LOCAL NEWS RESTAURANT CELEBRATES 30 YEARS

FIRST EDUCATION DEGREE GRADS FROM PSC

On Dec. 3, Winter Haven Mayor Brad Dantzler presented El Olivio Mexican Restaurant owners Paula and Americo Villarreal with a plaque. The restaurant first opened on Dec. 3, 1988, they have changed locations four times, mostly around the downtown Winter Haven area. Two years ago, Paula had a stroke so their daughter Blanca stepped up to help. Paula hopes Blanca, her husband Ernesto and their three children will run the restaurant for the next 30 years.

On Dec. 13, six students graduated with a Bachelors of Science in Elementary Education for the first time at Polk State College. Polk State is the only public post-secondary institution in Polk County offering stateapproved teacher education preparation programs. PSC created the program in 2016, in part because the University of South Florida closed its Polk campus in 2012.

Students in the Frostproof Middle-Senior High School Choir had the opportunity to sing Christmas carols in the East Room of the White House for more than two hours on Nov. 30. To be awarded the unique opportunity, Frostproof Choir Director Jonathan Carter said he sent an application and a video of the choir. The students wore tuxedos and evening gowns. High school choir groups from across the country performed as part of the White House Holiday Open House series.

Ashton Land Development staff are almost done getting permits to build more than 250,000 square feet of commercial space around 1,600 housing units on property roughly surrounding the Carlton Arms apartment complex. Much of the land is wetlands. There are spots on the land with higher elevation where structures may be built. Peace Creek, connecting the north Chain of Lakes to the Peace River runs directly through the property.

The Lake Wales Museum dedicated its newly renovated railroad caboose as part of its holiday celebration. Under renovation for the past three years, the 1928 Seaboard Airline Railroad car is once again open to the public. The caboose was donated to the museum in 1991 by the St. Petersburg Historic Society.

Officials for the Polk County Public Schools have begun the process of evaluating whether cuts to bus service for charter school students and students who live within two miles of their assigned school are necessary to save money, improve efficiency and offset a driver shortage. Asst. Superintendent of Operations Rob Davis and Transportation Operations Dir. Vaughn Belcher outlined options that could impact upward of 1,500 students in the 2019-20 year.

More than 25 officers, staff and volunteers descended upon Winter Haven’s Walmart Supercenter to shop for Christmas gifts for 10 families, 30 youth total, as part of the department’s Annual Operation Reach Out. Through money raised by grants and donations, most notably from Walmart, the officers, staff and volunteers spent a few hours shopping for the families. Most of the gifts were distributed on Dec. 15.

MAKE SOME MUSIC A public piano was placed in downtown Winter Haven in front of Potthast Studios. Anyone is able to sit down and crank out a tune. Winter Haven Cultural Arts Advisory Committee Chair and decades-long civic leader Judy Cleaves said she came up with the idea after seeing public pianos set up around Sarasota. The piano was painted by local artist Carol Hughes.

CHEERLEADERS WIN NEW BUS STOP The Bartow varsity cheerleaders came away with their fifth straight competition win this year on Dec. 15. Competing in and hosting the Fourth Annual Chase the State Competition, which features 50 different teams, Bartow’s varsity squad won first place in Varsity Large Co-Ed, the junior varsity squad finished first in the Junior Varsity Co-Ed and the Bartow Middle School team finished first in the middle school competition. Bartow’s next tournament will be the regional on Jan. 11 in Plant City.

The Winter Haven Community Redevelopment Agency voted unanimously to authorize $300K in taxpayer dollars to build a bus stop at the Sweet Center on First Street. The project is geared toward alleviating traffic. To help improve traffic flow, Winter Haven Hospital will be donating a bit of land and building a “bus pull off” and shelter. City CRA funds are being used to reimburse costs to the hospital.

It’s always a good time to do something that improves our health and happiness. Why do we put so much pressure on ourselves at the beginning of a new year and make such grand promises about losing weight, going to the gym or saving money? Statistics show that the majority of us are not thinking about the resolutions come Valentine’s Day when we dive into that heart-shaped box of chocolates. How can we change this? What can we do differently? Here are some simple steps we can take to keep the energy up for creating new habits. It will be difficult, you will want to stop. But don’t. Keep going! This is the year for big changes and we’re starting with day one.


Break down your big resolutions into smaller, baby steps It won’t be so overwhelming. You’ve heard the old saying, how do you eat an elephant...one bite at a time. Meaning, take one step at a time. Don’t let that overwhelming feeling ultimately be your downfall. Don’t let it stop you. If your goal is to lose 50 pounds, start by telling yourself you will lose three pounds this month and take it from there. This works with everything from growing your bank account to exercise. Start small with realistic goals and challenge yourself.

Commit to your goals Don’t give up! Focus on taking care of yourself, getting enough sleep, drinking enough water, and eating more plantbased foods that will give you energy. You deserve this. Exercise daily, even by doing little things like taking the stairs instead of the elevator. Park in the back of the parking lot and walk. It won’t be easy and it won’t always be fun, but the outcome of reaching a goal feels better than anything. Keep your physical body in good health, too. Don’t forget your regular doctor and dentist check-ups!

Celebrate your achievements Did you reach a goal? Celebrate! Are you on track? Celebrate! Celebrate all of your small victories, if you keep moving in that direction it will turn into giant victories. You create a momentum and will keep moving towards your ultimate goal. Don’t undermine yourself, though. If you’re trying to lose weight, don’t celebrate by getting ice cream. Be excited about your achievements and show yourself some love.

Learn from your mistakes Know your limits! Set boundaries and stick to them. Don’t let the first setback make you want to quit. Sometimes we don’t know our boundaries until we are passed them. If this happens, learn from it. Do something differently. Are you feeling too tired to work out? Maybe you need more sleep. Sleep is necessary, it’s not an option. Maybe you didn’t eat the best dinner and you feel awful. Plan for the next time you need something to eat fast. Their is always a solution to everything, you just have to want to hear it. Also, find an outlet for your stress. Begin a new hobby, take time to meditate everyday or if needed or find a professional to talk to. Stress can sneak up on us and turn ugly. Help to manage your mind so that when the stress of life hits you, you can handle it gracefully. Having an outlet for creativity, exercise, yoga classes or even cuddling with your pets can greatly reduce stress. Be proactive.

Be thankful This is my favorite. Be thankful, express your gratitude. We are quick to say the things we don’t like, but how often do we talk about the things that make us happy? Being grateful is more than just saying thank you. It’s about expressing your happiness towards someone or something. Be joyful and appreciate all of the big and little things in your life. By expressing love we are spreading those positive feelings around. Love will grow around you.

As we begin 2019, resolutions or not, spend some time to take care of yourself everyday. Read everyday. Laugh everyday. Stop for five minutes everyday and do something nice for yourself like pet your dog, go for a walk, create art, meditate or simply tell someone why they are special to you. Connect with your friends either for a night out or plan a weekend away. Taking time for yourself is rejuvenating. Make 2019 your best year ever.

AMERICAN HEALTH WEEK Our very best friend and business partner (besides each other and Sebastien and Jordy) is named Owen. As he would say, “in a past life,” (he has had many past lives) he literally owned and ran American Health Magazine. He also had Psychology Today, Mother Earth News and Spy Magazines. Our business with Owen was not magazines but, Airbnbs and decorating his Hotel (from another life). Work or no work, January in New York can be a depressing time. The holidays are over, it’s a new year and it’s dark at 4pm. People, especially O, start reflecting on their “past lives.” Around this time every year, Owen would get restless; sick of everybody around him in the small Upstate NY havenmagazines.com

shouldn’t take. He knew a thing or two on becoming the best version of oneself. In the spirit of the New Year, for sport I’ve decided to share our “American Health Week” experience. Similar to the film Fight Club, it consisted of a few basic elements for those of you interested in subscribing.

Eat healthy No bread, nothing fried and nothing fast. We didn’t ever go to extremes of being vegan or vegetarian just light healthy fare. A lot of salads and bone soup. At one point I think I thought I was going to turn into a salad. Lol Side Note: Anybody that knows Nando and I knows about our bone soup. We always have a pot of it on

Even though he wasn’t a doctor or personal trainer… the man was definitely well educated on the subject from publishing all those issues of American Health and Psychology Today magazines. They covered everything from Why do Yoga vs. Spinning to MEN-O-Pause for men, to which vitamins you should and 24

the stove. Beef or chicken. We swear by it. Whether we are in warm Florida or NY… year round its great. If you are sick or weak or lacking in nutrition or just want to be really healthy… make bone soup. We add plenty of onion, garlic and a dollop of Whole Fat Greek Yogurt. We actually substitute Greek Yogurt (it must be whole fat) for mayo and sour cream. Ok… back to American Health Week with the Big O… Zero Alcohol Obviously accompanied the improvement on diet was zero alcohol. We typically would enjoy a glass of wine or two with our dinner break at the hotel and are no strangers to


happy hour. There was not time for parties. This was a rush job so we spent intense hours trying to get it ready for guests. That was part of the program: Work long days, work really hard and don’t stop moving. Keep busy. Idle time leaves room for unnecessary food consumption, plopping yourself in front of the TV, distractions and laziness. Owen is always saying and doing eccentric things. He said something during this week that I hear in my head every time I do stairs… “Never just walk up stairs.” Some expert in his research for a health piece told Owen, “Run up the stairs. See the stairs as a workout opportunity.” Previously, Owen made me laugh when he went stomping up stairs wearing what we call his clunky “rocking shoes” He claims they are a special posturepedic invention. It wasn’t until our “training” and him actually explained his reasoning for attacking the stairs that I realized he wasn’t just odd… we agreed. Nando and I are those people that run up the escalators and seldom take the elevators. So, there we were, changing our routines and habits and making new ones. Books on tape We listened to books on tape while we worked. Owen loves Shakespeare along with all the greats. His Audible library is huge. We would bumble around working and listening to whatever the day’s flavor was. It became addictive. Owen even got headphones that could go underwater in order to listen to the books while swimming. Swimming with Steven King… how fun. Exercise Owen’s father Ben lived to be 93. He attributed it to his daily swimming routine. Obviously having good genes will help. Naturally, Owen chose to do daily laps as his go to exercise along with his “stair running.” Swimming is so good for your lungs and blood flow and mobility of the body. Nando loves to swim as well. He did that or he got roped into my faves… Zumba, Carmen Electra Strip Tease Aerobics or Ballet. Well Nando didn’t do any ballet because he has two left feet. No matter what, we had to put in a full exercise hour daily. * There is an adult ballet class here in Winter Haven that I plan on attending this winter. No Time Frame for American Health Week existed. The duration was definitely longer than a week. It was

like AA… one day at a time. Each day it got easier and we got healthier. Skin improved. Figures improved as did attitudes along with a healthy competition. Nando and Owen both got weighed at the beginning and they had a bet going on who could lose the most weight. I can’t remember the outcome. Owen will say himself of course. When it was time…we had champagne to celebrate our health and the fact that we had finished the hotel. Note: I spent what I believe to be my formative years working on and off with Owen. He taught me so much by following me around as I “dressed” his properties; educating me on many subjects such as American Health, how to Bulldoze, Fashion and Fishing. Life in General.

Owen had always known the plan, once the hotel was decorated and we were bikini ready, Nando and I were leaving him for the remaining winter in Florida. Days after arriving in Polk County, we got a call from Owen. “Ah.. Um.. Sally, what airport is Winter Haven closest to? Jake and I are coming for the weekend.” He missed his teammates.

Mr. American Health flew down to Winter Haven and conveniently contracted some unknown “sickness” called, “He was too ill to fly back to NY.” Consequently he and Jake had to begin “American Health Week pt. 2” – A month on the Eagle Lake farm running the hotel via FaceTime, listening to books, fishing off of the dock, and sneaking Nando’s mom’s cookies with fresh orange juice. THE POWER OF COSMIC N A T U R E A fascination with R.L. Stine’s Goosebumps books, natural talent, and a few hard knocks along the way have shaped 20-year-old up-andcoming local artist, A.J. Green.

always his forte. He admits that he was an introverted kid and that art was an outlet for him. “Not only was I able to express myself, but the art eventually was able to speak for me,” he said. “Being an introvert, I was able to, in a strange sense, indulge in myself, and fall into myself and enjoy the things I did.”

At an early age, the young creative was so obsessed with the imaginatively composed and colorful Goosebumps covers that he made it a point to start following the work of illustrator Tim Jacobus. “I fell in love with the saturation and the color in his art pieces. The one I remember was a book called The Haunted Mask,” he said, rattling off a few other titles that stood out in his memory – Attack of the Jack-O’-Lanterns and My Hairiest Adventure. A.J. would sit for hours at the kitchen table replicating the covers.

A.J. sharpened the skills he’d developed drawing book covers by drawing things from his own imagination. As he has evolved, so too has A.J.’s artistic style. He now does Pointillism, a technique using small dots to make up a larger picture. He has typically used graphite and black ink mediums but has introduced pops of color his work to “compliment the intensity” of his black and white monochromatic style.

Holding a conversation with A.J. today is effortless. He’s well-spoken and selfassured though communication wasn’t

Much of A.J.’s inspiration comes from films. He used to love drawing cinematic insight from the imaginative side of horror films and has become very interested in the sci-fi genre. Aliens, winged creatures, creatures in humanoid form – his fascination with sci-fi comes from what he calls a “broader spectrum of imagination and creativity.” He also uses social media to follow other artists. He examines their technique, color pallets, and mediums to modify in a way that he can use for his own art. Along with his admiration for other artists, A.J. is also blown away by his own growth. Two of his most recent pieces hold a special place in the creative’s heart. The first, titled, Arzonnica the Skyfall, is a blend of mediums. “It’s just a beautiful picture of this humanoid female figure and I’m really interested in the female figure when I’m rendering it in the sci-fi theme. It is meteors scratching through the sky in the background and her whole world is about to be destroyed. She’s holding this staph that possesses power unparalleled to anything humans have ever experienced,” he explained. Another piece, Muted Maroon, is a stunning image of a somber man with an index finger pressed against his lips in a hush motion. A black and white piece, A.J. used pops of maroon in the moths fluttering around the mysterious man. He discussed the piece, saying, “The picture symbolizes motion. It looks like there are these creatures fluttering around him, but it’s silent. It’s so beautiful – the eyes are really intense, the shading is really intense and it’s a black and white photo, and the only thing that has color are the red insects flying around in the background.” Along with these pieces, A.J. has been working with Jane Waters-Thomas, Executive Director of Arts Ensemble, on community mural projects. He just finished a project called “Wings,” a pair of angel wings on a wall in Haines City. After completing his wings, A.J. began to see photos of people posing in front of them on social media. “It gave me goosebumps because these people haven’t even seen me yet, but they know me. They know me because they know my art, they’re interacting with my art, they’re engaging with my art,” he said excitedly. Green’s journey would have been much different without supporters in his corner. He named his mom and girlfriend as instrumental to his success havenmagazines.com

and spotlighted older sister Laura. She was always there to encourage him. “She would always tell me, ‘I know you can do better than this,’” he said. Laura’s constructive criticism would often make him discard what he was working on to reimagine something much greater. He said her words helped him to make his work “come to life.” Another advocate for A.J. is Kurtis Flanders of Growing Positivity, a program for creatives working under Art Ensemble. A.J. says he is amazed by what Kurtis does for the kids of the community and that he plans to become a part of Growing Positivity. “He’s very much an inspiration to an artist like me, how he’s able to engage with these kids, how he’s able to engage with the future – because these kids are our future,” he said. Growing up in Naples, A.J. moved to Winter Haven about 2 years ago. Robbed and held at gunpoint, his few years here have been colored by periods of adversity. He leveraged his struggles though and turned them into something beautiful. “Most of my growth happened in Winter Haven because of the level of adversity I faced happened in Winter Haven,” he said. That adversity shaped his dream. “At first, my dream was to impact the world and impact the lives of many on a deeper level through art,” he said. “Now my goal is to bring out the creative nature in everyone.” He remembers a conversation he had with someone saying, “I want to just build a place, like a temple of creativity and love in the chaos of the normal world where people could come and heal and recover and tap into the greater half of themselves where they could release their creativity.” “I call that the ‘Cosmic Nature’ within people – the beauty, the essence of who they are, the greatness within them,” he said. He believes so firmly in this dream that he’s dubbed the brand he’s creating, Cosmic Nature. The young artist is in the midst of working on a body of work that he hopes to make available for purchase when it’s completed. “Meat”Your New Friend, The Cubano Some people find their careers, and for others, their career finds them. This is the case of Chef Neil Curran, owner and sandwich master extraordinaire of Chef Neil’s Bistro off of Dundee Road.

opened for business in 2010. Known for his Cubano (Chef Neil’s Bistro won best Cuban Sandwich in 2018’s Best of Haven), the chef discussed what makes it so irresistible. Of course, he starts off with a good base of delicious Cuban bread, he also puts salami on his version along with ham, Cuban pork, swiss cheese, and pickles. Instead of mixing the mayo and mustard together, he puts mayo on one side and mustard on the other, separating the condiments just enough to make the flavors distinctly separate, but marry together beautifully in each bite. Above all else though, his Cubano is so good because of the quality ingredients he buys, something he learned from Mr. Christy while working at his restaurant. He presses it to perfection and voila, a mouthwatering Cuban sandwich.

Originally from Massachusetts, Chef Neil’s family moved to Florida when he was young. He grew up in Miami, making the move to Polk County in 1982 following his high school graduation. Today, his eclectic background is reflected in his accent – a charming mix of quickpaced Miami and gritty northeast with the occasional hint of southern twang sneaking its way in. He was 18, looking for a job, and about to move back to Miami when, on his birthday, he got a call back from a restaurant he’d applied to. He went into Tom’s Steak and Seafood for an interview and was hired to be a dishwasher.

Have you ever ordered The Vinnie or maybe a Howie Dog from Chef Neil’s? The names aren’t just fun monikers for his scrumptious creations, most of his menu items are named after someone special.

Two months in, he was offered a promotion to line cook, which he accepted. He stayed there until 1988 when he began working at Christy’s Sundown Restaurant.

The Vinnie, an Italian sandwich with ham, salami, hot cappy, pepperoni, provolone, lettuce, tomato, mayo, mustard, salt, pepper, oil and vinegar on a toasted hoagie roll, is named after his cousin Vinnie, Uncle Vinnie (whose picture is hanging at the Bistro), and the chef’s own middle name, Vincent.

He spent about 7 years as a line cook until the Executive Chef, Joe Broker, was ready to retire. Broker asked Neil if he was ready to learn the ropes. He was ready indeed and worked there for another 10 years as the Executive Chef. A brief break from the restaurant biz to try his hand at sales eventually opened the door for him to work as the chef at Jimmy T’s. New owners and changes to the restaurant were the writing on the wall for Chef Neil that it was time to branch out on his own.

“All along I had been thinking I wanted to do my own thing,” he said. In the mornings when he was off work, he would drive around town scoping potential restaurant spaces.

The Frannie, aside from being Uncle Vinnie’s wife and Chef Neil’s aunt, is a freshly made chicken salad sandwich with lettuce and mayo on ciabatta bread. His chicken salad is made with fresh, ovenroasted chicken, mayo, salt and pepper, celery, and a little something extra. The chicken salad has an orange tint to it thanks to a secret ingredient. We took stabs in the dark as to what the mystery ingredient could be, but the chef wouldn’t budge.

He found the prime locale for his sandwich shop on Dundee Road. He worked to renovate the interior and

Hollywood are named for his daughters, The Mighty One is a nod to his mother’s nickname, and the Big Al is named after a friend of his, who had a sign made for him that now hangs in the shop. The Helmick is his Reuben sandwich named after former patrons of Christy’s Sundown Restaurant. When the Helmick’s heard Chef Neil was opening the bistro, they wanted to do something for him, so they bought an ice machine for him. “They wouldn’t let me pay them back so, to me, the only way I could pay them back was to put them on the menu,” he said. A look around the bistro might clue you in that Chef Neil is a die hard Patriots fan. When he isn’t cooking or catching a game, he loves going to the gym. He goes 5 to 6 days a week at 5 am for an hour and goes to spin class about 3 afternoons a week. The chef also enjoys spending time with wife Emma, two daughters, Kayla and Emilee, and his newest little love, granddaughter Luca Claire. Oh, and we can’t forget his two frisbee buddies, Boston Terriers Olive and Bella. Everything at Chef Neil’s Bistro was delicious from his famous Cubano to The Helmick, his homemade beans and rice and potato salad, but there was something that stood out more than the food. As we sat and talked, several customers came in or called. He would banter back and forth with them, asking about their family, making their order just as they like it. Either they were regulars, or he just treats everyone like a regular. The food isn’t the only thing that makes this hometown sandwich shop a must-try. Is a trip to a dispensary in your future? How do I apply for a medical marijuana card?

What is it?

First, make an appointment to see a qualified and registered physician for the initial exam. Physicians have to complete the required training and must be registered with the state, find a list here: www.floridahealth.gov. If the physician approves, they put you on a state medical marijuana use registry. At this point, potential patients must submit an application to the state’s Office of Medical Marijuana Use, either mailed-in or online, with a copy of a state ID or proof of residency and the required $75 fee. From start to finish, this process can take up to 30 days. The cards expire one year after approved date.

Low-THC cannabis means a plant of the genus Cannabis, the dried flowers of which contain 0.8 percent or less of tetrahydrocannabinol and more than 10 percent of cannabidiol weight for weight; the seeds thereof; the resin extracted from any part of such plant; or any compound, manufacture, salt, derivative, mixture, or preparation of such plant or its seeds or resin that is dispensed from a medical marijuana treatment center. “Marijuana” means all parts of any plant of the genus Cannabis, whether growing or not; the seeds thereof; the resin extracted from any part of the plant; and every compound, manufacture, salt, derivative, mixture, or preparation of the plant or its seeds or resin, including low-THC cannabis, which are dispensed from a medical marijuana treatment center for medical use by a qualified patient. - www.floridahealth.gov

Originally from Kentwood, Louisiana, Heather Bell earned her degree in Business Management/ Entrepreneurship from Southeastern Louisiana University. She married Wayne Bell and they moved to Florida for business opportunities. She has since obtained a second degree in Respiratory Therapy, became a Certified Personal Trainer and Group Fitness Instructor specializing in women’s fitness and fitness nutrition.

How important is diet? I asked Heather for tips on building strength, energy and losing weight. “It’s been said before, and I’ve found it to be true... you can’t out-train a bad diet. Put the fast food on the back burner and try fresh, non-processed food. Begin by increasing overall water intake and then follow that up with preparing your meals in advance so you don’t run to the first fast food line when you are hungry. Remember the food that is classified as ‘fast’ often comes ‘slow.’ By making the healthier choice you will find yourself with more energy to get through the day.”

Heather is also mother to four kids ages 2 - 10. Not only does she work as a trainer, but she homeschools her kids. She’s a very strong woman, both physically and emotionally. I sat and chatted with her about why we should all be working out, how to get started and what to do if we don’t have access to a gym. First thing’s first, why exercise? What are the benefits of working out? “There are many benefits to working out. Aside from improving cardiovascular health and endurance, exercising has also been proven to prevent and/or help manage depression, diabetes, maintain a healthy weight, improve muscle strength and endurance,” Heather explained.

Full disclosure, I’ve been a client of hers for about 8 months now, but this is not a paid advertisement. We decided to write about Heather, and all exercise for that matter, because it’s so good for you. I don’t want to be a bodybuilder and I actually don’t follow her meal plan. (She knows, she sees my Instagram) I started because it’s the only thing I do that’s just for me. It’s MY time to do something good for myself that has nothing to do with kids, work, errands, etc. We meet when most people are sleeping and I almost quit two weeks in, but I can’t imagine not going now. She’s always smiling, always encouraging and never judges. For me personally, I need someone to hold me accountable and expect me to show up at a certain time. Otherwise, I would find one billion excuses not to go that day. Let’s face it, we’re all tired, busy and doing so much for other people. Take time for yourself this year and do something great, you will not regret it.

How often should someone exercise to get effective results? “Everyone should aim for a minimum of 30 minutes a day, three days a week to improve overall cardiovascular (heart) health.” She added, “if you have committed to working out 5 days a week, for 30 minutes a day, focus on strength training for three days, cardio for two, and rest the other two days. This will build strength, improve endurance, and help with weight management.” For someone that’s thinking about beginning an exercise routine, maybe it’s their New Year’s resolution, what should they consider? How do we begin? “Always consult with your physician first before beginning any exercise program. After obtaining consent, evaluate your options. If you’ve never worked out before you may want to seek the guidance of a Certified Personal Trainer. If that is not an option, learning basic body weight exercises is always a good place to start,” Heather explained.

Holistic Healing, One Needle at a Time Having multiple needles inserted into your skin at once may seem like the plot of a horror flick, but many swear by it as a means of holistic healthcare. Participant, Chris Campbell was excited going into her first ever acupuncture appointment, admitting she’d always wanted to try the Eastern therapy. She joked that the thing she was the most anxious about was finding the right ensemble for the occasion. It isn’t every day you get acupuncture after all and it’s important to look great for it. Polk County native and owner of Acupuncture Therapy Center in Winter Haven, Dr. Kathy Teisinger DAOM (Doctor of Acupuncture and Oriental Medicine), AP (Acupuncture Physician) said that her path to Chinese medicine began with personal health issues that Western medicine wasn’t able to alleviate. A healthcare system that has been in development for thousands of years, Dr. Kathy said, “One of the things that attracted me to Chinese Medicine is the versatility of it. In other words, if you have a pain in your knee, I can take care of that. You have infertility issues I can take of that, you have sinus issues, I can take care of that.” Medicine from both hemispheres has their place according to the doctor. “There’s nothing better than Western medicine when it comes to trauma, they are number one. But, if you’ve got a kidney problem – you’ve got kidney stones or kidney weakness or digestive issues or sinuses or liver issues, Chinese medicine is better,” she said. Acupuncture can treat a range of patient issues both mental and physical according to the doctor. “In Chinese medicine, they believe in treating the entire body which means you treat the body nutritionally – food is very important. You also treat the body physically, that’s where acupuncture comes in. And then you also treat the body psychologically,” she said. “It takes all three sides of that triangle to bring about good health.” The appointment began in an intake room where the doctor consulted with the patient. Though her chief complaint was pain in her hip, Chris was excited about the energetic aspect of the treatment. “I have always believed that there is positive and negative energy and

that each type of energy can have an effect on you mentally and physically. I have been called a “glass half empty” person when it comes to the way I feel about myself, so I wanted to focus on the overall experience and concentrate on receiving positive energy.” Dr. Kathy started with an evaluation of the 12 pulses recognized in Chinese medicine, feeling different points on Chris’s hands and feet. “Taking the pulse allows me to see what’s going on in your organs,” she said. Blending Eastern and Western medicine, Dr. Kathy uses technology to modernize her medicine, keeping track of her observations electronically and using software along with an Acugraph for the next part of the session in which she measures energy in your meridians. Chris held a ground while the doctor used a smaller instrument to measure the energy in her meridians. Each time she moved locations the computer would make a different pitch and call out either left or right side, organ, and a number (example: Left, Small Intestine, 4), guiding Dr. Kathy on what areas she may need to needle. Once complete, Dr. Kathy reviewed and went over the report and emailed a copy of it to Chris. The report noted areas she may be having trouble within the spine which, according to the doctor, could be causing her hip pain. It also detailed some emotional components which Chris said were eerily accurate. “According to the software, I need to do bladder 65 and spleen 5,” said Dr. Kathy before we moved to the acupuncture room. Chris laid face-up on the bed as Dr. Kathy cleaned the patient’s hand opposite her hip injury, with alcohol. The almost hair-thin acupuncture needles are not hollow. “When I go to put in the acupuncture needle, there’s no ripping because it’s so sharp that what happens is when the needle goes in, it parts the skin and the skin actually acts as a rubber gasket,” said the doctor as she placed the needle in a tube against the skin. She tapped the end of the two and a half inch needle to insert it and moved it in further by hand.

“The sensation is hard to describe,” said Chris, “but once the needles were all in place the sensation was a kind of tingly feeling that was comforting.” So what does poking tiny needles into different body parts have to do with health? “This activates your body’s energetic system,” said Dr. Kathy. “This is so effective that it can decrease pain in 70 percent to hundred percent,” she snapped her fingers, “that fast.” She described them as antennas, saying, “I want strong stimulation and I want a big antenna to draw energy from the planet into her body.” While the needles were in her hand, Dr. Kathy taught Chris a series of slow, fluid stretches for her hip that she will need to do every day for the rest of her life. The patient was asked to walk so Dr. Kathy could observe her gate while she had the needles in her hand. She then laid back down for the rest of the needles to be inserted in her hands, wrists, feet, and forehead. After all the needles were inserted, Dr. Kathy said it was best to leave the patient alone for the remaining twenty minutes. This brought the session full circle, or triangle rather, to her psychological health. Chris was offered the chance to either listen to music during this time or try something called a BrainTap – a guided meditation app that incorporates seven different technologies. Dr. Kathy chose “Unlocking the Healing Force of Positive Thought” for Chris’s guided meditation. She put on headphones in which two people talk at once and a device with flashing blue lights to go over her eyes while keeping them closed. The BrainTap was Chris’s favorite part of the whole experience. She said, “It was twenty minutes of peaceful music and positive mediation.
