DID YOU KNOW? According to the U.S. Department of Labor and data from the U.S. Census Bureau, registered nurse is the most common occupation for women in the United States labor force. Slightly less than 2.1 million women worked as registered nurses in 2017, the most recent year for which statistics are available. Such figures are harder to come by in regard to Canada, but Statista reports that the labor participation rate among women in Canada in 2018 was right around 64 percent. That rate marks a slight decrease from its 21st century peak in 2005, when 66.7 percent of women were active members of the Canadian workforce. In the United States, more than two million women worked as secretaries or administrative assistants in 2017, making these professions the second most common occupation among female workers. Elementary and middle school teachers was the third most common occupation for female professionals, employing more than 1.9 million women in 2017. Data from the U.S. Census Bureau also indicates that women have the lion’s share of jobs in an assortment of professions, including preschool and kindergarten teachers, secretaries and administrative assistants, childcare workers, and dental assistants. Women hold at least 92 percent of the jobs in each of those professions in the United States.

Chocolate Raspberry Bars

1 cup vanilla/white chocolate flavored chips - melted GLAZE

3/4 cup semi sweet chocolate chips

2 T shortening

In a bowl, combine & X sugar, cut in butter until crumbly. Press into an ungreased 9 inch baking pan. Bake @ 375 for 15-18 minutes until browned. Spread jam over warm crust. In a small mixing bowl, beat cream, cheese, and milk until smooth. And vanilla chips and beat until smooth. Spread evenly over jam layer and cool completely then chill in refrigerator until set-about one hour. For the glaze, melt chocolate chips, and shortening, spread overfilling & chill for 15 minutes. Cut into bars, then chill another hour

Store in the refrigerator -makes about two dozen

The demand for qualified, talented nurses figures to grow in the years to come.According to the U.S. Bureau of Labor Statistics, more than half a million nurses are expected to retire by 2022. Couple that with an existing nursing shortage, and the BLS projects a need for 1.1 million registered nurses in the near future. A shortage also figures to affect Canada, where the Canadian Nurses Association recently estimated that the country would be forced to confront a nursing shortage of roughly 60,000 nurses by 2022. Various factors are contributing to the nursing shortage in both countries, including an increasingly large aging population that will require more and more nurses to meet its health care needs. In the United States, the Affordable Care Act, which was passed in 2010, increased access to health care for millions of people across the country, thereby creating a greater need for nurses and other health care professionals. In addition, a greater emphasis on preventive care in many countries across the globe figures to compel more people to visit their physicians even when they’re otherwise feeling healthy. As more people prioritize preventive care, the need for more nurses will likely increase.

Dangerous E-Bike Riders

I left my wallet/phone in a cart at Henrietta Wegmans. When I realized it, I went into major panic mode! I drove back to Wegmans, nearly hyperventilating. At the Customer Service Desk, I saw it on their back counter, and we were reunited. I can’t even explain the relief I felt. To the person who turned it in - you are the best that ever lived!! You probably can imagine how panicked I was. I wish I could give you a big hug!! Thank you, thank you, thank you SOOO much!! God bless you!

Lately, I’ve come close to hitting e-bike riders riding on the wrong side of the road, in the dark, without lights and going way too fast. Bikes in their purest form are designed to help the rider get an assist going up hills. Some e-bikes are nothing more than simple motorcycles going way too fast and, in this case, riding on the wrong side of the road. You are a danger to yourself and others.

Thank you to the gentleman who stopped November 14 on Summers Street, Livonia to check on my welfare. I had just given blood and felt faint which prompted me to sit down on the ground. His kindness and concern warmed my heart and reminded why I love small town people. A simple act of kindness changes everything!

Around this time of year there is a craft project often done with young kids to make reindeer food. This mix of seed, grains and glitter is sprinkled outside to feed Santa’s reindeer. It is mostly eaten by birds and other wild animals. Adding glitter to this food endangers the life of animals. The chemicals in glitter can damage immune and reproductive systems. Also, most glitter is made from PET plastic. It can break down and release chemicals that disrupt animal hormones. When making reindeer food, please leave out this toxic ingredient and make a product that is safe for all. Your kids won’t miss the glitter and you’ll be helping out wildlife.

SERVE POTATO PANCAKES FOR HOLIDAY CELEBRATIONS

Serves 12

3 large potatoes, peeled and shredded

1 small onion, shredded

3 large eggs

1 teaspoon salt

2 tablespoons all-purpose flour, or as needed

1/2 cup vegetable oil

Toppings: Sriracha sauce

Vegan coconut yogurt

1. Place the potatoes and onion into a bowl, and stir in eggs, salt and flour as needed to make the mixture hold together. With wet hands, scoop up about 1/3 cup of the mixture per patty, and form into flat round or oval shapes.

2. Heat the vegetable oil in a large skillet over medium heat until it shimmers, and gently place the patties into the hot oil. Fry until the bottoms are golden brown and crisp, 5 to 8 minutes, then flip with a spatula and fry the other side until golden.

3. Line a colander or strainer with 2 paper towels, and drain the cooked latkes in the colander. Serve hot.

National French Toast Day falls on the day of Thanksgiving. It’s the perfect time to make some French toast and sit and watch the Thanksgiving Day parade with your family before the festivities begin!

Here’s the first thing you need to know

The French do not call this French toast. It’s called “pain perdu,” or “lost bread,” because you can literally use stale bread to make it.

Most experts agree that Fren toast dates back to ancient Rome.

A similar recipe can be found in the book of Apicius from the 5th century BC. The Romans dipped slices of bread in milk (and sometimes eggs) before frying them, and called it “Pan Dulcis.”

A SWEET TREAT FOR GET-TOGETHERS

Yields 64

Crust

21/2 cups all-purpose flour

3/4 cups powdered sugar

1 teaspoon baking soda

3/4 cups butter or margarine, melted

Filling

3 cups pecan halves, divided

2 cups packed brown sugar

3 eggs

4 tablespoons butter or margarine, melted

2 teaspoons vanilla extract

1/4 teaspoon salt

Powdered sugar, optional

Preheat oven to 350 F. For crust, combine flour, powdered sugar and baking soda in a batter bowl. Add butter; mix until crumbly. Lightly press crumb mixture over bottom of stoneware bar pan; roll lightly. Bake 15 minutes; remove from oven to a cooling rack.

Meanwhile for filling, reserve 1 cup of the pecans for garnish; chop remaining pecans. Combine chopped pecans, brown sugar, eggs, butter, vanilla, and salt; mix well. Pour filling over warm crust, spreading to edges of pan. Arrange remaining pecan halves over filling. Bake 17 to 19 minutes, or until filling is set in center. Remove from oven; cool completely.

Sprinkle with additional powdered sugar, if desired. Cut into 32 squares using a utility knife; cut each square in half diagonally.

DEAR PAW’S CORNER: Last anksgiving, we had the scare of our life. Our little dog “Mamie” jumped onto the counter and ate a huge amount of the stuffing that I had just scooped out of the turkey! She got sick almost immediately and threw up, but because she kept drooling a erward I rushed her to an emergency vet. Mamie spent a few days at the vet getting supportive care because the ingredients in the stuffing affected her so badly. She’s completely recovered now, but please warn your readers to keep pets away from the kitchen and dining room during holiday festivities. -- Paul and Diane G., Norwood, Massachusetts

MORCILLA CON SETAS (BLOOD SAUSAGE WITH MUSHROOMS, SPRING PEAS AND MINT OIL)

Serves 4

1 pound morcilla blood sausage

1 pound mushrooms, sliced

2 tablespoons olive oil

4 cloves garlic, slivered

Salt and pepper to taste

2 tablespoons white wine

1 cup shelled spring peas

1 tablespoon chopped fresh mint

2 tablespoons mint oil

Mint Oil

1/2 cup extra-virgin olive oil

1/2 cup chopped mint

Pinch of salt

Cut the blood sausage into 12 slices. Sauté the mushrooms in olive oil with garlic, salt and pepper for 5 minutes. Add the wine and cook for 2 more minutes. Boil the peas for 2 minutes and drain. When mushrooms are done, remove from heat and stir in the peas.

In a cast-iron skillet, sear the morcilla in a dry pan for 2 minutes per side. Arrange the slices of morcilla down the middle of a platter. Surround with mushroom/pea mixture and drizzle the plate with the mint oil.

For the mint oil: In a small saucepan over medium heat, heat olive oil to warm. Remove from heat and add the mint and a small pinch of salt. Allow to rest for 1 hour. Drain through a sieve. Reserve extra mint oil for other uses, such as vinaigrette.

DEAR PAUL & DIANE: I am so relieved to hear that Mamie is OK! As you noted, many of the delicious, rich foods we eat during anksgiving and Christmas contain ingredients that are poisonous to dogs and cats. Onions are one culprit, but garlic, avocados, grapes (and raisins), macadamia nuts and chocolate can also cause serious illness and death if ingested. Foods or candies sweetened with xylitol can be deadly to pets. Alcohol and caffeine can also sicken them.

While preparing the feast, keep pets out of the kitchen. When guests arrive and you begin to serve treats and drinks, that’s the time to sequester your pets for the duration. Place them in a quiet room with water, treats and their favorite toys. is keeps them calm and allows you to focus on your guests. It also prevents them from getting into foods that could harm them.

Finally, for pet owners who think, “My big dog ate a chocolate bar once and it didn’t hurt him at all” -- it’s a bad idea to assume that your dog isn’t at risk because they got through an earlier scare unscathed. Protect your pets this holiday season, and enjoy many more to come.

Doctor Recommends Bisphosphonates Due To High Frax Score

DEAR DR. ROACH: I’m an active, 5-foot-2-inch, 125-pound, 72-year-old Caucasian woman without a history of known osteoporotic risk factors, other than demographic ones. I exercise daily, eat calcium through food, take 2,000 units of vitamin D, and follow a Mediterranean-style diet.

My last dual-energy X-ray absorptiometry (DXA) scan showed a T-score in my spine of -3.3 and a T-score in my hip of -2.7. My Z-scores were 0, and my FRAX score showed a 15.4% overall risk of fracture, with a 4.4% risk of a hip fracture in the next 10 years. Overall, my bone density went down 6.5% for my spine and 5% for my hip, compared to three years earlier.

HOW TO SUPPORT A LOVED ONE WITH CANCER

Pay attention to your loved one’s feelings. Some doctors encourage cancer patients to keep a journal or blog during their treatments. If possible, read their journal or blog entries. Many people are more comfortable sharing feelings in this way than directly with their caregivers, so the entries can provide valuable insight into how loved ones are coping.

My primary care physician has recommended starting bisphosphonates. My preference would be to postpone medication for at least a year, while I work with a dietician and a physical therapist to refine my exercise program and try to build bone more effectively. But I also don’t want to take foolish chances with a spine or hip fracture.

At my request, I received a referral to a specialist, but I cannot see her for four months.

How accurate are the results of a DXA scan? I have scoliosis from my childhood; could it affect the accuracy of the test results? Would any other imaging, blood or urine tests be appropriate to provide additional information or indicate if there are other causes of bone loss, besides age and gender?

ANSWER: The most important number here is the FRAX score, which combines your clinical risk (age, gender, height and weight, ethnicity, steroid use, smoking, previous fractures, alcohol use, etc.) and your bone density results from your DXA scan to provide an estimate of the overall fracture risk. It also provides an estimate of the most dangerous type of fractures: hip fractures. It’s freely available at frax.shef.ac.uk/FRAX/tool.aspx.

Your results are above the recommended threshold for medication, which is either a total-fracture risk of 20% or a hipfracture risk of 3%. Among the different options, most experts would choose a bisphosphonate drug like alendronate, based on decades of experience and strong data. However, a very low T-score (worse than -3) makes some experts choose a different type of agent -- a PTH analogue like teriparatide. Your scores have dropped a lot quickly, so I definitely recommend treatment. I do understand why you are hesitant. These drugs can cause more harm than good when they are not used correctly, and many of my patients are concerned after reading others’ experiences. But when used properly, generally for three to five years, they are very good at preventing fractures.

Scoliosis can affect the accuracy of DXA tests, but the tests usually underestimate the severity of osteoporosis in people with scoliosis. Furthermore, the fact that both your hip and spine have osteoporosis makes the diagnosis pretty certain. A Z-score of 0 means your bone density is at a level that is expected for your age and sex. This means that a secondary cause is unlikely; however, the T-score still indicates osteoporosis. Four months may seem like a long time, but it’s entirely reasonable to wait on deciding the optimal medication until you see the expert. She is likely to do additional testing and give you more personalized information.

Finally, if you can improve your diet and exercise from the standpoint of osteoporosis, this will help you whether you decide to take medication or not. ROASTED BANANA COFFEE CAKE

Serves 8

8 tablespoons (1 stick) unsalted butter, melted and cooled, plus 1 tablespoon at room temperature for the pan

2 tablespoons granulated sugar

2 bananas

3/4 cup chopped pecans

3 tablespoons dark brown sugar

1 teaspoon ground cinnamon

11/2 cups unbleached all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon freshly grated nutmeg

1 cup granulated sugar

2 large eggs, lightly beaten

1/4 cup sour cream

1 teaspoon pure vanilla extract

Preheat the oven to 350 F. Butter a 9-inch round cake pan with the 1 tablespoon room temperature butteranddustwiththegranulated sugar and tip out any excess.

Place the bananas on a small rimmed baking sheet and roast for 15 minutes. Remove and set aside to cool.

In a small bowl, combine the pecans, brown sugar and cinnamon. Set aside.

Sift the flour, baking soda, baking powder, and nutmeg through a fine-mesh strainer into a medium bowl.

In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar on low speed until light and fluffy, 2 to 3 minutes. Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl with a spatula, then add the roasted bananas, sour cream and vanilla. Beat until incorporated.

With the mixer running on low speed, spoon in the flour mixture and mix until just combined. Pour the batter into the prepared pan and smooth the top with a spatula. Sprinkle evenly with the pecan topping. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean with a few crumbs attached.

Let cool for 10 minutes before slicing and serving.

According to the National Autism Association, autism is a bio-neurological developmental disability that affects the normal development of the brain in various areas. Those areas include social interaction, communication skills and cognitive function. Autism generally appears before a child reaches his or her third birthday, and the NAA notes it is diagnosed four times as often in boys than it is in girls. Roughly 40 percent of children with autism do not speak, but parents whose children speak between the ages of 12 and 18 months should know that such youngsters can still ultimately be diagnosed with autism. In such instances, the NAA notes that children lose the words they previously learned. Incidences of autism appear to be on the rise, though the reasons for that remain unclear. According to a report from the Centers for Disease Control and Prevention, the prevalence of autism had risen to one in every 59 children by 2018. That’s twice as great as the rate in 2004, when the CDC reported one in 125 children were diagnosed with autism.

CHARRED GREEN BEANS WITH LEMON VERBENA PESTO

Serves 2 to 4

Green Beans

11/2 pounds slender green beans

2 teaspoons olive oil

Lemon Verbena Pesto

1 cup fresh lemon verbena leaves

(substitute fresh lemon balm leaves)

2 garlic cloves

1/4 cup grated Parmesan cheese

1/4cuppinenutsorEnglishwalnuts

1/2 cup olive oil

Fine kosher or sea salt and freshly ground black pepper to taste

Prepare a hot fire in your grill.

Toss the beans with olive oil and place in a perforated grill basket or wok set on a baking sheet.

For the Lemon Verbena Pesto, combine the lemon verbena, garlic, cheese, and nuts in a food processor and pulse to puree. Slowly add the olive oil with the processor running until the mixture thickens and emulsifies, about 1 minute. Season to taste with salt and pepper. The pesto will keep in the refrigerator for 7 to 10 days, or it may be frozen for up to 3 months.

Place the grill wok or basket directly over the fire and stir-grill, tossing the beans with wooden paddles or grill spatulas until crisp-tender, about 5 to 8 minutes. Transfer the grilled beans to a large bowl and toss with about 1/4 cup of the Lemon Verbena Pesto or to taste.

Joe was an extremely talented and active person, enjoying 50+ years of Tai Chi, fly-fishing, and pheasant hunting, however, his favorite was golf which he played into his mid-80s. He was an accomplished woodcarver of ducks, fish, and birds and earned a couple of blue & red ribbons from Genesee Valley Woodcarving competitions.

In keeping with Joe’s wishes, no formal funeral services will take place at this time. His Celebration of Life will be held in the spring on his birthday and will be announced. Memorial Contributions may be made to the Alzheimer’s Association and the Teresa House.

The Big Tree of the Genesee: A Symbol of History and Resilience

In this Native American Heritage Month, I consider the rich history Livingston County and Western NY have with our Native American past.

In the heart of Livingston County, the story of the Big Tree of the Genesee is inseparable from the region’s history and its enduring ties to the Seneca people. is immense white oak, once a sentinel along the Genesee River, witnessed a pivotal moment in American history: the 1797 Treaty of Big Tree. Today, a preserved section of this iconic tree resides in the Livingston County Museum in Geneseo, serving as a tangible link to the past and a reminder of the landscape’s layered history.

Before European settlement transformed the region, the Genesee Valley was home to the Seneca, one of the Six Nations of the Haudenosaunee (Iroquois). According to the Livingston County Historical Society, the Seneca referred to the area as “Gen-nis’-heeyo,” meaning “pleasant valley.” e Genesee River, which bisects the county, was more than a geographical feature; it provided fertile land, abundant resources, and crucial trade routes (1).

Nativevillagesdottedthevalley,includingsettlementsnearpresentday Avon, Geneseo, and Cuylerville. “ e Genesee River allowed the Seneca to travel south via the Allegheny and Ohio Rivers or north to Canada through the Great Lakes” (1).

A er the American Revolution, lands quickly changed hands, and treaties and land purchases, such as the Phelps and Gorham Purchase and the Treaty of Big Tree, displaced the Seneca from their ancestral lands, irrevocably altering the region’s cultural and physical landscape, especially in western and southern Livingston County. (1).

In 1797, negotiations for the Treaty of Big Tree took place at the rustic cabin of James and William Wadsworth, early settlers in what is now Geneseo. As described in historical accounts, nearly 3,000 Seneca, including prominent chiefs like Cornplanter and Red Jacket (“a prominent but unsuccessful opponent” to the agreement (2)), gathered for weeks of intense discussion with the US government representatives.

e treaty, signed on September 16, 1797, ceded 3.5 million acres of Seneca land to the Holland Land Company in exchange for $100,000 to be held in a trust by the U.S. government (1). is monumental agreement established small reservations for the Seneca, including areas near Avon and Leicester, while opening vast territories west of the Genesee River for non-native settlement. According to the New York State Archives Education Department, the treaty also guaranteed annuities and hunting and fishing rights for the Seneca, though these concessions came at a steep price for the Nation’s sovereignty and cultural heritage (3).

e massive oak tree near the negotiations towered over the Genesee River. While local lore o en conflates the name of this tree with the region around the Genesee or the nearby Seneca village of the same name (present-day Leicester), the oak itself became a symbol of the 1797 treaty and the transformations it heralded.

e oak’s demise came in 1857 when a flood toppled it from its riverbank perch. Fortunately, sections of the tree were preserved, with

one piece becoming part of the Livingston County Museum’s collection when the Wadsworth family donated it to the Historical Society. Originally on display in an outdoor shelter at the museum, the last remnant of the Big Tree has been exhibited prominently inside the Livingston County Museum since 2017, accompanied by paintings depicting the oak in its prime. Visitors can see firsthand the stump of this majestic tree, connecting them to a time when the Genesee Valley’s oak savannas flourished under the careful stewardship of the Seneca (1).

ese savannas, characterized by widely spaced oaks and prairie grasses, were shaped by the Seneca’s land-management practices, notably periodic burns that cleared undergrowth and created “oak openings” that allowed the trees to develop large canopies and thick trunks. As photographer and archivist Brian Kelley observed in 2022, the Genesee Oaks represent “centuries in the making,” a testament to the ecological and cultural legacy of the Seneca (4).

e story of e Big Tree of the Genesee is one of resilience – of a landscape and its people adapting to dramatic change. e tree, though no longer standing, remains a powerful symbol of the Genesee Valley’s history, bearing witness to the negotiation of land, culture, and identity.

Rosie was the heart and soul of our farm, dedicating herself to every aspect of its operation-from clearing the land for the first planting in 1970 to managing the annual tree care and grounds upkeep. In addition to her career as a successful magazine editor (retired: 1989), Rosie played many roles at the farm: bookkeeper, accountant, purchasing agent, store manager, and expert wreath maker. She was also a beloved Sunday school teacher, mother, and wife to Frank, her husband of 59 years.

As we remember Rosie and the remarkable legacy she le behind, we thank YOU for your support and understanding during this time. Rosie was deeply loved and will be greatly missed.

Many people are familiar with the term “ozone layer.” But some may not know that the Earth’s atmosphere consists of several layers. The lowest layer of the Earth’s atmosphere is the troposphere, which the U.S Environmental Protection Agency notes extends from the Earth’s surface to roughly six miles in altitude. The troposphere is where nearly all human activities occur. Even climbers who make it to the peak of Mt. Everest are still in the troposphere, as Everest is less than six miles high. But anyone who has ever boarded a commercial flight has likely left the troposphere and entered the stratosphere, where the majority of commercial airplanes fly. The stratosphere begins at six miles above the Earth’s surface and extends to about 31 miles above the surface of the planet. The EPA notes that most atmospheric ozone is concentrated in a layer in the stratosphere that’s roughly nine to 18 miles above the Earth’s surface. The ozone layer in the Earth’sstratosphereabsorbssome of the sun’s radiation, including the UV and UVB radiation that has been linked to cancer. The third layer of the Earth’s atmosphere is the mesosphere, which extends from 31 miles above the Earth’s surface to roughly 53 miles above the surface of the planet. The height of the next highest layer, the thermosphere, varies due to changes in solar activity. The exosphere, which contains many of the satellites that orbit the Earth, is the outermost layer of the Earth’s atmosphere.
