We never thought it would arrive but at last the warmer weather’s on its way and to celebrate the fact we’ve dedicated this issue to all things holiday-related. We take a nostalgic turn with a whimsical ode to afternoon tea which includes the launch of designer Ella Doran’s new JOANIE range for Habitat, as well as wise words from a master tea blender. Here he selects the perfect brew for four different personality types Traditional english Breakfast is the classic black tea. When, and if, you add milk is a matter of taste. Some people add it first, others last, but there’s no right or wrong. The choice of receptacle, on the other hand, is important. much like drinking champagne, what you pour your tea into affects how you experience it. english Breakfast is definitely best drunk from a mug or a chunky cup. If you’re after a great afternoonstyle tea, earl Grey is a quintessential black tea flavoured with bergamot oil which has a refreshing citrussy

taste. you really can’t beat a brew at 3.30pm, with a slice of rich fruit cake.

adventurous oolong tea typically comes from the far east and is half way between a green and black tea. you could say it has the best of both worlds: the light fresh appeal of the former with the strength of the latter. Personally, I’d blend this with ginseng or osmanthus in order to add a little extra kick.

purest tea you can get. It boasts the highest level of antioxidants of any tea which means drinking it can bring health benefits such as reducing free radical damage which has been implicated in diseases such as cancer and strokes. you can also drink it as part of your daily liquid intake. The very best tea is made with the top of the bud which is simply air dried subsequent to picking. I’d go for a jasmine or classic white variety which is best supped from a delicate china cup and poured from a fine tea pot.

Workaholic Camomile contains natural barbiturates and antioxidants, both of which make it a great choice for people looikng to unwind. as an alternative, I’d suggest the antioxidant-packed rooibos which as of last year is the most popular herb in the UK. It’s not actually a tea, but with its delicate honey flavour it blends well with other flavours. It’s a lot easier than you think to grow a summer salad - all you need is a little space, a few key ingredients and a bit of patience

A

delicious salad bursting with fresh greens, colourful veg and mouthwatering flavours is one of summer’s simplest, and healthiest, pleasures. The great news is that there’s a whole host of ingredients you can easily grow in your own home. Here’s our pick of the crop...

pepper is an abundant grower which matures early. Start the plants indoors before the last frost in spring then move them outside as the weather warms. The cute Sun Drops miniature golden squash is a lovely vegetable. Plant after the last spring frost and harvest in around 50 days.

SIZE MATTERS one of the best ways to grow veggies on a balcony or terrace is to plant them in nice containers. Plants that are compact, have shallow roots and mature quickly work best – dwarf varieties are ideal. Munchkin broccoli, which has blue-green heads, can be sown in April and harvested in July; the Little Dipper sweet bell

COLOUR POPS If you want some colour, grow a few calendulas and and a pot marigold. Their petals are safe to eat and very pretty. Also on an orange tip (the seventies are back after all) rondo or Suko carrots do well in containers and window boxes. Choose pots that are at least 12 inches deep and have good drainage. Plant two or three crops a fortnight

apart so that as you harvest one lot you’ll have another one ready. radishes grow fast from seed and need little room so they’re ideal for filling any empty space between other plants. red robin tomato plants only grow to about a foot tall which means they can be grown in a window box in relatively low light conditions. The plants are prolific producers of fruit which takes about 55 days to mature. Sow in March, keep indoors for a bit then move outside once established. A BIT OF BITE Tasty peas and beans introduce bursts of flavour as well as satisfying texture to any salad. Peas are one of the first vegetables that you'll plant and harvest

in spring. Dwarf types need little or no support, whilst vining peas need trellises to grow on and usually produce a heavier crop. Beans are an ideal option as they grow easily and produce an abundance of pods. nutty-tasting, proteinrich Adzuki beans produce long, thin pods that can be eaten like snap beans. If you fancy French beans you’ll need to give them a cane or a trellis to climb up as they can reach heights of a metreand-a-half. Make the most of your space by growing them near to a wall. The added bonus of French beans is that they have pretty flowers, so they’ll look good too. Top tip: on balconies, protect beans and other plants from wind

LOVELY LEAVES The backbone of any good salad is fresh, crisp salad greens which can vary in flavor from delicate to zesty. rocket, chicory, lamb’s lettuce, dandelion greens, chard, kale and traditional lettuce are just a small handful of the varieties availabe. whatever you opt for, plant seeds in spring, then more in early summer. Thin out the seedlings and harvest when mature. note that salad greens like lots of rain so keep the soil moist by watering regularly. The great thing about salad greens is that many of them are cutand-come-again so each time you prepare a salad, harvest the leaves you require but leave the roots. Keep watering and another set of greens will sprout. FInIShInG TOUChES Fresh herbs like thyme, rosemary, sage, cilantro and parsley are super easy to grow in small containers. Even better, varieties such as fennel and yarrow attract beneficial insects which will help manage pesky pests.  ROMescO WIth GRILLeD PRaWns serves 4 You will need ❖ 2 large tomatoes ❖ 4 tbsp of olive oil ❖ 1 onion finely chopped ❖ 4 garlic cloves ❖ 1 jar of sweet pimento peppers ❖ ½ tsp of chilli flakes (or powder) ❖ 5 tbsp of fish or prawn stock ❖ 2 tbsp of white wine ❖ 10 blanched almonds ❖ 1 tbsp of red wine vinegar ❖ 8 raw king prawns, heads on Method 1. To start, blanche the

tomatoes, remove the skin and seeds and roughly chop. set aside. 2. sauté the onions and all but one of the chopped garlic cloves in two tablespoons of oil until soft.

Method 1. Put egg, anchovies, mustard,

Heat a griddle pan. When hot, cook chops for about 4 minutes on each side. 6. serve chops on a bed of rocket with garlic mayo on the side.

Gently simmer for 30 minutes. meanwhile grill or pan roast the almonds and put in the food processor along with the remaining oil, vinegar and the last clove of garlic. Process until smooth and season to taste with salt and pepper. 4. Grill the prawns for three minutes until pink. nOTe: you can use the prawn heads and shells to create a stock by simply simmering them in enough water to cover for 20 minutes. Then strain and keep the liquid as stock. serving suggestion King prawns and a crisp, cool rosé will work together beautifully. The spicy Romesco sauce in this recipe particularly complements wines with a fruity flavour.

Ingredients ❖ 4 unwaxed, peeled lemons or oranges, cut ❖ 175g golden caster sugar ❖ generous helping of ice cubes ❖ water Serves 1 litre Prep time 15 mins Blitz your chosen fruit in a blender with half of the sugar, a few ice cubes and 500ml/18fl oz water. Strain the juice into a jug and put to one side. Tip the fruit pulp back into the blender, add the remaining sugar, more ice cubes and 500ml/18fl oz water. Blitz again, then strain the liquid into the jug with the juice you previously put aside. Serve with lots of ice and some fresh fruit slices.

Barbecue tips & trickS ❖ Prevent food from sticking by spraying the metal grate with vegetable cooking spray. Be careful though. If the basting sauce already contains oil don’t grease the grill as excess oil can lead to flare-ups. ❖ Unless you’ve washed it in between, don’t use the same plate for cooked and uncooked meat. ❖ Overbrowning is a classic BBQ error. To stop it happening apply tomato-based or sugarcontaining sauces during the last 20 to 30 minutes of grilling. ❖ Put fatty food on tin foil to catch the fat. Discard the foil and fat when you’re ready to finish the food directly on the heat. ❖ Estimate how hot your grill is by holding your hand at a safe distance over the centre of the coals. The length of time you can keep your hand in place equates to the heat rating. 10 seconds is low heat 6-8 seconds is medium 2-4 seconds is high heat ❖ Use a spatula or tongs to turn steaks. A fork will puncture the meat allowing those delicious juices to escape. ❖ When fish turns opaque all the way through, it’s done. Adding flavoured wood chips to the fire will give the fish a lovely aroma.

Ella Doran’s quirky but cool designs have previously graced Bridget Jones’ kitchen and Buckingham Palace. Now they’re at Habitat too!

W

hen it comes to designing eyecatching accessories nothing, it seems, is off limits to Ella Doran’s fertile imagination. Starting with images of everyday items such as dandelions and street signs, Doran artfully manipulates photos and applies them to anything from wrapping paper and books to umbrellas and blinds. The result is wonderfuly versatile pieces that bring a touch of whimsy into any space. Having long been a fan of Habitat, Ella was thrilled to be approached by Habitat’s creative director, Theo Williams, and his team. Discovering that the admiration was mutual, Ella – who has been dubbed the queen of tableware by The independent newspaper – created JoANie, a collection that harks back to the good old days of traditional afternoon tea and cakes. A homage to her grandmother (who instilled a love of just-so dining in the young Ella) JoANie comprises more than twenty items including napkins, cushions, cups and saucers, and a 3-tier cake stand. The print is based on plates sourced from thrift shops as well as pieces passed down through generations of Ella’s family. ‘Tea’s definitely a trend right now,’ says Doran of the thinking behind her collection. ‘The trick was to re-interpret the idea in a fresh, modern way for spring summer 2011.’ An avid tea fan and self-confessed biscuit dunker, Ella has a brew for all occasions. Earl Grey – ‘nice and strong with a bit of milk’ – kickstarts her morning whilst lapsang Suchong accompanies scones in the afternoon. ‘But by the evening,’ says the tireless Doran, ‘i’m ready for a camomile,’
