These months are some of my favourite for the reason that it can only mean one thing...Christmas is coming! November is a great month as it sits right in the middle of Autumn and Winter so we get the best of both worlds. Root vegetables such as Jerusalem artichokes, celeriac and parsnips are in their prime and these deep, earthy flavours marry perfectly with game, pheasant, wild duck and venison being at their best in these months. The beauty of these ingredients is that you don't have to do a lot with them as they speak for themselves. From a fish perspective we have mussels, clams, sea bass,winkles and scallops in season, all components found in probably one of my favourite dishes of all time, Bouillabaise (French fish stew), who could ask for more on a cold winters evening that a warm bowl of rich tomato stew with fresh fish and good crusty bread...and red wine of course! With Halloween just behind us there are plenty of pumpkins around, pumpkin being such a diverse ingredient why not use it to make pumpkin pie or purée it and fold it through a risotto. As Christmas approaches we can of course look forward to sprouts, parsnips and chestnuts to be in season. A nice dish to make with chestnuts surprisingly is soup, making a thick purée with chestnuts, cream and chicken stock, topping with a Parmesan espuma, crisped onions and freshly grated black truffle...Oh, and don't forget a LARGE mug of warm mulled wine or cider.

1 bottle red wine 60g/2oz/demerara sugar 1 cinnamon stick grated nutmeg 1 orange, halved 1 dried bay leaf 60ml/2fl oz sloe or damson gin (optional)

1. Put the wine in a saucepan with the orange, sugar, bayleaf and the spices. 2. Heat gently until the sugar has dissolved. Taste to see if you want the wine sweeter, and add more sugar to taste. 3. • Preheat the oven to 200C/180C Fan/Gas 6. • Cream the butter and sugar together in a bowl until well combined, then beat in the egg yolks, one at a time until fully incorporated into the mixture. • Mix in the flour until the mixture comes together as a ball of dough. • Tip the pastry out onto a floured work surface and knead briefly until smooth. • Wrap the pastry in cling film and chill for 30 minutes. Alternatively, it can be

frozen for use at a later date. • Cream together the butter and sugar until light and fluffy. (You can do this in a food processor if you have one. Process for 2-3 minutes.) Mix in the eggs, then add the ground almonds and almond extract and blend until well combined. • Peel the apples, and cut thin slices of apple. (Do this at the last minute to prevent the apple going brown.) Arrange the slices over the biscuit base(you could also add apple compound). Spread the frangipane filling evenly on top. Level the surface and sprinkle with the flaked almonds. • Bake for 20-25 minutes until goldenbrown and set. • Remove from the oven and leave to cool for 15 minutes. Remove the sides of the tin. (An easy way to do this is to stand the tin on a can of beans and push down gently on the edges of the tin.) Transfer the tart, with the tin base attached, to a serving plate. Serve warm with cream, crème fraiche or ice cream. • To serve I also used the new sosa confit apricots that are fantastic in flavour and a great accompaniment.
