PARK EXPANSION

LIP SYNC BATTLE

REX JACKSON

INFRASTRUCTURE

The South Lake Howard Nature Park opened in 2001. It contains stormwater ponds and elements to filter and clean stormwater from area neighborhoods and roadways before it enters Lake Howard. The City recently purchased adjacent property (formerly the home of WSIR Radio) to expand the nature park, which will begin with the addition of stormwater improvements to further help filter and clean run-off water from streets and neighborhoods. Future recreational elements will then be built and could include expanded trails and boardwalks, an outdoor classroom, trailhead and parking lot, a kayak launch, picnic areas, a disc golf facility, open play space, and more. If you have any questions or would like additional information, please contact the Parks, Recreation & Culture Department at 863-291-5656.

It was a record fundraising year bringing in more than $37,000 for public education in Winter Haven! On Nov. 4th, the 2021 Celebrity Lip Sync Battle featured six local celebrities, battling against each other as a fundraiser benefiting public education in Winter Haven through contributions to two nonprofits: The Winter Haven Public Education Partnership and Cypress Junction Montessori. Both organizations work to provide quality public education options to all children in Winter Haven. This year’s contestants were ReNata Baker - Cypress Junction Montessori; Maude F. Graham - 2021 Polk County Teacher of the Year, R. W. Blake Academy; Frederick Heid - Superintendent of Polk County Public Schools; David Nicholson - City of Winter Haven; Heather Reuter - City of Winter Haven & CJM Board of Directors.

With this year’s opening of LEGOLAND® New York Resort and announcement of future resort enhancements across the California and Florida properties, Merlin Entertainments, a global leader in location-based family entertainment, has solidified its commitment to the U.S. market. They recently appointed Rex Jackson as the North America Regional Managing Director for LEGOLAND® Resorts. This newly formed role is designed to further establish the resorts as a top theme park brand in US households for their next family vacation. Jackson, an award-winning executive who helped lead LEGOLAND® Florida Resort from a single theme park into a multi-day vacation destination, will support the ongoing expansion of the Merlin Parks in North America, which include the three LEGOLAND Parks as well as the second-gate attractions and hotels in those resort locations.

The City of Winter Haven Commission voted to approve an up to $23.5M non-ad valorem revenue bond to fund public safety, infrastructure, and quality of life projects over the next several years. This includes Southeast Pocket Park, renovation of existing Winter Haven Recreational & Cultural Center, two baseball diamonds at Lake Maude Park, Lake Conine Wetland Restoration improvements, Chain of Lakes Park phase 2, a fourth fire station located in Northeast Winter Haven (Florence Villa), and improvements to the Lake Elbert Trail, In addition to these projects, the approval also allows for monies to be put towards additional parking facilities such as a parking garage.

Polk County Public Schools began removing desk shields at elementary schools throughout the district on Nov. 15th. The clear plastic shields had been affixed to students’ desks to help prevent the spread of COVID-19. There has been a decline in the spread of this illness, the overall positivity rate has decreased below 3 percent at the beginning of November. In addition, children aged five to 11 are now eligible for vaccination. Parents and guardians can choose to opt-in for their child to continue using the plastic shield. They can email their child’s teacher or principal, and indicate that they want to keep the shield in place. The desk shields will be stored, and made available should health conditions change in our community.

The Juice Box

INGREDIENTS

DIRECTIONS:

1 bunch cilantro

Put cilantro, garlic, ginger & jalapeno in a food processor and process until finely chopped.

1/4 jalapeno

Then add the remaining ingredients, scrape the sides, and pulse until fully incorporated.

2 teaspoons ginger juice or paste 2 garlic cloves 1/2 cup lime juice 1/4 cup Bragg Liquid Aminos or soy sauce 1/2 teaspoon salt 1/2 teaspoon ground pepper 1/3 cup olive oil 1 teaspoon coconut sugar

“This recipe is for a sauce on our menu that we are retiring to make way for new menu items. This can be served over a bowl of veggies or any favorite protein like chicken or fish. It pairs very well with cucumbers and avocado and would stand out as a plant-based appetizer of cucumber or avocado carpaccio drizzled with this sauce.” “The Juice Box opened in May 2015 as an answer to the problem that little to no options existed at the time for anyone following an alternative diet. We are Lakeland’s only all-vegetarian restaurant with a mostly vegan & gluten-free menu. Red Door

INGREDIENTS

DIRECTIONS:

3 red pears

¼ cup chopped pistachios

Start by washing your fruit, but KEEP THE SKIN ON! Cut the pear into 8 even-sized pieces, and don’t forget to core them. Soak your pears in cold water and lemon juice while you’re working on the gastrique. Combine syrup, vinegar, spices, and bay leaf into a medium saucepan. Bring up to a boil on high heat. Reduce heat to medium/low and allow to simmer for 10 minutes or until the liquid coats the back of the spoon. Once your gastrique is reduced and ready, strain with a fine-mesh strainer and set aside (make sure to keep it warm). Individually wrap your pears with a slice of prosciutto.

4 ounces sherry vinegar

TO ASSEMBLE:

12-16 ounces prosciutto 1 package arugula

8 ounces pure maple syrup 2 cloves 1 star anise

Grab your favorite platter or wooden board and put a layer of arugula down. Assemble your pears on top of the arugula. Drizzle your gastrique over the top of your pears and sprinkle with salt and pepper. Finish it off with some chopped pistachios and enjoy!

S paghet t i & Meat balls Recipe

from

Blue Dog Craft Barbecue

INGREDIENTS

MEATBALLS DIRECTIONS:

1 pound ground beef (Preferably a 75%/25% or 70%/30% blend. Fresh ground is best if possible) large white onion, cut into small dice (Half for meatballs and a half for sauce) 6-8 minced garlic cloves (Half for meatballs and a half for sauce) kosher salt black pepper 2 cans of San Marzano tomatoes 1-2 bundles of fresh basil 1 pound fresh pasta (Linguine or Spaghetti) 1/4 cup fresh bread crumbs (toast Italian bread in your oven on the lowest temperature setting for 20-30 min and crumble to a semifine uniform texture) 1/4 cup Pecorino cheese 1/4 cup curly parsley 1-2 eggs whole milk sugar olive oil

In a large mixing bowl combine the ground beef, half of your large diced onion, half of your minced garlic, bread crumbs, parsley, pecorino, 1-2 eggs, salt (~2 tablespoons), black pepper (~1/2 tablespoon) and a splash of milk as needed for moisture. Mix until thoroughly combined. Form into balls. Roughly racquet ball sized. Place in the fridge to rest while you prep the tomato sauce. TOMATO SAUCE DIRECTIONS: Prepare your tomatoes. Remove any basil that may be inside the can. Place in bowl and crush with your hands until they become a uniform texture. Not too chunky. Remove any cores you see. In a skillet, sauté half of your diced white onion in olive oil. Season with salt and pepper when the onions start to turn translucent. Add garlic and stir constantly. Do not burn. May only take a minute or two. Add tomatoes to pan and lower heat to a simmer. Add a dash of sugar to cut the acidity of the tomatoes. Tie a bunch of basil together with butcher’s twine and place in sauce. Cover with lid and stir occasionally. Do not let it boil. Cook approximately 45 minutes while you sauté the meatballs. COOKING YOUR MEATBALLS: Heat a sauté pan over medium heat. Add a healthy layer of olive oil to pan. When it’s shimmering, it is ready to cook. Carefully place meatballs in pan. Don’t overcrowd the pan. Cook all sides until they are dark brown. They will let you know when they are ready to flip. If they won’t release from the pan let them sear a little longer. When all sides are cooked, remove lid from tomato sauce and place meatballs in the sauce. Turn off the heat and let them get to know each other. PASTA DIRECTIONS: Bring a pot of water to a boil and salt heavily. Water should taste like sea water. Add pasta. Fresh pasta will only take a couple of minutes. Stir occasionally. Strain and add to a large serving bowl. Cover noodles with tomato sauce (remove the bunch of basil) immediately. Top with meatballs. Garnish with Pecorino and fresh basil. Enjoy!

OR ANGE YOU GLA D TO SEE M E Scone Recipe

from

Baking Brewer

INGREDIENTS

DIRECTIONS:

2 cups of all-purpose flour 1/3 cup of sugar 2 teaspoons baking powder 1/2 teaspoon kosher salt 1/4 cup heavy cream + 2 tablespoons 1/4 cup of Coppertail Citrus Gose + 2 tablespoons 1 large egg zest of one large orange 1/2 cup frozen unsalted butter, cut into pieces 1 cup dried cranberries, roughly chopped

Preheat oven to 425 degrees. Line baking sheet with parchment paper.

GLAZE:

Glaze: Mix powdered sugar, beer, and zest together until smooth. Dip each cooled scone twice and sit on a rack over a pan to allow dripping.

1 cup sifted powdered sugar 2 tablespoons Coppertail Citrus gose* zest of half an orange

Whisk flour, baking powder, sugar, and salt together. In a measuring cup, combine 1/4 cup heavy cream, 1/4 cup beer, egg, and zest. Use a pastry cutter or two forks to combine the butter into flour mixture until mixture looks like coarse, pealike crumbs. Fold in chopped cranberries. Pour in heavy cream/beer mixture and fold until it begins to clump. Turn over onto a well-floured counter and knead with floured hands until combined. The mixture will appear to need more liquid but kneading will combine it. If mixture is too sticky, sprinkle with more flour. Make into a ball, cut in half, and pat into a circle. Cut into 8 slices, arrange on baking sheet. Mix 2 tablespoons of heavy cream and 2 tablespoons of beer and brush on top of the scones. Bake for about 12-15 minutes, rotating at 6 minutes. Remove and allow to cool on a rack. Let them cool completely before glazing.

Tip: Freezing the butter and working with it the least amount allows for scones not to spread as much in the oven. I also like to make the dough the night before and allow rest time in the fridge, however it is not mandatory. These can be whipped up quickly by keeping ingredients cold. * You can use any citrus-forward beer (citrus gose, New England IPA, etc)

“I have been baking for over 10 years but started Baking Brewer late 2019/early 2020. I was the Assistant Brewer at Swan Brewing and decided to combine my two favorite things; beer and baking. It started as just a fun hobby I posted about and shared with my friends and family but quickly became something bigger. I decided to start my own business and run full speed ahead. I now bake out of Catapult, a commercial kitchen in Lakeland. All of my bakes are made with beer! Beer is an incredibly fun ingredient, and what’s not to love about having your cake and drinking it too?! You can find my bakes every week at Swan Brewing. I also do local markets and am available for hired events. My bakes range from cakes, cookies, brownies, blondies, etc and all can be found on my instagram and Facebook page @BakingBrewer.” havenmagazines.com

RU M RA ISIN CO CONUT OAT MEAL CO OK IES Recipe

by

Gabriella Vigoreaux

from

Bandidas Test Kitchen

INGREDIENTS

DIRECTIONS:

4 cups old-fashioned oats

Simmer raisins and rum over low heat until raisins are plump, 15 to 20 minutes. Drain on paper towels. Preheat oven to 425 degrees. Spread oats on a rimmed baking sheet and toast until lightly golden, about 6 minutes. Add pecans and coconut, toss to combine, and continue toasting until pecans are fragrant and oats are deep golden brown, about 6 minutes more. Let cool slightly.

2 cups pecans, chopped 2 cups shredded coconut 2 cups all-purpose flour 2 teaspoons kosher salt 1 teaspoon baking soda 1 teaspoon ground cinnamon ½ teaspoon freshly ground nutmeg 3 sticks unsalted butter, room temperature 1 ½ cups (packed) light brown sugar ½ cup granulated sugar 2 large eggs, room temperature 4 tablespoons molasses 5 teaspoons vanilla extract 1 ½ cups raisins

Whisk flour, salt, baking soda, cinnamon, and nutmeg in a medium bowl; stir in oats, coconut, and pecans. Using an electric mixer on medium speed, beat butter, brown sugar, and granulated sugar in a large bowl, scraping down the sides of the bowl, until light and fluffy, 3 to 4 minutes. Add eggs, molasses, and vanilla and beat until incorporated, about 1 minute. Reduce speed to low; add dry ingredients and raisins and continue to beat, scraping down sides and bottom of the bowl, until just combined. Let sit at room temperature for at least one hour to hydrate oatmeal. Preheat oven to 350 degrees. Line 2 rimmed baking sheets with parchment paper. Using a 2-ounce scoop, space dough 3 inches apart. Do not flatten; cookies will spread as they bake. Bake cookies, rotating sheets halfway through, until edges are golden brown and firm but centers are soft, 15–17 minutes. Let sit on sheets 10 minutes, then transfer to wire racks; let cool. Cookie dough can be made 3 days ahead; cover and chill. Let dough come to room temperature before baking.

2 cups rum “At Bandidas, connection is at the core of everything we do. We don’t just want to feed you. We want to be a part of your life. COOKING AT HOME: OR, HOW I LEARNED TO STOP WORRYING ABOUT RECIPES (AND LOVE MY MICROWAVE) By David Chang and Priya Krishna

BAKING WITH DORIE By Dorie Greenspan “Baking with Dorie” is a book of simple yet sophisticated baking - even beginners can ace every technique in this book. The recipes feature everyday ingredients that are easy to find and use. Are there surprises? Of course! You’ll find ingenious twists like Berry Biscuits and footlong cheese sticks made with cream puff dough. Each chapter features a classic genre: like Breakfast Stuff; Cakes; Cookies and Pies, Tarts, Cobblers and Crisps; and even a chapter on Salty Side Up.

This stunningly beautiful book contains more than 600 cocktail recipes - including classics, signature creations, and even nonalcoholic mocktails all developed by the Death & Co. teams in New York, Los Angeles, and Denver. “Welcome Home” is the ultimate guide to develop your own palate and preferences, learn how to select ingredients, and understand what makes a great cocktail work.

Being with those we love has never felt so important, and food is the perfect excuse to. “Together” is about memorable meals, made easy. Each chapter features a meal, from seasonal feasts to curry nights, with a simple, achievable menu that can be mostly prepped ahead and the recipes can be combined as a full meal or used individually.

David Chang and Priya Krishna use the wisdom of their Mom’s kitchens to explore cooking through the smartest, fastest, least meticulous, most delicious, absolutely imperfect ways to cook. From figuring out the best ways to use frozen vegetables to learning when to ditch recipes and just taste and adjust your way to a terrific meal no matter what, this book is about teaching the best way to riff on recipes - substituting, adapting, and shortcutting your way to delicious food.
