‘Tis the Time There are two ways to think about the end of the year. 2009 is winding down towards the end on December 31st, and somehow we have all survived a rough year. An alternative thought is that we are “coiling up our springs” for the rush of the Holidays. There are religious services, events, and maybe even some joyous festivities to plan and attend. Either way, please take the time to celebrate what is truly important: your family and friends.

These beautiful ceramic tea pots are tiny. They are designed for brewing the famous tea from just outside of the city of ChaoZhou in Southern China: Fenghuang Shuixian. ChaoZhou has an enormous and famous Buddhist temple, so there was a large community of educated tea drinkers in ChaoZhou for many centuries. Out of that cauldron came a wonderful oolong, a beautiful teapot and a method of tea brewing. This is similar to Uji, Japan where great traditions of tea and ceramic tea pots were developed to serve royalty and the religious hierarchy. These small pots work best with Fenghuang Shuixian, but also do a good job with other Chinese teas. Please enjoy this tradition of ancient China. To Brew fill the small tea pot with about 1.5 teaspoons of tea. Rinse the leaves briefly with boiling water. Then add more boiling water for 2 minutes. Pour. You can repeat this process. Each additional brew, please add another 15 seconds.

The northeastern region of Darjeeling on the border of Nepal and Bhutan is famous for three seasons of tea: the Spring’s First Flush, the early Summer’s Second Flush, and the late summer Autumnal teas.

2009 SFTGFOP1 Dj.8 We feel lucky. There was a drought in Darjeeling, India, and every early tea we tasted was disappointing. Then at the last moment, this tea showed up. Himalayan Orange J-04 This is a beautiful tea boasting many white tips. Although one can compare this tea to a Darjeeling First Flush, it is decidedly less brisk, with light overtones of tropical fruits. Master Blender In early April, my lovely wife Elyse and I flew to London to visit our friends at the Historic Royal Palaces. We attended a black tie dinner held at Banqueting House built for King Charles I of England. He used Banqueting House for gala celebrations, and that is what we had. My wife called my attention to the grand Rubens on the ceiling and my thoughts turned to my mentor, Stanley Mason. How impressed he would be that Elyse and I were guests of the Historic Royal Palaces. If only he could have joined us for this wonderful evening especially since Stanley toiled most of his life in London as a tea purveyor. I also recalled, it was around 1619, that tea was introduced in London for the first time. Maybe Banquet House hosted some of the first tea parties in England. While in London, Elyse and I took tea in three distinguished hotels. First, we enjoyed afternoon tea at the Dorchester where we were well known. The Dorchester was the first hotel in London to serve Harney & Sons teas over three years ago. Then we took tea at Claridge’s on Sunday. It reminded me of the old Palm Court at the Plaza in New York. Our third afternoon tea was taken at the Connaught Hotel. Once again, Harney tea was brewed and served to our complete satisfaction. We were recognized there because our companion was our English lady friend, Jane Pettigrew, the voice of British Tea. Thank you for reading my ramble. Oh! Before I close, a few lines on an exciting study by the Drs. Li of the Angiogenesis Foundation. They are conducting research on the prevention of bad blood vessels growing in our bodies. The main reason these blood vessels are bad is because they feed tumors. They will release the results soon. Without stealing their thunder, I recommend that you keep drinking your tea! Mike’s Tea Ratings Mike rates many of our teas on three attributes. A rating of 0 indicates the tea has none of that particular characteristic, and a rating of 5 indicates that it is a primary characteristic. Briskness refers to a tea’s ability to make your mouth pucker, also known as astringency. Some astringency makes tea brisk & desirable (like white wine). Too much briskness can be a problem, but may be controlled by reducing the brewing time.

Body refers to whether or not a tea feels thick in the mouth such as Assam or light such as a white tea. Sometimes this body comes from dissolved solids from the leaves like the Assam, and sometime it is from all the amino acids like Ichiban Sencha.

Aroma refers to whether or not the tea has a pleasant smell, often the most prized part of tea. That makes sense, since humans can smell much better than we can taste. Sometimes the pleasant smell is teased out of the tea leaf by a skilled tea maker, sometimes it is flavor blended in here by our blenders.
