The Process
Preheat oven for 60 minutes at 500° with the pizza stone (if you have one) on the lower shelf.
In a measuring cup, add the yeast and sugar to the warm water. Set aside so that it can “bloom” (when the water has a foam on top)

Combine the 22oz of flour and 1 tablespoon salt and loosely mix in 1 tablespoon olive oil in a wide bowl
Once the water/yeast has bloomed. Move flour to the middle of the bowl, make moat around the edge and pour the yeast water mixture into the moat Stir around the edge of flour in one direction continuously moving the bowl, to create a slurry around the bulk of the flour
Gradually incorporate the flour into the slurry It may look dry as you get near the end.

Pickup the pancake by one edge and pull it as you pass the edges through the fingertips of your hands Squeezing the edges as you move it around, allowing the weight to enlarge the size of the pancake. It will get thinner and thinner as you go around and around the edges. Once its about 12 inches in diameter, you are ready to build your pizza!!!
Put it on a peel that’s dusted with semolina flour (or corn meal) or you can use a sheet of parchment paper.
Now you're ready to adorn your pie with your favorite toppings and get ready to enjoy one of the best pizza pies you’ve eaten!
