Harald Tietze is a world renowned herbalist and master kombucha brewer. In his “Kombucha Teaology” he easily and clearly explains how to make great tasting kombucha tea with the specific health benefits you may be looking for. Harald wrote this book a year and a half after his popular “Kombucha Miracle Fungus”. Here he addresses many of the specific questions that he received on how best to make kombucha tea a personal elixir. For newbies just starting out making kombucha for the first time this book offers the basic kombucha recipe and guidelines. Although this book mentions specific herbal remedies that go into the active ferment, your first ferment should be done in the traditional kombucha brew (as Harald explains on the first page.

Debra has had extensive experience with the Kefir Culture for many years and a lifetime of literary experience. The Kefir book is sold separately and as an integral part of The Customer Starter Pack. Ginger Beer Happy Herbalist offers real ginger beer plant, not the yeast bug found being sold by others .
It is the bacteria in the Ginger Beer Plant that produces the health benefits. Our Ginger Beer Plant is a large size plant-like structure. Simple, quick and easy to make at home. We also have Water Crystals which have been referred to as Ginger Beer Plant. Check out our home Ginger Beer Recipes for health and longevity.
Basic Ginger Beer Recipe: Bring to a boil the water, sugar, lemon and ginger. Boil for a few minutes. Allow to cool to room temperature and then add the Ginger Beer Plant and 1/2 cup of previous brewed Ginger Beer. Stir / shake well. Cover with a cloth, set in a warm place for a few days. A tight cap will produce slightly higher amounts of alcohol and more carbonation. Beware that cap containers may explode. Using a cloth cover allows much of the carbonation to escape. To know when your Ginger Beer is done is by taste. As the sugar ferments the ferment becomes more and more sour. If your brew is still as sweet as when you started a week ago then its not working. It may be what is referred to as a "stuck ferment". You can try to place in a container with a tight fitting cap and shake well to add oxygen. Leave capped and if there's carbonation and pressure in a few days its working. If not its not active anymore.
