Sixteen books were temporarily removed from public school library shelves across Polk County after the group County Citizens Defending Freedom said they were pornographic and harmful to minors. Two committees assembled by the school district will review the contents of the books and determine their fate. Critics of the books’ removal note that most of them deal with LGBT+ or racial equity themes. Among the books under review are the best-selling novels “Beloved” and “The Bluest Eye” by Toni Morrison and “The Kite Runner” by Khaled Hosseini.
Silver Ring Cafe, a vintage lunch spot known for its Cuban sandwiches, will need to leave its 35-year spot across from Munn Park by the end of August. Restaurant owner Tim Altman learned recently that his lease will not be renewed. The owner of the Tennessee Avenue building plans to remodel the space for a tenant she isn’t ready to name but said is “a new company that will bring great value to downtown.” Altman, 63, is looking for a new spot for his cafe and its four employees. “I’m really worried about them more than myself — and my customers,” he said.
Barbecue lovers cheered when they learned that Winter Park-based 4 Rivers Smokehouse plans to open its 15th location at the Shoppes of Lake Miriam Crossing, the shopping center that includes GreenWise Market and HomeGoods. Plans call for a 4,279-squarefoot restaurant seating 87 opening later this year. Readers of Southern Living ranked 4 Rivers the top barbecue joint in the South in a 2020 poll. All of the small chain’s restaurants are in Florida, with four in the metro Orlando area and two in Tampa.
The Polk Museum of Art is getting ready to triple its gallery space. The museum is planning to start construction later this year on a 10,000-square-foot, $6 million expansion. Designed by Straughn Trout Architects, the two-story addition will expand the 34-year-old Palmetto Street building to the northwest. The project includes more classrooms, laboratory and storage space, renovation of the entrance, and new flooring on the first level. Expected opening: spring 2024.
Plans for a new facility that will produce medical marijuana in a west Lakeland industrial park had nearby residents of Carillon Lakes worried about odors; they have complained for several years about smells from another nearby cannabis processor. But at a city planning meeting, representatives of Revolution Global assured the residents the company will use building design and advanced technology to prevent odor leakage. At the same meeting, members of the Lakeland Planning & Zoning Board learned that state law gives cities little latitude in regulating cannabis businesses.

Lakeland Christian School plans to construct a three-story high school classroom building near the intersection of Harden Boulevard and Ariana Street. The site plan for the project is under review by the city of Lakeland, and a Florida drainage permit is needed. Enrollment at the school is capped at 1,200 students, so no increase in traffic is expected. Trees were recently removed around the site reserved for the 41,500-square-foot, $12.5 million expansion. The project architect is Jon Kirk of Straughn Trout in Lakeland.
Frustrations have mounted for residents of Lakeland’s unincorporated suburbs who count on FCC Environmental to pick up their garbage. After many customers complained of missed pickups, Polk County commissioners first threatened FCC’s contract, then said complaints had decreased but ultimately declared a state of emergency. That allows County Manager Bill Beasley to craft a short-term solution that could involve using county crews or other companies. The state of emergency was needed because “the missed collections, which persist in the county, endanger the public health, safety and welfare of Polk residents,” Polk’s government said in a news release.
Lakeland city commissioners waded into the emotionally charged issue of duck hunting on city lakes after getting emails from residents along Lake Parker who complained of pre-dawn shotgun blasts near their homes and a city recreation trail that skirts the lake. To the residents, hunting near neighborhoods presents a threat to safety and tranquility. Hunters rebutted that hunting on any part of Lake Parker is legal, and suggestions that it be curtailed are an affront to conservation, gun ownership, and heritage. Commissioners asked their staff to schedule a public workshop with representatives of the Florida Fish and Wildlife Commission to air all sides of the issue and explore options. The duck-hunting season has ended and resumes in November.
The golf carts that transport people around downtown Lakeland have proved very popular on weekend evenings. But few people were using the service during its weekday lunch runs, so those have been eliminated. The three-month-old service, called The Squeeze, is a pilot project from the Citrus Connection and the Downtown Lakeland Development Authority. The eight-seat golf carts, now equipped with green LED lights underneath, run from 4 to 11 p.m. on Fridays and Saturdays. Rides come roughly 12 minutes apart and cover downtown, the RP Funding Center area, and the Lake Morton neighborhood. Payments are made via mobile cash apps.
The pace of growth in Lakeland is becoming an increasingly contentious issue. In the coming weeks, city commissioners will be asked to approve 242 apartments on Lake Miriam Drive near the Publix shopping center and several single-family and apartment developments in areas around West Pipkin Road west of the airport. Proponents say the new communities will provide needed housing for the many people finding Lakeland an attractive place to move. Some detractors want to stop the growth and maintain Lakeland’s small-town feel, while others want to see investment in roads and public safety precede approval of new communities. Watch for more community discussion of growth in the coming months.

U-Pick season is almost here! Polk County has several U-pick blueberry farms to fulfill your inner Violet Beauregarde. A repeat winner for best U-pick farm in our annual Best of Haven readers choice awards, Whitehead’s Blueberry Farm is getting their buckets ready, hooking up their wagons, and preparing to welcome U-pickers for the season ahead. The Winter Haven-based family farm started as a plant nursery in 1979. In 2000, they became a blueberry farm and opened for U-pick. According to owner Jacqueline Whitehead, her in-laws purchased their home and the first bit of land in 1972. The family accumulated more property in the 80s and 90s, along with five acres across the street last summer, making up the 33-acre Whitehead Blueberry Farm. Fifteen of those acres are dedicated to growing over 30,000 blueberry plants. Jacqueline and her husband John married in 1988. “He used to work for Cypress Gardens when he was a teenager, and he grew plants for them for many years. In 1999 he decided to go into blueberries, and that’s when we became a blueberry farm,” she said. The farm is open for U-pick from the first Wednesday in April through mid-May. “Blueberries are a once-a-year crop,” said Whitehead. “When you plant the bush, it normally takes about three years for it to start producing any quantity of blueberries.” She described the beginning of their ‘cycle’ in January and early February when they bloom, which eventually turns into berries. “They don’t come in all at one time. Every two or three days, you’ll get a whole new crop that’s ripe during the harvest time. We have the bloom. Then we have the baby berries. Usually, by the end of March, you start having mature berries that you pick and eat,” she said. During the U-pick season from April through mid-May, thousands of people flock to the farm for a day of picking blueberries, enjoying the outdoors, and slowing down for a bit. Once they’ve been picked clean at the end of the U-pick season, the bushes are cut back in June. “That’s so they’ll put on fresh growth for the following year,” according to Whitehead. “At that point, they’re dormant, you could say. They have green leaves until sometime in December, and then the leaves will fall, and then they’ll start putting on the blooms again in January.” EMERALDS AND JEWELS This farm grows two varieties of blueberries – Emeralds and Jewels. “They are some of the very first blueberries ever developed by the University of Florida to grow in Florida,” according to Whitehead. The difference between the two types of berries grown on Whitehead’s Blueberry Farm is best summarized by the Florida Blueberry Growers Association (www.floridablueberrygrowers. org/varieties). “Emerald is a vigorous bush with a growth habit midway between upright and spreading. Flowers open uniformly, and it produces abundant leaves even after mild winters. Emerald is very capable of carrying heavy crops. Berries are large and firm with a good picking scar and have a sweet flavor. Color is medium to dark blue. There are no real problems with Emerald. Jewel produces a large number of flower buds but leafs well in the spring. Vigor is about equal to Sharpblue, but Jewel is shorter and more spreading. Berry quality is excellent but tends to be tart until fully ripe. Jewel is moderately susceptible to root rot.”

Jacqueline enjoys providing a learning experience for all who come to U-pick, especially children. “It’s a way to do something fun with your kids that teaches them. People like the fact that their kids learn that blueberries don’t come from a box in Publix,” she said.
According to the Florida Blueberry Growers Association, two types of blueberries grow in Florida – Southern Highbush and Rabbiteye Varieties – both of which encompass many types of berries. Southern Highbush include Primadonna, Emerald, Star, Windsor, Jewel, Springhigh, Springwide, Santa Fe, Sweetcrisp, Camellia, Abundance, O’Neal, Rebel, Palmetto, Dixieblue, Gupton, Sebring, Millennia, Snowchaser, Misty, Gulf Coast, Sharpblue, Farthing, Scintilla, and Lenior berries. Rabbiteye Varieties include Brightwell, Alapaha, Vernon, Ochlocknee, Powderblue, and Premier bushes.

Even after picking to their heart’s content, guests at the farm often stick around to enjoy the onsite food truck on weekends serving blueberry desserts or to shop a selection of local honey, local jam (made with Whitehead’s blueberries, of course), and other goods. “I have a very talented niece who makes fused glass jewelry, and we usually have some of that for sale as well,” said Whitehead. Families can make a day of it with the playground, corn hole, and tables to relax and take in the sights.

During the off-months (September through December and January to March), the Blue View Barn is used as a wedding venue with a 130-person capacity. Decorated in a rustic-chic aesthetic with burlap, mason jars, and sweet signs, all couples need to do is show up for their big day or change out what they want. Whitehead said, “Couples that get married here tell me that it’s fun and it’s easy because I have so many decorations for them to use that it makes it simple.” The venue has an onsite bridal suite, groom saloon, DJ booth, dance floor, outdoor bar, catering kitchen, and food service area. The ceremony space is an open-sky chapel with doors for a grand entrance, wooden benches, and string lights. IN THE ZONE “I like to pick in the morning before anyone gets here. I usually come out at about 7:00 and pick some to eat for breakfast,” said Jacqueline. “It’s calming. It’s quiet. You can just get in the zone.” Some 8,000-10,000 people each year seek out the same calming appeal of what Jacqueline calls a “simple, back to basics” activity at the family farm. “I think people have lost the ability to be outside. […] People come out here, and they’re just

blueberry gardener’s guide Two types of blueberries grow well in Florida, rabbiteye (Vaccinium virgatum) and southern highbush (interspecific hybrids of V. darrowii, V. virgatum, and V. corymbosum). However, only the low-chill cultivars of each are adapted to Florida. Generally, rabbiteye blueberries grow well in areas of Florida that have winters as cold as or colder than winters in Ocala. The southern highbush cultivars that are commonly grown in Florida are well adapted to areas south of Ocala and north of Sebring, although they will grow reasonably well in Alachua County. The southern limits of southern highbush adaptation in Florida have not been fully determined.
the plant. If the plant has a large top compared with the root system, remove about one-third of the top by selectively pruning the least vigorous growth and cutting back the tops of vigorous canes by several inches. Aside from site selection, choosing the proper blueberry cultivars may be the most important decision a dooryard blueberry grower can make. Most blueberry cultivars grown in Florida are self-unfruitful; they require cross-pollination from another cultivar of the same type (southern highbush with southern highbush and rabbiteye with rabbiteye). Another requirement for good fruit set is that pollen vectors (usually bees) are present and working the flowers during bloom. With good pollination, berry yields of 2–5 pounds per plant may be expected by the third or fourth year.
Both rabbiteye and southern highbush thrive on acidic soils, which contain more organic matter than is usually found in Florida soils. If mulched, rabbiteye blueberries will usually grow satisfactorily on soils with 1% organic matter, but they perform better with soils that have 2–3% organic matter. Southern highbush cultivars are not recommended for soils with less than 3% organic matter unless additional organic matter is added as a soil amendment and mulches are added to the site. Peat moss or pine bark is commonly used to increase soil organic matter in blueberry plantings. Peat moss can be incorporated into the soil at or prior to planting.
Blueberries respond best to frequent, light fertilization. They can be killed or damaged by over-fertilization. It is best to be conservative and gradually increase fertilizer rates as you gain experience with your soil type and the kinds of fertilizer you are using. Mature blueberry plants need about 40 inches of water annually. Most of this water is provided by rain. Water requirements for blueberry plants are low during the winter. During most years, the combination of rainfall and water stored in the soil should limit the need for irrigation on moist soils between December 1 and March 1. The most critical period for irrigation of blueberry plants in Florida is from early fruit set until the end of harvest.
Blueberries require a soil pH of 4.0–5.5. At higher soil pH values, tissue levels of microelements such as iron and zinc become deficient. Deficiency symptoms develop on new growth, and plants lose vigor. Soil can be acidified by thoroughly mixing a small amount of granulated sulfur into the soil several months before planting. Blueberries require a well-drained soil profile of at least 18 inches in depth. Blueberries should be planted on raised beds if water drainage is poor (within 18 inches of the soil surface for prolonged periods during the rainy season).
If blueberry plants are not pruned, they eventually become dense, twiggy, and nonproductive. Pruning mature blueberry plants is largely a matter of cane removal or cane thinning and reducing the height of the canopy. The objective of pruning mature bushes is to stimulate the proper balance between vegetative and reproductive growth.
Set plants in a sunny area (at least 4–5 hours of full sun per day) away from the roots of trees except pines and at least 20 feet away from any building foundation. A mature rabbiteye blueberry plant can reach 12–15 feet in height with canes sprouting over an area of 8–10 feet in diameter. Southern highbush plants tend to be less vigorous and smaller than rabbiteyes. Plant size can be controlled to some degree by pruning. However, severe pruning will reduce yields the following spring. Allow at least a 7’ x 7’ area for rabbiteyes and a 4’ x 4’ area for southern highbush. Plants may be set 3 feet apart (southern highbush) or 5 feet apart (rabbiteye) for a hedgerow effect.
Blueberries can be grown successfully for the home garden in Florida. Rabbiteye, southern highbush, or both may be used depending on geographic location, site characteristics, and anticipated harvest season. Generally, rabbiteyes are the best choice for areas north of Lake City and southern highbush blueberries are usually preferred for areas south of Ocala. Only the low-chill cultivars that have been specifically bred for mild climates are suitable for Florida. Proper site and cultivar selection are probably the two most critical decisions for the blueberry gardener. Plants located too close to hardwood trees produce few fruit, although blueberry plants and pine trees are surprisingly compatible. Rabbiteye requires cross-pollination, and southern highbush benefits from cross-pollination. Cultivars of each type (rabbiteye with rabbiteye and southern highbush with southern highbush) should be mixed together, and natural bee populations should be encouraged for good pollination and fruit set. Growing several cultivars will also lengthen the harvest season. Major yield reductions occur from spring freezes and birds. Blueberry stem blight and Phytophthora root rot are major causes of plant mortality in Florida.
The best time to plant blueberries is from mid-December to midFebruary. Bare-root or container-grown plants can be used. It is best to use plants about 1.5 to 2 feet tall with well-developed root systems that are not pot-bound. Blueberries should be pruned at the time of planting. If plants have a well-developed root system and irrigation is used, pruning should not be severe. Select the tallest, strongest cane and leave it unpruned. Remove the weak, “twiggy” growth at the base of

Promo Applications hasn’t afforded him much free time to coach, he plans to pick it back up and continue throughout his life.
A twenty-seven-year-old Polk County native is soon to launch an app poised to revolutionize the event and promotion scene. The Promo App, an event-based social network, will be a valuable tool for organizations from the local Rotary Club and the Ritz to coffee shops and concert halls. According to their website, “By signing up, users can browse a live feed of public events with real-time event information, or create and share their own events.” In addition to connecting users to events in their area, organizers can sell tickets from the platform, manage events with an easy-to-use dashboard, and track sales. So who is the twentysomething from Lake Wales behind Promo, and what are the big ideas behind it?
CREATING VALUE The Promo story starts in Sewanee, Tennessee. O’Neill was in his second semester at the Episcopal liberal-arts college and found himself walking through the cafeteria with nothing to do. He saw a few kids he had classes with and sat down with them. With no other classes scheduled that day, the group had a three-hour lunch talking about a business idea one of them had. The idea for the app, then called Vivism, was a much different iteration of what Promo is today. Of the three original partners, only O’Neill is still involved with the business.
George O’Neill was born and raised in Polk County. He attended St. Joseph Catholic School through sixth grade and graduated high school from All Saints Academy. After high school, O’Neill traveled to Tennessee to Sewanee: The University of the South before attending the University of Florida.
“It started with a really basic app,” he said. “I didn’t code then. I don’t code now. I just understood what it was like to be a freshman on a college campus or be somewhere where you don’t know people and are trying to figure out what’s going on around you.”
“Believe it or not, I was a theater major,” O’Neill smiled. Though he wasn’t involved in the theater growing up, he always had a connection to the arts. “My dad’s a sculptor, so I grew up working in and out of his shop when I was a kid,” he said.
The idea evolved, transcending college campuses into every downtown, dive bar, and community club worldwide. “I realized that people didn’t just have this problem on college campuses. It’s a problem all over – people are looking for things to do. […] There are things going on in downtowns all over the world, […] and they’re just trying to get an extra five or six people to show up. Anyone who’s been a part of a club knows we’re not all some big celebrity. We can’t turn out hundreds of thousands of people, but getting an extra five people to show up at an event can be a really big deal. So that was the focus.”
Finance was O’Neill’s first choice of study, but he found it boring. He didn’t know anything about theater and thought he’d give it a try to fulfill an art credit. O’Neill remembers his teacher talking about ‘stage left’ and ‘stage right’ during his first class. “I was the only non-theater kid in the room. I remember raising my hand and asking, ‘What do you mean?’” He would go on to build sets and work on lighting and sound.
When he first began working on the app, O’Neill admitted, “I was flying by the seat of my pants trying to figure it out as I went. I made the mistake at the time — it was a learning experience — instead of focusing on creating real value and functionality for the app that people would want to use, I focused on hype.”
Outside of Promo, the theater major turned app creator enjoys strumming the blues guitar and coaching sports. O’Neill has coached since age 19, predominantly middle and high school lacrosse and soccer at All Saints Academy. He even coached in Tennessee when he attended Sewanee. “It’s one of my favorite things. I love doing it,” he said. “Some of the seniors over at All Saints were my first team when they were in middle school. I’ve watched them grow up from being 12-year-old boys to being 18-year-old young men. They’re great kids.” This year has been a busy one for the Promo founder and CEO. Though the last year

Cookies sales in the world,” O’Neill said. “Both of my sisters did Girl Scouts in Lake Wales, and I remember them having to go out and stand in front of Publix.” With Promo, that local Girl Scout troop could advertise where they’ll be and not have to rely solely on foot traffic.
“The app is where you go if you want to find out what’s going on around you,” said O’Neill. For event organizers and attendees alike, Promo integrates with a user’s location to connect them to events in their immediate area. Or, if you are planning a trip, you can search events in that location for the dates you’ll be in that city.
“When I was in college, I played in a number of bar bands. We weren’t winning any Grammys, but it was a lot of fun. The difference between zero and five people was the difference between no one and a packed house,” O’Neill said. “I understand what it’s like being part of something that’s not big, doesn’t have a big marketing budget, doesn’t have a brand name. That’s what this tool is for.”
A key feature that doesn’t exist anywhere else is what O’Neill calls the “Reposting Feature.” Many small businesses, community organizations, and mom-and-pop shops offer regular deals. “Whether it’s a bar doing ‘Margarita Monday’ or ‘Taco Tuesday.’ […] They do all these things but have no way of incentivizing people to share that information on social media. I created a system that gives a platform for the event creator to track and incentivize sharing on social media in exchange for goods and services.”
LAUNCHING SOON The Promo App is near completion and set to launch in the coming months, according to its founder. More details on a Promo launch event will be announced soon as well. “We want to bring it everywhere we possibly can,” O’Neill said. He came up with the term ‘Event Ecosystems’ to describe the different event environments with a built-in audience of people, such as a downtown or college campus, that they plan to bring these Promo launch events to.
O’Neill used the example of a local coffee shop offering a ‘Mocha Monday’ promotional deal. That coffee shop could go onto the Promo App and create a ‘Mocha Monday’ promotion that offers the first five people to share that link on their social media a free mocha drink. Someone using Promo can see that deal, share the link, and Promo will track that it was posted, then automatically send the user a QR code to redeem that sweet mocha reward.

“To love one’s city, and have a part in its advancement and improvement, is the highest privilege and duty of a citizen.” The words belong to Daniel Burnham, but the importance of the meaning they carry is what inspires the passion and drive that has made Katie Worthington Decker such an asset to her community. For the past eight years, she has served as President of the Greater Winter Haven Chamber of Commerce, where she tirelessly worked to strengthen, elevate, and enhance the city. This year, she accepted a position with the Lakeland Economic Development Council (LEDC) as Senior Vice President, and great things are on the horizon.
When asked what prompted her move to the LEDC she explains, “I was getting to a point in my career where I wanted to expand my horizons to differing facets of economic development and community place-making.” The LEDC’s mission is to “help create jobs and capital investment by attracting new companies as well as facilitating the expansion of existing companies in the Lakeland area.” Katie was impressed by the staff and volunteer leadership approach to accomplishing this mission, which she refers to as “very diverse and strategic.” She says, “Yes, they are incredibly successful at ‘traditional’ recruitment and retention of business and industry in Lakeland, but they are also visionaries, preparing the community for future generations of business, employees, and residents.” She adds, “Most importantly, they are doers.” Decker admires the way in which a specific challenge or certain needs of the community are researched: by talking to business, civic, and community leaders and by visiting other cities that are implementing innovative ways of addressing challenges and bringing these tactics home. “For example,” she adds, “Lakeland wanted to foster a supportive and self-perpetuating entrepreneurial ecosystem? Enter Catapult in the basement of the Bank of America building which today is a beautiful facility on Lake Mirror buzzing with activity of enterprising entrepreneurs. Lakeland businesses wanted a way to engage their interns and new hires with the community? Enter the LEDC’s Summer Leadership Program and recruiting companies like LALToday to help communicate the numerous positive reasons we choose to live here. And the list goes on and on.”
Decker was born in Wheeling, West Virginia, because it was the only hospital close to where her parents lived in Ohio that could handle the birth of triplets. Her family moved quite a bit as her father’s career evolved within the United Way organization, and they eventually settled in Lakeland when she was fourteen. The self-proclaimed “drama and band nerd” attended high school at Santa Fe Catholic, where Katie continued her involvement with theater. “Anyone that knows me,” she says, “knows I am not shy around a microphone, so I certainly attribute my enjoyment of public speaking to drama. The theater is also a place where differences are seen as strengths that set you apart, and I think that influenced my outlook on life as an adult.” Decker considered becoming an attorney at one point, primarily because of her love for the television show “Law and Order.” However, after dabbling in that field at the beginning of her college years at the University of Central Florida, she realized it was not something she would enjoy long-term. She ended up taking an intro to Hospitality Management class with a friend, and everything fell into place. “Here was a degree in business and marketing that was human-centered and all about the customer experience. As our world has shifted to high consumer expectations, this degree has been invaluable to me,” she explains. There is no doubt it helped with her career trajectory, including hospitality, insurance, banking, public relations, and customer service. On what originally led her the Winter Haven Chamber she says, “I was lucky enough to have bosses at SunTrust, Bond Clinic, and CNP Agency who understood and championed the value of being engaged in your community as a return on investment to their business.”
Decker looks forward to bringing her talent, knowledge, and skill set to Lakeland. “Through my time at the Chamber, I have been exposed to different areas of community development and the issues and opportunities presented to businesses in Polk County. I have been deeply engaged with advocacy at the local, regional, and state levels, which helps me to navigate many different situations. My experience has always included an emphasis on analyzing an issue and effectively communicating a message that brings people alongside the organization to accomplish its goals. I hope that I can leverage this experience to support the LEDC and the Lakeland community.” She is also excited to learn more about the technical side of economic development from the LEDC President, Steve Scruggs, and the rest of the LEDC team she refers to as “outstanding.” “Just in the first few weeks I’ve been here, I’ve seen how their knowledge and professionalism is benefitting the Lakeland economy in very tangible ways.” Decker adds, “My initial goals are to listen and learn. There is a wealth of knowledge in this office and within this community. My sense from everyone I have met so far is that there is a genuine passion and drive to design a community for the future that benefits all of Lakeland’s residents and businesses.”
She started volunteering for the Chamber in 2007, and in 2008 helped form a young professionals’ group at the request of the then Executive Director Bob Gernert to get more young people involved in developing the future of the city. Decker served as the founding chairwoman of that program (now called Endeavor), the chair of the Chamber Foundation, and as a volunteer Board Director. When Gernert announced his retirement, several board members encouraged her to apply for the position, and the rest, as they say, is history. She is very pleased with the goals accomplished during her time there. “The Chamber is in the best financial position it has been in for years,” she says, “even after the trying years of the pandemic. We received that 5th star [the highest ranking of a Chamber through the U.S. Chamber of Commerce] in 2018, and I have full confidence they will again in 2023. We became well-known as an advocacy-oriented Chamber and held board positions on important regional and statewide organizations, helping to advance policies for the betterment of the business and citizens in our community.” She adds, “I truly feel there is an immense pride that has swelled over the last eight years. Winter Haven, Lakeland, and Polk County have so much to be proud of, and that is evidenced by the people

Her pride in these communities is contagious. One can’t help but feel the passion, sincerity, and enthusiasm with which she approaches this new endeavor or to share in anticipation of amazing things to come. Another favorite quote of hers comes to us from Edward Bok via his grandmother and reads as follows: “Make you the world a bit better or more beautiful because you have lived in it.” Katie Worthington Decker intends to do just this. In fact, she already has.

Big Whoop It may be called The Whoopie Pie ‘Guys,’ but there’s a very sweet lady behind one of Polk County’s favorite farmer’s market treats. Lakeland native Tracy Nichols has been “everything from a theme park employee to a lunch lady.” She has a family history steeped in entrepreneurship. “Owning my own business was always on my bucket list. I just didn’t know what it would be,” she said.
As it grew, customers would ask if she could do 100 whoopie pies for a birthday or place an order to treat their office. The Whoopie Pie Guys operated as a cottage food business for about four and a half years. “Market opportunities kept presenting themselves, and festivals, and one-off events,” said Nichols. She thought, ‘I’ve either got to stop or grow.’
Sugar and spice and everything nice have been a hobby for the baker since elementary school. She would bake for friends and family and enter goodies at the 4-H Fair. “My grandmother was always baking – always. There was always icing around to play with,” she said. Her grandmother signed her up for a cake decorating class when she was ten, and the rest is history (though it’s a much smaller treat she’s making these days).
“We decided to grow.” She got her food license, and “the stars aligned” when she met the owner of Magnolia Popcorn, Chris Kittelberger, as they were both on the hunt for a commercial kitchen space. “We’re a great fit together. It’s like we’ve known each other all our lives which is pretty awesome,” Nichols said. “Now, there’s no stopping. We’re even outgrowing this space.” According to the Whoopie Pie Guys owner, what started as a gig for fun money has now become their retirement plan.
‘I CAN MAKE THESE!’
KEY LIME OR BUST
Tracy and her husband, Mark, travel a lot. He gets almost a month and a half of vacation time at his job, and they take advantage of every single day. “We’re big fans of regional food,” she said. “Our first stop when we land anywhere is the grocery store. We’ve got to see what people are eating, drinking, what they have on their hot bar, what they have in their bakery.”
What they’d dubbed ‘The Classic’ is one of their signature flavors. “That’s what most people know a whoopie pie as – chocolate cake, top, and bottom, with either marshmallow filling or buttercream icing.” The Whoopie Pie Guys opted for buttercream frosting because that’s what Nichols liked making, plus it held up in the Florida humidity. Joining ‘The Classic’ in the starting lineup for the WPG is Chocolate Peanut Butter and this writer’s favorite whoopie pie flavor – Key Lime. “That is a love it or hate it flavor,” she said. “That’s my Florida spin.” As for Nichols? “I’m a ‘Classic’ girl, all the way.”
A trip to Pennsylvania was all it took to give these self-described regional foodies and “chocolate milk connoisseurs” an idea that changed their future. “We were planning on eating through the state – literally,” said Nichols. When they landed in Lancaster, PA, they decided to pick up five or six flavors of this little dessert called a whoopie pie. They’d never seen them before, but man, were they good. Tracy said, “I can make these!”
“We get a lot of ‘Who made it? Pennsylvania versus New England.’ We let them fight it out – we just make them,” Nichols said.
“Mark is very encouraging and very supportive of anything I want to do, and he always has been,” said Tracy. The couple has been together for almost 20 years. After that trip six years ago, they went home, and Tracy began working on some recipes. “Our family ate a lot of whoopie pies testing the recipes.”
The Whoopie Pie Guys offer an assortment of flavors coming and going with the seasons and holidays. Last month, they had a Chocolate Strawberry flavor in honor of Valentine’s Day and plan to do Chocolate Mint for St. Patrick’s Day. Not only does Nichols get festive with her holiday flavors – she’ll even dress up. During the holiday season, Mark and Tracy paraded the Winter Haven Farmers Market as Santa and Mrs. Claus. And if you see the Easter Bunny at the market next month, between you and me, that’s Tracy!
Once she had perfected a few flavors, Nichols decided to try selling them at a market just a few miles from their home in Orlando as The Whoopie Pie Guys. “We started with a four-foot table, and now we’ve got a store and a van and a food truck and do three markets every Saturday.”

Along with their signature whoopie pies, WPG offers an assortment of jams, jellies, pickles, relishes, local honey, and dip mixes. “We’ve got everything from sweet to savory to heat,” said Nichols. Everything they sell is $5, from whoopie pies to jams and jellies, “Because fun stuff should be accessible to everybody.”
So who are the ‘Guys’ that make up The Whoopie Pie Guys? “I’ve recruited every available family member,” said Nichols. Nichols’ sister left a corporate job to help with baking and run the WPG storefront on Edgewood Drive in Lakeland. Her mom and dad are the market managers at their stand at the Winter Haven Farmers Market, and her two aunts help run it too.
Everything The Whoopie Pie Guys produce is made from scratch in small batches in their commercial kitchen. Nichols sources locally as much as she can. Ingredients like strawberries and peppers are bought right out of the back of a farmer’s truck at the Plant City Produce Market.
The family is close, according to Nichols. The Whoopie Pie compound, if you will, is on a large plot of land in north Lakeland. “I’ve always lived like this,” she said. “My parents are fifty steps away. My aunts are fifty steps away. […] Everything is a family affair.”
They even use eggs from their chickens in the backyard for all baked goods. The family has about 37 hens and seven roosters. “Happy chickens make yummy desserts,” Nichols said. The business supports an animal rescue in Tampa called the Ybor Misfits Microsanctuary. Consider dropping some scratch in the jar the next time you buy a whoopie pie. They raised almost $350 for the rescue when they dressed up for Christmas.

Wholesale has become an unexpected part of her business, opening many doors for the baker. With four wholesale accounts currently and more coming in the next few months, Nichols said, “I had never envisioned this. We just wanted to make a couple of extra bucks for vacation. Now we can take the whole family on vacation every summer. It’s very nice.”

A new venture you may see Nichols and family trying out involves a hot dog cart. “But not just any hot dog cart – it’s a bicycle and solar-powered. It’s adorable.”
We met Tracy on the Black & Brew patio at the Lakeland Public Library. When asked about future plans for the business, she said they were mulling over the idea of a small event center and pointed to a row of brick shops across the parking lot. “Honestly, I’d love to have one of those spaces in that brick building because that is where my grandfather had his shop when he was younger.” Her grandfather owned a hobby shop that offered model cars and airplanes in that building.

As for The Whoopie Pie Guys, “If the pace keeps up, we’re going to have to get a bigger kitchen.”

Blueberry Shrub 1.5 ounces bourbon 2 ounces blueberry shrub (recipe follows) 3 ounces ginger beer Blueberries to garnish Fill a cocktail shaker halfway with ice. Add shrub and bourbon, shake until very cold—strain into a glass filled with ice, top with ginger beer. Garnish with blueberries. Please drink responsibly, ages 21+. (This also makes a delicious mocktail, just leave out the bourbon.) Shrub Recipe: 1 cup blueberries 1 cup sugar 1 cup apple cider vinegar In a glass jar, place blueberries and sugar. Muddle berries a bit to release the juices. Cover it with a loose lid or cheesecloth and let it sit out on your counter for three days. At the end of the three days, it should be syrupy. Jaime Jay Handmade Jaime Jackson is in the business of telling stories. Not through books or songs or poems, but through the wearable art she makes by hand and sells at local markets. She crafts colorful crocheted pieces and handmade jewelry full-time now, but it took many years of hard work to get here.
traveled around the east coast, keeping Central Florida in mind as a destination because her grandparents lived in Winter Haven. The Jacksons settled in Lakeland in 2004. Jaime loved the area’s parks and open spaces. “It seemed perfect like everything was idyllic here,” she said. “Compared to working two full-time jobs each just to pay the rent [in Connecticut].” Life was looking up for the young couple – well, except for all the hurricanes.
A wearable artist for her business Jaime Jay Handmade, she and her husband Eddie and their daughters Juliana and Jalah live in Lakeland. Eddie is the frontman for Fire Light Reggae and a fourth-grade math and science teacher. “If you’re an artist, you need someone to cheer you on,” she said of husband Eddie. “I see the good and brilliance in him when he’s feeling low, and he sees the good and brilliance in me when I’m feeling low.”
“We fell in love with it here. I liked the feeling of not quite fitting in and being challenged,” she said. Coming from a place back home where she had an extensive community network, Jaime liked the feeling of being the new kid in town. “I felt like I could dig in and maybe throw my energy towards a place where it was at a tipping point.” She and Eddie liked the prospect of ‘making the community you want to be in.’
The couple cultivates creativity at home, encouraging their daughters to explore outlets that interest them. Youngest daughter Jalah is creative with makeup, nail polish, hair color, and accessories. She is also known to curate a mean music playlist. Older daughter Juliana is an anime artist who knits, crochets, and plays the violin.
JAIME JAY TAKES FLIGHT “I had to keep crossing new thresholds before I found myself with the time and space to focus just on my business,” said Jackson. She got her nickname and now business name, Jaime Jay (for Jackson), when she worked for Hobby Lobby for eight years. “I started there during the economic downturn when there were no jobs to be had. I waited in line, three different days, for two hours a day to be interviewed. I kept coming back because I really needed a job,” she said.
CREATE, CROCHET, REPEAT Jaime Jackson grew up in a small New England dairy cow town. “I remember being in first grade and being in the Brownies and the Girl Scouts and doing craft time, and that being my favorite thing. She would often craft with her grandmother too. “She taught me how to crochet and knit and sew,” said Jackson. She described her Nonna as “a typical Italian grandmother” who made crafts out of even the smallest things. “She never looked at a bottle of bleach that she didn’t have to cut apart and make into something,” Jackson smiled.
She landed the position, all the while finding time for her art, even bringing supplies to work with her to crochet during breaks. A turning point for Jackson was when she got passed up for a promotion. “I was told it would be better if I didn’t try to get a promotion there because I had a family to take care of.” The job was given to a man instead. That was her sign that working in corporate retail was not a fit for her life. She and Eddie sat down and came up with a long-term plan. He wanted to go back to college for a teaching degree, and she wanted to create and sell her art.
The first time she was paid to make something was friendship bracelets when she was twelve. She quickly moved from her first love of weaving to making other jewelry. She was selling a few pieces here and there by high school and making them for friends and family as gifts. “I always used selling my artwork as a way to get the extras in life,” she said. In her teens, she decided she wanted to get out of that small town. She would venture to the city of New Haven, Connecticut, to go to museums and teen clubs. At 18, she enrolled in community college, moved out, and got an apartment of her own. She worked at a restaurant, a bead store, and sold the jewelry she made to support herself. “I never stopped hustling from that moment – from the moment I moved out,” she said.
As soon as Eddie got his degree, he began teaching mid-way through the school year in 2019. At the end of that school year, on her daughters’ last day of school and Eddie’s last day teaching for the year, she quit her job at Hobby Lobby. She was ready to take flight with Jaime Jay Handmade. The name came not only from her nickname, but she began noticing all the birds in her backyard bird feeder and liked the symbolism. Jaime Jay was a name she felt connected to.
She met her husband, Eddie, and the two worked together to make ends meet. “I had this peaceful, tranquil childhood, but then my young adulthood was running to keep the lights on, to keep the heat on. It was hard,” she said.
She planned to teach craft classes and sell jewelry initially. The family converted their back porch into an airy studio with two walls of windows and double doors opening to their dining room. “It’s a quiet, colorful room in our house where people go and have conversations and sit down and relax,” she said. She spends most of her time in the studio. “It looks out into the backyard. I get to watch the birds and the trees and the sky. It’s everything I wanted.”
The strain of working to make ends meet and attending college became too great, and Jackson eventually dropped out of school. After a tough winter during which the couple struggled “to heat our apartment that we hated living in, in a neighborhood we didn’t enjoy,” Jaime thought, “That’s it. I’m done.” The couple

“The idea is that when you buy something that I make, you put it on, and it gives you a certain kind of feeling – whatever that is for you. It’s your story. When we wear something, it makes us feel a certain way, just like when we decorate our house and put up art. We look at that art, and it makes us feel a certain way, or we sit in that chair, we feel a certain way. […] My concept is to make a fairy tale or story that people can wear.”
Jackson invited friends and family to a studio opening to make crafts and jewelry, and she sold some of her work. Next, she began planning to open her studio for classes the following spring. She worked diligently on a menu of classes teaching how to make jewelry and wearable art like scarves and shawls. She even collected sewing machines for her future students. By February 2020, she knew her March open house party had to be canceled as news of the pandemic became grimmer.
Connected to the reasons we wear things, Jackson said, “When I do research for a new collection, it eventually comes to the ‘why?’” Since starting her business, clients have asked for more rocks, minerals, and crystals in her work. She thinks of why people might gravitate towards those things. “Maybe in terms of chaos, something natural is more peaceful.”
“Then we existed for the rest of the school year,” she said. With three students and a teacher doing classes from home, she stopped working on Jaime Jay Handmade. In the summer, she connected with DJ and producer Deek Beats on Instagram. He was planning the first Park Chill event, a night with hip-hop and lo-fi beats, food, and vendors. She asked if she and her family could attend. Deek Beats asked if she’d rather sell her art as a vendor there instead.
This summer, her goal is to get her website up and running with pieces available for sale there. Jaime Jay is heading in another exciting direction – teaching classes. What she wanted to do from the beginning, she plans to offer beginner classes, granny square classes, and advanced classes as her students progress. She will provide the hooks and yarn, which students can take home. “The most important thing when you learn a new skill is to practice it,” she said. Classes will be announced on social media.
“He convinced me to do it, and I bought a tent, borrowed some tables from my mom and some sheets from the closet, and took all the table lamps from around the house and plugged them in and did my first market.” She attended more Park Chill events, Dixieland Market, First Friday in Lakeland, and Buena Market. “I was learning as I went,” she said. These markets helped her hone in her display and market setup. “Less is more,” she said.
“I like introducing people to something artistic and creative,” Jackson said. “Everyone has a little spark of something in there. You just have to find the thing that matches you. […] I can’t draw at all. When I was a kid, I did not think I was artistic, and I’m a living working artist now. [...] I thought I was ‘crafty.’ It’s the same thing. It’s just belittled because it’s ‘women’s work.’ But it’s not – it’s punk rock and cool.”
Then she started at the Winter Haven Farmers Market. “The Winter Haven Farmers Market was when I started thinking about it professionally,” she said. “I consider that to be my home base. It’s a place where we all know each other. It’s comfortable. I have a lot of repeat customers and people who know me that pop in. That’s my favorite location.”
Jaime Jay Handmade items can be purchased through Instagram or any of the markets she attends, like Buena Market in Lakeland or the Bloom on Franklin Block Party in Tampa. She is at the Winter Haven Farmers Market the first Saturday of every month and announces on social media where else she will be.
“The market community, the vendor community – those are my people,” said Jackson. “It’s community over competition, but we all do better if we’re all together.” WEARABLE ART & CROCHET CLASSES
