elcome Wto the egion R Gympie Regional Council welcomes you to the Gympie region. We hope you find this Farm to Fork Directory provides you with the information you need to network, connect, source and find agribusinesses, tourism and food companies within the Gympie region.
The Gympie region is a progressive and vibrant part of regional Queensland. Residents are able to enjoy an enviable lifestyle in a vibrant region with unsurpassed beauty and a wealth of natural attractions from the ocean to the hinterland.
Gympie Gold Regional Produce is all about promoting the region’s exceptional range of quality gourmet, fresh and value-added produce, and the region’s wealth of value-adding food companies, quality exporters of fresh and processed foods, boutique food companies, and the growers and distributors of fresh locally grown produce who all call the Gympie region home.
For our farmers, growers, producers, restaurant and café owners, chefs, hospitality businesses, accommodation providers and food retailers and distributors – Gympie Gold Regional Produce encourages you to become a network member, advertise your business, network and share information with each other to grow your businesses. We also encourage you to display the GGRP logo to let customers know your products are grown, manufactured or sourced within the Gympie region. This branding has the aim of increasing product awareness, growing sales and creating more demand for local products and so contributing to more profitable businesses and sustaining our region’s farms and resources.
The Gympie Gold Regional Produce brand was launched in July 2012 at Regional Flavours in Brisbane. This project was the result of a partnership between the Gympie region’s food industry and Gympie Regional Council and received crucial financial support through the Federal and State Governments. Since then a dedicated group of agribusiness, tourism and food company representatives from all corners of the Gympie region have worked together to develop this project and the Gympie Gold Regional Produce brand, with the continued aim to put the Gympie region on the map and promote all businesses who grow, process, distribute and market our regional produce.
The aim of this directory is to help local farms and businesses thrive by bringing together farmers to food providers and building healthy communities through connections to local food. Thank you for your support – working together and supporting each other will help ensure that the benefits are far reaching throughout our community and businesses alike. 2

Tips for Growers
BUILDING CONNECTIONS THAT LAST
1. COMMIT
6. BE PROFESSIONAL
Growers that maintain consistent quality are trusted and valued by buyers. They know what to expect. If your product changes, call in advance and ask if they would still like it. Buyers would rather have time to find a back-up source than receive a lower quality product.
Be patient and organised, be on time, be courteous, prepare invoices ahead, and call if you’ll be late.
7. INVOICES
If you can accept terms, such as seven days, it may be a great convenience ‘Call when you say, deliver what for the business. Discuss a plan and be you promised, and don’t be late’ flexible.
8. DIVERSIFY
2. COMMUNICATE
Talk with buyers and find out what they need in particular. Are there emerging food trends? Offer something they can’t get elsewhere and you’ll have your foot in the door for a long time.
Tell your customers what’s going on at the farm, follow up on deliveries and find out what was appreciated or what can be improved. Try a social networking tool like Facebook to inform and share information about the family farm.
‘Make yourself unique’
‘It’s all about the relationship’
9. SEASONALITY AND BRANDING
3. TIMING
Remind buyers that local food in season means lower food miles, and more nutrient dense food. This offers a promotional tool for both grower and retailer as consumers become increasingly aware of the provenance of their food. Support the GGRP brand and help the economy thrive.
Most restaurants have set delivery times and you’ll need to work within those. Know busy times and plan your visits and calls around them.
4. SELL, SELL, SELL ! Arrange to go visit personally and take free samples. If you offer something special or unusual and know its uses, don’t be afraid to offer advice.
5. RELATIONSHIPS Eat at the restaurants, read the menu and their website to find out how your product is used. Could you grow something to complement their menu? ‘Like’ their Facebook page or ’follow’ their feeds. 4
Tips for Buyers
SUPPORT YOUR LOCAL GROWER
1. QUALITY
Your customers will also appreciate the low food miles and knowing where their food is from. By utilising the Gympie Gold brand, your customers can be assured the product is locally grown. This will enhance the visitor experience and create a vibrant local economy through connections to local food.
Locally grown products should meet or exceed your quality standards. But the word ‘quality’ doesn’t always mean the same thing to everyone. Know what’s important to you. Freshness? Uniformity? Flavour? Visual perfection? Ripeness? Storage quality? Or all of the above! Communicate your standards and be clear if quality is lacking.
6. CULTIVATE TRUST Remain flexible and patient, but honest. Remember its all about the relationship. Use Facebook and social media to share each others stories.
2. COMMIT If the product meets your expectations, buy what you say you will buy and buy consistently while a product is in season.
7. INVOICING
3. COMMUNICATE
Establish a system and follow through. Most farmers like to be paid COD or in seven days.
Establish predictable routine for phone calls, orders and questions. Give as much advance notice of what you need as you can. Request varieties you’re interested in. Offer feedback. One great thing about local farmers, if you establish a regular buying practice, they can production plan and adapt their growing practices to suit your needs.
8. EDUCATE Learn about what products are available in your region. Try something new and inspire your staff to do the same. Visit the farm if you can and use social media to engage your customers.
4. PRICING Do expect to pay a full and fair price. Local farms may have lower distribution costs but they also need to make a living.
Know your customers and their customers’
5. THINK SEASONALLY AND PROMOTE Your farmer can offer a guide to what is coming up in season. Educate your customers to appreciate the nutrient dense quality and flavour of seasonal product. 5

fellow chefs, restaurant owners, café operators, hospitality businesses and more. There are few regions in Australia that can boast the wide variety of produce available that the Gympie region can. Some of the region’s growers’, producers’ and processors’ products are already successfully supplying Australian and overseas markets and then there’s the other, more boutique producers that are quietly going about their business of delivering niche products. Using local, fresh produce as part of a business model makes good business sense. It also ensures you are supporting farmers and helping to maintain a healthy local economy.
I’ve seen and tasted first hand the incredible quality of Gympie Regional Produce and encourage you to do so also.
A word from our Food and Food Tourism Ambassador Matt Golinski... As a professional chef I know the key to any good food or hospitality business is first starting with the right ingredients. Consumers are now very educated and interested about food where it comes from, how it is grown, product seasonality, food miles, sustainable farming, organic production, value added products and the people and stories behind the product. In my role as Gympie Region’s Food and Food Tourism Ambassador I love the opportunity to share the wide range of quality, seasonal, local produce available in the region with the general community but also with the business community - notably

METHOD
4 x 180gm Red Emperor fillets, each cut into three 50ml light olive oil or vegetable oil 500gm purple sweet potato, peeled and diced 100ml pure cream 40gm butter Salt and white pepper 1 golden shallot, peeled and finely sliced 1 Lebanese cucumber, finely sliced 1 fennel bulb, finely sliced 4 radishes, finely sliced 1 bunch watercress, picked 50ml lemon juice 75ml extra virgin olive oil Salt and black pepper
In a small saucepan, cover the sweet potato with cold water, bring to the boil, and simmer until soft. Drain and mash with a potato masher, or for a very fine puree, pass through a sieve using the back of a spoon. Stir in the cream and butter and season with salt and white pepper. In a heavy based frying pan, season and fry the Red Emperor in the olive oil until just cooked through. Mix together the sliced shallot, cucumber, fennel, radish and watercress and dress with the lemon juice and extra virgin olive oil. Season with salt and cracked black pepper. Serve the Red Emperor on a spoonful of the sweet potato puree, and arrange the salad on top. Drizzle with any excess dressing to serve. 11
