To make the candied orange peel, cut the orange peel into ribbons, removing any white pith. Bring a small saucepan of water to the boil and blanch the peel for 1 minute, then remove and refresh in a bowl of cold water. Blanch twice more to remove any bitterness. Put 3 tablespoons water and the rice syrup in a small saucepan and bring to the boil. Add the orange zest and simmer over low heat for 20 minutes. Allow to cool and store in an airtight jar until needed. Preheat the oven to 170°C. To make the hazelnut praline, put the hazelnuts on a baking tray and bake for 5 minutes. Allow to cool slightly, rub off the skins and transfer the nuts to a small bowl. Pour on the rice and maple syrups and mix well. Transfer to a baking tray lined with baking paper and bake for 15 minutes, or until they begin to smell sweet. Cool and store in an airtight container in a cool, dry place. Bring the grain coffee and 1½ cups water to the boil in a saucepan over high heat. Reduce the heat to medium and simmer for 7 minutes, or until the liquid reduces to 1 cup. Strain into a separate saucepan and add the soy milk, agar agar, rice syrup, maple syrup and a pinch of sea salt. Bring to the boil, then reduce the heat and simmer for 3–4 minutes, stirring until the agar agar flakes dissolve. Add the kuzu mixture to the pan and stir until the mixture begins to thicken. Remove from the heat and add the ground hazelnuts, tahini, orange zest and vanilla. Pour into six 125 ml ramekins. Allow to cool, then serve with candied orange peel and hazelnut praline.

Handful of mint leaves 100 ml extra­virgin olive oil Juice of 1⁄2 lemon Salt, to taste

The flavour of this zingy oil explodes in your mouth. It is perfect for grilled fish or lamb. Depending on the strength of the mint you may need more leaves. I make small amounts of this oil as it tastes and looks better freshly made. If you are concerned about the cleanliness of the mint leaves (I am not since they grow in my garden) blanch them in boiling water for 10 seconds and then plunge into cold water. Dry well between sheets of kitchen paper.

On the whole the Amalfitani don’t tend to serve a side with fish. Instead, they drizzle it with locally made olive oil because the flavour of the fish is what’s important. However, one idea I loved was to make up an oil infused with mint and lemon. Serve grilled fish with a drizzle of aglio olio, or an oil made from garlic, mint and white wine vinegar or lemon. Add parsley and salt and grind in a pestle and mortar. Guests chose if they want aceto (vinegar) or limone (lemon).

Put the mint leaves and olive oil in a food processor and whizz until smooth. Alternatively, you can use a pestle and mortar. Add the lemon juice and salt to taste. Sieve through a fine mesh and pour into a small jug to serve.

Serves 4 350 g spaghetti or linguine 50 ml extra-virgin olive oil 2 medium squid, cleaned and cut into 1 x 3 cm strips 400 g fresh clams, cleaned 400 g fresh mussels, cleaned 4 raw king prawns, with shells 1 clove of garlic, peeled and finely chopped 1⁄2 fresh red chilli, depending on strength, finely sliced Handful of chopped parsley, roughly chopped 50 ml white wine 12 cherry tomatoes, halved Good pinch of salt

allo scoglio pasta from the roCks Scoglio is Italian for rock, so this dish is made with crustaceans fished from the rocks and tossed into bouncy, al dente lengths of pasta. The salty seawater is released from the shells as they cook and flavours the sauce along with chilli, garlic and fresh parsley. Bring a pan of well-salted water to the boil and cook the pasta until al dente. Heat the oil in a large frying pan, add the squid and cook through for just a few minutes. Add the rest of the seafood, garlic, chilli and parsley. The shells will start to open in just a few minutes. When they are all open, pour in the wine and let it reduce for a couple of minutes. Then add the cherry tomatoes and salt. Drain the pasta and toss in the sauce. Serve on warmed plates.

So often served in restaurants, made well basil oil adds beauty, colour and a delicate flavour to many dishes. It will keep out of the fridge for a few days but the colour will fade, so make small amounts as it is best served fresh. Sieve through a fine mesh and pour into a small jug to serve.

Perched high above the ocean, Aunty Tapuna has her own little market garden in her yard and a good relationship with all the fisher people of the island. At the bottom of her house is a lovely little restaurant where she serves only the freshest food and her crabs are famous all over the Cook Islands. She is wonderful for sharing her famous crab recipe with me but the best part was hunting the crabs the night before with Dave the fisherman. serves 2

1 live mud crab (about 1.2 kg/2 lb 11 oz), rinsed and cleaned 100 ml (31/2 fl oz) olive oil 1 onion, finely chopped 1 teaspoon chopped garlic 11/4 teaspoons finely chopped ginger 2 tablespoon chopped mixed herbs (such as coriander/cilantro, basil, flat-leaf parsley, chives, dill, spring onion/scallion) 50 g (13/4 oz) butter salt and ground black pepper 4 green mangoes (they must be yellow inside), peeled and roughly chopped 100 ml (31/2 fl oz) white wine 1 small sprig basil, to serve Put the crabs in the freezer for 1 hour to immobilise them or in a bucket of iced water for 15 minutes. Pull off the top shell, pull out the spongy grey gills and remove the guts. Chop the crab into 6 pieces and crack the large claws but leave them attached. Heat the oil in a large heavy-based saucepan over medium heat. When hot, add the onion, garlic and ginger and cook for 5–6 minutes or until soft. Add the herbs and cook for another 30 seconds or until fragrant. Add the butter, season to taste, then add half the mango and stir for 3 minutes or until the mango starts to break down. Add the wine to slow the cooking process, then add the crab, placing the claws in the pan first. Add the remaining mango on top, cover with foil, then a lid and cook over high heat, shaking the pan often to avoid sticking, for 5–7 minutes or until steam pushes through the lid. Carefully remove the lid, garnish with the basil sprig and serve immediately.
