Wine And Food: M aking A Perfect M atch If you’ve ever stood before an aisle of w ine com pletely baffled by w hat to serve at your next dinner party, you aren’t alone. Whether red or w hite, dry or sw eet, the options can be overw helm ing. When m atching flavors the sam e w ords that describe the w ine should describe the food. The brighter the fruit on the label the lighter the food that goes w ith that w ine, and the heavier or darker the fruits on the label the heavier the food. The body of the w ine is the w eight of the w ine or the w ay it feels in your m outh. This body should also m atch the body of the food. When looking to pair w ine w ith m eat, ask w hat you are pairing it w ith and w hat cut of m eat is it. Rib eye w ith lots of fat, richness and flavor w ill need a w ine w ith a rich body, such as cabernet sauvignon. A filet, w hich is less flavorful, could pair w ith a less full-bodied w ine, such as a pinot noir. With red w ines, tannins are a consideration w hen looking at food pairings. Heavy tannin w ines go w ell w ith heavy proteins such as red m eats. Regionality can also help you find the perfect com plem ent, by pairing w ine from the sam e area as the dish you are eating. For instance, if you are eating a French dish, consider a French w ine.

Was Sean Penn wrong to interview notorious Mexican fugitive El Chapo? Yes. The interview glorifies a criminal. It depends on how good the article is. No. It was a stunningly gutsy thing to do. Not if Penn helped lead to El Chapo’s capture!

Poll ends 1/19/16 Vote at: www.gvpennysaver.com Online Poll Question We’ll publish the results in next week’s Penny Saver.

Poll results 1/12/16 Should stores stop selling products that contain plastic microbeads? Yes! They are terrible for the environment. 52.9% (17 votes) Why bother? MOMENTS IN TIME The History Channel • On Jan. 30, 1948, Mohandas Gandhi, the world’s chief advocate of non-violence, is assassinated in New Delhi, India. Assassin Nathuram Godse was hanged in 1949 against the wishes of Gandhi’s sons, who argued that the execution stood against everything Gandhi believed in.

“A man can stand a lot as long as he can stand himself.....”

~ Axel Munthe Into every life some rain must fall. We all suffer adversities of various kinds. We can meet these misfortunes with courage and fortitude or we can grovel in self-pity and try to find an easy way out, even if it means dodging our responsibilities. Mere adversity never killed anyone. We live through it and usually, when the problem is finally resolved, it turns out to have been less awful than we imagined. We can stand a great deal if we are proud of the way we do it. Families of all faiths are assured of perfectly appropriate services when they place their trust in us. No one is ever turned away for lack of funds. When the need arises, call us first.

MOMENTS IN TIME The History Channel • On Jan. 25, 1759, Scottish poet Robert Burns is born. The day is still celebrated by Burns fans with high-spirited “Robert Burns Night” feasts, featuring haggis and other Scottish delicacies, as well as enthusiastic drinking, toasting and speechmaking.

When To Wear Sunglasses Sunglasses should be worn anytime you are outdoors, particularly under these circumstances: • During the summer, when the level of ultraviolet radiation (UVA and UVB) is at least three times higher than during the winter; • When at the beach or in the water; • When participating in winter sports, especially at high altitudes; • When using medications that can cause photosensitivity. Taking measures to protect your eyes from the sun, as well as getting eye conditions detected early through an eye exam, can help slow or prevent total vision loss from diseases such as macular degeneration and cataracts.

Invest In Your Kitchen Kitchen remodels are a safe bet when it comes to putting money into improving a home. Residents tend to spend a great deal of time in the kitchen, but a dated, poorly functioning kitchen can detract from the value of a home, even if the rest of the home is in good shape. It’s possible to recoup between 60 and 120 percent of your kitchen remodel investment, especially if the kitchen matches up well with the rest of your home. Homeowners should know that a deluxe renovation may not be necessary, as relatively moderate improvements can create a whole new look for a kitchen.

Your Renovations for senior safety As adults approach their golden years, the homes they once thought of as sanctuaries can become unsafe. Families wrestle with the decision to keep parents and grandparents in their homes or move them into assisted living facilities or other senior residences. Modifying seniors’ homes to make them safer is another option. The National Institute on Aging says that families may be able to have a senior stay at home by helping older relatives remain independent but safe. The following are a few ways to do just that. • Remove fall hazards. The NIA reports that six out of 10 falls happen at home, where people spend the most time and fail to think about their safety. Seniors who want to be independent may overestimate their physical abilities. Because falls can be so dangerous, leading to cuts, abrasions, broken bones, and more, seniors and their families must take steps to prevent falls in homes. Improve lighting, especially at night when sight may become diminished. Install hand rails and grab bars where possible. Pick up clutter and remove tripping hazards, such as slippery rugs or electric cords. Install an electric stair climbing seat to make traversing stairs less risky. • Improve visibility and ability to communicate. Vision loss may accompany aging, but technology can help mitigate such losses. Use big-button phones, remote controls and even keyboards so seniors can keep in touch. Voice-activated thermostats or smart home technology also can make it easier for seniors to voice their needs. • Modify fixtures and other features. Dexterity may wane with age, and arthritis can make grasping or turning doorknobs and faucets more challenging. Take inventory of areas of the home that present the biggest obstacles to seniors.

Replace knobs in the shower or on faucets with lever handles, which are easier to maneuver. Install new cabinets and doors that freely glide open and self-close. Replace toggle light switches with easier paddle-type switches that can be pushed with a hand or even arm. Motion-sensor lights also can be handy. Push-button oven controls may make cooking easier. • Prepare for medical emergencies. Invest in medical alert systems, such as necklaces or bracelets, that can be used to contact police or emergency medical personnel directly. Make phones available in commonly used rooms in the home, such as bedrooms, the living room, bathrooms, and the kitchen. • Install ramps and nonslip flooring. Ramps can make it easier to reach the front door or cross over elevated doorway thresholds. Nonslip flooring also can prevent falls around the house, offering more traction for feet, walkers or canes. • Repair cracks in walkways and driveways. Safety should also extend to the outdoors. Be sure to repair cracks or uneven pavement. Replace loose patio blocks or bricks with a more stable design or with concrete or asphalt. While outdoors, trim back bushes and make sure there are no tripping hazards outside as well. A few modifications can make it possible for seniors to live comfortably in their homes for many years.

Your Older drivers have to reassess abilities For many older drivers, driving is more than getting from point A to point B. Getting behind the w heel allow s older drivers to remain independent as w ell as mobile. But as a person ages, his or her risk of injury on the road increases, according to the Centers for Disease Control and Prevention. Older adults and their family members need to make plans for handing dw indling skills behind the w heel and the point in time w hen it is no longer safe for a loved one to continue driving. In rural and suburban c ommunities, driving is a necessity for independent living. W ith limited resources available for older individuals to get around, seniors may hold onto the notion of driving longer than is safe and prac tic al. The National Highw ay Traffic Safety Administration says that in 2009 alone, 5,288 people age 65 and older w ere killed and 187,000 w ere injured in traffic accidents. Older people are involved in around 15 percent of all traffic accidents in a typical year. Getting older doesn’t mean it’s time for you or a loved one to turn in your license just yet. There are w ays people c an c ome together to make the driving experience go smoothly, and it often begins w ith an honest conversation.

Yee Haw! Elementary Students Pledge To Read 25,000 Books This Year The third-annual Reading Celebration at Byron-Bergen Elementary School got off to rollicking start with a farmyardthemed event on November 20. Students were in the mood, wearing straw cowboy hats, overalls, and bandannas. Teachers dressed as cows, pigs, and singing farmhands hit the stage to build excitement for the challenge ahead: reading 25,000 books (almost 50 per student) before the end of the school year. Students have consistently surpassed their reading goals since the challenge began in 2013; last year beating their target of 20,000 books by almost 4,000.

We want kids to enjoy it and develop the reading habit now while they are young,” said Principal Brian Meister. “The motivation this year is the promise of a very special farm-themed reward in June. We’ll make all their hard work pay off in an event to remember.” The assembly kicked off with ByronBergen parent Alyson Tardy, her back-up teacher/singers and the student population singing and dancing to “Read a Book” – a special version of Taylor Swift’s song “Shake It Off.” Then Assistant Principal Amanda Cook played the starring role in a skit based on “Little Pig Joins the Band,” a favorite children’s book by David Hyde Costello. Disappointed about my home town; when I drive through our town, it makes me sad. Our Christmas wreaths are pathetic. I have been to a lot of towns that look amazing, but when I drive in my town all I want to say is omg.... The wreaths are puny and half are not even lit. Shame on you for even putting them up; this town does not put any effort at all to make it look welcoming. If I did not live here I would just drive on. Please, next year, put some effort in to making our town nice. Again, shame on you and I think you all know what town I am talking about. To the person who stole our Siamese kitten/cat on Saturday 12-26: What were you thinking? She was loved and taken care of. Please return her! Just drop her off like you took her. Broken hearts in Bristol Thank you to those who throughout the Christmas Holiday wished everyone a “Merry Christmas.” I’m so sick of the political correctness. A right hand turn is a smooth motion...no reason to come to a screeching halt and look 4 ways!! To those with roadside memorials...We are truly sorry for your loss but “take it to the grave.” Imagine if everyone set up roadside memorials....there would be no place to walk. Leaving them up for 3 to 5 years or replenishing them is not fair to the community. That’s what grave sites are for and what YOU paid for; please move your memorials to the grave and out of public domain.

Portion Size Tricks The average portion size has tripled in recent years, which could be the reason why many people are overweight or obese. A healthier diet often starts with eating less. Here are some easy ways to remember just how much to eat when sitting down at the dinner table. * A portion of lean meat should be about 3 ounces, or the size of a palm. * A cup of mixed greens or vegetables is about the size of a baseball. * A medium piece of fruit is the size of a tennis ball. * A CD is the size of the pancake you should eat. * An ounce of hard cheese is the size of a tube of lipstick. * Keep burgers to the size of a mayonnaise jar top. * A tablespoon of oil is the size of one checker. We Care About

Your Smiles by Dr. Steve Sokolovskiy

WHITE TEETH HELP TRIGGER SMILES According to recent research, laughter stimulates strong brain activity in listeners, particularly in the areas that control the muscles of the face, and prompts them to smile and laugh back. Simply put, laughter and smiling are contagious. Of course, no one really needs a scientific study to tell us something that we already know to be true-that a smiling face tends to attract attention and delightful responses. However, the unfortunate fact is that many people are so self-conscious about the condition of their teeth that they deprive themselves of this important asset. If you are concerned about the whiteness of your smile, professional tooth whitening by the dentist provides the safest and most effective way to brighten your smile. At BATAVIA FAMILY DENTAL, we feel a deep responsibility and

commitment to provide you the very best care with proficiency. Good dental health is no accident. We will make suggestions to help you maintain good oral health and fend off tooth discoloring. With proper home care and professional supervision, there is no reason why a person can’t enjoy the comforts of good dental health well into later life. We’re located at 6 Batavia City Centre. Please call 585.343.4246 to schedule an appointment. P.S. In-office bleaching or laser bleaching gives the quickest tooth-whitening results. At-home bleaching supervised by the dentist provides similar results over a longer stretch of time.

DEAR DR. ROACH: My father is an 84-year-old diabetic. He has had a wound on his foot (on the inner side of his right foot, near his big toe) for about five months. He has been treated by a podiatrist, who has debrided the wound every week. He prescribed antibiotics when the wound has looked infected. A visiting nurse and my mother have changed and dressed the wound regularly during these months. This week, the podiatrist said he could see the bone in my dad’s foot, and recommended hyperbaric treatment. Could you tell me what your opinion is of this treatment in my father’s case? Do you know if it has a high percentage of success? -- C.O. ANSWER: Foot ulcers in diabetes are common and feared. Diabetes damages blood vessels, both large and small. Also, longstanding diabetes decreases the effectiveness of the inflammatory response and immune system. Finally, poor nerve function in people with diabetes combines with these other factors to predispose one to developing breakdown of the skin and development of ulcers. These ulcers can get large and deep, and when the bone is visible (and sometimes even when it’s not), the bone is infected. In this case, there is a high risk of the need for amputation. By far, the best way to deal with diabetic foot ulcers is to not get them in the first place. Good control of diabetes, proper footwear, regular checks by a professional and daily self-checks of the feet for people at high risk can reduce the likelihood of developing ulcers. Early and aggressive treatment of precursor lesions, even mild redness of the skin, ingrown toenails or fungal infection of the feet, should prompt urgent evaluation by a podiatrist. Once the ulcer has progressed to the point where your dad’s is now, aggressive measures are called for. In addition to care by a podiatrist or orthopedic surgeon, evaluation by a vascular surgeon and a wound-management specialist may be limb- and even lifesaving. While hyperbaric oxygen has indeed been shown to be beneficial in several studies (reducing amputation rate from 33 percent to 9 percent in one study), only an expert with detailed knowledge of your dad’s case can decide whether this is appropriate treatment. If you trust your podiatrist, I think it may well be a useful treatment. However, I would be sure that he, or a vascular surgeon, has looked at the quality of blood flow to the foot. *** DEAR DR. ROACH: What is your position on the shingles vaccine for people in their 70s? We have been told that some doctors do not approve of it. Yet we know of so many people who suffered terribly from shingles. Thank you. -- J.T. ANSWER: I’ve written about the vaccine lots of times. I am a strong believer in it and think anyone over 60 should get it unless they have a medical reason not to. The older you are, the more important it is to get the shot, since the complication of pain (postherpetic neuralgia) is so devastating and tends to lasts longer the older you are. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible.
