Who doesn’t love brunch? The word conjures up visions of a beautifully set table piled high with pancakes drowning in butter and syrup; warm breads and muffins bursting with berries, fresh fruit, and sandwiches; and, of course, eggs. These are recipes I generally reserve for lazy mornings when I have more time to spend in the kitchen and linger at the table with friends and family. Time to whip up soufflés or a classic quiche. Or maybe a hearty, rustic egg sandwich dripping with melted cheese. Whether you serve these dishes for a late breakfast or early lunch, brunch can be whatever you want to make of it, but one thing’s for certain—eggs will be the star!
