Santiago de Cali is the capital city of the Department of Valle del Cauca, and the most populous city in western Colombia and the second largest city in the country behind Bogotá. Founded on 25 July 1536 by Sebastián de Belalcázar, Cali nowadays is the principal urban, cultural, and economic city in western Colombia.

OUR CULTURE The traditional cuisine of Cali and the Department of Valle del Cauca can be easily identified. It is a fusion of the region’s Spanish, Quechua, and African heritage with the culinary secrets of Antioquia. Favorites are the “sancocho de gallina”, “arroz atollado”, tortilla soup, “aborrajado”, toasted green plantain with “hogao”, and “tamales”. Sugarcane plantations have inspired a variety of desserts such as great varieties of cookies, “manjar blanco”, “gelatina de pata”, coconut sweets and “champús”.
