HAKUBA BEER FROM STRENGTH The first year of Hakuba’s own brewery – Hakuba Brewing Company – has been exciting. They launched their beers at the start of last winter at the neighbouring Hakuba Brew Pub and have been hugely popular with Japanese and foreign tourists alike. During the summer, they doubled their production and you can now enjoy their beers throughout town. They use spring water straight from the Hakuba mountains and don’t filter, for a natural and full flavour. This autumn they launched their fourth beer – Hakuba Amber. FINE WINES WITH FINE DINING It’s more than just a beautiful plate and glass at Misorano’s fine dining Traumerei. The dishes all supervised by Nishino-san, one of Japan’s top food and wine critics. Nishino-san believes good presentation starts with good ingredients. All Traumerei’s are sourced as locally as possible and are cooked to utter precision. There is an excellent selection of fine wines to pair with the cuisine. Nishino-san will be hand to point you in the right direction to make the right choice in a friendly and helpful manner. WAGYU BEEF
Wagyu refers to limited meat brands such as Japanese Black, Japanese Brown, Japanese Shorthorn, and Japanese Polled. Within these types, the highest grade of Wagyu is cattle born and raised in Japan. Raising cattle carefully using special methods produces a delicious Wagyu flavor. There are many restauarants in the resort serving Wagyu, one of our favorites is Wagyu Kobeya in upper Wadano Page 84
POPULAR DOWNTOWN EATERY EMU RE-OPENS Nearly a year after a fire gutted the popular EMU Restaurant, it has reopened for business. With hardly any changes made as the restaurant is set with the same footprint and has the same layout and the menu is mostly the same too. Serving reasonable priced Japanese specials such as noodles, curry and make your own okonomiyaki, a kind of Japanese pancake. It is a welcome return to hungry patrons as well as their wallets. SINGAPORE’S BEST
GOLDILOCKS
Hakuba is home to many international restaurants including Italian, French, Indian, and American and of course Japanese but did you know that it is also home to a Singaporean restaurant? Jing Hua opened only a couple years ago has proved very popular with tourists as well as hungry locals. The restaurant is part of an independent chain with sister restaurants in Tokyo and three in Singapore. Popular items on the menu include shorunpo, ramen and the original sweet chili sauce. Another new addition for Hakuba nightlife, Goldilocks Lounge is upstairs from the new Bear’s Cafe in the old Weather Report building on the main street of Echoland. Totally remodelled with all new decor, furniture and lighting, Goldilocks is a spacious but cozy place to relax in comfort after a hard day on the slopes. Featuring premium wines, whiskey, champagne and cocktails, the living room style sofa groups by the window are a great place to relax with friends old and new. Enjoy an evening of piano music or jazz as you find the cocktail for you, …. not too many Marmalade Martini’s if you want to make it to the slopes the next morning! Page 50

KAZE DINING
A much needed addition to the Wadano dining scene is Dining Kaze Restaurant located opposite the new Spicy rental store. Kaze meaning wind in Japanese will offer Shokado meals that are served in an ornate bento style box. The cuisine is carefully prepared and beautifully presented, but you do need to order one day in advance for Shokado. Dining Kaze Page 83
RESERVATIONS With more and more places to suit every budget and atmosphere, the Hakuba Valley has everything from French to Thai and American to Korean and of course Japanese! The most popular restaurants do get very busy so it’s best to book in advance. Not all of Hakuba’s restaurants have English speakers on the other side of the phone so it is best to get your Japanese speaking accommodation staff to book for you.
KYOTO The new Kyoto restaurant in Echoland is serving an unusual Japanese delicacy, Yuba. As soya milk boils a film forms on the surface; this is Yuba. Yuba has been served in Japan for some 1200 years originally like many things brought over from China. Yuba is popular in the Kyoto area of Japan as a tea ceremony dish. Kyoto Restaurant Page 59

JAPANESE ENCHANTE A popular eatery for many, Enchante Restaurant in Misorano will be offering a Japanese set menu with their popular dinner menu. This is good news for those that enjoy French dishes but when in Rome want to eat like the Romans….I think you get the meaning. THE BEACH BAR After refueling with a delicious dinner, your next stop will depend on your energy levels and mood. OPEN KITCHEN Make Your Own Dinner
Fueled by a desire to not only have fun on the mountains, foreigners and Japanese visitors alike find all sorts of cultural and fun experiences in Hakuba. It’s a great vacation spot. I tagged along with a group of these visitors, the Copland family, hailing from Melbourne, Australia. Bruce, Cardine and daughter Clara were first time visitors to Hakuba and are hard core food lovers, especially that of the Japanese variety. Bruce explained that, while they regularly go out for Japanese food, they have not tried to make it themselves at home, hopefully after this evening’s lesson and dinner, they will. After the introductions were over, our chef and teacher, Mizusu, talked about the food and the flavors that everyone would be creating; teriyaki chicken, sushi and shabu shabu. Though it seemed like a lot of food, we were all hungry after being on the mountain all day, and couldn’t wait to learn how to make these delicious dishes. During the preparation, Bruce asked many questions which Misuzu answered in near perfect English. One of these questions was: “What sake goes well with this kind of food?” to which Misuzu opened the cupboard, pulled out a bottle and starts to pour three cups. We began to roll the rice for our sushi. The goal here was not to use too much rice as it spills out of the sides of the bamboo mat, while remembering to put the nori, seaweed sheets, shiny side down. There was more rice stuck to our hands, than the nori by the end of it! As we tasted our sushi creative sushi rolls, Misuzu advised us not to eat too much as there was a lot

more food to come. Clara had the great idea to wrap up the sushi and have a sushi breakfast in the morning. It was time to start preparing the teriyaki chicken and, more importantly, the sauce. The sauce is the critical part of teriyaki chicken, and there is no such thing as buying a bottled option in Japan, unless it is imported. We had the soy sauce, some sake and mirin, which is a kind of sweet condiment similar to sake. With the teriyaki chicken slowly cooking, the cozy cabin filled with the sweet soy sauce aroma. It was heavenly to say the least. But we were back to work preparing the shabu shabu. Misuzu explained to us that the name shabu shabu imitates the sound that you make as you gently swish your chopsticks of meat around the steaming broth. Misuzu then went on to show us how to cut the vegetables the best way. Bruce admired the Japanese knives and told us that he might pick some up in Tokyo on his way home. Overall dinner was a huge success, not only had we learned to make some great Japanese food but we hd had a filling dinner with a doggy bag of sushi for breakfast. Next time we might try our hand on another of the various menus that Misuzu has.

FISH & WINE REPUBLIK Fish & Chips...and Roast Chicken
Like all first days on the mountain during a winter vacation, the conditions didn’t really matter. We had made it and there were smiles all round. The culmination of the international flight, the first day out, a turbulent sky revealing a fast approaching storm, three soon to be exhausted and very hungry in search for a place to eat…what were we going to do? Never underestimate the foresight, as the tour organizer informed me, right when we thought we were going to pass out, that she had invited “Brad and Angelina” to dinner accompanied by gourmet fish & chips and roasted chicken. “Brad and Angelina” was her code for a bottle of the award winning Miraval Rose from a French drop whose vineyard the Hollywood couple had recently purchased. It was to be delivered by the Fish Republik ,Hakuba’s first, new , gourmet takeaway. Delivery was under 35 minutes, not bad when you consider the blizzard that was blowing outside. We were ready to enjoy it. Being originally from Yorkshire, England, I was tempted by the locally farmed salmon with a Nagano Wasabi mayo, but instead opted for the traditional fish and chips. Egg free, beer batter and a homemade tartar sauce accompanied by a secretly seasoned serve of medium sized chips. It was perfect. The boss opted for the fish tacos. They came in a set of three softshell tacos: simple, traditional, with a new school twist. Fresh and healthy is not always my thing but I had to try it. A locally grown jalapeno salsa salad on a bed of lettuce, crumbed fish, and fresh coriander. Yes -this is a wrap. Not everyone enjoys sushi in Japan and what better way to
feed three hungry kids than a whole roast chicken , oven roasted veg, a bit of naughtiness in the way of potato fries and gravy. The young chef on the phone didn’t want to reveal all but assured us they brine the chicken first to ensure a well-seasoned and moist flesh throughout. The stuffing and the basting details would not be revealed. In fact the roast chicken was the only whole chicken we found throughout our entire trip in Japan. The kids’ faces told me that their dad was a hero for finding the best food ever! (Dad was pretty happy devouring the remains of the carcass he found in the fridge the following day after, he might add.) Not long after the kids had settled down for the night the wind abated to seemingly stillness, the remnants of Brad & Angelina’s Miraval Rose, Fish-Repbuliks extensive wines included....... Jim Barry (AU) , Kumeu River(NZ) ,Olivier Bernstein (Burgundy) Pol Roger (FR) to name a few. Whilst we were enjoying “our time” not all had stopped and I couldn’t help but ponder the plan for the following morning. There was movement at the station and the word would get around. As the man from snowy yonder sent the Powder -Hakuba bound.

MEET THE CHEFS We have a chat with one of Hakuba’s most popular owner chefs. It was a very interesting evening!
KIKYOYA'S MASUO OTA How did you become a chef? My mother once told me that if you want to eat delicious food everyday then the easiest way to do this is to become a chef. I opened Kikyoya in December 1994.
Kikyoya is an unusual type of name, how did it come about? In Japan every family name has a family crest, a little bit similar to the coat of arms used for western surnames. My family name is Ota, the family crest is KIKYO, a balloon flower, which blooms in the late summer and autumn. I took the name from this and added –ya which means restaurant in Japanese. The actual logo for the restaurant is my family crest. Is it easy to get fresh fish daily? Japan is an island surrounded by sea, so yes it is easy to get fresh fish. We get our fish from different locations depending on the season, weather and of course the type of fish. We try to source as much as we can from the nearby Sea of Japan as well as using locally farmed salmon. How to eat sushi? Sushi is best eaten as a finger food, though make sure to wash your hands before dining. Many people are eating sushi with chopsticks, this is ok as well. I quite often see customers dipping the rice in soy sauce. You have to know that the rice is already soy flavored so it is best to dip only the fish and then only slightly. What do you recommend for first time visiotrs? The most expensive!! No seriously the lunch set and sushi are probably the most popular. Many customers also like to try fugu as it is difficult to eat overseas. I also recommend sashimi, sukiyaki, tempura and our avocado salad. Not everyone likes raw fish so we also do grilled fish and fired chicken. My brother grows many of the vegetables on his farm so everything is as fresh as it can be.
What drink goes well with sushi? What foreigners call sake, which correctly termed is “nihonshu” is undoubtlby the best drink to have with sushi. Wine is also good. In fact most alcohol suits it. Any difference between Japanese and foreign diners? Not so much, though Japanese will usually decide before they go out on what to eat for the evening. Foreigners usually make this choice why reading the menu. Many foreign customers also like a challenge and like to try new items. You have many name cards on the wall. Yes! I have been collecting them for 15 years. At last count we had over 300. Apart from Olympic athletes and world class skiers and snowboarders any other famous people dined here? Yes, Taylor Swift came in last year. In fact I didn’t know who she was at first, I had to Google her! I can tell you that she is very beautiful, very tall, has very blue eyes and loves avocado very much. She wrote a placard thanking me for filling her blank space full of sushi! Tell us something interesting about yourself. I can greet people in over 20 languages! See Page 46

uring winter in Hakuba we often turn to food that will warm us inside and out. When that unshakeable chill is in the air, we turn to ramen to comfort us. Check out our pick of the best ramen restuarants that the Hakuba Valley as to offer to beat those winter blues.
SUSHI The most popular Japanese food, it is basically made of white rice prepared in sushi vinegar then topped or combined with fresh or raw ingredients such as seafood, fruits or vegetables.
TEMPURA Seafood or vegetables in a crisp batter. Cold sparkling water and low-gluten flour are often used to create the famously light batter.
TOTTSUAN RAMEN Named after a famous Japanese animation character who the owner/chef is said to resemble. Tottsuan is located on the main Hakuba Route 148 a short walk from the main Hakuba Station.
JING HUA A piping hot, rich minced pork and soya bean sauce poured lavishly over noodles.The crispy cucumber and bean sprouts add a refreshing contrast to the umami-flavored sauce. If you prefer a slightly spicier sauce, try adding some chili and grated garlic miso or some black vinegar.
BIJIN Ramen noodles are kneaded with Happo onsen water which gives a soft & filling texture to the noodles. Located across the road from the Happo Information Center, it is very popular for those needing to get warm after coming off the mountain.
NABE Nabe is a style of hot-pot cooking. The dishes are usually prepared at the table. Expect to find plenty of vegetables mixed with seafood or meat.

LIEBE Perhaps the hottest selection is the spicy red chii ramen at Liebe at the Nakiyama base area on Happo-one. The crimson-hued broth is flavored with dashi and chicken broth, be warned‌..it’s hot.

LOBSTER SHACK Finding a new style and theme of the restaurant for Hakuba was a challenge, but owner Desmond of Black Bear Properties had always wanted to have a restaurant. With this, “it’s time to do the things you want to do” approach, thought that this year was the right time for an international flavor, western-style seafood restaurant such as “The Lobster Shack” which is a perfect fit and new addition to the Hakuba dining scene. He says that sushi or sashimi would be “like taking coals to Newcastle!” “
fresh from Tokyo fish market every morning and arrive in Hakuba about noon, then prepared and readied for the evening menu. With so much on the menu, it’s hard to choose a special, but try The Old Bay Lobster Shack Bucket. It comes packed with whole lobster, mussels, clams, prawns, scallops, chorizo sausage, potato and corn. For a real treat, ask the staff to add rice to the leftover broth to be made into the most amazing risotto to finish off with. Another favorite is the Lobster
Finding Head Chef John Silva to manage the restaurant has added to the international flavor. John is from Melbourne Australia with a Chilean background. His 13 years of experience allowed him to add a unique flavor, as did his travels and work in India, Thailand, Italy, Argentina, South America and contemporary Australian and Spanish cuisines. All the produce is sourced locally except for the lobster, which are Canadian lobster. They are shipped

The Lobster Shack has a casual and friendly team, and John has created a Bar/Seafood Izakaya/ Restaurant feel with the menu to go with it. For the drinks, it’s a mix of draft beer, craft bottled beer, or his unique cocktails or wine. Sit at the bar and relax with a snack and drink, chat and chill with the staff, and then have some dinner. For the food, there are multiple choices, all homemade! With various bread, bar snacks, and Shacketizers, don’t be shellfish - share dishes, sides, and, if you left room, desserts, too! Menus are all in English and Japanese with all the specials written up on chalkboards on the walls. Ordering couldn’t be easier. And for the bill, it can be pay-asyou-go at the bar, or charged at the table. Cash or credit accepted. There is parking out front, but if you’re drinking, be sure to ask for the guys to call you a Daiko Taxi to drive you home. Lobster Shack is located in lower Echoland opposite Spicy Rentals Page 51
as they say, “The journey is more important than the destination.” Boarding a ship was an eye-opening experience for the young Masa. Being thrown into a mix of nationalities from all walks of life was a defining moment. Masa took it upon himself to try and speak or at least communicate with everyone on board. He became a networker before the term was even coined. Before they had reached their destination, Masa had job interviews lined up at some of the finest restaurants in Europe. He was a regular at the captain’s table but his openness to everybody on the ship allowed him to learn cooking skills in the galley. The ship finally arrived at Boulogne and Masa made his way into Paris with now a small vocabulary of French as well as English, Italian, Spanish and a little Russian. As a friendly Japanese young man with a penchant for great food, Masa took on a position with one of the connections he made on the ship. St. Perriers was a fine dining establishment in Neuillysur-Seine. The head chef took an instant liking to Masa and was surprised with the skilled knifeman ship of such a young man. Masa also became familiar with the French passion for wine. “Life is too short to drink bad wine,” the chef would say as they shared a bottle at the end of each evening.
WHO IS MR. MIYAGI? We all know Mr. Miyagi from the Karate Kid movies, but now Hakuba has their own Mr. Miyagi. Hakuba Dining searched deep for the story on Hakuba’s newest restaurant. Tokyo - Osaka - Kyoto - Kobe - Hakuba Masa Miyagi was born in Shinjuku, Tokyo in 1952. His father Akira was a chef at a famous local ryokan. However, it was his mother Yoko that inspired his culinary skills. Every day after school, he would collect the shopping ingredients for that evening’s dinner. “Fresh is best” she would always tell him. Because of his father’s reputation in the region, the shop keepers would only give him the highest quality foods. Masa became renowned throughout the area as the kid that could find anything to eat. He set up his own business when he was 14 supplying local restaurants with fresh meats and seafood. As a small business owner finishing high school, Masa had to make the choice of either pursuing his business interests or taking on further studies. It was his father who encouraged him to go out beyond Japan and see what the world had to offer. So with a zest for life, Masa set off to travel the world. The first stop was the culinary epicenter of Paris. However,
Spain was the next stop, a bustling tapas bar. With the concept very similar to the traditional Japanese izakaya, Masa found himself in his element. Great food, great staff, and a great atmosphere, this is what Masa knew he wanted to create when he returned to Japan. He would spend any time off touring around the city and surrounding countryside and trying tapas everywhere. He was inspired by the amazing variety, freshness, and creativity of the small dishes served up in the small local bars. The casualness of the experience and the happiness that it brought out is what he really enjoyed. He learned that when you were in a tapas bar, everyone around you was your friend. Further gastronomic travels throughout Europe let him savor the tastes of each country and enjoy the markets and wineries where he was able to try new and different produce from each region. But Masa was missing his loved ones back in Japan so it was time to bid his travels a fond farewell and return back to the land of the rising sun. Along with a wealth of knowledge and a desire to create something new and exciting, Masa also brought home some of his favorite foods and wines to share with his family and friends. The first Mr. Miyagi’s opened for business in 1972. Over the years Masa has honed and developed his concept to which he now passes on to his valued partners. It is not just the excellent food or the exceptional hospitality he brings to his restaurants that make his restaurant great — it is the true and honest welcoming you will receive when you walk through the doors of one of his establishments that will ensure you a great time out. HAKUBA DAISEKKI Named after the all year round snow valley. The sake is a favorite with locals and most popular as a house sake. 5. HAKUBA DAISEKI GINKAN Gold award winning sake with a gentle scent. Perfectly drunk hot on those cold Hakuba nights. 6. HAKUBA SODACHI Stored deep in the Hakuba snow for 8 days this local fresh tasting sake is brewed with rice that is cultivated right here in Hakuba. To many experiencing sake for the first time, one of the drink’s most novel aspects is that it’s frequently consumed warm or hot. Traditionally, sake was always served heated in Hakuba but in the past 30-40 years or so, things have begun to change slightly, with more and more sake being served at below room temperature. 4. The Fireside Lounge at the Mominoki The Fireside Lounge is the place to head if you are looking for a great drink in a lively atmosphere. This family friendly wine bar inside the Mominoki Hotel always has great music playing and great bartenders at work. Seat yourself comfortably on one of the couches and thaw out after a busy day on the mountain in front of an open fire with a glass of wine or two, or work your way through the list of cocktails, wines and champagnes. Look out for the occasional jazz concert, the band members are local ski instructors! 5. Bar Stammtisch at the Hotel Taigakukan Bar Stammtisch is located inside one if probably the most famous hotels in Happo, Hotel Taigakukan. Combining a warm restaurant atmosphere with an informal and social environment of a bar, guests can enjoy sitting in front of the log fire in the historical and cozy lounge after relaxing in the hotel’s natural onsen. 6. Sakura at the Goryu-kan Hotel Although Sakura means Cherry Blossom in Japanese, you won’t find many in winter but what you will find in Sakura is huge windows looking out onto the night skiing slopes at Happo-one Ski Area. Relax at the bar before and after enjoying dinner in the adjacent restaurant. 7. The Lodge at the Hakuba Tokyu Hotel The Lodge bar is an outstanding bar found inside Hakuba’s largest hotel. Amidst the soaring beamed ceilings and floor tiles centered on an indoor fire place. Order a cocktail and settle into black leather couches. Snacks are available including great tasting deluxe burgers.

I
zakaya, or Japanese style pubs, are not only great places to diner in but also perfect to get an insight into Japanese culture. If you have made it to Hakuba, then you have to make it to an Izakaya! Izakayas were formed when liquor stores in Old Tokyo started offering a few snacks whenever someone came to buy sake, these stores soon began to sell a few appetizers and thus the Izakaya was born Time travel a few hundred years later and you have the modern Japanese Izakaya serving nihonshu -sake, shochu and local delicacies. Izakaya are friendly and social places where it is completely reasoable to strike up a conversation with total strangers. When you visit an izakaya, you will no doubt encounter the other side to the reserved and polite mannerisms of our Japanese friends. An Izakaya is where everyone can loosen up and talk about anything with not only their friends and co-workers but also with their bosses. The unwritten rule is very much like the Las Vegas rule, what is said in the izakaya, stays in the izakaya! For foreign visitors, izakayas are great places where you can easily access and experience Japanese culture and are indeed a great place to make new friends as people are more open and
may even wish to either befriend you or to practice their English with you. Although the budget and food differs between izakayas they are all casual and most importantly, reasonable. A budget of between 3,500 to 5,000 yen is about average for both food and drinks. If you are still put off by the price then remember there is no custom of tipping in Japan! Once you enter and sit down in the Izakaya, yes, Izakayas are for sitting not for standing, it is custom to order a first glass of beer, usually with the catch phrase “toriaezu biru” which can seem more like a greeting rather than an order. A small appetizer called an otoshi, is placed on your table. This is more like a table charge, at about 300yen – don’t get upset, they are not trying to scam you, but only to break the ice with this deliciously. Ordering can seem to be daunting for Izakaya first timers, but in reality it is rather simple. Many Izakayas will have pictures as well as English menus. To order, catch the waiters attention by calling out “Onegai shimasu, please – a very useful phrase to know. You can always order more at any time. If you ever get close to the staff or locals, you should ask about the “ura menu” this is a secret menu only known to regulars.
Drinks The Japanese themselves after starting with the first round of beer, may
then move on to nihonshu (the rice wine that for some reason is commonly called “sake” in English, but in Japanese “sake” (or “o-sake”) refers to alcoholic beverages in general), which can be drunk hot or cold. There are hundreds of brands to choose from. Shochu – distilled spirits made from rice, barley or sweet potatoes among other things – is also popular and can be drunk neat, on the rocks, or mixed with water, fruit juices or even oolong tea. Naturally, soft drinks are available as well.
Food These days, izakaya serve all sorts of things, but the focus is invariably on traditional Japanese dishes that go well with beer and nihonshu sake. Among the perennial favorites are yakitori (pieces of chicken grilled on bamboo skewers) and oden (potatoes, vegetables, eggs, octopus and other things boiled in a broth). Izakaya specializing in seafood are also common.
The Bill Usually people share the dishes and split the bill at Izakayas. This will likely be a handwritten piece of paper with only the total bill on it. It is very rare that an Izakaya will falsify the bill, if in doubt then you can always ask them to break it down. Lastly, as you leave the Izakaya, tell the staff iin a loud voice “gochiso samadeshita”, which means thanks for a hearty meal and more importantly showing that you’ve enjoyedand appreciated the food and drinks.

Fired to a crispy, Roman-style perfection in only a few minutes. A word of warning, your eyes are sometimes bigger than your belly….do not pile the toppings too high! Getting around in the evening is cheap and convenient with the Genki-go evening shuttle bus services. The buses circulate the resort from about 6pm to about 11pm The buses pass through all of the main accommodation centers, supermarkets and après ski areas. The service runs from December 23rd through to February 28th. The price is ¥300 per person per ride. Under 6years old is free.
