Dennis Ross’ surprise announcement that he’s not running for re-election left Congressional hopefuls in Polk and Hillsborough little time to decide whether to run; the deadline to file is May 4. So far, the GOP field includes two who have served in the Florida House: Rep. Ross Spano of Brandon and former Rep. Neil Combee of Polk City. On the Democratic side, Andrew Learned of Brandon has outpaced five rivals in fundraising.

Lakeland police came under social media criticism when viral video showed a homeless man being kicked by officers; he had resisted arrest when wakened under an I-4 overpass. Police Chief Larry Giddens said the officers followed department procedures and that the 41 seconds of video didn’t tell the whole story. That prompted some, including the morning newspaper, to wonder whether body cameras would have given the public a fuller view.

Excitement is building about the soon-to-open, eightstory Carol Jenkins Barnett Pavilion for Women and Children at Lakeland Regional Health. The $275 million, 350,000-square-foot hospital addition will house facilities for newborn care, neonatal intensive care, pediatric surgery, pediatric emergency medicine, gynecology, obstetrics, labor and delivery and women’s surgery. A movein date of June 8 is anticipated.

More changes downtown: Swan Brewing’s opening on Lake Wire has spread the entertainment district west of Florida Avenue; Got Candy took to the road as a food truck; the city announced a publicprivate partnership to build a parking garage at Kentucky and Orange; cocktail lounges Revival and Federal Bar open soon. And Lakeland Brewing on Lake Mirror has closed, but the building will remain a brewpub, its new owner says.

The Detroit Tigers saw the biggest decline in attendance among Florida’s 15 Grapefruit League teams this year. Total attendance declined 12 percent over 2017’s Spring Training. The problem wasn’t that this is a rebuilding year for the Tigers, Polk tourism officials say. Instead, they attribute the drop to the vagaries of scheduling: The most-anticipated games were too early in the season for Michigan spring breakers to catch.

A lawsuit filed by Oakbridge and Grasslands homeowners alleging their property was contaminated by gamma radiation can proceed, a federal judge ruled. U.S. District Judge Elizabeth Kovachevich turned back an attempt from the Drummond Corp., which developed the communities on reclaimed phosphate-mining areas, to keep the lawsuit from going forward. The air show boasted record advance ticket sales, but faced challenges as a death in Arizona cancelled appearances by the U.S. Air Force Thunderbirds and thunderstorms forced an early closing on the festival’s final day.

Smash-&-Grab Thieves Targeting Cars At Parks and Gyms Police reminded drivers to keep valuables out of sight in their trunks after smash-and-grab burglars hit the parking lots of Dog Leg Park and the Circle B Bar Reserve in April. The bad guys case vehicles at parks, gyms and other places where people tend to leave purses, phones and other valuables in their cars and will be gone for awhile, police say.

City Worker Lauded for Heroic Action A city water crew didn’t think much of it at first when they saw a man in Lake Parker early one morning. But when they realized he was in distress, technician Jonathan Turbeville dashed 30 feet into the cold, muddy lake, pulled the man to shore, found him some warm clothes and assisted first responders. Turbeville’s actions earned him a heroism commendation from his boss at a City Commission meeting.

Eco-friendly

literally means earth-friendly or not harmful to the environment. This term most commonly refers to products that contribute to green living or practices that help conserve resources like water and energy. Eco-friendly products also prevent contributions to air, water and land pollution. Consider your day for a moment. You have breakfast, go to work, lunch, come home, maybe you have kids, dinner, how about your weekends? How can you change one small part of your day, and make it a better place to live? How can you make it a better place for your kids or grandkids? Think about where we live, where we’re going, how we affect our environment. How can we create less trash? How can we save resources? Plastic is used everyday and almost everywhere. But we can’t deny the problems of plastic accumulating in our waterways, landfills and oceans. In the Northern Hemisphere, ocean currents are deflected to the right, in a clockwise motion. In the Southern Hemisphere, ocean currents are pushed to the left, in a counterclockwise motion. Beneath surface currents the Coriolis effect results in what is called an Ekman spiral creating a gyre. Every year, millions of tons of plastic enter the ocean ending up in one of 5 major gyres. Once trapped in a gyre, the plastic will break down into microplastics, which may be ingested by sea life. Thousands of tons of plastic debris now occupy an area three times the size of France in the Pacific Ocean between California and Hawaii, known as the Great Pacific Garbage Patch. And it’s growing larger every day. How does it end up there? Litter including plastic bags, beverage containers, food wrappers, food containers and more end up going down storm drains into our waterways. From there it travels out into our oceans. What can I do? What can we do?

• Go paperless! Pay your bills online.

• Don’t litter. Throwing trash on the ground means it’s final destination is probably a body of water.

• Use less water, turn off the faucet when brushing your teeth, only run full loads of laundry.

• Repair don’t replace. Before you throw it out, can you fix it? Can it be repurposed?

• Walk or bike whenever possible. I know it gets unbearably hot in the summer. Until then, consider walking or riding a bike if possible.

• Reusable instead of disposable. Bring your own shopping bags, water bottles, coffee cups, flatware, etc. Instead of using plastic items one time and throwing them out, use items that are reusable.

• Buy from thrift stores & garage sales. It’s good for the community, our landfills and our wallets!

• Instead of using plastic straws, plastic sandwich bags, trash bags, coffee filters, K-cups, plastic toothbrushes, paper towels, consider buying things made out of environmentally friendly or biodegradable materials such as bamboo, recycled materials, hemp, glass, etc. Whenever you do throw it away, it won’t cause the pollution that plastic does.

• Turn off electronics when not in use. Unplug and turn it off. • Buy clothes made from sustainable materials like bamboo or silk that will last a long time vs. cheaply and irresponsibly made “fast fashion” that you only wear a few times.

• Buy in bulk. Instead of buying individual servings or containers of food, buy in bulk and store in small portions in your own containers.

• Eat a meat-free diet one or two days a week. A plantbased diet uses less natural resources than producing meat or other animal proteins. It also cuts down on greenhouse gases.

• Use energy efficient light bulbs, they are a little more expensive up front, but they last longer and use less energy.

• Buy one less new thing a month. The more stuff we accumulate, the more stuff ends up in landfills, in rivers, and cluttering our homes.

• Don’t throw it out! Can you donate it? Can you repurpose it? When you clean out your closet or garage, donate what you don’t need anymore. To a neighbor, a young family, thrift store or sell it.

• Buy a plant for your home. Plants can remove toxins from the air, increase humidity, improve and health, and more. Make it modern by repurposing old mugs, jars or other containers you might’ve just thrown away.

Use all natural cleaners instead of products full of harmful chemicals. Not only are they bad for you to breathe, but the chemicals get washed into our waterways. It’s easy to make & you probably have everything in your kitchen already. Common ingredients used to make cleaners:

All-Purpose Scrub 1/2 cup baking soda Plant-based liquid soap 1/2 of a lemon Pour baking soda into a bowl. Add just enough liquid soap to make a creamy paste. Spread mixture on the flat side of lemon and scrub. The lemon acts as a sponge and leaves a natural citrus scent. Use a damp rag or sponge to wipe away any residue. You'll find the paste will stay moist for a few hours.

Baking soda works as a deodorizer and gentle scrub; it polishes shiny surfaces like stainless steel without scratching. Distilled white vinegar is also a deodorizer, disinfectant and a mild acid that breaks up dirt, grease, mineral deposits, mold, and soap scum. Essential oils; some, including eucalyptus, lavender, and tea tree, are natural disinfectants and antifungals. Pure essential oils can irritate eyes and skin upon contact, so handle carefully. Lemon is a deodorizer, stain remover, and grease cutter. Olive oil is a natural oil that helps to nourish and polish wood. Plant-based liquid soap made with oils such as olive, palm, and coconut, rather than petroleum derivatives or animal fat. Window Cleaner 1/2 teaspoon plant-based liquid soap 3 tablespoons distilled white vinegar 2 cups water

To clean stubborn pots and pans, pour kosher salt into pan and scrub with ½ lemon. The salt acts as an abrasive. Mold + Mildew Spray 2 cups distilled white vinegar Pour vinegar into a spray bottle and spray on infected area. The smell will dissipate in a few hours (open a window to speed up the process). For areas with persistent mold problems, use tea tree oil instead of vinegar, combining 2 drops of tea tree oil with 1 cup of water in a spray bottle. A natural antiseptic and fungicide, tea tree oil costs more than vinegar but will kill most types of mold and help prevent new growth. Always be careful to label containers of homemade cleaners intended for storage and keep them well out of the reach of children.

Pour all ingredients into a spray bottle and shake. Spray onto window and wipe clean with newspaper or a 100 percent cotton cloth.

American Dance Party The brainchild of two environmentally conscious creatives, Marco Denis and Dober Kline, American Dance Party, a “remade in the USA” apparel company, is putting retro clothing to use in a quirky and stylish way. Their selection of Dexter’s Laboratory and Bart Simpson shorts had this nineties child feeling nostalgic!

With a focus on making only made in the USA products, Marco, who is a Polk County elementary school teacher by day and Dober who does ADP full-time, started the company with screen printed shirts. “As time progressed we became more passionate about using sustainable and repurposed materials. We started with our pocket designs and a few back patches and have now grown into what we are today,” said Marco.

Marco explained the switch from screen printing to repurposing, “As we were printing brand new shirts, we came to understand the excess of clothing and materials today. It is important for us to use recycled materials from an environmental aspect. We also love the one of a kind aspect it provides when using recycled and vintage materials to create our pieces.” American Dance Party items come with a sort of exclusive appeal. You surely won’t be caught wearing the same thing as someone else in their individualistic pieces.

Their clothes have an identity all their own starting humbly with vintage and repurposed materials. The American Dance Party team handpick and sew everything that makes it into their stock. Marco noted, “You might find a camo jacket featuring

Though they don’t have a brick and mortar store, you can catch Dober and Marco at various festivals throughout the year. In fact, that’s how I met them! They’ll be at gatherings from Okeechobee Music and Arts Festival, Bonnaroo, BUKU, Bunbury, Firefly, to Electric Forest. When the pair aren’t traveling, you can usually find them on Sundays at the Lake Eola Farmers Market. The two pointed out a converted school bus across the street when we met at the Lakeland Creative Makers Market. “We found the bus when looking for a vehicle to transport our online pop up shop to various festivals,” said Marco, “The bus was the right size to fit our needs. We converted the inside by removing the seats and installing bunks that can

be lowered to use at festivals as our camper.” American Dance Party, what an interesting name! “Years ago, before we began American Dance Party, we had the opportunity to travel internationally. It seemed that the US had the reputation of being just a party, compared to what you would see on MTV. We wanted to prove that even while we had that reputation of fun, dance party, that we were more than that! TACO HAVEN STOP #1

It’s Saturday morning and I am sitting here thinking, the pontoon’s fixed, but it’s going to be too windy and cloudy to take it on the Chain. What can we do that’s fun and productive today? I immediately texted Jordy saying, “Today is the day!” Last week we came up with this great idea. Since Cinco de Mayo is coming up and Jordy loves authentic Mexican tacos, (and we’re down for good authentic tacos too) we could do a tour of a handful of taco trailers in the area and share our unbiased reviews in Haven. Amy approved so… here we go. I am so not eating breakfast because as soon as Jordy gets back from the track with his racehorses the taco race will begin. Fasten your seatbelts and grab the reins for TACO HAVEN.

While most Canadians around these parts are “expats” or “snowbirds,” we like to call our Canadian-friend Jordy, a “Tacobird.” Whenever he’s in town, he will eat tacos 1-2 times a day. When he isn’t eating tacos he is talking about tacos. I’m sure on this adventure, he will have a lot to “taco-bout.”

SAUCES: Red: It was amazing (not too picante) it was my favorite all day. Green: Bold flavors and the avocado was the star in it!

Nando and I ran around doing a few errands and returned to the farm to find Jordy wearing a striped “taco shirt” with flamingo Chino shorts. The minute we got out of the truck he said, “Where are we going Sal? Do you like my outfit? What’s our first stop? Did you GPS it? Are we gonna read anything on YELP?” From one horseman to another Nando said, “Whoa Jordy, easy does it. We have to set some guidelines or rules. We can’t just go into this taco thing blindly.” “Okay Nando, I’ve already made a playlist for the ride and I’m starving so lets figure it out quick!”

TACOS/CARNE-(Meat) Barbacoa- Great flavor like the seasonings -Barbacoa kind of a bit fatty though. Asada- totally gets 5 stars. We are so getting this again next time. Pollo- It’s hard to keep chicken from being dry, but the marinade made it decent. NOTABLE COMMENTS: Nando: It’s taking a long time maybe they couldn’t catch the chicken! Jordy: Tacos make me talkative. Red and Green Tables, Sal, these places always paint the picnic tables red or green. Wonder why?

ROUGH GUIDELINES FOR THE TACO CRAWL: We were not going to go crazy here but we decided we would try to individually repeat what meat we ate at each taco joint and then we would give a review. We had to try both sauces and any toppings that were provided. Notes would be made on atmosphere, setting and general experience. Oh, and, Jordy could not compare every taco stand to “THE GOLDEN PLAZA,” which is his absolute - already determined best taco stand in all of Polk County and North America for that matter…

Off to LAKELAND! Jordy’s sound track started to turn a bit too alternative and we were craving something more taco-ish if that makes sense.

He goes to “THE GOLDEN PLAZA” so much that I think in the beginning they might have thought he was DEA or some sort of undercover cop. He completely doesn’t fit in. This guideline would be a challenge for him, because he talks and compares everything to this place, (even if it’s an Italian restaurant), but this is what he signed up for. He wanted to branch out and try new tacos just in case there was or is something he has been missing. Back to the meat and well… cilantro!

Traditionally (in Polk County) The tacos come with options of 2 sauces: RED – tomatillo, tomato, red chili GREEN – tomatillo, avocado, jalepeño, green onion, and garlic

The standard choices of meats: BARBACOA-SHREDDED BEEF- Somewhat fatty but when cooked right, the fat melts in your mouth and you don’t even notice. PASTOR-PORK- Roasted crisp thin shavings. Always a nice safe option. ASADA-STEAK- Skirt or flank charred and thinly sliced. CARNITAS- BEEF- More of a stew meat, (depends on the stand). POLLO-CHICKEN- Usually pulled or chopped dark and white meat mixed. LENGUA- TONGUE- It’s cow tongue no matter which way you slice it. It’s tender. CHORIZO- SAUSAGE- crumbles of pork sausage with warm smoky flavors. Classic. CABEZA- COW HEAD- Actually the “cheek” part, often same as Barbacoa. The best! *Of course there are slight variations from taco stand to taco stand.

NOTES: Named after a state in the south of Mexico.(I can’t pronounce it either). When Jordy went inside the tienda to buy another Jarritos and some Mexican candy, we talked to the owner behind the register and he was friendly and happy to see us. We went back outside to the Taqueria (taco trailer). SAUCES: Red was HOT, way picante! Green was delicious and perfect! TACOS/CARNE: Barbacoa- has a bit of a smoky flavor. It is not as pulled as normal. A bit fatty-ish. Asada- 100% surprisingly delicious! Pollo- Probably would stick to the beef or pork next time.

The tacos are always garnished with a lime, (to squeeze over the top and then wash your hands with after.) Expect fresh cilantro and onions 100% of the time. If you’re getting tacos and they don’t have this heavenly match sprinkled on top, then you might have accidentally rolled into the Taco Bell drive thru! No Bueno!

JORDY’S PRO TIP #1) you shouldn’t look at it or smell it, just eat it. Don’t overthink the taco or the Mexican candy.

Nando always orders extra onions, cilantro and lime. He usually gets denied, but I don’t think he notices half of the time. In general, they give you a lot in the first place. Or you will have to pay a little bit extra for extra toppings or sauce. While not all tacos are the same, the price point is pretty universal. $1/taco is average. (We always pay in cash!)

NOTABLE COMMENTS: Nando: Why is it that when I order in Spanish, they answer me back in English? Jordy: I wish I could speak Spanish… I love tacos. I think my Spanish is improving! Sally: Guys, lets focus on the Tacos, we’ve got to do our work and my phone is covered in Cilantro.

Now, we’re going to get this party started but… I just want to mention again that it is really amazing how many taco trailers and Mexican restaurants are located all over Polk County. We are surprised that visitors come here with their primary destination being LEGOLAND, when we could be known as the taco capital of Central Florida. We actually did have an Airbnb guest come from the Midwest just last week and she took an Uber to the last stop on our taco tour. So… maybe the word is getting out there.

SAUCES/TOPPINGS/TORTILLAS: Sauces get a thumbs up. Not enough cilantro and onion but they do top the Asada with grilled onion and it is amazing. We like how they give cucumbers on the side too. Nando says the cucumbers cool the mouth and clear the palate making it ready for the next taco. Jordy says, hmmm maybe I should switch from Jarritos to cucumber water.

We open the doors and it is as if we just walked on stage. “Havana” by Camila Cabello is playing; I dance down the aisle with Jordy, (in his striped taco shirt) running along side me. The people eating are looking at us like we are a few gringos that took a wrong turn, but… little do they know, Nando is Latino, The Canadian Tacobird thinks he is and I speak Spanish along with my Rumba. We’re not bothered… We’re on a taco crawl in Polk County and this place feels like we’ve landed in authentic Mexico! We love it! Jordy is at the counter ordering and I’m now in the market section dancing to Shakira and buying Mexican candles.

The corn tortillas are pretty small. They are 2/3 the size of the tortillas at “The Golden! Plaza” JORDY’S PRO TIP #3) If it ain’t corn, it ain’t authentic. Any place that tries to sell you a taco with a flour tortilla… is an imposter. Run for the border.

SAUCES: The Green Sauce was so hot that Nando couldn’t handle it. He drank the sauce right out of the plastic container, which is normal, but the heat was an after heat that bit him like a water moccasin. He had to eat half of Jordy’s Mexican coconut candy to try to combat it. He really needed sour cream but there was none to be had. Deceptive green sauce is what Jordy dubbed it. Jordy is not a big sauce fan, which is fine. He prefers the natural state of the meat not to be enhanced or masked by Red or Green. Such a Canadian…

JORDY’S PRO TIP #4) Sally does something really cute. I would never do it. But speaking of tortillas, traditionally the taco has 2 tortillas stuck together for strength to hold the treasures inside. Sally peels the 2 apart and divides the meat in 2 and has a “2 for 1” Two tacos made out of 1. Love it! NOTABLE COMMENTS: Jordy: (After we had finished eating-) Are we OK, I feel like you guys are running out of gas. Oh look, lets go to the place across the street. We can literally walk over there. Look, these tables are painted red here. I think they’re green over there. Sally: I cannot believe you are still analyzing the picnic table colors. Nando: Fine, one more place then I’m “tac-oed out.” – the tables are painted the colors of the Mexican flag people. JORDY: I don’t know Nando, I really think it might be the 2 colors of the sauces.

TACOS/CARNE: Nando and I had to take a break and we’ve been here before so Soldier Jordy took the Front Line. Barbacoa- Super greasy. Asada- Eaten in two bites which is close to five stars! JORDY’S PRO TIP #2) Most every taco stand/place has rolls of paper towels, which is brilliant. Tacos are messy. This spot, maybe because it was a “to go order” didn’t give paper towels or napkins, so Jordy used the limes to clean his hands. Then his hands were sticky so, he ran back in the restaurant to wash them anyway. He’s a bit particular...

Nando and I were back in the saddle and we have been here before so, we just had 1 taco each. Jordy could literally see his favorite taco stand from here so, I think he almost felt like he was “cheating.” He was a bit quiet at this stop. Overall, we don’t have many comments other than it was a 4/5 star and we would go back. We heard from a local that the Tortas (Mexican Sandwiches) are the absolute very best here. Hands down. Too bad Jordy only eats tacos.

NOTES: The sun is setting, we chose to sit in the VIP taco cabana with the sticky red picnic table, not green, and you can also sit under the repurposed Amoco gas station overhang. It was slow, we were the only ones there and we definitely waited. The VIP tent, sunset and the fact that we could watch cars fly down Recker Highway helped pass the time.

TACOS/CARNE: Barbacoa- Juicy, almost perfect! Asada- Good. But when you know the grass is greener on the other side…

SAUCES: Not bad. Basic. TACOS/CARNE: Barbacoa-not fatty at all. Nice subtle flavor. Asada-Once again, Good. Enhanced by fried onion.

SAUCES/TOPPINGS/TORTILLAS: This day, we only tried the green because they were out of red. Tons of Cucumbers and Plenty of Cilantro. It is also super close to “THE GOLDEN PLAZA” so, we think the tortillas are fresher as well.

NOTABLE COMMENTS: GENERAL CONCENSUS FROM THE 3 OF US: Not Bad. Not bad at all. JORDY: They should have named this place “Overflow My Friend” I feel like this is where you go when “Tacos My Friend” is too busy.

Side Note: Jordy couldn’t handle hearing the music and smelling the familiar aromas from “THE GOLDEN PLAZA” so we had to Vamos.

We closed the night with a Margarita at Central Tavern. It was manifest destiny. We had to ice the Taco cake with some Tequila. Throughout this entire experience, I realized that 1) Jordy and the taco thing isn’t just for sport. He takes it almost as seriously as the racehorses. 2) He is a taco eating machine. He consumed 5 drinks and 12+ tacos and could have kept going. 3) He is probably right; the best tacos do come from “THE GOLDEN PLAZA.” Jordy made me change the name to protect the identity of his sacred taco stand.

MIDFLORIDA Mayfaire by-the-Lake Mayfaire started as a way to promote awareness of the arts in 1971 as well as providing a wonderful way for families to spend Mother’s Day. It is run by the Polk Museum of Art, a nonprofit organization that allows free admission to everyone. Midflorida Mayfaire attracts over 70,000 people each year to enjoy the art that can only be described as tres magnifique. Lake Morton was chosen to host the Mayfaire event for one reason. “We wanted it in our back yard so that patrons can come to the museum while they are at Mayfaire, if they would like,” said Joy Williams, Mayfaire Coordinator.

“We are affiliated with the Smithsonian and we have a point of contact there that knows people in the art industry,” said Williams. This year’s judge for Mayfaire is Leland Bryant, who was chosen by Claire Orologas, Executive Director at the Polk Museum of Art and the museum curator, Dr. H. Alexander Rich. Bryant will be judging art pieces and giving awards, including a $5,000 top prize for Best of Show. Other awards include 2 Awards of Excellence, 4 Awards of Distinction, 6 Merit Awards, and 5 Honorable Mentions with a $17,000 prize total.

This year’s cover artist, Tony Eitharong, was chosen by the Mayfaire coordinators, museum curator and the executive director. Deciding on the cover artist each year depends on different concepts. “We look at what the theme is, a feeling we are trying to convey,” said Mayfaire Coordinator, Leslie Norman.

“All applications are submitted digitally,” said Norman. Artists are able to start submitting their work through Zapplication, a computer program used amongst the art word, in October. This year there will be 165 booths including a children’s art tent that will have arts and crafts, printmaking, collages and perspective drawing for children of all ages and abilities to participate in.

Every year, a panel of five experts are chosen to judge and score all the art submissions for Mayfaire. “The top scores get invited to Mayfaire,” said Williams. All chosen judges have to be out-of-state judges so there isn’t any bias.

Another booth worth looking at is the Kids Tag Art booth. “[Kids Tag Art] is a program developed out of the Polk County Tax Collector’s office,” said Ellen Chastain, Education Manager at the Polk Museum of Art, “We are proud partners of theirs; working

to help organize the Awards of Distinction for 5th graders throughout Polk County, which includes public, private and home school.” The children are able to design a license plate or a vanity plate for purchase and all proceeds go back to that school’s art department. Two works are chosen as Awards of Distinction from each school and are placed on a traveling exhibition throughout Polk County. “Since we have been doing this, there have been nearly 20 other counties that have adopted this program,” said Chastain, “it’s something that has grown over the state of Florida and it started here in Polk County.” This will be the 12th year for the Kid’s Tag Art and they have hit $1 million in raised funds. Mayfaire Saturday Night will have a live performance from MPiRE, which is returning for the fourth year. This group of nine performers plays a variety of music from Pop, Rock, Top 40, Disco, Country and R&B from 5:30pm-11pm. Firework show at 9pm. The Lakeland Runner’s Club will be hosting their 39th annual MIDFLORIDA Mayfaire 5K Race Saturday, May 12th at 7pm. The race runs around Lake Morton and Lake Mirror and will be chip timed. Awards will be awarded at 8pm to runners

for overall male and female gun time, Overall Masters using chip time, Grand Masters using overall chip time and top three finishers male and female in each age group starting at age ten. A portion of all proceeds will go to the Polk Museum of Art. During the event the Polk Museum of Art encourages art lovers to view the current exhibits within the museum. “We have Mayfairy golf carts that transports people through the show including one that is wheelchair accessible,” said Williams. These carts will also make stops at the museum as well as around the lake. Perianne Boring: Advocating for a Blockchain Future With an organization based on such an emerging and at the time a niche industry, I asked the founder how the idea for the Chamber of Digital Commerce came to her. She explained that she first learned about bitcoin while working on Capitol Hill, saying, “As an economist, when I first learned that there was digital currency out there that’s not controlled, created, or overseen by either a government or a corporation or any kind of organization, to me that was just a fascinating concept.”

Perianne Boring hails from Lakeland but has since moved to the country’s capital to affect important changes in the future of the digital assets and blockchain technology industry. Perianne spent her formative years at Cleveland Court Elementary, attended Southwest Middle School, and graduated from Lakeland High School (LHS). She was a majorette in the high school marching band, a special memory for Perianne and something she shares with her mother who was also a majorette at LHS. Perianne also won the Miss Lakeland crown her senior year. “I have very deep roots in Lakeland,” she reflected.

She wanted to better understand this and began to study in-depth bitcoin and blockchain technology. A couple of years of following and studying the industry independently, Perianne came to the conclusion that this was immensely important and she had to be a part of it.

Boring moved from Lakeland to further her education at the University of Florida. During her senior year at UF, she was selected as a White House intern under President Obama. Perianne studied at UF during an incredibly economically disruptive time. She witnessed the economic crisis of 2007 while studying economics. The housing collapse impacted Florida in such a way that everyone knew someone that had been touched by it. “I wanted to understand what was going on. I wanted to understand why people were losing their houses through no fault of their own, why people were getting laid off, and why our community was impacted by this,” she said.

2013 was an impactful year for the industry. Bitcoin had price increases of over 3,000% and the country of Cyprus was going through a bailout with the European Union and there were murmurs of them leaving the Euro. “During that time, there were Cypriots moving their money into bitcoin and that was one of the first international headlines about bitcoin.” This international spotlight led to new interest in the digital currency. There were a few bruises to the industry’s reputation in the same year between the collapse of Japanese company Mt. GOX and the focus on the Silk Road, a black-market site best known as a medium for people to buy and sell illegal drugs.

Upon a deep analysis of the economy at the time, Perianne said her findings were, “Incredibly frightening, especially as a young person just entering the workforce.” She was and continues to be concerned about the future economic health of the country, noting, “I was also upset about the amount of debt our country has accumulated over the years, knowing that I’m going to be a part of the population that has to pay that back and overall transparency and accountability in the global financial system.” This experience struck a chord with Boring, “I decided to dedicate my career to fighting for a better economic future for myself and those that will come after me.” This led the economist to join Lakeland Congressman Dennis Ross’ team as a legislative analyst. Working for the Congressman, Boring met with special interest groups, and lobbyists, and advised Rep. Ross on financial and economic policy. “It was really meaningful work. It was a bittersweet day when I left the Hill. I really loved my job and I loved working for Congressman Ross,” she said with sincerity.

Through the questionable public opinion, scrutiny from Capitol Hill, and warnings from various government agencies about the dangers of the technology, Boring saw opportunity. At the time, there was no one in Washington present to explain its benefits, “The only thing policymakers and the media were talking about at the time was what had gone wrong and nefarious activities, but no one was in DC advocating for the enormous potential blockchain technology could bring to government, business and society.” “The idea for the Chamber came very organically,” said Boring, “It was obvious to me that this industry needed a high quality, high integrity, independent advocate that could be a resource to the public policy community to help educate them on what blockchain technology is, what the potentials are, address concerns they may have, but not inhibit innovation or not lose site of the potential promise that blockchain can bring to society.”

“I still am in tune with that vision of fighting for a better economic future and fighting for a more sustainable monetary system,” Boring noted, “and that’s a big piece of what we’re doing now at the Chamber.”

According to Boring, since the internet’s inception, it has been a means for communication and information sharing. “It’s not a great medium to share anything of value, any kind of asset. We know this because of the trillions of dollars’ worth of cyber-attacks that cost the global economy every year. We need a better way to transfer value in a digital world and digital commerce and that’s what the promise of blockchain provides.”

Perianne Boring is the Founder and President of the Chamber of Digital Commerce, a Washington, DC-based non-profit whose mission it is to, “Promote the acceptance and use of digital assets and blockchain-based technologies.” It was the first trade association to focus specifically on blockchain and is still the only in Washington, DC that focuses exclusively on blockchain technology. Boring defines blockchain as a “distributed or shared leger that holds an immutable record of digital asset transaction” of which there are three main types: public, private, and those built through consortium. Boring continued, “A digital asset can represent a currency like the digital currency bitcoin, but it can also represent other assets like the title to a car, real estate, stocks, bonds, virtually all assets tangible or intangible can be recorded, tracked, and traced on a blockchain.”

Adding to her long list of professional accomplishments, Boring has been a contributing writer for Forbes for several years with her own column, The Beauty of the Blockchain. Just this year she joined the Georgetown University faculty as an adjunct professor, teaching the university’s first-ever blockchain course. “It’s really exciting to have such an established academic institution providing educational programming around blockchain which is showing the maturation of this industry and how important the technology is,” she remarked.

Talking about the Sweet Stuff with Bee-Haven Raw Honey Company The Sadler family has been in the sweet industry of beekeeping for the better part of 40 years. Speaking with owners, mother and son, Tammy and Clay Sadler about the family business, their love for every part of their job showed in their passion and knowledge about the beekeeping and honey industry.

“When you consume raw honey, it still contains trace amounts of plant and tree pollens. You want to eat [honey] that’s regionally local to your area so that you’re consuming those pollens regularly and it helps your body build a natural immunity and antibodies to those pollens,” explained Tammy. Their allergy blend covers every season and the regional areas of Central and North Florida. “It takes the seasonal and regional guesswork out of what honey you need to eat this time of the year. Even if you’re eating honey that’s regionally local, it also needs to match you seasonally to help with an allergy problem,” said the owner.

Clay’s grandfather started beekeeping as a hobby, eventually involving his son. When Clay’s grandfather passed away, his father began keeping bees full-time. “Now, between the whole family collectively, we have over 2,000 hives of bees,” said Clay.

Besides satiating your sweet tooth and helping you avoid the sniffles, “Honey is a natural anti-inflammatory, it’s an anti-microbial product,” said Tammy. She continued, “Bacteria does not grow in honey. Honey is a natural humectant for the skin–draws moisture and holds moisture in the skin. About 5 years ago, the Sadler’s started packaging their own honey. Previously, their honey crop was being wholesaled. Skully’ s Barber Salon We’ve all heard it– ‘Do what you love, and you’ll never work a day in your life.’ Lakeland barber, Paul “Skully” Scott, is living by it. “I’d always been cutting my friends hair,” said Scott. So, when it came time to choose a career, “I was always told ‘do what you love’ and I loved cutting hair so it seemed like the right choice to make.”

Though trained in both men and women’s hair, Scott focuses on men’s. What’s the most popular men’s cut in Lakeland at the moment? An undercut, according to the barber. He keeps up with emerging trends as well. When asked what’s the next ‘new do’ for the area, Scott responded, “The nineties hairstyles are coming back a lot, like the surfer haircut where it’s parted down the middle and kind of long–that’s coming back. A lot of people are growing their hair out because they’re tired of having the shaved sides.” He joked, “I call it the Jonathan Taylor Thomas.”

He got his credentials from Paul Mitchell The School–Orlando, after which he tried out a few different barber shops and salons. Tired of waiting around for clients to come in to see him, Scott decided to bring the barber shop to his clients. “I got in my truck and I started around to people’s houses and business with a toolbox and doing people’s hair out of their kitchens and what not.”

Our conversation concluded with what Scott loves the most about his job. Scott reflected, “I love being able to meet new people every day and just work with my hands and be very artistic. I’ve always been very into art and everything like that so to be able to create with my hands is awesome.”

One day, Scott was talking to his dad about his aspiration to have a business of his own. Scott’s dad had an idea. He showed Paul the rise in mobile barber shops in California. These mobile shops were done in a food truck sort of fashion, out of converted buses. “That seemed like an awesome step up from what I was already doing,” he said.

In 2016, Scott acted on that conversation and bought a Winnebago to convert into a shop of his own. To transform it into a barber shop on wheels, Scott had to rip out the kitchen, seating area, bedroom, and shower, “I had to completely gut the RV down to the bare minimum and then rebuild it all and put in the bench and counters and everything.” He officially opened his business in 2017, dubbing it Skully’s Barber Salon. The name comes from a nickname he’s had for years, though he can’t recall its origins. He now drives his iconic green bus around Lakeland making house calls and setting up at different events and locations from W Pipkin Rd. to Florida Polytech, keeping the gentlemen of Lakeland looking fresh. He’s even been to weddings and given all the groomsmen a fresh cut and shave for the big day. You can find his location schedule for the week on his website, www.skullysbarbersalon.com. Skully, who has the only mobile barber shop in Lakeland, spoke to the advantage of such a business, “I’m able to service a wider area of people. Also, in the hair industry, there are certain times of the year that are really slow and you lose a lot of business because people aren’t getting haircuts as much. Whenever it gets slow for me, I just pack up and move somewhere else.” Scott has two more chairs that he would like to eventually hire for. New hires aside, Scott has high ambitions for the future of his mobile barber shop, “I want to either franchise out the vehicles so other people could have them under my name or open up a brick and mortar shop, have people in there and also still drive this around.”

“U-Pick” Me Up For the syrup: 1 cup Local Blueberries ½ cup Sugar ½ cup Water 1 1 ½ inch Rosemary stalk (optional) For the cocktail: Blueberry syrup Ginger ale or Club Soda Vodka Crushed ice Rosemary to garnish To create simple syrup: In a small saucepan, combine berries, sugar, water and rosemary. Bring to a boil, stir and smash berries until sugar is dissolved. Let cool. Strain. To make cocktail: Fill glass with ice and 3 tablespoons of blueberry syrup. Add one shot of vodka, or more to taste. Fill glass with ginger ale (for a sweeter taste) or club soda. Garnish with rosemary. Alternative: Leave out vodka & rosemary for a sweet blueberry drink. Scream’ n Tuna

Scream’n Tuna Sushi is o-fish-ally my new go-to for Asian cuisine. You could say that their food makes miso happy! I’ll see myself out now. Puns aside, Scream’n Tuna has some seriously addicting food. The restaurant opened in November of last year and is situated under the NOBAY apartments in downtown Lakeland. Owned by Mike Crivello, a winter Florida resident and family member Jordan Poulos, who lives in Lakeland and runs the restaurant, it is one of many eateries owned by the family.

Poulos answered, “I really liked the downtown area. It’s growing and everybody is very nice and it’s pretty trendy.” The owner wanted somewhere that he would enjoy living as well as working and Lakeland fit that bill.

With restaurants in Wisconsin, Crivello decided to open one in Florida. He teamed up with Poulos who had been working at a sushi restaurant for 4 years in Sebring. “I was thinking about going into culinary when I was younger. I used to be a busboy at a restaurant I worked in and they gave me an opportunity to start learning sushi and get trained by Japanese chefs,” said Poulos.

For lunch on a Monday afternoon, we started with popular appetizer Tuna Tartar. The dish was seemingly simple, consisting of tuna, avocado, kimchi, chips, and scallions. The chips are actually fried wontons that they make in-house. They were well seasoned and each bite came with a generous amount of tuna and avocado. The kimchi gave it a nice amount of heat that was tamed by the slices of avocado.

What makes Scream’n Tuna exceptional? “We’re not as traditional looking. We’re not black and red, we’re a little bit more modern. We take pride in what we do,” remarked Poulos. “It’s all precision and well thought out and we’re always looking to create more stuff and listen to our customers and what they want. We try to offer the best service as we can. We’re always trying to improve.”

If you’re a sushi newbie, the owner has a few suggestions to get you started. Try the California Roll, Cucumber Roll, Spicy Tuna Roll, or Fried Bagel Roll which is cooked salmon and cream cheese wrapped in seaweed and deep fried to perfection. The space of the restaurant is intimate. The light gray walls against the gray and black booths felt pleasantly bright and modern–a lovely spot to enjoy Lakeland’s best sushi.
