HOME-STYLE BAKED CHICKEN
Serves 4 to 6
2 tablespoons olive oil
2 tablespoons unsalted butter
11⁄2 teaspoons Poultry Seasoning
1 teaspoon salt
1⁄4 teaspoon freshly ground black pepper
1 cup unbleached all-purpose flour
1⁄2 teaspoon paprika
4 to 5 pounds skin-on, bone-in chicken thighs and drumsticks
Preheat the oven and a 9-by-13inch metal roasting pan to 375ºF. Place the olive oil and butter in the pan and place the pan in the oven on the lower rack.
In a small bowl, combine the poultry seasoning, salt and pepper. Set aside.
Place the flour in a resealable bag. Place a few pieces of the chicken in the flour at a time, seal, and shake to coat. Remove and vigorously shake off any excess flour. Place the flour-dusted chicken on a clean platter. Repeat with the remaining chicken pieces. Remove the roasting pan from the oven and immediately arrange the chicken skin-side up in a single layer over the bottom of the pan and then sprinkle with some of the poultry seasoning blend and paprika. It should sizzle. Place the hot pan back on the lower rack of the oven and bake for 20 minutes. Remove, baste by spooning the juices that have collected in the pan over each piece, and then sprinkle the chicken with the remaining poultry seasoning blend.
Return the pan to the oven and bake for 20 minutes more. Remove and baste one last time before moving the chicken to the middle rack and baking for 10 to 15 minutes more to further crisp the chicken skin.
Let rest for 5 to 8 minutes before serving.
Cocoa-Kissed Red Velvet Pancakes
1 cup all-purpose flour
1/4 cup granulated sugar
3 tablespoons Nestlé Toll House Baking Cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1 cup reduced-fat buttermilk or low-fat milk
2 tablespoons unsalted butter, melted 1 1/2 teaspoons vanilla extract 1 teaspoon red food coloring heart-shaped pancake cutters or cookie cutters (optional) butter, for garnish (optional) powdered sugar, for garnish (optional) maple syrup, for garnish (optional) fresh berries, for garnish (optional)
In large bowl, combine flour, sugar, baking cocoa, baking powder, baking soda and salt; stir well.
In separate large bowl, whisk together egg, buttermilk, unsalted butter, vanilla extract and food coloring.
Add to flour mixture; stir to combine. Allow mixture to sit 5 minutes.
Heat nonstick skillet or griddle over medium heat. Brush with oil or butter.
Add about 1/4 cup batter to skillet. Cook about 2 minutes, or until bubbles start to form on top.
Flip and cook 1-2 minutes, or until bottom is lightly browned. Serve immediately with butter, powdered sugar, syrup and berries, if desired.
Tip: If using pancake or cookie cutters, be sure to coat with oil so pancakes don’t stick.
Place cutters in skillet and pour batter into cutters. Remove cutters before flipping.

THE DOG SITTER’S FLEA DILEMMA
DEAR PAW’S CORNER: I am a brand-new pet sitter with four clients. I’m able to take one pet at a time into my home to care for them when their owners are traveling for long stretches, and I do home visits for the others. Well, the toy poodle I have in my care for the next three weeks brought an unpleasant surprise: fleas! Normally I would ask the client to clear up the flea problem before pet-sitting services can continue, but I’m already caring for the dog, so I’m stuck. What should I do? -- Jane H. in Wellesley, Massachusetts
DEAR JANE: Immediately contact the client to inform them. en ask for their permission to treat the dog. If they only want you to use a specific treatment, follow their instructions. Save your receipts for any flea treatments purchased.
A flea infestation can spread to the other pets you care for, so follow these steps to reduce infestation:
• Isolate the dog from most areas of your home until he has completed treatment and you are brushing away only dead fleas.
• Mop and vacuum your entire home daily, especially the corners. (Hint: Put a brand-new flea collar inside the vacuum cleaner bag to kill the fleas that are sucked in.)
• Wash or steam clean area rugs and drapes, and the dog’s bedding.
• Wash clothes that you have worn around the dog. (Hint: Set the clothes dryer to a medium or high heat setting, which will kill most eggs and fleas.)

How else can drivers improve visibility?
In addition to replacing headlight bulbs in pairs every two to three years, drivers can take the following proactive measures to reduce the likelihood that their vision will be compromised while on the road.
• Replace worn out wiper blades. Wiper blades need to be changed each season or in three-month intervals. Rubber wiper blades can grow brittle rather quickly, potentially compromising driver visibility at times when they need their vision to be as strong as possible, such as when rain or snow is falling.
• Clean interior glass and mirrors. Over time, interior glass can develop a film-like buildup that reduces vision and creates hazy reflections from the sun. Smokers may notice such buildup is especially thick in their vehicles. Periodically clean interior glass and mirrors to prevent this film from compromising your vision.
• Don’t hang accessories in your vehicle. Fuzzy dice, photos and other items hung on rearview mirrors can prove distracting and block you from seeing the road.

MRI Reveals A Disease Of The Blood Vessels In The Brain
DEAR DR. ROACH: A recent fall split the skin below my left eye. I went to the emergency room to see if it required stitches. Since I complained of a headache in the back of my head on the left side, they ordered an MRI, which showed “atherosclerotic vascular disease with mild small vessel ischemic disease.” They also saw plaque within my internal carotid arteries.

SAFE WAYS TO DEAL WITH SINUS PRESSURE
Sinuses are bony, hollow, air-filled cavities inside the face and skull. They are located in the low-center of the forehead, behind the eyes and in bones behind the nose. Cedars-Sinai Medical Center says the sinuses lighten the skull and produce a mucus that moisturizes the inside of the nose. Unfortunately, when colds or the flu strike, sinuses may become one of the first spots affected by these illnesses.
When the sinuses are working properly, mucus will drain into the nasal passages or out the back of the throat. Most of this drainage goes unnoticed. However, the American Sinus Institute says that factors such as allergies, illness, weather changes, dehydration, and dry air can make the sinus mucus thicker and drainage more difficult. This is when problems like infection, stuffiness or throat irritation may occur.
In order to combat sinus congestion and drainage concerns, people may try certain strategies that include flushing the sinuses and thinning the mucus. It is imperative to use safe flushing methods to keep the sinuses healthy.
Neti pots are among the more popular methods to flushing sinuses. These small teapot-like devices with elongated snouts have become a fixture in many medicine cabinets. Because they are drug-free alternatives, they can be handy for those worried about antihistamines making them drowsy or reacting with other drugs. Neti pots and other nasal irrigation systems use saline to moisten and clear out nasal passages to promote drainage of sinus cavities. However, according to the U.S. Food and Drug Administration, using these devices improperly can increase one’s risk of infection. CBS News says that neti pots have even been linked to the deadly Naegleria fowleri, which is otherwise known as the “braineating” amoeba.
The key to preventing infection is to only use previously boiled, sterile or distilled water to irrigate. Tap water is not adequately filtered, says the FDA, and may contain low levels of organisms that can stay alive in nasal passages and potentially cause serious infections.
Those who are concerned about nasal irrigation safety may be wise to skip neti pots and use pre-packaged, sterile saline solutions that are bottled for the purpose of alleviating congestion. However, when prepared water is used in a clean neti pot or other device, these methods can be perfectly safe.
Sinuses can get clogged for many reasons. To free up breathing, people are urged to consult their physicians to learn more about how to safely irrigate their nasal passages.
The ER doctors said I should see a vascular specialist soon. Of course, I am scared. I am a 76-year-old woman on Bystolic, rosuvastatin, benazepril and thyroid replacement. I also take sulfasalazine for my inflammatory arthritis. I am thin, take many vitamins and supplements, and exercise four times a week.
Does the MRI mean I have dementia or Alzheimer’s? What does it mean? -- R.M.
ANSWER: No, the MRI cannot make a diagnosis of dementia. Dementia is diagnosed presumptively by a clinical exam that notes impairments in cognitive functioning such as memory, language and attention. (A definitive diagnosis of Alzheimer’s is made by a pathological evaluation of brain tissue, which is almost never obtained while a person is alive.)
What the MRI shows is a disease of the blood vessels of the brain caused by cholesterol plaque. High blood pressure, smoking, high blood cholesterol, a previous family history, and other factors put people at risk for this condition. Some, but not all, people with the kinds of blood vessel disease you have will develop dementia, which is caused by cumulative damage to the brain tissue from multiple small strokes. In your case, both the large vessels (carotids) and small vessels are affected, suggesting that your cholesterol and blood pressure haven’t been ideal.
Your doctor has already taken some steps to slow or prevent the worsening of this condition. Careful control of your blood pressure (with Bystolic and benazepril) is essential. A statin drug (rosuvastatin) has been shown to reduce stroke risk and your overall dementia risk. I don’t know whether these are the best medicines for you or whether they are at the right doses, since only your doctor knows you well enough, but it is clear that your doctor is taking steps to protect your heart and brain.
Inflammatory arthritis (especially rheumatoid arthritis and lupus) increases the risk of blood vessel damage in the brain and heart, so early treatment is more important with people who have these conditions. Unfortunately, not all primary care doctors know how important inflammatory arthritis is when it comes to heart attack and stroke risk.
I do not believe there are any supplements or vitamins that are both safe and effective at preventing stroke, but there are a handful of people who may benefit from them. For example, people with high homocysteine in their blood may benefit from vitamin B12, folic acid, or their methylated counterparts.
A careful review of your overall health condition and diet is critical. You may be referred to a specialist for cognitive testing if there is any evidence of change in your thinking ability. A few blood tests will help further stratify your risk and may show a need for additional treatment.

The following recipe for “Garbanzo-Carrot Hummus with Grilled Yogurt Flatbread” from James Campbell Caruso’s “España: Explore the Flavors of Spain” (Gibbs Smith) includes some Moroccan flavors that give this easy-toprepare recipe a truly unique taste.
Garbanzo-Carrot Hummus with Grilled Yogurt Flatbread
Makes 2 cups
2 medium carrots, peeled and chopped
Salt
1 cup cooked garbanzo beans, drained
4 teaspoons chopped cilantro plus 1 teaspoon for garnish
2 tablespoons chopped red onion
21/2 teaspoons ground cumin
11/2 teaspoons ground coriander seeds
2 tablespoons lemon juice
4 teaspoons olive oil
2 teaspoons chile flakes
2 teaspoons Moroccan Spice Blend (see below)
Coarse salt and freshly ground black pepper
1 batch Yogurt Flatbread (see below)
In a medium saucepan, combine the carrots with 2 quarts water and 2 teaspoons salt. Bring the mixture to a boil then reduce the heat and simmer for 8 to 10 minutes, until the carrots are tender. Remove the pan from the heat and allow the carrots to drain and cool in a colander.
Combine carrots and remaining ingredients, except for Yogurt Flatbread, in the work bowl of a food processor and puree until smooth. Season to taste with salt and pepper and garnish with the remaining cilantro. Serve with fresh, hot Yogurt Flatbread cut in wedges.
Moroccan Spice Blend
Makes about 2 tablespoons
In a small resealable glass or plastic container, combine 1 teaspoon each of: ground cumin, ground turmeric, saffron threads, ground coriander, ground cinnamon, ground smoked paprika, finely grated lemon peel.
Yogurt Flatbread
Serves 4
1 cup all-purpose flour
1/4 teaspoon baking powder
1 teaspoon coarse salt
21/2 cups plain yogurt
Olive oil
Sift the flour, baking powder and salt into the work bowl of a stand mixer fitted with the dough hook. Add the yogurt and mix on low speed for 2 minutes. Cover the work bowl and allow the dough to rest at room temperature for 30 minutes.
Preheat a gas or charcoal grill to medium. Scrape the dough from the work bowl and turn it out onto a lightly floured surface. Roll the dough into a long log and divide it into 12 equal pieces. Roll each piece into a ball and use a rolling pin or tortilla press to flatten it into a 1/4-inch-thick tortilla shape. Brush each “tortilla” lightly with olive oil. Grill each for about 40 seconds then turn and cook another 40 seconds.

A poorly insulated attic is a primary source of energy loss, forcing your AC unit or furnace to work harder than necessary. Most attics are insulated, but many, especially those in older homes, are not insulated adequately enough. Over time, insulation can settle and compact, allowing heat to escape through gaps.
Topping it up is easy. Ideally, you want to aim for a depth of 16 inches of insulation for an overall R-value of 50. When existing insulation is present, simply level existing insulation to the top of the joist. Lay Roxul ComfortBatt on top of joists, running perpendicular to the first or existing layer of insulation. Ensure batts are butted against each other tightly. Fit batts closely to cross joists: cut batt if necessary (this can be done easily with a serrated blade or bread knife) and leave no space between layers. Don’t forget to insulate the attic hatch to the same level as the rest of the attic. Apply weather stripping to the edge of the hatch to reduce air leakage. Keep in mind that only IC-rated electrical fixtures can have insulation placed with zero clearance. Follow manufacturer’s instructions and local building code to insulate around the chimney.

COLD WEATHER WILDLIFE IN HOMES BOOSTS DISEASE AND P
Many people may practice the “love thy neighbor” creed, but when it comes to four-legged wildlife such as raccoons, squirrels, and opossum that often seek refuge in yards and homes when outdoor temperatures dip and food sources become scarce, they are best kept at an arm’s length. As community development has thinned natural habitats and forced these critters into residential areas and lessened their fears of people, the National Pest Management Association (NPMA) has found that many areas of the country continue to report increased encounters with nuisance wildlife.
“While it can be a unique experience to spot wildlife in neighborhoods, these animals should be discouraged from taking up residence,” advises Missy Henriksen, vice president of public affairs for the NPMA. “ Not only can they damage property, many are vectors of disease, most notably rabies.”
According to the Centers for Disease Control and Prevention (CDC), about 40,000 people are exposed to rabies each year, a viral infection passed through the bite and saliva of an infected mammal. Raccoons, foxes, skunks, coyotes and bats are the most commonly reported animals infected with rabies. Because of the risks associated with these pests, homeowners should take extra precautions to protect against them.

Make a household favorite more healthy
Many beloved dishes might be enjoyed more often if they were only a little healthier. Author and former personal chef Michelle Dudash was once asked by a client if the she could make a healthier version of chicken parmesan. The result of that request is the following recipe for “Skinny Chicken Parmesan with Spinach,” which Dudash ultimately included in her book, “Clean Eating For Busy Families” (Fair Winds). The recipe was a hit with Dudash’s client and will surely be a hit at home cooks’ dinner tables as well.
Skinny Chicken Parmesan with Spinach Makes 6 servings
For the sauce:
2 teaspoons extra-virgin olive oil
2 cloves garlic, sliced
1 28-ounce can whole tomatoes
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
2 pinches salt
2 pinches freshly ground black pepper
1/2 teaspoon honey
For the chicken:
3 tablespoons grated Parmesan cheese
2 tablespoons whole-wheat flour
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried basil
11/2 pounds chicken breast, cut into 6 pieces, pounded to 1/4 inch
2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided
4 cups baby spinach
1 teaspoon lemon juice
3/4 cup fresh mozzarella cheese, sliced into 6 medallions (or shredded)
Preheat oven to 375 F and coat the bottom of a 9 x 13-inch pan with olive oil spray.
To make the sauce: Heat a medium saucepan over medium heat. Add oil and garlic and cook gently for 30 seconds. Do not brown. With your hand, squeeze each tomato into the pan and add basil, oregano, salt, pepper, and honey. Reduce to medium heat and simmer for 20 minutes, lowering the heat as needed.
To make the chicken: Combine parmesan cheese, flour, salt, pepper, and basil in a medium dish and coach chicken with cheese mixture. Place a large skillet over medium heat and add 2 tablespoons of oil. When oil is shimmering, add chicken, rounded-side down, and cook until golden on one side, about 5 minutes. Arrange chicken in a baking pan. Pour remaining 2 teaspoons of oil into skillet and add spinach. Cook spinach for 1 to 2 minutes until wilted and swirl in lemon juice. Gently press spinach to release water and divide spinach on top of chicken. Spoon sauce around and over the chicken, place mozzarella on top, and sprinkle with 1/4 teaspoon salt. Bake for 15 minutes until chicken is cooked through. Serve over spaghetti.

Vietnam Soldiers Reunite After 54 years

Since arriving home from Vietnam in December 1970, John R Scura has practiced law in Dansville. In the 1970s, he was a captain in the Army’s 23rd Adjutant General’s Corps, America Division at General Westmoreland’s headquarters at Chuhai, Vietnam. Whenever a man in his unit le to go home, a replacement would be needed, and Captain Scura and Sergeant Fish would go to the incoming personnel processing center where newly arrived young men, aged 18-21, would be processed to be assigned as grunts in the field to fight the Viet Cong.
Captain Scura and Sgt Fish would pore over hundreds of files to find the right men for the unit. On May 10, 1970, a er an exhaustive search, they selected the files of Pvt Murray Kast and Pvt Orin Bagley. Pvt Kast was from Kansas City, Kansas, married, and with a psychology degree. Pvt Bagley was married with a newborn baby. Both men could type. In those days, there were just typewriters, no computers.
Kast and Bagley became outstanding members of Scura’s staff. Both Kast and Bagley credit Scura for saving their lives, because otherwise, they would likely have been grunts and may have been injured or killed in the war.
A er Scura returned home, the men exchanged letters only once in 1971. In the spring of 2024, Scura found the letters from Kast and Bagley from 1971 and he searched for them online. He found that Kast lives in Texas and Bagley lives in Utah. Scura wrote to both men. Kast immediately responded and the two videocalled each other three times, but Bagley didn’t reply.
During late October 2024, Scura and his wife, Donna, flew to Austin, Texas to visit their son, Mark, and John met Kast for lunch, meeting face to face a er 54 years. It was a wonderful experience when the men first saw each other, with a hug and moist eyes. A er lunch, they went to Mark’s home to look at Scura’s Vietnam scrapbook.
Come to find out, Bagley works from home and his secretary had set aside Scura’s letter until shortly a er anksgiving 2024. Upon receiving Scura’s letter, Bagley immediately called Scura, and Bagley and his wife, Cathy, videocalled Scura and his wife, Donna. About half a box of tissues were used by both men as they reminisced about their service days in Vietnam.
Halfway through the conversation, Bagley recounted that at anksgiving dinner with his family, when asked what he was thankful for, he told his family he was thankful for Captain Scura for saving his life. Scura and Bagley started to cry.
Scura remembers calling home three times while in Vietnam. ere were no cell phones, just four or five telephone lines for the men to use to call home. e other lines in the division were used for operational purposes and to connect to the Pentagon. Many men would wait for hours to use the phone. Everyone took their turn and there was no difference if a man was an officer or an enlisted man.
When you finally reached the front of the line and made your call, you had to be brief and lucky if the other party was available. ere was a 12-hour time difference, and you were lucky if you had a good connection, because there was so much static, sometimes, there was too much and you just had to hang up.
Just hearing the voice of your parents or loved one was enough. Some guys cried when they finished their short calls. For some, it was an emotional time and the soldier’s voice reassured their parents they were alright.
Scura appreciates internet and video calling for enabling him to reconnect with Kast and Bagley a er 54 years.

Thank you to the florist at the West Wayne Plaza (Macedon) shop ... You sent a beautiful rose in a beautiful vase directly to our door to celebrate our 71st anniversary. What a totally unexpected, fine gesture. The florist is a small businesswoman and she didn’t have to do that, but it was such a fine gesture, we want to thank you!
I needed one more thing from the grocery store on Christmas Eve so off to [local store] I went. I ran in and grabbed the one thing I needed and headed to the checkout. Glancing over the express lines I got in the one where the people ahead of me only had a few items. It was a seven items or less line. The woman in front of me had seven items. Just as the man in front of her was finishing up, the woman's husband came over and handed her seven gift cards to buy. I pointed out that the line was for seven items or less and got "thank you for telling me" and then she started to get rung up. After a few cards were put through she hit some sort of limit and a manager had to come over to override the rest of the gift cards. This was taking quite a long time. All the while the line was getting longer and longer. Activating seven gift cards is NOT an express lane transaction! Please be respectful of other people.
Integrity is lacking in so many TV commercials!
It is impossible to read the small print on so many TV commercials. The print is too small or similar color to the background or way too long to read in the time flashed OR all of the above. If this information is required or necessary, then it should be readable so it could be understood. And as another note, products advertised on TV should require the country of origin to help consumers make their decisions.
