Our community has always donated generously or volunteered their time to support charitable organizations without whose outreach, services, and compassion the needy would face a much bleaker holiday. In addition to our goal of keeping you informed 24/7 of local news, weather and sports, at Channel 8 KLKN-TV, giving back to the community we’re all a part of is paramount in our holiday plans. We asked the Channel 8 Eyewitness News Team “If you could spend Christmas anywhere in the world (other than Nebraska), where would it be and why?” Here’s what they said.

News Anchor Can you say, “Hang 10 Dude?” If money was no object, I would pack up the entire family and spend it in Hawaii. I’ve enjoyed every Christmas of my life in the cold Midwest, but wouldn’t it be neat to open presents under a palm tree with sand in-between your toes? Plus, I think Santa would probably enjoy having his cookies and milk on the beach! Speaking of food, why not take a break and let someone else prepare it; maybe at a Hawaiian luau! But whether I’m putting on a lei or slipping on a second pair of gloves, hot or cold, as long as I’m surrounded by family, it really doesn’t matter where we spend Christmas. Never hurts to dream though, right?

News Anchor To me, Christmas is more about who you’re with, than where you are. Whether I’m spending it out of the country, in Nebraska, or celebrating with family in another state, I always enjoy being around the people I love. This year, I’m actually looking forward to staying put and appreciating the simplicity of a decorated tree, church, and a Christmas morning with my fiancé and our dog. Speaking of that fiancé, we spent last Christmas Day enjoying a vacation of a lifetime — on a gorgeous beach in Barbados, getting engaged!

There are so many places on my bucket list I am excited to see — and passport stamps to gather — but this holiday, the only place I want to be is home!

Chief Meteorologist Christmas is certainly one of the most exciting times of the year for me. It always takes me back to when I was a kid, and to the great times I had with my family on that day. This also makes Christmas a hard time in some ways, as my family is now scattered throughout the country. I have various family members living in St. Louis and Texas. Because of this, if I could spend Christmas anywhere in the world, it would be on my own private jet. I would use my jet to travel between Texas and St. Louis to see my whole family on the same day. Also, my jet would continuously play “Christmas Vacation” throughout the duration of the trips.

Sports Director I rarely spend Christmas in Nebraska because all of my family is from Iowa, so that’s usually where I spend Christmas. But if I had a choice to spend Christmas anywhere in the world, it would probably be somewhere warm.


The Spirit of Giving

Capital Humane Society “The greatness of a nation can be judged by the way its animals are treated.” — Mahatma Gandhi

apital Humane Society’s mission statement exemplifies the spirit of Gandhi’s sentiment. It reads: “To fulfill the promise of animals, the Capital Humane Society shelters animals, protects animals and teaches compassion and respect.” Founded in 1902, the Capital Humane Society (then known as the Lancaster County Humane Society) operated out of a shed near the West ‘O’ Street Viaduct. Today, the organization has two locations and takes in thousands of lost, injured, and unwanted animals every year providing kindness, care, shelter, and permanent homes for animals in Lancaster County. Capital Humane Society Services Heavily reliant on public support, donations help Capital Humane Society provide important services including: pet

adoptions with guidance to help match up the right people and pets, spaying/neutering, microchips, vaccinations, veterinary care, humane education tours and presentations to the public to teach the importance of responsible pet care and kind treatment of animals, providing extensive animal behavior information, the Foster Care Program, basic dog obedience classes for canines over six months old, the Lost and Found which helps to reunite lost pets with their families, and much more. Christmas in Seward

D

o you have an ugly sweater you like to wear? Do you adorn gingerbread houses for Christmas? Do you enjoy taking the kids to a holiday parade to see Santa riding in a festive float? If so, you’ll love the Christmas celebrations scheduled in Seward this year.

Seward Holiday Craft Fair

Seward’s Christmas parade and holiday events have become mainstays in celebrating the holidays. You can start the fun off early at the 35th Annual Seward Holiday Craft Fair scheduled for Saturday, November 21 from 9:00 a.m. to 3:30 p.m. at the Seward Fairgrounds AG Pavilion and Harvest Hall. More than 100 vendors will sell their handcrafted items so you’re sure to find unique gifts for the holidays. The fair is sponsored by the Seward Junior Women’s Club which donated its 2014 proceeds from craft booth rentals and food sales to more than 25 community programs and organizations.

Celebration Begins November 28

Then comes a full day of celebration on Saturday, November 28. Santa will arrive on the courthouse lawn to meet visitors at 10:00

2015 Seward Lighted Parade

The 5th Annual Seward Lighted Parade begins at 5:30 p.m. with an array of festively decorated floats, including the main attraction — Santa himself riding in his very own colorful float. And since many of the shops and restaurants will be extending their hours for the day, you can browse for gifts and enjoy dinner in town.

Rudolph’s Red Nose Run

If you like a winter’s walk or run, plan to lace up your sneakers for this year’s “Rudolph’s Red Nose Run” set for Saturday, December 5. The 1 Mile Fun Run begins at 9:00 a.m. and the longer 5K run starts at 9:30 a.m. You can choose your own pace — walking or running — and if you’re in a festive mood, wear a costume appropriate for the season (not required). Registration starts at 8:00 a.m. at Seward Middle School, 2401 Karol Kay Blvd.


Teaching Kids to Help Others

T

he holiday season is a time when our thoughts turn to those in need, and it’s never too early to introduce to children the value of thinking about others, expressing kindness, and giving of themselves to help those whose holiday would be brightened by a helping hand. Here are a few ideas your kids might like to do on their way to becoming world-class philanthropists!

Buy a new toy with their own money for an underprivileged child

There are many organizations that provide new toys to children who might otherwise go without gifts during the holidays (Toys for Tots and Salvation Army Christmas Angel Tree are two examples). Your child can buy a toy with his or her own money and donate it so another child has a package to open on Christmas morning. Give outgrown clothes and toys to needy children

Organizations such as Salvation Army, ARC, Goodwill and others use your donations to stock their thrift stores. This not only helps families with limited resources, but also funds programs to help people in our community. By finding gently used clothing and toys to donate, your kids can help others. Offering to do household chores like taking out the trash and recycling is a great way kids can help their parents this holiday season.

Help Mom and Dad around the house

Parents have a lot to do during the holidays and could use all the help they can get. Kids can offer to do household chores throughout December, daily or weekly. Parents would appreciate help with the dinner dishes; vacuuming; taking out the trash and recycling; feeding the pets; or, for older kids, making dinner for the whole family. Teach an older relative how to get online

If you have a child with an inclination to teach, many seniors (like Grandma and Grandpa) would love to learn how to access the nearly unlimited social, entertainment, and educational aspects of the Internet. They might even find a long-lost childhood friend and correspond via email. Help elderly neighbors during bad weather

Offer to shovel walks, steps, or the driveway.

The Spirit of Giving

he human spirit is a resilient thing. Even when beaten down by the oppression of poverty, hunger, homelessness, or addiction, there is a flicker of hope that somewhere there is a compassionate hand reaching out to help. Those in our community who face these struggles every day — many through no fault of their own — have found that helping hand at Matt Talbot Kitchen & Outreach (MTKO). In an environment of respect and nonjudgmental love, MTKO feeds the body and mind of those looking for assistance, offering a complete support system to help them rebuild their lives. Donations from the community help provide two meals per day, health care, alcohol and drug services, basic and emergency needs, street outreach, nutrition education, life skills training, transitional housing, counseling, crisis assistance, and more. An example of the organization’s caring support comes from MTKO executive director, Susanne Blue, CMSW. “We were able to help a longtime MTKO guest recently,” Blue said. “When he signed up for the military as a young man over 40 years ago, he accidentally gave the wrong Social Security number to the officer enlisting him. After his service was complete (and he was given an honorable discharge), this veteran was unable to receive benefits

from the VA due to the inability to prove his correct identity because of the original mix-up. But after many years of research and thanks to the work of the VA and MTKO staff, this veteran is now receiving the VA benefits he deserves.” Blue added, “We love a happy ending!”

MTKO Annual Holiday Fiesta MTKO’s annual “Holiday Fiesta” will take place on Thursday, December 17 from 11 a.m. to 1 p.m. Guests, who might otherwise have no holiday celebration, enjoy a happy holiday atmosphere, food, sweets, festive decorations, and music. If you’d like to help, MTKO needs assistance with decorations and donations of sweet treats. “Matt Talbot Kitchen & Outreach is so grateful to be a part of such a caring community that empowers us to provide daily hunger relief, outreach and homeless prevention services 365 days a year,” says Blue. “The tangible services are great and provide for the most basic needs, but often overlooked is the critical element of hope that we provide to give those struggling the courage and motivation to carry on. From visits with Santa and train rides to the North Pole, to holiday crafts and treats, music and dancing, there are all kinds of fun family activities in our area. Here are some of the events that are definitely worth checking out.

Lincoln Children’s Zoo North Pole Express Saturdays and Sundays, December 5, 6, 12, 13 11 a.m.-3 p.m.

Take a fun holiday train ride to see Santa Claus. Board the North Pole Express at Lincoln Children’s Zoo and head to Santa’s Village. Once you arrive, you’ll travel down Candy Cane Lane, stopping at the Hive to write a letter to Santa and visit with some of his animal friends. Then you’ll continue on to the Village where you’ll meet Santa himself and can take photos (photo packages are available or you can bring your own camera). As you visit, you’ll enjoy treats made by Santa’s elves (hot chocolate and candy canes). Then you’ll go to the “Mrs. Claus Bakery” where you’ll have lots of fun decorating your own Christmas cookie. Santa, Mrs. Claus, and all the elves will be waiting for you! (All activities are indoors.) This event is very popular and may sell out. Lincoln Children’s Museum Holiday Spectacular Friday, December 4 from 5-8 p.m.

Welcome the holiday season at Lincoln Children’s Museum Holiday Spectacular. Santa’s Workshop, a magical place for children, will officially open in the Discovery Gallery with Santa and Mrs. Claus on hand to take photos with guests. There will be lots of fun activities and entertainment including singing, dancing, storytelling, making your own Christmas decorations, special guest appearances, and exciting indoor snowball fights! Lincoln Children’s Museum Make Believe Midnight

Thursday, December 31, from 6-8:30 p.m. For a family-friendly New Year’s Eve celebration, you can’t beat Make Believe Midnight. Ring in 2016 with a dance party, the Bubble Wrap Stomp (an exciting version of indoor fireworks), and party favors. Robin McGraw’s Christmas Tips

R

obin McGraw invites you to share in the magic of the holiday season with her and her family in her book, “Christmas in My Home and Heart.” She extends a personal invitation to step inside the McGraw home to experience this special holiday with them. Robin shares the stories behind the traditions that she holds dear, family recipes, ideas to make decorating more fun, and offers practical advice on how to budget, organize and celebrate, while keeping stress to a minimum. “My favorite memories are the Christmases that I didn’t go out and spend a lot of money,” Robin says. Here are Robin’s tips for celebrating the holidays on a budget:

Homemade Ornaments “I love homemade ornaments,” she says. “My sister took a family photo of us when we were very young, decoupaged it on an ornament, and I love taking that out.” Another sister of Robin’s makes delicious cinnamon rolls and sends them to the family every year. Draw Names for Gifts Everyone will pick one person to buy a gift for, and that will be the only gift he or she has to buy. Select a price limit that everyone can agree on. Gift Certificates for Chores Give these to friends and family. “You can offer to drive one of your friend’s carpools. That is a fantastic gift for a busy mother,” Robin says. “You can trade out babysitting, you can trade out meals once a month, anything that is a true joy for another woman.” Stocking Stuffers Play up stocking stuffers instead of gifts under the tree. “You can really fill the children’s stockings with inexpensive gifts and make it a lot of fun,” Robin says. 14

Pot Luck Luncheon Robin suggests women get together, exchange an ornament and bring their favorite recipe. Another idea is to have all the food be chocolate and serve champagne. “You can have a lot of fun with your friends during the day. You don’t have to spend a lot of money doing that,” she says. Dos and Don’ts of Christmas Letters Dr. Phil received a letter from a viewer stating that her mother-in-law sends Christmas letters that detail her life and the lives of her children. She wants to know how to keep her business private without offending her husband’s mother. Robin offers dos and don’ts when writing update letters to your friends and family: DO: • Keep it short and simple • Share the year’s highlights and positive news • Be honest • Get your family’s approval to include them in the letter and allow them to read and edit it before it goes out to others

uring the holiday season, the people of Lincoln have always opened their hearts to those in need. And no organization embodies that charitable spirit more than People’s City Mission. Feeding and sheltering the homeless and impoverished since 1909, the Mission has helped countless numbers of men, women, and children in Lincoln and Lancaster County by giving them a safe place to stay, food to eat, clothing, and medical care.

Cranberry Cobbler There’s nothing as comforting as a warm dessert, and this cobbler is perfect for the holidays. Serves 8 Cook Time: 55 minutes Ingredients:

3 cups fresh cranberries 1 1/2 cups sugar, divided 1/2 cup chopped walnuts 2 eggs 3/4 cup all-purpose flour 1/2 cup (1 stick) butter, softened and cut into pieces

Directions: 1. Preheat oven to 325 degrees F. Coat a 9” deep-dish pie plate with cooking spray, then spread cranberries over the bottom. 2. Sprinkle cranberries with 3/4 cup sugar and walnuts; stir with a spoon until evenly combined then flatten mixture with the spoon. 3. In a large bowl, beat eggs until fluffy. Gradually add remaining 3/4 cup sugar then gradually add in flour, mixing well. Slowly beat in butter until thoroughly combined and smooth then spread batter over cranberries. 4. Bake 55 minutes, or until entire crust is brown. Serve hot or cold.

Peppermint Mocha Dessert Shooters Great for parties, these dessert shooters are flavorful and festive. Serves 6 Cook Time: 10 minutes Ingredients:

1 cup frozen whipped topping, thawed 2 teaspoons refrigerated peppermint mocha coffee creamer 10 small candy canes, divided 1 cup refrigerated vanilla pudding

Directions: 1. In a small bowl, gently combine whipped topping and coffee creamer. 2. In a small resealable plastic bag, finely crush 4 candy canes.

Ham Frittata This Italian-style omelet is a great way to use leftover meats and veggies. It’s perfect for breakfast, brunch or a light lunch. Serves 4 Prep: 5 minutes Cook Time: 45 minutes Ready in: 50 minutes Ingredients:

1 dozen eggs 1/2 cup milk 1 pound deli ham, diced 1/2 cup (2 ounces) shredded mozzarella cheese 3 scallions (green onions), thinly sliced 1 small red bell pepper, finely chopped

Directions: 1. Preheat oven to 400 degrees F. Coat an 8-inch square baking dish with cooking spray.

3. In six small shot glasses or dessert cups, evenly distribute crushed candy canes, reserving a little for topping. Spoon a layer of vanilla pudding over crushed candy and dollop with whipped topping mixture. Sprinkle with reserved crushed candy.

2. In a medium bowl, whisk eggs and milk until well combined. Add remaining ingredients; mix well.

4. Refrigerate until ready to serve. Garnish each with a whole candy cane just before serving.

Tip: This is perfect for using leftover ham from Christmas dinner, or even the cheese and veggies left from your hors d’oeuvres platters. Make it your own by adding your favorite meats and veggies.

Directions: 1. In a skillet over medium heat, heat oil; add green pepper and onion and cook about 3 minutes, or until tender. 2. Stir in remaining ingredients; simmer 10 minutes, or until heated through. Note: Serve plain or over rice. For a change, you might want to add a drained can of black beans or great northern beans.

ew Year’s Eve — one special evening each year when we look back on events in our lives and in the world and look forward to what lies ahead. It’s a time for parties and resolutions and spending time with family and friends. It’s also a great time to start the fun tradition of making New Year’s predictions. This New Year’s Eve, have pens and paper on hand for everyone to write down what they predict will happen in the coming year. Will they lose weight or gain weight? Will they start a new job or attend a new school? Will they get married, move to a different house, finish a long-planned project, or start a new hobby or sport? You can also predict what will happen to family members, friends, government, TV shows — whatever appeals to you! The predictions can be serious or frivolous, or even comedic, but whatever they are, they must be kept secret. Write the predictions, then gather them and store them until the next New Year’s Eve. Not only is it entertaining to see what everyone predicted, but fascinating when they turn out to be right, humorous if the author was writing tongue in cheek, and fun to see what actually did and didn’t happen. And that’s how the tradition begins. Write down and save predictions this New Year’s Eve to read at 2016’s New Year’s Eve celebration; and be sure to write new predictions for 2017 before midnight on December 31, 2016 to keep the tradition going.
