The Cuisine of Cordoba is the result of a long tradition which can be seen in the variety of its dishes, the huge number of restaurants, taverns and bars all over the city and in the prestige which it enjoys on a national level. The different peoples and civilizations which passed through Cordoba also left their mark in the local cuisine. The Romans introduced the use of olive oil, which is widely used and highly-prized in this area, and set the norms for what would later become known as Mediterranean cuisine. The Arab influence, too, can be seen in the use of nuts and dried fruit, vegetables, in the mixture of sweet and sour flavours and finally in cakes and sweets, which were also influenced by Jewish culinary traditions. The arrival of the Christians brought an increased use of meat as well as maintaining the best culinary traditions from the cultures previous to the conquest. No one can really get to know Cordoba without trying and enjoying its cuisine and joining in the local culture of eating and drinking well.

Even the stocks of some tapas were finished. In general, the owners of the establishments also commented on the remarkable arrival of customers with the map to keep trying tapas as they carried out their own routes. According to a survey made by the Cordoba Local Tourist Board, more than 20,000 tapas were consumed. Visitors came from all over the world, including France, Great Britain, Italy, and Germany.

n May, 2014, the most expensive restaurant in the world opened in Ibiza’s Hard Rock Hotel. The two-Michelin starred chef, Paco Roncero, heads the exclusive dining venue that offers a ‘unique experience that transcends gastronomy’ to the lucky dining guests. Sublimotion is officially the most expensive restaurant in the world and it promises that the meal will be “emotional,” with “unexpected twists” that incite “humor, pleasure, fear, reflection, and nostalgia.” At €1,200 you get 20 courses, self-mixing cocktails, stunning projections and a pillow of nitrogenised olive oil.

NEW MADRID BASED RESTAURANT TATEL ON TRACK TO BECOME WORLD REFERENCE FOR SPANISH CUISINE
W
ith the Ushuaïa and Blue Marlin Ibiza already a roaring success, those behind have gotten together once more, to create a gastronomic project with international vision. Welcome TATEL! The new Madrid based restaurant aims to become a cultural icon of traditional Spanish fine cuisine, both nationally and internationally. At the hands of chefs, Nino Redruello and Patxi Zumárraga, TATEL’s gastronomic management is launching with a signature menu that respects the product whilst reviving recipes from a strong Spanish tradition and infusing them with a modern twist. A dining hall full of life, a relaxed and informal atmosphere, live music and a culinary offering with strong character, are the key concepts that embody the TATEL experience, which is opening its first restaurant in Madrid. Born out of a private initiative three years ago, from a conversation between Abel Matutes Jr. and Manuel Campos, with the aim of globalising and valuing traditional Spanish cuisine and culture throughout the world. During this discussion, the two friends and entrepreneurs noted the lack of “a dining and leisure concept based on Spanish cuisine when travelling outside of our country.” A project that the two partners have developed with the endorsement of USHUAÏA and BLUE MARLIN IBIZA, regarded respectively as the best open-air club and best beach club in the world. Together they have created a brand synonymous with innovation and tradition where fine Spanish cuisine takes the leading role. A project born in Madrid, precisely in number 36 on the world renowned Paseo de la Castellana. With the intention of making TATEL a unique experience,

the restaurant boasts a signature cuisine that collates the essence of those traditional recipes cooked by our grandmothers, but with a modern twist. A highly varied offering, locally sourced from the market and in season, has been designed by TATEL’s managing directors, Nino Redruello and Patxi Zumárraga, chefs with extensive experience at the forefront of La Ancha, Las Tortillas de Gabino and La Gabinoteca. Nino, who trained at the school of Luis Irizar, and with experience of working in the kitchens of El Bulli, Zuberoa and Akelarre, and Patxi Zumárraga, who has worked in NOBU, are removed from all forms of labels and strict rules related to cooking. Together they revive recipes from a strong Spanish culinary tradition for TATEL’s menu. Forward thinking creations with a large dose of personality are presented thanks to their extensive knowledge of the Spanish larder, careful selection and locality of the produce they use (all the vegetables, eggs and fruits are organic) and their painstaking work in the kitchen. TATEL’s menu features the outstanding filleted anchovies fried inside out in garlic whose finishing touches are prepared at the table and the truffle tortilla, a recipe that most resembles a creamy ravioli infused with potato froth and which Redruello considers his “pièce de résistance” from Las Tortillas de Gabino. Also the dry rice seafood dish, typical of Alicante’s cuisine, squid in ink sauce, candied sea bass, and of particular note, the San Roman veal escalope, a very fine breaded fillet which is finally prepared at the table by breaking open a slowly cooked egg and garnishing with grated truffle. The rest of the menu showcases offerings such as the fresh fish stew and the Palamós red prawn in batter, among others. In addition to the menu for reserved dining, TATEL also offers a more informal menu for canapés, which can be shared in the lounge with no reservation required. Vejer is developing rapidly into being well known for its fabulous restaurants and the many lively events throughout the town. Diana: To what extent is the younger generation a potential consumer for you? How do you ensure, in the long term, their understanding and appreciation of history and exclusivity / cultural knowledge / high-class-quality recognition?
CeCe: The percentage of younger customers going to the more traditional hotels is decreasing compared to beautifully crafted boutique hotels. The market is changing and the younger internet savvy generation travel alot more and their communications are much faster so it’s important that the hotel has great internet exposure via the V… website as well as the social media outlets. They are searching for hotels where the architecture, design and materials are on-trend but that also offer comfort and tranquility. That’s why the creative combination of modern amenities with old architectural elements is so popular with the younger guests. We believe that our guests whether young or old,

have done their research before arriving and have a good appreciation of the history and culture of Andalusia. That quest for new and interesting experiences is what initially attracts them to the region and to Vejer. We, as a hotel, can then further assist them by offering suggestions of what to see and do in the region. In fact, the hotel partners with a private tour company that offers customized tours to some of the most authentic and beautiful places in Andalusia. The culture, architecture, history, traditions, art, gastronomy and the great outdoors of this region are well presented in these tours.
Diana: What type of consumers does the hotel target? CeCe: Our guests are usually well traveled and sophisticated and are looking for something out of the ordinary. They want to experience the essence of Andalusia in an authentic environment. These are consumers who appreciate architecture, design and tranquility as an alternative to standard commercial hotel features. They are looking for an experience rather than just a hotel.
Diana: The opening of the Luxury Hotel took place in February 2008. Which are the most important changes and challenges, in terms of what defines luxury service & facilities, as well as the way Boutique Luxury Hotels are sold and promoted today?
CeCe: The ultra-luxury segment of the international travel market is changing. Gone are the days when giant commercial hotels create the same stir among well traveled and discerning clients as they used to. For this reason, the owner decided to create a dynamic, small hotel with much more attention to detail. The goal is to
make guests feel at home, as though they were staying at a friend’s house and not at a hotel. The challenge was to create an atmosphere of pure relaxation but with a high level of service which we hope to have accomplished. Less and less are hotels promoted and sold exclusively through traditional travel agents. Guests have the ability to research and compare their travel accommodations online. Having a great website complete with videos, photos and a nice overview of the facilities and the region is extremely important. Consumers also rely more and more on reputable travel websites.

FEAR-DREAMS: The characteristic scene creates fear. Panic fear is a nightmare. Fear is an expression of threat, frequently arising from the inner psychical life, but often from the personal living environment. The objective is not the fear itself but the factors which lead to fear. Some dreams of fear let the dreaming person know how he produces fear in his personal environment. We can react to dreams of fear: “Take strength and courage!” Or: “Turn your face towards the fear, recognize and clarify what creates fear!”
FLYING-DREAMS: Here you fly, finally! But the relation to reality is lost. Humans cannot fly, only their illusions and the Ego‘s (I) delusional flight into unreality.
EXAM-DREAMS: The purpose here is sometimes a biographical reappraisal of the past. They point out in general to a high extent passed or failed current psychical maturation processes.

NAKEDNESS-DREAMS: They often include quite embarrassing situations out in public. Everywhere in the real life, many people show their most private psychical inner life. This is embarrassing too. And one loses protection. TEETH-DREAMS: Anything, mostly pernicious situations relating to teeth characterize this type of dream. Teeth may be compared to attitudes: Teeth cannot get a grip of life if they are in a bad state or missing.

hat is most striking about meeting Dr. Edward Schellhammer beyond his pleasant and polite manner; youthful disposition or passionate and sincere views on humanity and the planet, is his unshakable conviction that the world needs pioneering education. But exactly who is Dr. Edward Schellhammer? Is he a Philosopher, an expert on Human Matters, a Psychologist, a prolific author of over 30 titles from psychology to politics and economics, an educator, or a visionary with a profound and beneficial insight into the human condition?
The answer is that he is all that and more. In different age he would have been called a polymath, and probably kept close company with those giants of The Age of Enlightenment, like his fellow countryman Jean Jacques Rousseau, Thomas Payne and perhaps even Thomas Jefferson. Born and educated in Switzerland he has lived in Paris, South of France, London, Kiel, Detroit, and Mexico, before settling in Marbella, Spain, some 27 years ago.
He studied Education, Psychology, Psychoanalysis, and Philosophy. He was a lecturer at the University of Zurich as well as other institutions, and as a member of international workshops he dedicated his ample energy to futurology, future perspectives of humanity, peace and disarmament, development of education in Latin America and key global issues in general, concentrating on developing a new understanding of politics and economics for the future. His findings are indispensable for all those who value life, love, and justice.
He places great emphasis on Dream Theory a subject that he has researched for most of his life and passionately believes in, declaring that some 35 years ago he had a dream that told him to solve the mystery of man and human evolution.
