observes as Memorial DayinkeepingwithLogan’sOrders,childrenwilldecorateveterans’ graves,therewillbeprayerservicesinthevillagecemeteries,andthe village’s VFW and American Legion will conduct a military parade at 4 pm. Ceremonies in Lafayette Park will feature government o cials and special dignitaries.

Memorial Day 2023 marks Waterloo’s 157th consecutive Memorial Day observance. Last year’s commemoration included the dedication of the Purple Heart Wall of Honor in Lafayette Park. is Memorial Day, check out Waterloo’s Celebrate Commemorate event and/or pay respects in your own town. Je rey A. Sabo – e Lord called him home May 15, 2023 surrounded by his loving family. Je was born to Joseph and Carol (Peck) Sabo on June 28, 1956.

He grew up in the No. Cohocton area and graduated from Wayland Central School in 1974. While in high school, he was selected to bein the school’s foreign exchange student program and was able to go to Brazil. He was so proud to have had that opportunity in his life. He always said he wished he could go back there some day. His host family was just wonderful. A few years back, he reconnected through the internet with one of his host brothers, Tomas. e Sabo family also had the opportunity to be a host family to a foreign exchange student, Paco Garza, who Je was able to see prior to his passing.

After High School, he attended Geneseo State for approximately two semesters. He spent most of that time hanging with fellow musicians and drama students in the Fine Arts building instead of going to his scheduled classes.

After his time in college, Je moved to Texas in 1977 where his brother, Mark was building power plants. With Je ’s past work experience with the Town of Cohocton over the summers, he discovered his gift for working with his hands, pouring concrete. Having this experience and some knowledge of masonry work, he was able to secure a position alongside Mark building power plants as well. He was initilly hired-on as a concrete nisher, yet quickly moved up to Journeyman status. It was hard work; but he put everything he had into it every day.

While in Texas and after his power plant days, he joined Royce Zbranek doing residential construction in LaGrange, TX alongside his brother Mark, yet again. Later, Mark formed Sabo Enterprises where Je was able to advance his building knowledge of construction. Je and Mark’s working history remained intact to include employment at Martin’s Lonestar Boat Factory building custom boats.

While home from Texas in 1979 for Christmas, he met his wife, Linda (Carney) of Wayland. ey were married on August 22, 1981 in LaGrange, Texas, where they lived and started their family. He and his wife, Linda, along with their three children returned to the No. Cohocton/Wayland area in 1988.

Je ’s love for music and playing drums allowed him to play many types of music, working with many fellow gifted musicians in a variety of bands. His love of Rock-N-Roll, County (old and new), Blue Grass, Blues, and a special love for the Big Bands and Jazz allowed him to be an asset to any band, of any genre, at any time. A few bands he was most connected with while returning to his hometown area were Angles and Outlaws, e Bruce King Band and e HOGS. While a member of Angels and Outlaws, he was able to play alongside his brother, Joe and his sister-in-law, Donna (McNinch) Sabo. Everyone who witnessed Je ’s gift of playing drums knew and felt they were in the presence of greatness. Je ’s knowledge and gift of music were passed down to his children and grandchildren. He always said that he wished he could go back to school and become a music teacher. Ironically, he already achieved

this goal naturally by teaching anyone to whom he came in contact with.

Je also had a love for drama and theatre. He performed in many productions at Wayland High School and Wayland Community eatre throughout adulthood. Some of his fondest memories on stage were performing in Macbeth, Man of La Mancha and Deadwood Dick. If Je wasn’t performing an acting role on stage, he was found accompanying several productions as the drummer in the pit band. But let’s face it, if you knew Je , did he really ever stop performing? He truly remained theatrical until his dying day.

After he and his family returned to New York, he went to work for his other brother Joe alongside Mark under Sabo Construction. His many years of construction took a toll on his body, forcing him to seek employment in other ways. He went to work for Star Headlight and Lantern Company in December of 1995 and worked there for 25 years until his retirement in January of 2020.

Je was kind and funny with a laugh that was infectious and distinctive, a great musician in whom some would describe as a bit full of himself and a fantastic basketball and soccer player. However, he was a poor story and joke teller, yet still managed to make anyone listening laugh. He also enjoyed his intimate conversations with lifelong friends, especially while tipping a few back. He also loved to sh and cook Texas BBQ, for which he was able to teach such techniques to both his sons. His time shing was precious to him. It provided him time to re ect with God, music, and family.

Je was predeceased by his mother, Carol E. (Peck) Sabo, his estranged father, Joseph Sabo, his Great-Grandmother & GreatGrandfather Peck, his Grandparents, Mildred & Adrian Peck, and his brother, Mark Sabo as well as his in-laws, Richard & Betty Carney. Mary and Nicholas Elderkin were married September 22, 1973 and never stayed a night apart since then. ey celebrated over 52 years together and had a very special life together. Mary’s hobbies were many. She enjoyed her two parakeets, collecting knick knacks that included: wind chimes, salt and pepper shakers and stu ed animals. She had a life size Raggedy Ann and Andy set! Going for rides with Nick and watching the leaves turn color in the fall were favorites of hers as well. Mary’s family was the most important to her though. Her husband, children, grandchildren, great-grandchildren and siblings all held a very special place in her heart. e family bonds are strong and the love runs deep. She will be missed by them all.

Mary was predeceased by her parents, Richard and Ester Bremiller; her son, Michael Spencer; and as one of 15 children, Mary had 8 siblings that have passed away. She is survived by her loving husband of over 52 years, Nicholas J. Elderkin of Wayland; her children, Bonnie Carlberg (Lonnie Strong) of Wayland, Lynn (Debbie) Spencer of PA, Connie (Darrin) Wright of Wayland and Joseph Spencer of Springwater; many many grandchildren and great-grandchildren; 6 of her siblings; along with many nieces and nephews.
