It’s a rare sight: Carbone, the latest restaurant to enter the Miami food scene, is empty. For a few hours before opening, the room is silent, the tables are untouched and intricately set, and the famed dessert carts are yet to be rolled out for display. Outside, the patio chairs are still resting on top of the tables from the night before — all except one. A passerby asks in awe, “Is that the Mario Carbone?” Sitting at the table with an espresso in hand is the esteemed chef and cofounder of Major Food Group (his partners are Jeff Zalaznick and Rich Torrisi). Carbone is posing with animated Italian gestures and pretending to inspect the menu, and his energy is so infectious, it’s no surprise he has built a culinary empire that is redefining the dining experience. “We immediately came out with this style of fun fine dining, or the informal formality we do,” he says about the opening of the first Carbone in New York. “It threads the needle because we are charging prices that demand a high level of execution, but we also want the guests to feel really, really relaxed. To find that balance is difficult, and it took us years to get good at it, but we put a lot of pressure on ourselves by coming out of the box with big-ticket fine dining.” At the young age of 32, Carbone stunned the New York scene when he bought a century-old Italian restaurant in the West Village, down the street from classic Italian culinary establishments like Il Mulino. Instantly deemed the new kids on the block, Carbone and his partners knew they had to do something different to stand out, so they turned the attention on themselves to up the ante. In doing so, they created an undeniable customer connection by letting the diners into their world, becoming celebrities in the food scene. “We were coming off of success with two tiny restaurants, so the idea of Carbone was incredibly exciting but also terrifying because this was our first ‘real’ restaurant,” Carbone says. “The critics are the first ones to come through in New York — we didn’t have the fan base we have now — so early on, the critics came in, and they were a lot of the oldergeneration journalists that would cast the ‘Who do you think you are?’ shadow on us,” he recalls. The moment Carbone really felt like it was going to work was when the New York Times finally gave the restaurant a rave review. “That was the celebratory and calming moment that we knew we were going to make it,” he says. In the years since first opening the restaurant in New York, Carbone has been awarded Best New Chef in America by Food & Wine magazine.
Now, eight years since that opening, he’s brought the same energy and iconic Italian dishes to Miami’s burgeoning South of Fifth neighborhood, alongside legendary restaurants Carbone has long admired from afar. He’d spent countless evenings dining in the area, wondering what it would be like if one day his name could be displayed on the block, and sure enough, he made it happen. “I love the fact that I’m right behind Joe’s [Stone Crab]; that gives me such an amazing sense of pride and accomplishment to be in a spot — to have this brand facing that brand means everything to me,” Carbone says. Miami, a city that was always on Carbone’s radar, felt like a natural next step for the rapidly expanding brand. Carbone Miami, designed by the renowned Ken Fulk, is the first Major Food Group property in Florida and the fourth location of the restaurant, joining New York, Hong Kong, and Las Vegas. “It’s a place that we love,” Carbone says. “It’s a sister city to New York — it always has been. A lot of our customers are going back and forth, but there’s also plenty of people here that we want to cater to as well. And we’ve always really loved the city; we’ve always loved the energy here.” It is imperative to Carbone to make each location feel like it belongs where it is. “There are no fake New York bricks in here,” he promises as he points to the space’s rich malachite ceiling beams and columns. “What I love about this brand and the way we’ve grown it is that it is not cookiecutter. The beauty of it is that everything is different, but it’s all the same.” Though restaurants have taken a devastating hit this year, Carbone, like many entrepreneurs, managed to find a silver lining. “The pandemic did speed up the process of [our] opening in Miami,” he says. “We as a company had to make some really fast choices…. How are we going to pivot? How are we going to keep the wheels moving? How are we going to keep the momentum going in this awful circumstance? It became pretty obvious that we — [along with] as many of our staff that we could employ and all the people here [in Miami] that are out of work — could create something really great.” After opening its doors in January, Carbone Miami instantly became the place to be, with its tables full night after night and reservations proving nearly impossible to secure. Locals and tourists alike flock to the restaurant for its iconic dishes like spicy rigatoni vodka, Caesar alla ZZ served tableside, and veal Parmesan. But it’s the energy that makes the experience unique to the Carbone brand. “You can close your eyes and picture a full restaurant, but when you’re actually standing in the middle of it, it still is every bit of the reward that it’s always been,” Carbone says humbly. “When I walk out from the kitchen on certain nights and certain times, I’m taken aback by the energy in the room — the strength of it. This one is three times the size of the one in New York, but it’s still somehow pretty intimate. When it’s at its crescendo of the night, I’m driven back into the kitchen by the energy of it. It’s pretty incredible,” he says. Since day one, the mission of the Carbone brand has been to create a sense of familiarity. “At night, when the lights are down and the music is on and the veal Parm is on the table, it’s Carbone,” he adds. “I NEED TO ALWAYS FORCE MYSELF TO HAVE A MORE ADVENTUROUS SPIRIT. IT’S AN ONGOING INTERNAL BATTLE THAT WILL FOREVER BE WITH ME.” Carbone lets us in on a little secret if you happen to have the pleasure of dining in his restaurant: “There’s a whole language of things that we make all night long that are pocket dishes. We call them pocket dishes because the captains [the servers] have them ‘in their pockets’ and can deploy them at any time — like roasted peppers with fresh mozzarella. Things that we make that just happen to not be on the menu, but we do them all the time.” He will even make you a chicken parm, but you have to give him 24 hours’ notice. Carbone’s boyish sense of pride is both palpable and charming. From seeing his face light up when he speaks about the menu to the way he stops mid photo shoot to thank a courier for his work, his admirable demeanor is like no other. At a young age, Carbone took a chance on the food industry, and we are glad he did. “I started cooking in neighborhood restaurants just for money in high school because I thought I might like it, and I caught a look into the industry,” he says. The native New Yorker bypassed the traditional route of college in search of a vocation. “The food industry wasn’t quite the popular, pop-culture industry that it is today. It was still a big industry, but it didn’t resemble the industry that we currently sit in. So I was taking a chance on something that might or might not pan out. But I knew [college] wasn’t for me.” Carbone’s relationship with food began in his early childhood. There are pictures of him at just a year old in his grandfather’s arms, helping him cook. “I come from a family that puts a high level of interest and value in food and the table and the nature of that whole thing,” he says. “My grandparents were my first babysitters. Every memory I have of the two of them is in the kitchen. My grandfather would get dressed and immediately put an apron on and spend the entire day in his apron — whether he was watching TV or gardening or cooking, he had his apron on.” He’s been involved in more than 20 critically acclaimed restaurants, so you may wonder how Carbone remains innovative in his menus, constantly reinventing modern cuisines. Finding inspiration comes with time, but he is acutely aware of looking for it wherever he finds himself. “My inspiration, as I get older, is much more heightened,” he explains. “I see things and I can categorize them in my mind, and I keep extensive notes on everything. Inspiration comes from absolutely everywhere and everyone. And I am constantly being asked to be inspired on demand for different things in different ways. The only thing I can equate it to is the cadence of a fashion designer.” Fashion is something he has always been interested in: not just the clothes, but also the brands’ and design houses’ perspectives and how designers continue to seek inspiration. In fact, Carbone arrived on our set self-styled in his first look: Nike joggers, a Rowing Blazers T-shirt
that had just arrived in the mail, and his signature K Kane signet ring with a “C” engraved. It’s Carbone’s undeniable attention to detail that has set him apart. Right now, he is in the midst of folding the new season into his menu, thoroughly inspecting each ingredient to ensure it meets his standards. “Beautiful produce has become a real exotic. It’s always exciting when it comes through the door, and it’s nice to cook something different [each night],” he says. Carbone recognizes the beloved reputation of his brand and its diverse flavors, which is why Major Food Group, in collaboration with industry veteran Eric Skae, just launched a new consumer packaged goods brand, Carbone Fine Food, which is making its debut with a line of pasta sauces — no reservations required. Customers can now bring the acclaimed flavor of Carbone home, which will always feel surreal to him. “It’s exciting and incredibly humbling to know that the family name and sauce is now on supermarket shelves — and at some point soon, nationwide — it’s a crazy thing,” Carbone says as his expression shifts to nostalgic happiness, as if he’s back in the kitchen with his grandfather. “Similar to the first time I saw the Carbone name on an awning — and I was like, ‘Whoa, that’s my last name’ — the idea of me in Stop & Shops is equally strange but amazing,” he says. “I think the idea that we can bring a little bit of the restaurant across the country is the coolest.” And he’s not stopping at the three sauces currently available in stores. Carbone is in the midst of figuring out how to bottle the highly soughtafter spicy rigatoni vodka sauce, which is proving to be a bit more difficult (though we have full faith he will nail the execution). He is also considering adding pasta or gelato down the line. The Carbone Miami opening is just the first phase of Major Food Group’s expansion this year in South Florida. This month, it is opening ZZ’s Sushi Bar, a modern Japanese restaurant and membership club in the Miami Design District, offering the same unparalleled hospitality as its other restaurants. Aiming to set a new standard for sushi and Japanese cuisine, Michelin-starred chefs Masa Ito and Kevin Kim will take their craft to the next level with innovative signature dishes like caviar temaki and Miami-centric dishes including handmade lobster dumplings. Loyal followers may recognize the name ZZ’s from New York’s intimate Greenwich Village restaurant ZZ’s Clam Bar. Beyond Miami, Carbone and his partners also have their eyes on Dallas for the next Carbone location and more locations throughout Texas. “Now it’s about telling the story of expanding and really capturing the spirit of it,” he says. There’s truly no stopping him as he continues to pave his path in the industry, revolutionizing the dining experience while remaining true to his purpose of evoking feeling through food.

THERE IS HARDLY A MORE STAR-STUDDED OR
delicious event that takes place in Miami than the South Beach Wine and Food Festival. Known for its decadent bites, luxury events and superstar guests, SOBEWFF® is an extravagant five-day event that is now in its 20th year. However, the event wasn’t always this glamorous. In 1997, the festival was known as the Florida Extravaganza and took place on Florida International University’s Biscayne Bay Campus. From ‘97-’01, it was a one-day affair that paired national and international wines with local restaurants and chefs. However, in 2002, Lee Brian Schrager, then director of special events and media relations at Southern Wine & Spirits of America, took over and moved the event to South Beach, and the Wine and Food Festival as we know it was born. The 2002 South Beach Wine & Food Festival® was three days long, hosted around 7,000 people and 22 HAUTE LIVING hauteliving.com
was the debut of now-infamous events such as the BubbleQ® and the Grand Tasting Village, along with dinners, seminars, and a live auction. Today, the festival attracts more than 65,000 guests, takes place over a five-day weekend and has over 100 events. Despite how much the festival has grown, the mantra remains the same: Eat. Drink. Educate. As part of that mission, the festival raises money each year for the FIU Chaplin School of Hospitality & Tourism Management and has raised more than $31.8 million for the school to date. Last year, in the midst of the pandemic, SOBEWFF® and the FIU Chaplin School Hospitality Industry Relief Fund also raised over $1.6 million to provide immediate financial support to independently owned and operated restaurants and bars impacted by the COVID-19 pandemic in Miami-Dade, Broward and Palm Beach counties. This year’s festival will look a little different, as
it is over four days and the expected foot traffic is 35,000 instead of the normal double, but the festival is taking all of the necessary COVID precautions to keep all guests safe. These precautions include but are not limited to 50 percent capacity; health screenings for all staff, volunteers and guests; PPE requirements such as masks and gloves; social distancing; and hospital-grade air scrubbers and air management systems for indoor events. But a limited capacity does not mean limited fun! LAUNCHED IN 2002, THE TAMBOUR WAS THE WATCH THAT
put Louis Vuitton on the map in the world of haute horlogerie. Over the years, it amassed a loyal group of admirers, not least because the company was always innovating new varieties of the model while keeping it instantly recognizable. Inspired by the shape of a drum, the Tambour is one of the very few watches that is larger at the base than at the bezel. It further expresses its pedigree with the words “Louis Vuitton” engraved in the case band. Really, the design is timeless; the Tambour looks as contemporary today as it did back in 2002. Louis Vuitton has always excelled in knowing exactly what its clients want. With the Street Diver, the brand has created a diving watch as it is worn and appreciated the most: as a fashionable statement on the wrist that spends most of its time outside the water. In its design, the company emphasized its utilitarian character by playing with color. The elapsed minutes, an essential feature of any diving watch, can be measured by the internal rotating bezel, which is operated by the color-contrasting crown placed between 1 and 2 o’clock. It is color-matched by the hour markers and the minute hand, which cleverly resembles the iconic Louis Vuitton “V.” While looking good comes naturally for the Street Diver, that doesn’t mean it’s out of its element in the water.

Thanks to its screw-down crown, internal rotating diving bezel and 100-meter water-resistance, it is a capable companion when going (scuba) diving. The company is launching four different versions of the Street Diver, each highlighting different colors. The Neon Black features a case made from stainless steel with a black PVD coating, offering a stunning contrast with the neon yellow accents that give the watch a lot of character. It is the only watch in the Street Diver collection that also has a bezel with a PVD coating, giving it more of a tool-watch appearance. The Tambour Street Diver Skyline Blue has a blue PVD coating on its case, which stands out against the bezel of polished stainless steel. The vibrant shade of light blue makes the watch’s details stand out against its dark blue backdrop in an almost nautical way. The Tambour Street Diver Black Blaze combines black PVD-coated elements with pink gold, creating a rich contrast. All three watches have a 44mm large case and are fitted with an automatic movement that can be admired through the sapphire caseback with Louis Vuitton logo. The fourth new design, the Tambour Street Diver Pacific White, is the most elegant, and it is also the smallest. Its case measures 39.5mm in diameter, and it is crafted from polished stainless steel. It the only one fitted with a quartz movement instead of an automatic caliber.

The difference a dial can make becomes especially clear with the new Datejust 36. Rolex has a rich tradition of creating a wide variety of dials, in particular for the Datejust and DayDate collections. This is done in-house, as the brand has its own dial manufacture. That also enables it to make the new palm motif, for which a special laser was used. The new fluted dial motif adds an extra layer of depth and refinement to the watch. New dials were also in the stars for the Daytona — quite literally, as they are made from meteorite. The distinctive pattern of these rocks from space, which becomes visible after they have been cut and treated with acid, gives the Daytona extra appeal and makes this chronograph even more exclusive than it already was. Rolex is offering these new dials on the white gold model with Oysterflex bracelet and on the yellow and Everose gold models with matching bracelets.
Rolex and diamonds have been synonymous for decades, and it is a tradition the brand is continuing with great passion and expertise. This year it plays with color as it launches the Day-Date 36 on an alligator leather strap with a pave-set case, dial and bracelet. Available in yellow, white, or Everose gold, each featuring Roman numerals in a distinct color, they put pave-set watches once again firmly on the map. Their appearance is bold and distinct but also refreshingly modern. For ladies who enjoy a watch with a full pave setting, Rolex now offers the 28 mm Lady-Datejust. Fitted with perpetual caliber 2236, this watch features a case, bezel, dial and bracelet set with brilliant-cut diamonds in yellow gold, which gives it a classic appearance. Subtle details make all the difference, with not only the perfectly set diamonds but also the black Roman numerals, which seem to float above the dials. This gives the watch an undeniably luxurious appearance in the way only Rolex can.

Whether it’s gold, ceramic, or sapphire, they love to see if they can improve it or give it a color that has never been achieved before. In 2016, the brand introduced its very first sapphire watch, and things developed quickly. Not only was the company able to create sapphire in different colors, but it could also make them in modest volume. (While this sounds less exclusive, the production process of sapphire watches is so intensive that being able to make more of them is a major achievement.) Hublot kicked off Watches & Wonders 2021 with another amazing accomplishment: a Big Bang Integral Tourbillon where both the case and bracelet are made of sapphire. Hublot went for ultimate transparency with the sapphire bracelet, which also made it a challenging feat to accomplish. No compromises were allowed, so the bracelet needed to remain as transparent as possible, while flexibility, durability and wearing comfort all had to be at the highest level. Hublot achieved this by cleverly screwing each link into the next with the help of titanium inserts that take as little away from the transparency of the sapphire as possible. Hublot CEO Ricardo Guadalupe tells more about how this unique watch came to be. “For such an exceptional creation, we opted for the new Automatic Tourbillon caliber with its

sapphire bridges, the transparency of which creates a stunning spectacle. The act of creating an integrated case and bracelet from sapphire was deemed impossible. But we were the first brand to gain perfect mastery of sapphire, industrializing it and making it reproducible in series production. It took us five years to bring our first sapphire cases to life, and almost as long for the bracelet. Producing both from sapphire and integrating them together is the pinnacle of the in-depth work undertaken by Hublot’s teams. We are proud to be the ones writing the first lines in this new chapter in the history of materials.” As Guadalupe points out, such an exquisite creation must be combined with one of the best movements the brand has to offer: in this case, Hublot’s latest manufacture caliber HUB6035, which combines a tourbillon with automatic winding. This is done by placing a 22-karat white gold micro-rotor at 12 o’clock. As most of the movement’s bridges, including the main plate, are also made from sapphire, the watch’s transparent nature takes full effect. Hublot will make 30 pieces of the Big Bang Integral Tourbillon Full Sapphire at the price of $422,000. Those owners will get to wear a groundbreaking watch that signals the start of a new era for Hublot as it further pursues the possibilities of this exciting new achievement.

a powerful visual impact. With part of its gear train placed on the dial side, accompanied by a high-tech flying carrousel, it is a true horological delicacy that won’t go unnoticed. The new Freak X Razzle Dazzle is even more of an eye-catcher. The pattern is reminiscent of a zebra, an animal that uses its stripes to conceal itself and confuse predators. (During World War I, the British Royal Navy painted its ships with a similar pattern, hoping to confuse the enemy to such an extent that it was hard(er) for them to place a hit.) Of course, it later became quite a popular pattern in fashion and the art scene. The reason is rather obvious, as the geometrical pattern is captivating, close to hypnotizing. To achieve the pattern with the high quality required by Ulysse Nardin, a combination of three different techniques is used. A laser makes the intricate shapes on the movement parts, after which a combination of electroplating and galvanic treatment with lacquer give it its final appearance. Ulysse Nardin will make 30 of the Freak X Razzle Dazzle, with strap options in black or white, both featuring “point de bride” stitching that match the watch nicely. What all 30 pieces also have in common is the 43mm case made from titanium, featuring sandblasted and satin finishes, as well as a DLC coating. The automatic movement has a power reserve of 72 hours and comes with a flying carrousel, visible at the front, which makes a full rotation every hour. A pioneer in the use of silicium, Ulysse Nardin features this innovative material in both the balance wheel and the oversize oscillator.

THE PERPETUAL CALENDAR HAS ALWAYS HELD AN
important place in the history of Patek Philippe. In 1925, the brand launched its very first perpetual calendar wristwatch, and in 1941 it introduced Ref.1518, combining the perpetual calendar with a chronograph, something that had never been done before on a watch made in series. The company always had a strong presence when it came to pocket watches as well, and in 1972, it introduced a novel perpetual calendar with in-line display. Now, part of its rich legacy in this field merges with the introduction of the new Ref. 5236P-001 In-line Perpetual Calendar. Fitted in a 41.3mm Calatrava case made from platinum and combined with a blue lacquered dial with black gradation, the Ref. 5236P-001 is subtle in appearance, perfectly setting the stage to let the unique in-line perpetual calendar function shine. Day, date and month are positioned in a single window under the Patek Philippe brand name. The symmetry is continued at the lower part of the dial, where the subdial for
the seconds also houses the moon phase indicator. It is flanked on the right with the leap-year indicator, while day or night is shown through the hole on the left. With this balanced appearance, the Ref. 5236P-001 looks simple while it is, in fact, a very complex watch. No less than three new patents are incorporated in the movement. To make this unique display of the perpetual calendar possible, Patek Philippe used caliber 31-260 as a base movement. This movement is a reliable performer and looks especially beautiful. Patek Philippe tuned it to be perfect for the Ref. 5236P-001 by changing the micro-rotor from gold to platinum for more mass and increasing the rate to 4 Hz/28,800 vph. This results in better rate stability and increased precision. The movement now also uncouples the automatic winding system as soon as the watch is wound manually to reduce wear. With the Ref. 5236P-001, Patek Philippe is continuing its legacy as a pioneer in perpetual calendars and confirming the important place this complication holds within its collection. @hautetime HAUTE LIVING 37

has received its first upgrade since its reintroduction with the new 525PS Defender V8 and flagship Defender V8 Carpathian Edition, both of which provide a unique combination of performance and capability, with bespoke chassis settings delivering new levels of driver engagement and agility both on and off-road. The 2022 Defender V8 has both three-door 90 as well as fivedoor 110. The Defender V8 Carpathian Edition combines the power and capability of Defender V8 with a unique combination of design elements, including new trim packages. The Bright Pack, Extended Bright Pack and Extended Black Pack feature bespoke exterior trim to enhance Defender’s unmistakable silhouette. Inside, the Defender V8 Carpathian Edition features the same upgrades as the V8, with seats finished in Miko Suedecloth with Robustec accents, an Alcantara-wrapped steering wheel and illuminated treadplates. The recyclable PU-based wrap is applied to the external bodywork, giving the 4x4 a contemporary semimatte finish that also protects against everything from car park scratches to off-road bramble rash. “The introduction of our V8 powertrain adds a new dimension of driving engagement and off-road capability to Defender,” says David Hemming, chief product engineer for Jaguar Land Rover. “Fast and fun to drive, it represents the pinnacle of the Defender family and is as rewarding on the road as it is capable off it. We’ve also broadened the appeal of the entire Defender lineup with new derivatives, option packs and enhanced connectivity, so there really is a Defender for everyone.” This SUV is powered with a robust 5.0-litre V8 supercharged petrol engine, the fastest and most powerful production version for 4x4 yet, which produces 525PS, 625Nm of torque and drives through an eight-speed automatic transmission. The Defender V8 90 accelerates from 0-60mph in just 4.9 seconds (0-100km/h in 5.2 seconds), with a top speed of 149mph (240km/h). If you are concerned about the emissions and environmental aspects of the SUV, Land Rover offers a 2.0-liter Ingenium I4 or mild hybrid 3.0-liter turbocharged Ingenium I6, where the latter produces 395 horses and 406 ft-lbs of twist and the former produces 296 horses and 295 ft-lbs of twist. The V8 petrol engine isn’t the only new introduction. There’s also a new XS Edition, which offers fresh exterior design packs that provide greater personalization potential and an optional larger 11.4-inch Pivi Pro infotainment touchscreen that’s 60 percent larger than the standard screen. The Pivi Pro system can be easily customized to suit the preferences of individual customers. Additional app “panels” can be added, moved and removed, while swiping left or right on the screen quickly reveals the most relevant information at a glance, ensuring the driver’s concentration stays on the road. Consumers have a choice of three colors: Carpathian Grey, Yulong White and Santorini Black, or Carpathian Grey and Yulong White with a contrast roof in Narvik Black. in Bentley’s 101-year history. Exuding the ultimate performance-focused interpretation of the world’s benchmark luxury Grand Tourer, the car was designed, engineered, developed and handcrafted in Bentley’s carbon-neutral luxury automotive factory. This third-generation model is built on a long tradition of Speed variants. Building further on the first-generation Continental GT Speed in 2007, which was inspired by the 3-Litre Speed models of the 1920s, the latest GT Speed continues the bloodline by representing the ultimate combination of luxury and performance in a Grand Touring package. “The new Continental GT Speed represents the very pinnacle of performance grand touring,” says Matthias Rabe, member of the Board for Engineering at Bentley Motors. “This new model is the most powerful expression of Continental GT values, exciting and dynamic, with unique Speed detailing to enhance the ownership experience and offering customers more control over the character of the car.” The new Bentley Continental GT Speed is a driver’s car. The Electronic AllWheel Steering enhances its dynamic nature in Bentley and Comfort driving modes. However, this is even more apparent in Sport mode. The steering combines with Bentley Dynamic Ride and an electronic limited-slip differential for a level of agility unlike any other Bentley road car.
Featuring an Active All-Wheel drive, the traction control and torque distribution have been recalibrated in all driver modes to provide a noticeable character shift relative to Continental GT. Maintaining Bentley’s philosophy of the vehicle feeling progressive and secure yet still dynamic, this approach rewards drivers of all abilities. For the first time in a Bentley, the latest generation of the Continental GT Speed introduces the use of an electronic rear differential (eLSD) that provides increased lateral capacity, improved longitudinal stability, enhanced on-throttle adjustability and better traction in adverse road conditions. The new Continental GT Speed is blessed with a muscular bodywork inspired by the original. Unique exterior detailing complements a powerful, athletic stance, blending seamlessly with the Continental GT’s effortless elegance. This model also adds a Dark Tint radiator grille and lower bumper grille and unique, more-sculpted sports sills, a Dark Tint radiator matrix, and discreet Speed badging in chrome on the front fender. The 22” Speed wheels in bright silver are another signature feature, with the option of a dark tint or black gloss finish. The new four-seater Continental GT Speed interior redefines luxury and showcases Bentley’s expertise in creating the world’s most refined automotive interiors. Handcrafted materials blend with unique trim and badging that are only available in the Speed and can be further personalized with a choice of 15 primary and 11 secondary hide colors and the use of leather in lieu of Alcantara for the Speed color split. Bentley’s Diamond in Diamond quilting is included as standard, and Speed embroidered headrests distinguish the cabin of the most potent Continental GT. A range of veneers is available, with Piano Black veneer as standard. Customers can also choose Crown Cut Walnut, Dark Stained Burr Walnut or Dark Fiddleback Eucalyptus at no extra cost, with three open-pore options (Dark Burr Walnut, Crown Cut Walnut and Koa) available as additional choices. The car is equipped with an uprated version of Bentley’s renowned 6.0-litre W12 TSI engine, delivering 659 PS (650 bhp) – a 4 percent increase of 24 PS over the current W12 model – while maintaining an extraordinary 900 Nm (664 lb. ft) of torque. It can reach 60 mph in 3.5 seconds, while the top speed is measured at 208 mph (335 km/h). It is also equipped with the Electronic Stability Control (ESC) System, which allows the driver to experience an even greater level of freedom before the Speed’s safety systems intervene to correct any anomalies. The official price has not yet been announced, but the top-of-the-line variant is expected to start at $202,500 for the Continental GT V8 and $218,900 for the Continental GT W12.

of this superyacht by U.S.-based designer J. David Weiss brings forward more eco-friendly technologies, offering the persona of a modern-day luxury vessel with a fresher, greener outlook. The uncluttered, clean line of this 132-meter boat is a sharp and futuristic nod to the future of superyachts. “It’s not designed purely as a ‘party boat,’” says Weiss. “The space allocation instead follows a dual-use owner vision of ‘Rest + ReCreate,’ with all interior social ‘ReCreate’ spaces localized inside the naturally lit and openable greenhouse, and ‘Rest’ spaces in the surrounding darker, quieter ‘cocoon’ areas.” The Crescere has its own tropical garden and a greenhouse core. Weiss aimed to make the boat spacious and airy, a place where the guests can relax. The lounge has an intelligent watering system controlled autonomously via custom software and a raft of sensors. The massive glass areas blur the distinction between the guests and the nature around them, and they also bring in abundant sunlight, reducing the need for artificial lights. The tender can carry cars, so the owner can take along their car collection. The highlight has to be the built-in saltwater pool. The 52-by-10-foot lap pool disappears when not in use and cleverly transforms into a helipad. To access the pool, glass panels rise out of the foredeck while high-speed pumps fill it with saltwater. The hull is retro-inspired, taking cues from a classic sailboat. However, its heart is as advanced as it can get. Powered by a hybrid power train of electric and diesel, the engine is accompanied by biofuel generators and solar panels, which charge the big battery banks. The electric motors are used for everyday purposes, while the diesel power source is used when additional speed is required. Though it’s a large yacht, Crescere has an ample 40 mph speed, akin to smaller vessels. In all, Crescere is poised to be a globally recognized mega vessel with the soul of a smaller, sportier yacht, with a green conscience to boot.

EXPLORER YACHTS ARE A SIGHT TO BEHOLD. THE LATEST BY
KM Yachtbuilders is special in every way. Under construction since early in the summer of 2019, the 23.7-meter superyacht was built for a second-time adventurer of the Arctic and Antarctic region. She takes her name, Vinson of Antarctica, after the highest mountain on the Antarctic continent. The yacht will soon commence its sea trials from the Makkum shipyard on the North Sea, and the first trip will be to Norway. After the summer, the crew plans to sail to South America, ending at Puerto Williams in Chile, the southernmost inhabited place in the world. The Vinson of Antarctica is a design by Tony Castro Design and is based on the 22.5-meter Pelagic Australis, which was the result of adventurer Skip Novak’s first 14 years of high latitude sailing. Founder Peter Wilson of MCM Newport said in a statement: “I was honored to be asked by the project team to join them in 2018, sharing with them the construction and management expertise acquired through over 90 MCM projects to date. KM Yachtbuilders had already been selected to build the yacht. With their long track record in building go-anywhere yachts, they were a perfect match for this project. With a team consisting of Novak, Castro and KMY, it wasn’t a hard choice for me to join them. We all look forward to testing Vinson in the brutal North Atlantic soon.” The Pelagic 77 Vinson of Antarctica features two carbon masts so that the sail area is distributed and all sail systems, such as winches and jib rollers, can still be operated by hand. For the rest, the superyacht is powered by twin Yanmar engines at 150 hp, with well-protected propellers, a workshop forward to allow running repairs at sea and a diesel stove in the aft saloon. The superyacht has a beam of 6.3 meters and rather minimalist décor, mostly bamboo furniture. Onboard guests can relax in the comfortable living area of the large pilothouse or the stern gallery. The superyacht can host eight guests and a crew of three. It has six double cabins and two communal toilets and showers. The vessel will be used for charter trips from Puerto Williams, as well as for private purposes.
JADE MOUNTAIN ST. LUCIA
The jaw-droppingly beautiful Jade Mountain resort on the southwestern Caribbean coastline of St. Lucia is more than just a pretty face: it’s also a cornucopia of organic architecture and eco-resilience. The property’s design reinforces its connection to the natural environment with passive ventilation of the rooms and natural daylighting;it does not use artificial cooling or lighting, in order to conserve energy resources and minimize its carbon footprint. An exterior plaza was designed to capture rainwater in koi ponds and planting areas, which is then harvested for use in the resort’s restaurants. Only indigenous plants were used in the landscaping, which minimizes the need for watering and protects a precious resource. And guests can do more than enjoy the beautiful scenery from a private infinity pool in their room with a view (which entirely lacks a fourth wall in the bid to be at one with nature): all are given the opportunity to learn about the resort’s sustainability programs and actively participate through environmental activities such as reef cleaning and tree planting.

BAWAH RESERVE On Indonesia’s Anambas archipelago, lesser known than Bali but every bit as beautiful, rests Bawah Reserve, an untapped paradise comprised of six islands, 13 beaches and three lagoons with 100 hectares of forest. Fogo Island Inn might feel like the farthest-flung corner of the planet, and rest assured, that’s intentional. In fact, the inn, built by Norway-based architect Todd Saunders, sits on an island off an island on the Newfoundland coast, with 29 unique guest rooms and suites that showcase dramatic views of the Atlantic Ocean. Its menu always reflects the region: the ingredients guests will find on their plates are fished, hunted, farmed and foraged right on or around the island, such as crab, scallops with parsnips and rhubarb jelly, salt cod and shaved turnip, and cured local sheep leg. The property’s architecture and operational systems ensure the highest levels of energy efficiency and resource conservation via an insulated steel frame, while rainwater from the roof is collected in two cisterns and subsequently filtered for use in toilets, laundry and kitchen appliances. And how’s this for innovative? The owner, Shorefast, a registered Canadian charity, has even developed its own Economic Nutrition notification system, a label allowing consumers to make conscious choices about how their purchases will impact the local and global economy. Truly, this is regenerative tourism at its finest.

The hotel’s carbon footprint includes the use of organic linens and cleaning supplies, which go through recycling and compost programs; usage of an underground geothermal system that heats and cools the guest rooms, spa and domestic hot water supply; 200 square feet of glass in each room, which reduces daytime lighting requirements; and automatic thermostats that reduce excess energy demands. Low water-flow fixtures, dual-flush toilets and waterless urinals are used to conserve water, while a 200-kilowatt solar energy system provides the majority of the electrical energy requirement. And you can also be the change: for each guest who opts out of housecleaning to support a more sustainable future, the property plants an herb in its onsite certified organic culinary garden.
SIX SENSES BOTANIQUE The newest hotel in the Six Senses portfolio, Six Senses Botanique, an emerald gem located just two and a half hours from São Paulo and three and a half hours from Rio de Janeiro, is also one of the most sustainable. The property, which lies at the confluence of three river valleys in the heart of the Mantiqueira Mountains (known as the “mountains that weep,” due to the abundance of springs and rivers), will appeal to guests seeking an eco-retreat in nature along with authentic Brazilian design, culture and cuisine. It is blessed with seven springs that provide guests with their own mineral water, as well as a water treatment station to return clean water back to nature; seven suites, all of which were constructed modularly, using local materials and sited to minimize their impact on the surrounding flora and fauna; farm-to-table herbs, fruits and vegetables, grown in the resort’s own organic gardens and farm and served at its Mina restaurant and Fire Side lounge; a spa that features an interactive workshop, “The Alchemist’s Body,” to teach guests about locally sourced ingredients and products; and unique Reconnection Experiences, which allow guests to get back in touch with themselves and loved ones while exploring the surrounding natural environment.

Heckfield Place, located in the beautiful Hampshire countryside, might look like something from the past, but it’s fully evolved into a locale of the future. This 250-yearold Georgian property achieved 100 percent biodynamic certification this year, making it the only hotel in the U.K. to have its onsite farm so accredited. The 438-acre hotel goes above and beyond organic to grow “preparations” (otherwise known as herbal remedies), as well as its own natural skincare products. But then, everything about Heckfield Place is aces in its bid for sustainability, including plastic-free rooms with natural materials sourced locally (like rush mats and headboards from the River Ouse); the curation of its own produce; composting its own waste; raising pigs, sheep and chickens; a biodynamic nursery; and the use of a biomass energy center for hot water and heating. Last year, Heckfield Place even opened its own micro-dairy in order to generate its own cream, butter and yogurt; its 38 Guernsey cows also provide biodynamic milk, for an exquisite cheese.

Founder Amazing Escapes pushes the boundaries of sustainable travel to the extreme with six cutting-edge eco-infrastructures and a fierce commitment to local culture and communities. The very creation of the resort abided by a strict environmental policy: no drilling was required; should the lodge be dismantled, one rainy season would erase all traces of its existence. To ensure perfect heating, stoves are installed in each dome: the pellets used to fuel them are made of compressed wood waste. The lodge also runs solely on solar panels that not only heat water but also charge batteries. In fact, the whole energy-efficient camp runs completely on 24V. Last but not least, using reverse osmosis, a unique closed-loop filtering system reduces water consumption, while incineration toilets transform organic material into neutral ash so that no black water treatment is needed. There’s a strict policy against plastic, as well. It might sound rustic, but know that each suite features a unique painting by Gastón Ugalde — internationally known as the Bolivian Andy Warhol — and the chef, Marsia Taha, is globally recognized as one of the best in Bolivia.

Haute Living: Tell me about your approach to skincare overall. JOANNA CZECH: Respect, support and protect are the tenets. I believe in a very customized approach to every person’s skin; lifestyle, [the] climate that they live in and [their] needs are different. I do not overtreat or overexfoliate. I also think it is important to reevaluate skincare routines seasonally. HL: As a Dior Skincare Expert, how does your approach to skincare align with that of Dior’s? JC: Dior and I share the same desire to empower women. When it comes to skincare, less is more, and Capture Totale is a line based on cell energy, which is something I believe is key to slowing down the aging process. And they do it with “clean science,” which is the best way, in my opinion. HL: Is there a part of the face that you often see people mistreat or care for improperly? If yes, how so, and what is the proper way to care for this/these area(s)? JC: People very often forget about the neck and the decolletage. The lipid layer is reduced 30 to 40 percent due to a smaller amount of sebaceous glands in this area. This causes [signs of] aging to appear sooner than they do on the face. While it is not necessary to use specific products, it is important to pay attention to this area and treat it like the face and the body, so it gets double treatment. HL: Let’s talk about the eyes, which are now more important than ever; since we wear masks, the eyes are one of the only parts of our face that are exposed and visible. The eyes are also one of the first parts of the face that show signs of age. What is the ideal morning and evening routine to take care of the skin around our eyes? JC: The day should always begin at night—this is when products are most effective as the skin is at rest [at this time]. Evening Routine: Remove makeup gently; do not rub or tug at the eye area ake sure that your eye care products are applied right before your final M moisturizer so that they are properly absorbed into the skin; if you put them over moisturizer, they can’t get through 64 HAUTE LIVING hauteliving.com/hautebeauty

HL: What are some things we should be doing as we go about our day to protect our eyes/eye area? JC: We should be resting the eyes, replenishing moisture throughout the day with product and storing eye products in a refrigerator to create a cryotherapy effect [when used]. HL: Tell me about what makes the Dior Super Potent Eye Serum so special. JC: The triple action effect of the whole product is what makes it special. Biological: The extract of the revitalizing Iongoza plant creates a wave of energy in the skin, while the Active Rye Extract tones and firms. representative, recently appointed Brandon Zarco to reshape his company and build the future. Glaser’s success throughout the decades required him to find the right individual to help him with the next phase of his business, which he found in Zarco. “Brandon is here to help me manage and grow my development and owner’s rep company,” he said. In just the first four months of 2021, the team has transacted $170 million of real estate. Zarco said, “Todd’s expertise is in very high demand. Our process is intentional and systematic. We don’t build fast; we build efficiently.” Glaser added, “We would like to take on more projects, but we are nearing capacity. We need to grow.” This is where the Glaser-Zarco dynamic comes in. If the last name of Glaser’s new deputy sounds familiar to Haute Living readers, it’s not a coincidence: he’s the son of a longtime Haute Partner, attorney Robert Zarco. Our interview offered a glimpse into the day-to-day rapport Glaser has developed with Zarco, each of them complimenting and complementing the other’s talents and sentences, respectively. Glaser saw the development experience Zarco acquired with the builders of The Four Seasons at The Surf Club, The Four Seasons Fort Lauderdale and The Four Seasons Palm Beach as he considered and promptly brought him into the fold. Zarco received his MBA from the Robert H. Smith School of Business at the University of Maryland, College Park, with a focus on finance, and later honed his skills in Washington, D.C., where he spent a few years in real estate banking. “I saw a lot of me in him,” said Glaser. “There’s a lot of serendipity between us. His grandmother, an interior designer who predominantly worked with one wealthy family her entire career, gave Brandon his first design book for his bar mitzvah when he was 13 years old. It was a Zaha Hadid book. Years later, I co-developed the building [One Thousand Museum by Zaha Hadid Architects in Downtown Miami].” About that building, with a little prompting, Glaser added proudly, “It’s the best building in the world. There’s no residential building like it.” Looking into the future, “The next chapter of Todd Michael Glaser 2.0 will focus on ‘Legacy Properties,’” said Zarco. “Our Palm Beach acquisitions approach is currently centered on procuring and developing uniquely positioned legacy properties. There are a few in the pipeline that we are excited to bring to market throughout 2021 and early 2022.” Famous for purchasing historic estates in Palm Beach, Glaser and his wife, Kim, bought

Keeping up with the efficiency rate he employs, Glaser added that they already have new, “Haute Living spectacular” projects to acquire into their growing portfolio. To start, Glaser recently put under contract 10 Tarpon Isle, a 2.26-acre private island accessible via private bridge in the heart of Palm Beach with 1,300 feet of waterfront located just half a mile south of Worth Avenue. An impressive detail to highlight about Glaser is that he knows the addresses of every one of his projects, radiating a paternal tone in his approach to each of them. More directly, he said, “I’m good with numbers and making my partners money. We have a great track record. I’ve been fortunate to have great partners throughout my life, including Alan Lieberman, Scott Robbins, Craig Robbins, Jerry Robbins, Armin Mattli, Jared Posner, Sean Posner, Rony Seikaly, Jonathan Fryd, and David Lombardi, to name a few.” One of Glaser’s top projects at the moment is a collaboration
between architecture firm Kobi Karp, high-end furniture brand Artefacto, and Todd Michael Glaser, located at 394 S Hibiscus Drive. It’s the first endeavor between the three companies. On their goals for the rest of 2021, as an active third of the year is in the books, Zarco said, “We’re in the process of restructuring and streamlining the operations of the business in a way that invites scale while maintaining the highest level of quality and unmatched style. Over the years, Todd has built a tremendous brand for himself. We want to take that brand and, coupled with newly envisioned legacy properties, be able to expand, so when people from anywhere in the country hear ‘Todd Michael Glaser’ they know the type of business and excellence of product that we provide.” As the dialogue was coming to a close, the last question for Glaser generated his fastest response: Would you choose one of those $50 million waterfront homes in Palm Beach or the $50 million estates in The Hamptons? a family legacy that he carries on with pride. Their announcement of the brand-new location of Ferrari Maserati of Central Florida is another notch in the Triarsis’ 50-year history with Ferrari. What was started by Onofrio Triarsi, Sr., in the ‘60s is now a state-of-the-art, 62,000-square-foot luxury facility run by Triarsi, Jr.: a testament to what hard work and dedication can accomplish in a family business. “Guided by our passion for Ferrari, and the heritage that it represents, my family is extremely excited to design, build and bring one of the country’s largest Ferrari dealerships, and undoubtedly the most beautiful, to other Ferraristi in the Central Florida community and its visitors from around the world,” says Triarsi, Jr. Besides being a CEO, Triarsi, Jr., has also established an impressive racing career with Triarsi Automotive’s racing division, Triarsi Motorsports. Triarsi Motorsports brought home the 2020 championship in the Ferrari Challenge North America, and Triarsi, Jr., has personally brought home first place in both the 2012 and 2013 Ferrari Challenge North America, along with numerous other wins. Recently, Onofrio Triarsi, Jr., talked with Haute Living about his family’s legacy, how his racing career has helped shape his journey and his advice for the young CEOs of the future.
HL: What advantages and impact will this new location bring for Ferrari and Central Florida? OT: We wanted to create a facility that truly represents the product we sell. Something extremely special where clients are able to bring friends, feel comfortable and receive the experience they deserve. HL: How has your journey been as a young businessman and CEO? OT: Not so easy! It’s been a difficult journey with nonstop challenges, but it has taught me so much about life, people and my ability to push myself. In the beginning, a lot of your ambitions or goals are typically selfish ones. How can I do better than everyone else? How can I make more money? How can I create more success for myself? I quickly learned that that thinking led to a short-lived feeling of success and was unsustainable for long-term

HAUTE LIVING: What is the story of the company and your family’s heritage with Ferrari? ONOFRIO TRIARSI, JR.: In 1965, my father immigrated from Italy with his family. Seven years later, he incorporated Classic Coach Repair in Elizabeth, New Jersey, and performed all the coachwork for Ferrari in North America, later becoming the first-ever authorized Ferrari Bodyshop in the U.S. Building on his success and reputation, he opened Ferrari of Central Florida and then Ferrari of Tampa Bay. Our family’s passion and relationship with Ferrari extends over 49 years. Our customers know our history, and it’s really what sets us apart.

growth. The most drastic development in my journey is how my overall mindset has changed. When you come to the realization that being a leader is no longer about one’s self and your concern becomes the success, growth, and happiness of your team and others around you, it unlocks a different perspective on life. I’m very fortunate to have started my journey early and look forward to the years to come with my team. HL: Do you feel your former racing career impacts your life and decisions in business? OT: Without a doubt, my racing background has had a huge impact on my business and in my life. In racing, there is a tremendous amount of preparation, training, concentration, teamwork and dedication that all carry over to create a successful business. One of the most impactful traits of racing is the requirement to make instant decisions. I notice that a lot of businesses struggle to make decisions, and when they do, it’s typically too late. In racing, you have to make split-second decisions. Whether it’s right or wrong, you have to make one. Racing has many ups and downs, and you’re constantly presented with different challenges, just like in business. The business world is very competitive; it’s a constant race with no finish line. HL: Do you plan on passing down the Ferrari legacy to the next generation in your family as well? OT: Of course. Ferrari is our heritage. From the time we were very young, my father always involved my sister and me in the stores and the race activities, and I hope to do the same in the future. HL: What advice would you give other young businessmen looking to become CEOs someday? OT: Don’t let age determine the amount of success you’re able to achieve. Focus on developing yourself daily and surround yourself with the types of people you want to become. Know every aspect of your business (I’m just as comfortable talking about a Ferrari as I am working on one). You need to be able to self-motivate and continue on with a positive mindset regardless of the situation. Face every challenge head-on, knowing there is a solution for everything. Treat every customer and employee like family. Be honest, humble, and don’t be afraid to make mistakes. Never lose sight of how everything started.
