Farm shops, with a colourful array of local produce, including good value local free range eggs, fresh milk refill stations, chutneys, cheese, chocolates, vegetables, ales, spirits and wine, are often more like rural food halls!

Lyburn Farm lies on the northern edge of the New Forest and runs a herd of 170 pedigree Friesians. Using milk to produce a hard, yellow cheese, but not that reminiscent of a Cheddar, wheels are made in 5kg rounds and come in six different styles. Best known - Old Winchester, a very hard cheese 18 months of age. At the other end, Stoney Cross is mould ripened, young, supple and buttery at only eight weeks of age. Take yourself to a farmers’ market, greengrocer or farm shop to see the colourful splendour of the season’s produce.

Due to climate change, seasonality is shifting; some crops such as asparagus are available earlier in the year. Others, such as strawberries, are still growing in late autumn. So read the labels and pick local and British whenever possible.

Seasons Eatings

Produce is cheaper when it is in season, as well as being more flavoursome and nutritious as it is fresher. Eating local seasonal produce is also better for the planet thanks to fewer miles between field and table. So check the labels and choose local whenever possible.

Spring

Spring marks the beginning of the cooks’ year with fresh greens available including shoots of asparagus, spring greens, spring onions, sprouting broccoli and watercress.

Summer

Make the most of the abundance of fruits, herbs and vegetables available. Here’s an easy recipe from Munch Lunch & Dinner Cookbook that is bound to become a family favourite.

Summer Veggies with Wild Garlic Pasta Serves 4

Ingredients

• 4 handfuls dry pasta

• 2 handfuls wild garlic

• 2 handfuls spinach

• 1 handful fresh mint

• 1 handful fresh basil

Precook the pasta, cool and set aside.

If you have foraged the wild garlic, wash it thoroughly, and rinse the other veg, too.

Squeeze your lemon and set the juice aside.

Prepare all your vegetables into the same mixing bowl: rough chop the spinach, basil, mint and wild garlic. Next dice the tomatoes. Zest the lemon. Peel the courgette into ribbons (by running a peeler down each side as if peeling a carrot), chopping any remaining courgette that can’t be ribboned. Add the peas, caraway seeds and salt and mix well.

• 3 salad tomatoes (ideally Isle of Wight tomatoes for sweet flavour)

• ½ lemon

• ½ courgette

• 2 tbsp peas (you can use frozen for ease)

• 2 tsp caraway seeds

• Pinch of salt

• 1 dsp cooking oil

• Small piece of Old Winchester (Lyburn Farmhouse Cheese) or Italian hard cheese

Heat the oil in a large frying pan, on a medium heat. Add the contents of your mixing bowl and stir well, cook for about three minutes, then add the lemon juice and cook for another minute or so, stirring constantly.

Quickly add the pasta and grate the cheese straight into the pan, mix well, then serve.

Autumn

Autumn is often favoured by chefs, thanks to big-flavoured meats and vegetables.

Beetroot Curry

Recipe from Munch Lunch & Dinner Cookbook Serves 4

Ingredients

• 4 medium beetroot - a great source of fibre, iron and vitamin C, which can be found quite cheaply at farmers’ markets when in season

• 1 red pepper

• 1 yellow pepper

• 1 green pepper

• 1 onion

• 4 cloves garlic

• 1 dsp cooking oil

• 1 dsp medium or hot curry paste

• 1 tsp caraway seeds

• 1 tsp cumin

• 2 tsp coriander leaf

• 1 tsp lazy chilli

• 1 tin tomatoes

Method

Peel and dice the beetroot and set aside; the juice gets everywhere, but it doesn’t stain! You may want to wear gloves. Deseed and roughly dice the peppers.

Peel and thinly slice the onion. Peel and grate the garlic. Heat the oil in a medium-sized frying pan on a medium heat. Add the spices, carraway seeds and coriander and gently mix with a wooden spoon, to make a paste.

Next add the garlic and onion, mix well, then add the peppers. Cook, stirring regularly for two minutes.

Now add the beetroot and the lazy chilli. Mix well. Add the tomatoes, then fill the empty tin with water – to get all the lovely juice – and add this, too. Turn the heat up to medium high and bring to the boil. Turn the heat back to medium and cook for about 15 minutes or until the beetroot is soft, adding more water if necessary, to keep a thick sauce consistency. Serve with rice, pitta or couscous.

This is the time of year for comfort food such as robust soups, casseroles and one pot dishes. Minimise waste and save money by using ends of vegetables to make excellent stocks. Mike Alexander of The Farmers Butcher suggests using shin of beef. “This is an oldfashioned, relatively inexpensive cut of beef that is way ahead of any other cut of beef in flavour, tenderness and value for money when cooked correctly. It is a fibrous but lean piece of meat which needs to be cooked with care and patience. Normally cut into rings or diced into large chunks, it needs long, slow cooking. Perfect for the slow cooker with a cooking time of five to six hours allowing the fibres to break down and the gelatinous strands to melt giving you a double whammy of flavour and mouth wateringly tasty meat. Cook with a good quality dark stout for a rich earthy flavour, throw in mushrooms, shallot, diced carrot and swede. Serve with a potato and chive mash!”

“Learn how to butcher a whole chicken. This will greatly reduce the cost of your meals as buying a whole chicken is way more cost effective. Freeze the wings each time (after a few attempts you will have enough wings for a meal!). Roast the whole bird. Remove the legs and cool. Leg meat can be flaked off the bone and used in pasta or sandwiches, while the breasts can be taken off the bone and served with almost anything. Keep the carcass and use to make a nutritious bone broth for a quick and simple ramen bowl. Make sure you pick all the meat off!”

“Save any white fish bones and heads to make a bouillabaisse sauce. Marinade with leftover wine (it can be red or white), root vegetable trimmings, warm spices such as coriander, cumin, paprika and saffron, herb stalks, garlic and tomato for a day or two, and then lift out the fish bones. Roast these golden brown on a tray whilst you simmer the marinade mixture, add the bones back to the liquid and cook gently for a couple of hours, seasoning and tasting it throughout. Use a high-powered blender until smooth and pass through a fine sieve. Add Tabasco and lemon to taste.”

”As with any cooking, organisation is key –even more so as you will be outside and want everything to hand. You can find the hot spots on your grill by using some plain white bread – lay over the whole BBQ area and you’ll notice where it’s more and less fierce pretty easily.
