Learning has become an inspirational experience.
One of Hampshire Fare’s key roles is education. The county food group has taken producers into primary schools to encourage pupils to understand where the food on their plates comes from, and the passion and care involved in producing it.
Recently there has also been something of a learning revolution, including a new generation of cookery schools, each with a different approach and individual specialism. You will find courses for all abilities (from absolute beginners through to budding MasterChefs), interests and ages. Perhaps you are a busy parent looking for inspiration for the family supper? Maybe you want to master the BBQ? Or do you want to acquire a specific skill such as baking bread or butchery, knife skills, sushi or souffles? Now you can up your skills and your kitchen confidence!

There are many reasons to choose local when it comes to selecting eggs and dairy products. These include flavour, being environmentally friendly and animal welfare. For example, Hampshire Fare members include a microdairy where cows keep their calves with them and share their milk, and small family-run dairy farms producing delicious creamy milk. There are also local egg producers who take pride in having happy hens roaming free and producing well-flavoured eggs with yellowy yolks.
Then there are our local award-winning artisan cheesemakers. Did you know Britain is one of the great cheese-making countries in the world and many of its finest cheeses are made by Hampshire Fare members? Between them they offer a varied cheeseboard that includes gouda-style hard cheese, blue cheese, bloomy camembert-style cheese, nettle and garlic flavoured, halloumi-style and buttery mould-ripened cheeses.
When it comes to ice cream and gelatos, local scoops the top spots for quality of ingredients and choice of flavours. Ice cream makers in Hampshire and on the Isle of Wight concoct terrific confections with flavours such as banoffee, blackcurrants and cream, coconut, and rhubarb and ginger. Delicious!

Using milk to produce a hard, yellow cheese, but not that reminiscent of a Cheddar, wheels are made in 5kg rounds and come in six different styles. Best known - Old Winchester, a very hard cheese 18 months of age. At the other end, Stoney Cross is mould ripened, young, supple and buttery at only eight weeks of age. Cheese can be packed as whole wheels or as vac-pack wedges for village shops.

Eating seasonally makes sense. Fresh fruit, vegetables and salad leaves are cheaper when they are in season, and much more flavoursome and nutritious. With such a short journey from grower to table, produce is not only fresher, but ‘greener’, thanks to reduced food miles.
Take yourself to a farmers’ market, greengrocer or farm shop to see the colourful splendour of the season’s produce.
Due to climate change, seasonality is shifting; some crops such as asparagus are available earlier in the year. Others, such as strawberries, are still growing in late autumn. So read the labels and pick local and British whenever possible.
Also look out for microgreens, available year-round, which elevate simple dishes to another level with their intense burst of flavour as well as being healthy and nutritious.

Spring marks the beginning of the cooks’ year with fresh greens available including shoots of asparagus, spring greens, spring onions, sprouting broccoli and watercress.
Make the most of the abundance of fruits, herbs and vegetables available. Here’s an easy recipe from Munch Lunch & Dinner Cookbook that is bound to become a family favourite.
Summer Veggies with Wild Garlic Pasta Serves 4
Ingredients
• 4 handfuls dry pasta
• 2 handfuls wild garlic
• 2 handfuls spinach
• 1 handful fresh mint
• 1 handful fresh basil
Precook the pasta, cool and set aside.
If you have foraged the wild garlic, wash it thoroughly, and rinse the other veg, too.
Squeeze your lemon and set the juice aside.
Prepare all your vegetables into the same mixing bowl: rough chop the spinach, basil, mint and wild garlic. Next dice the tomatoes. Zest the lemon. Peel the courgette into ribbons (by running a peeler down each side as if peeling a carrot), chopping any remaining courgette that can’t be ribboned. Add the peas, caraway seeds and salt and mix well.
• 3 salad tomatoes (ideally Isle of Wight tomatoes for sweet flavour)
• ½ lemon
• ½ courgette
• 2 tbsp peas (you can use frozen for ease)
• 2 tsp caraway seeds
• Pinch of salt
• 1 dsp cooking oil
• Small piece of Old Winchester (Lyburn Farmhouse Cheese) or Italian hard cheese
Heat the oil in a large frying pan, on a medium heat. Add the contents of your mixing bowl and stir well, cook for about three minutes, then add the lemon juice and cook for another minute or so, stirring constantly.
Quickly add the pasta and grate the cheese straight into the pan, mix well, then serve.
Autumn is often favoured by chefs, thanks to big-flavoured meats and vegetables.
Beetroot Curry
Recipe from Munch Lunch & Dinner Cookbook Serves 4
Ingredients
• 4 medium beetroot - a great source of fibre, iron and vitamin C, which can be found quite cheaply at farmers’ markets when in season
• 1 red pepper
• 1 yellow pepper
• 1 green pepper
• 1 onion
• 4 cloves garlic
• 1 dsp cooking oil
• 1 dsp medium or hot curry paste
• 1 tsp caraway seeds
• 1 tsp cumin
• 2 tsp coriander leaf
• 1 tsp lazy chilli
• 1 tin tomatoes
Method
Peel and dice the beetroot and set aside; the juice gets everywhere, but it doesn’t stain! You may want to wear gloves. Deseed and roughly dice the peppers.
Peel and thinly slice the onion. Peel and grate the garlic. Heat the oil in a medium-sized frying pan on a medium heat. Add the spices, carraway seeds and coriander and gently mix with a wooden spoon, to make a paste.
Next add the garlic and onion, mix well, then add the peppers. Cook, stirring regularly for two minutes.
Now add the beetroot and the lazy chilli. Mix well. Add the tomatoes, then fill the empty tin with water – to get all the lovely juice – and add this, too. Turn the heat up to medium high and bring to the boil. Turn the heat back to medium and cook for about 15 minutes or until the beetroot is soft, adding more water if necessary, to keep a thick sauce consistency. Serve with rice, pitta or couscous.
Munch Lunch & Dinner Cookbook can be purchased via munchcic.co.uk
This is the time of year for comfort food such as robust soups, casseroles and one pot dishes. Minimise waste and save money by using ends of vegetables to make excellent stocks. Your local butcher is your friend, too, you can buy the exact weight required minimising waste and saving money, and your butcher can also provide cooking advice, including tips for cooking cheaper cuts of meat in a slow cooker.
Mike Alexander of The Farmers Butcher suggests using shin of beef. “This is an oldfashioned, relatively inexpensive cut of beef that is way ahead of any other cut of beef in flavour, tenderness and value for money when cooked correctly. It is a fibrous but lean piece of meat which needs to be cooked with care and patience. Normally cut into rings or diced into large chunks, it needs long, slow cooking. Perfect for the slow cooker with a cooking time of five to six hours allowing the fibres to break down and the gelatinous strands to melt giving you a double whammy of flavour and mouth wateringly tasty meat. Cook with a good quality dark stout for a rich earthy flavour, throw in mushrooms, shallot, diced carrot and swede. Serve with a potato and chive mash!”
“Learn how to butcher a whole chicken. This will greatly reduce the cost of your meals as buying a whole chicken is way more cost effective. Freeze the wings each time (after a few attempts you will have enough wings for a meal!). Roast the whole bird. Remove the legs and cool. Leg meat can be flaked off the bone and used in pasta or sandwiches, while the breasts can be taken off the bone and served with almost anything. Keep the carcass and use to make a nutritious bone broth for a quick and simple ramen bowl. Make sure you pick all the meat off!”
Tips from James Wills, Chef Director, Blackboard Canteen
“Save any white fish bones and heads to make a bouillabaisse sauce. Marinade with leftover wine (it can be red or white), root vegetable trimmings, warm spices such as coriander, cumin, paprika and saffron, herb stalks, garlic and tomato for a day or two, and then lift out the fish bones. Roast these golden brown on a tray whilst you simmer the marinade mixture, add the bones back to the liquid and cook gently for a couple of hours, seasoning and tasting it throughout. Use a high-powered blender until smooth and pass through a fine sieve. Add Tabasco and lemon to taste.”
There has been an outdoor cooking revolution with more and more of us discovering the versatility of the BBQ. It’s perfect for fish, including local trout, great for charred marinated vegetables, and just right for melting a creamy Tunworth cheese, plus many traditional family butchers offer great value BBQ packs for an easy win with family and friends.
James Wills, Chef Director, Blackboard Canteen, suggests the following top BBQ tips
”As with any cooking, organisation is key –even more so as you will be outside and want everything to hand. Make sure you’ve got a service area set up next to where you are cooking, be mindful of cross contamination and keep your ‘raw’ and ‘cooked’ implements separate. You can find the hot spots on your grill by using some plain white bread – lay over the whole BBQ area and you’ll notice where it’s more and less fierce pretty easily. Keep your marinade to hand and brush, baste and brush again throughout.”

The current mantra is eat less, but eat better, particularly when it comes to buying meat, fish and game. Simply discover your local butcher, fishmonger and game specialist who can help us make informed choices about what we eat, where our meat, fish and game comes from, and how to cook it.
Choosing to eat meat that has been pasture fed on environmentally sustainable farms that care for their livestock helps reduce our impact on the natural world. It also tastes better and is healthier for us, as such meat contains more nutrients and vitamins than when it has been intensively farmed. Wild game is a particularly healthy option providing leaner, more nutritional meats.
Fish also offers massive health benefits. Our local seafood is hugely appreciated, but not by us, with about 70% of the seafood we catch being exported. Yet our fishermen and fish farms catch and produce dozens of different species from hake to mussels. Support our local fishermen and fish farms. Ask your local fishmonger about local seafood; they can also help with preparation and cooking tips. Fresh seafood simply prepared is delicious.

Quench your thirst with Hampshire and the Isle of Wight’s diverse drinks scene. It ranges from spirits using locally foraged botanicals to microbreweries producing imaginative craft beers and traditional real ales, golden ciders to honeyed meads, and a wine industry with fizz to rival champagne! Soft drinks include the juiciest juices, pure natural waters, non-alcoholic cocktails, tonic waters, small batch roasted coffees, and quality teas.
You can also discover the story behind your favourite tipple as many local drinks producers offer brewery, distillery or winery tours and tastings. Some Hampshire Fare drinks producer members also host a variety of experiences, including make-your-own-gin classes, botanical foraging sessions, cocktail masterclasses, tutored beer tastings, sunset vineyard tours, wine pairing presentations and afternoon teas among the vines. What a refreshing way to discover local. Cheers!

Bakes and breads have undergone a major makeover in the past decade or so. This was arguably kickstarted by The Great British Bake Off back in 2010. This TV series was inspired by the classic village fete cake competition and went on to become BBC TV’s most-watched programme with its star bakers, technical challenges and showstoppers.
Alongside this we’ve also seen the return of the Afternoon Tea, now transformed into a contemporary treat. Traditional bakeries are burgeoning, and while pies never went out of fashion, certainly today’s pies have a confident swagger, flavoursome fillings and come in gluten free, dairy free, veggie and vegan choices to meet our dietary and lifestyle needs.
Bakes and breads may provide our daily staples, however confectionery encompasses small indulgences that mean so much. Hampshire Fare members include award-winning chocolatiers, bisotti, brownies, fudge, shortbreads, souffles and more delights.

From alpaca coats to yew wood coasters, local produce comes in a variety of crafts, helping to reconnect our homes, lifestyles and wellbeing with the natural environment.
Natural ingredients are increasingly appreciated in skincare, where elements such as beeswax, propolis, honey, lavender and goats’ milk, known for their soothing and healing properties, are used to create balms and creams, shower gels and soaps.
Scented candles and reed diffusers have also become massively popular, infusing our homes with fragrant memories or subtly transforming our spaces into somewhere else. Due to the growing focus on the environment, there is a trend towards clean, green, nature-inspired scents, such as peppermint and pine, to conjure up a fresh, airy coastal morning or the deep, comforting woody notes of the Forest. It even has a name: scent-scaping!

Looking for that perfect gift or indulging treat? Hampshire Soap is a family business in the heart of Hampshire. Soaps are handmade by centuries-old traditional processes sourcing local, natural ingredients for a highly moisturising, luxury soap experience.
There has been a revolution when it comes to artisan preserves and condiments. Traditional jams continue to be a favourite (you can’t beat a cream tea with local strawberry jam), but they have been joined by an exciting range of chutneys, jellies, pickles, relishes, dressings, marinades and sauces using local ingredients and no hidden additives.
These local preserves and condiments frequently offer some tasty and unexpected flavour combinations – such as courgette curry relish, black garlic ketchup, blackcurrant and rhubarb jam, and raspberry vinegar to get the taste buds hopping.
A relatively new addition to the local condiments scene has been hot sauces. These include Caribbean-inspired pepper sauces that can be used as marinades or added to pasta dishes, stews and curries to add complexity and spice, as well as hot chilli sauces and salts great for barbecues and burgers.
Whatever your meal, local chutneys, pickles, preserves and sauces certainly add pizzazz.

Street food is on the up. The street food phenomenon has reset our market, festival and show scene. Refurbished horse boxes, shacks and trucks serve everything from BBQ to hog roasts and paella, coffees to cocktails and craft ales.
Street food has also reshaped event catering. You can still have formal and fancy. However, the underlaying trend is towards more relaxed food experiences. Street food (and festival food) lends itself to such occasions. Outdoor cooking adds theatre with sides of fish cooked on cedar planks over fire pits, woodfired pizzas are perfect for grazing and sharing, colourful chillis add big, bold flavours…
The whole experience is less formal, more friendly, social, and relaxed with shared feasting creating more chatter in the room.
