JOB FAIR Polk County Public Schools’ hiring season is in full swing as they look to recruit teachers and other educators for the 2019-20 school year. ABOUT FACE AWARDS On Wednesday, April 10, the annual About-Face Awards recognized more than 50 Polk County Public School middle and high school student honorees that have made positive changes and noticeable improvements in their academic careers. The invitation-only ceremony began at 7:30 a.m. at Bartow Civic Center. PCPS hosts the event to encourage students who have made an “about-face” in their schools by improving their grade point average, attendance or attitude.

NEW LOOK VOLUNTEERS FOR CHAMBER NEEDED On March 21, a new logo and the final change was announced at the Chamber’s monthly breakfast meeting. The Haines City Area Chamber of Commerce will now be called the Northeast Polk Chamber of Commerce. Changes were made due to the growth of businesses along US 27, traveling north from Haines City into Davenport. There are currently 330 members.
Meals on Wheels of Polk County is in need of volunteers to drive meals. Anyone who owns a car, has a driver’s license with car insurance is eligible. Normally, volunteers deliver a dozen meals each and average around two hours per day. Drivers meet at 10 am and are done by noon. EMERGENCY RESPONSE TRAINING
NEW SCHOOL Polk County Public Schools is building a new high school that will be located on County Road 547, adjacent to Davenport School of the Arts. When it opens in August 2021, the school will be able to serve 2,500 students, which will help to address rapid enrollment growth in northeast Polk. Polk County Fire Rescue, in cooperation with the Polk County Sheriff’s Office, has completed department wide active shooter training for all of its emergency response personnel. In addition, the division has supplied active shooter safety equipment, including ballistics helmets, vests and specialty medical bags to all of its engines, ladder trucks and ambulances. During this training, rescue and law enforcement crews became familiarized with the methods used by each agency to increase both operational safety and fluidity so collectively they are able to serve the public more effectively.

TAKE A TOUR At a recent Bartow Board of Adjustment meeting, Drew Davis & Krislin Kreis won approval to offer tours at the historic Wonderhouse on the weekends. They purchased the house in 2015 for $162,000. They’re request to hold weddings and other events was not approved because of potential issues with noise, traffic and parking. The couple has spent more than $200,000 to remodel it.
HIGH SCHOOL SENIORS HONORED The top high school seniors from Polk County Public Schools were honored on Thursday, April 18th during the fifth annual Superintendent’s Scholars Awards. More than 1,000 seniors qualified for this award that recognizes their outstanding educational achievements. Superintendent’s Scholars include graduating seniors who have earned a 3.8 weighted GPA or higher by their seventh semester. During Thursday’s ceremony, each student could introduce themselves, announce their college or career plans, and receive a medallion to be worn at graduation later this year.

A Look Inside the Top-Secret World of LEGO Models Magic is made daily in a nondescript building with locked doors and tinted windows on the outskirts of Lake Wales. This magic spans the world and some of it even stays right here in Polk County. If you’ve ever strolled DUPLO Valley, felt your stomach drop riding The Dragon, earned your license in Ford Jr. Driving School, or waged war in the Battle of Bricksburg at LEGOLAND Florida, you’ve probably stopped to admire the intricate detail of the many larger than life LEGO models of characters, people, animals, and places. Maybe you wondered – who spent the painstaking hours to piece these meticulous things together? How do they keep them from crumbling during a Florida storm or at the hands of a rowdy guest? Is it hollow or solid LEGO? Are they made at LEGOLAND? Merlin Entertainments, the company behind LEGOLAND Parks across the globe, makes their models in Merlin Magic Making (MMM) warehouses of which there are only four in the world. The largest MMM Production facility is in Malaysia, along with two smaller shops in England and Germany, with the second largest facility in Lake Wales, Florida. THE MAIN MAGIC MAN Overseeing the approximate 50-employee MMM in Lake Wales is US LEGO Model Production Manager, Brent Albritton. Albritton has been with Merlin for six months, bringing a seven-year background in production management including work in the retail display industry, 3D design, and graphic design with him. - CONTINUED ON PAGE 18 -

As Production Manager, Albritton’s job is to keep the facility running smoothly from day to day business operations to supervising production flow, ensuring projects stay on track with the help of the three supervisors under him – one each overseeing design, production, and the machine shop and animation department. Albritton has fully embraced his new position with Merlin. LEGO blueprints hang on a wall in his office, facing a sign with LEGO bricks of various shapes and colors with a quote from Van Gogh reading, ‘Great things are done by a series of small things brought together.’ What’s Brent Albritton’s favorite part of the job? It has to be playing with LEGO, right? Not exactly.

“I have tried building. I have not been trained on it and they kicked me off the floor,” he laughed. No, the most fun he has is, “walking the floor, talking with everybody, and seeing the models come together.” BRICK BY BRICK The production manager detailed the model building process, which begins in the design department. MMM uses three pieces of software to design models. One is a 3D software, and the other two are LEGO proprietary software – LEGO Digital Designer and LEGO Brick Builder. “In the software, they have all the LEGO parts and can assemble and design a sculpture,” he explained.

The idea moves to the animation department where any needed lighting, animatronics, or internal steel structures are determined. Next, it’s off to the brick builders. “They start from the ground up. They’ll lay a footprint down following the software, counting the number of studs on top of the LEGO bricks or however the actual file is built,” he said. He described the actual building process as similar to laying the brick of a home, it goes layer by layer. The models are mostly hollow, saving on the weight of the piece and number of bricks they’ll need to use. Bracing inside the models hold them together with steel structures added for larger models or those that
might be in guest contact. To stick the LEGO bricks together, they use a solution that essentially “welds” them to one another. Large tubes, part of an extraction system, run throughout the facility, humming as they remove any fumes from the solution. What about sun damage? “Weather is probably the biggest factor,” said Albritton. “We’re taking an indoor toy and using it outside. The weather, especially here in Florida, is pretty brutal on it. The colors fade, the rain beats down.” Models that will be on display outdoors are sprayed with a UV coat of lacquer that seals them for longevity.
Upon completion, the models are strapped onto pallets or crated if necessary to be delivered to its destination. If a model needs to be repaired, there are onsite repair teams at the parks. A damaged part can be cut out and replaced, with color from sun fade taken into account. If a model becomes overall worse for the ware, they can be sent back to MMM for refurbishment. WHERE DO THEY GO? There are LEGOLAND Discovery Centers across the world and LEGOLAND Parks in Denmark, England, Germany, Japan, Malaysia, Dubai, California, and Florida, with construction underway in New York
expected to open in 2020. The Lake Wales MMM location builds models not only for LEGOLAND Florida but any of the LEGOLAND Parks and Discovery Centers. They work on around 30 models for two to three parks at any given time creating models from just a few inches tall to over 20 feet. PLAYING WITH LEGO FOR A LIVING To stock these locations with magic, it takes an organized facility filled with people from different backgrounds working together.

About whether MMM employees come from design or other creative backgrounds, Albritton said, “Many of them do, yes. A lot of people here were just LEGO fanatics for years as kids.” Now in adulthood they are called AFoLs (Adult Fans of LEGO). A range of personalities spans the building according to Albritton. From locals to commuters, some come with degrees from Full Sail University, a retired police officer, some straight out of high school, former marines or aircraft mechanics, designers, engineers, some with machinist and carpentry background. One thing all employees have to adhere to though is a confidentiality policy. No unreleased models can be photographed or posted on social media.

MMM TOUR We took a walk through the facility. Designers were working diligently with earphones in as they built within their 3D programs, a LEGO Pokeball sat on one desk, a LEGO banana on another. We passed weathered models that were there for refurbishment before entering the large production floor. A LEGO moose head hung on the front wall overlooking the brick builders. New hires were doing training at a table behind someone putting down the footprint for a project, as a man adjacent to her worked on a time-lapse of the building process.

Blue bins filled with every color and shape of LEGO imaginable ran the center of the room. Their full machine shop was complete with a lathe, welding machine, mill, and various tools for metalworking and animation. In a storage space sat completed models ready to be packed and shipped, around the corner from the prep and paint area for models waiting to be UV coated. I left thinking these guys might have one of the coolest jobs ever. The next time you walk MINILAND USA or LEGO Movie World and see a model, you’ll know just how a series of small things came together to make something great.

Flowers Forever Annie Smith is giving permeance to a beautiful gesture that might otherwise be forever lost in time. Her business, Pressed Garden Floral Preservation specializes in floral heirloom art made from wedding, funeral, and other special occasion bouquets.
THE FLORAL PRESERVATION PROCESS Early on, Smith decided that she was going to make everything about her business exceptional for her customers. Her dedication to perfection is reflected in a stunning finished product – acid-free, vibrant flowers pressed carefully using scrupulous methods, vacuum sealed behind museum glass, and professionally framed.
She relocated her business from Austin, Texas where she’d lived for seven years to her Winter Haven homestudio a little over a year ago. ABOUT ANNIE
She hopes these timeless pieces of art will be handed down through generations. “I want it to be something that is an heirloom, that people long after me will have,” she said.
“I’ve always been kind of crafty,” relayed Smith. “As a little kid, I’d press four-leaf clovers and things like that and did a really bad job of it, but I didn’t care because it was just so much fun!”
The process begins when the customer ships their flowers to Smith. She has streamlined the process by sending them a document with instructions on how to care for their flowers prior to sending. This includes trimming the stems, giving them water, and not being too rough with them at the event. “If they’re a mess when I get them, there’s nothing I can do,” said Smith.
Browsing the shelves of a bookstore in Indianapolis one day, she came across the book, “Glorious Pressed Flower Projects” by Cellestine Hannemann. “The book just took my heart,” she said. “I bought the book even though I couldn’t afford it at the time and brought it home and started marking it up.”
She sends them another document with packing and shipping instructions, and requests no more than a three to four-day window from the event, in order to best preserve them.
A life-changing event made Annie contemplate what she was going to do for a living moving forward. She remembered the book on which she’d spent so much time ruminating and decided to seek out the author.
When the bouquet arrives, Annie deconstructs it, taking photos of everything to document the colors of the flowers, the layout of the bouquet, and condition it was in when it came in.
She and the author became very good friends. Hinnemann even gifted Annie her library of pressed flower books. Hinnemann pointed Annie to a pressed flower class in New Hampshire. Annie had read and re-read and made notes and studied the book extensively at this point. This class was her time to release all her pent up creativity. The instructor’s assistant noticed that Annie was a natural and said she didn’t even know why she was taking the class.
Each flower is then carefully disassembled. This differs for each type of flower. A rose, for instance, will be taken apart, each petal laid out and pressed separately. For a flower with smaller blossoms running up the stem, she’ll remove each blossom and discard the stem. Gerber Daisies have a thick center. Because of this, the petals are pressed separately from the center which is pressed using more weight.
This support impacted Smith tremendously. “Sometimes you just need someone that you admire, that you respect, to look at you and go, ‘This is in you. You can do this,’” she said.
Any part of the flower that is bruised, damaged, or otherwise can’t be pressed, she will use to make potpourri for the customer at no additional charge.
Annie now has 14 years in the floral heirloom industry and has preserved over 500 bouquets.

It takes the flowers between one to two weeks to dry and another couple of days to reassemble and color enhance them. Acrylic paint, spray paint specifically for flowers, paint markers, or powdered paint may be used to enhance the color. The art is actually the shortest but “most fun” part of the process according to the floral heirloom artist.

Creative Cottage Welcomes Makers to Teach Creative Cottage has officially been open for six months, and owner Christine Ousley has a lot in store for the boutique craft shop.
One such maker, is Lyndsey Venrick, owner of subversive cross-stitch business, Pin + Needle, and handmade jewelry store, Olive + Lemon.
The Cottage was opened on November 1, 2018.
Ousley approached Venrick at a Grove Root’s Moonlight Market about teaching a class at her shop.
Christine and her husband, a Winter Haven native, moved back to Polk County in February earlier that year, bringing Christine’s fabric business with them. With a home bursting at the seams with fabric, no space to cut it or efficiently run her business, and her inherent love of all things creative, Ousley opened The Creative Cottage. “I’ve always wanted to have a shop and get people together,” said Christine. “That is one thing that I’m very passionate about, is getting people together to craft, to create, to have fun, and network.” The Cottage offers DIY guided classes for paper crafts, wood and canvas painting, vinyl cutting, and other projects. Makers can use the Creative Cottage website to choose a customized project and set up or join a class. With a typical class lasting between 2.5 and 3 hours depending on the project, Ousley’s shop is the perfect place for a girls’ night out or birthday party. Friends and family can bring food and wine to enjoy while getting crafty. ARTISAN-LED CLASSES Recently, Creative Cottage has hosted a few professional crafters to teach a class of their own. This is something Ousley has wanted to do since her shop opened. She envisioned local artisans using Creative Cottage as a platform to share their craft with the community.
Lyndsey’s first class at the Cottage was in March, though she’s done personal classes on the side before this. “Prior to doing Pin + Needle full time, I was a trainer at State Farm. It was so rewarding, I LOVED teaching others and helping them master difficult concepts. I’m excited to have the opportunity to get back into teaching,” she said. For the class, each of her students made their own custom hand-embroidered baseball cap, making it one of a kind by choosing the phrase and colors. Her goal for the class was that participants would leave “with the ability to make their own handembroidered attire in the future.” “I focused on the basics of wearable embroidery and how it can differ from the traditional hoop art, covering the necessary supplies and techniques they could use to recreate it again at home,” said Lyndsey. “A few of the girls came just to have a good time, but others mentioned their eagerness to get home and apply what they learned to other projects.” Venrick was thrilled by the look on students’ faces when they saw their final product, saying, “Whether I’m teaching insurance, embroidery or anythingwhen a student realizes, ‘I can do this,’ it makes me
feel all warm and fuzzy.” The Pin + Needle owner has a lot of shows going on at the moment, but would like to eventually do at least monthly classes, covering “a variety of skills – more hat and attire classes, introductory cross stitching, embroidery pattern making and more.” Follow her social medias @thepinandneedle for upcoming scheduled dates. Ousley raved about Lyndsey, saying, “That was a fabulous class! Everyone absolutely loved it!” The Creative Cottage has also featured Jennifer Romberger who has a business sewing specialty dog wear and accessories, to teach a customized coir doormat class. Ousley says she would like to see a variety of artists teach there. Sketching, drawing, wood burning art, leatherworking, jewelry, and anything else. BEING CRAFTY AND NOT MESSING IT UP For our first project at the cottage, we started small – a painted stencil design on a stained block of wood. Step one was to weed the stencil using a small pick. With a few how-to tips from Christine, we used the pick to push down and pull up along the design. Small pieces of transfer tape were then layered all over the stencil to peel the back off a little more easily. We carefully positioned it onto the block and “pounced” primer over it using a sponge applicator. After the primer had dried, Christine pulled out color swatch paint sticks for us to choose the color we wanted to use. Using the same “pounce” technique, we painted over the primed area, being careful not to get moisture under the stencil. Once the paint was dry, we peeled off the stencils, revealing a darling piece décor. I’m not crafty by nature. I’ve been known to get paint in my hair, superglue my fingers together, and ruin a project by cutting the wrong end of the fabric, but the step by step instructions from Christine made it easy to follow along. Growing Up in Winter Haven… BASEBALL and JASMINE Today is hot and humid. The kind of day that reminds you summer is near even though it is still spring. Sally and I had just left the farm in Lake Wales after repairing a fence and feeding the spent grains from Grove Roots Brewery to our small herd of cattle. The rains are still infrequent enough and the nights cool so that the grass doesn’t grow as fast as the cattle would like. After locking the gate, Sally jumped back in the truck and said, “Remember, peach picking today only till 3.” “Oh yeah, over on Eagle Lake at Martha and Joe Burke’s place.” I said. “And we can stop and get a couple of tacos on the way in Wahneta.” She said, as I pulled out of the farm and on to the asphalt road. I love to eat, but Sally just might like it more than me, at least for local tacos. “Hey then we can have peaches and cream for dessert!” I grinned. I knew we had a date. We pulled down the long drive through the familiar orange grove we all saw growing up here in Central Florida. On the right all of a sudden is a huge peach orchard. This was not such a familiar site in these parts. We parked and got out of the truck, stepped on to the sandy driveway and into the baking sun with staggering humidity and the silence that comes with the midday heat. We heard the occasional cricket chirping and the caw of a crow in the distant. A slight breeze was coming off the lake toward us and with that, a familiar smell of baseball. It was a spring training smell, a smell of The Boston Red Sox in town. I thought of Sertoma Park and Dixie Youth Baseball that I played. It was those scents that reminded me of the Winter Haven Red Sox, our local farm team that played baseball in the same

Chain O’ Lakes Stadium after the Boston Red Sox went back north along with all of those snowbirds. A bunch of us kids would go to the day games with gloves in hand competing and running to catch any and all foul balls, hoping to get at least one. I thought I was the smartest of them all. I would stand in the back of the bench seats able to run anywhere fast. I stood behind an older man from Boston that would shake a cowbell when we needed a home run. “In the trees!” He chanted as the batter stood at the plate. “In the trees!” he would say again after a swing or foul tip. I would look out past center field and dream of someday myself hitting that home run in to the orange grove past the scoreboard. “In the trees!” The man yelled a third time and sure enough, when the batter did hit one the old man would stand up shaking that cow bell yelling through his cigar, “Way to go! Bring ‘em all home!” If he saw me behind him, he would turn, smile and shake his hands, patting me on the shoulder and would say “Hey kid did you see that? How about that? Right in the trees like I said! I love baseball don’t you? You could do this someday, you know you could.” I did know I could, but I was still hoping for the ball to come my way so I could catch it and get it signed by one of the players. Kids were allowed to run the bases when the game was over; the same bases that the big leaguers had just played on. We sprinted all the way to home plate, sometimes twice and even got to slide. The umps would have a fun time with us too. They made the “safe sign” if we slid well and the “thumb up out sign” if we slid badly. The ball players would coach us a bit as we ran and would give some lucky kid broken bat and a ball or two. I got a few bats and caught my share of foul balls back then. Some days after the game when I was waiting to be

picked up, I would run out to the orange grove and look for a home run ball under the trees in the sand. I never did find one but I always had a feeling some other kid had beat me to it. It was always a fun day. My parents would let me buy a Coke and have a hot dog or two. If I got thirsty after that there was a water fountain right behind where I stood and could get a quick drink not missing a minute of the game. Walking toward the peach trees, I suddenly got the smell of school ending soon and summer break coming with lots of horse riding in the lake and bike riding to Winter Haven Mall. It had me grinning again. I turned toward Sally, pointed and said, ”There it is; that’s the memory, that’s the smell- the vine growing up and over their fence is Jasmine.” I remembered Jasmine grew on the fence at the baseball stadium too. It was full of white little flowers coming out of lush green vines from the hidden fence. The smell of Jasmine is everywhere at this time of the year. We did pick some perfectly ripe Florida peaches and a couple of beautifully colored lemons. When we got home, Sally made some whipped cream and we had a nice Saturday afternoon dessert looking out across Eagle Lake deciding where we should plant our own Jasmine.

Making Life Better for Others The arts have been a fundamental part of Executive Director and Chief Curator at the Polk Museum of Art at Florida Southern College, Claire Orologas’ life since childhood. “My mother was a ballet dancer. Our house was always filled with music. My father had a wonderful voice,” she remembers. Claire was born and raised in Warren, Ohio in a portion of the state known as the “Steel Belt.” After living in Greece for a few years, the family moved to the St. Petersburg/ Clearwater area in the 1970s. She grew up in the Greek Orthodox Church surrounded by Byzantine art and said of her time spent living in Greece, “I was able to experience the rich artistic history of Greece first hand. It was incredibly inspiring.” Her profession comes honestly to Orologas. Not only were her grandparents “gifted in creative endeavors,” a relative on her maternal grandmother’s side was the amateur archaeologist to first discover the Minoan ruins of Knossos in Crete. “Sadly, all of his records and specimens were destroyed in an uprising against the Ottomans, but he is given credit for his work before Sir Arthur Evans carried out the important excavations for which he is so well known,” she explained. At Miami of Ohio, Claire studied studio art (drawing and painting) and art education. She went on to receive her master’s degree at Wright State University in Dayton, Ohio. Orologas later pursued her graduate studies in art history while working in the curatorial department at the Harn Museum of Art at the University of Florida.

ART, THE ECONOMY, AND EDUCATION
Claire Orologas has been the Executive Director and Chief Curator for the Polk Museum of Art (PMA) for just over seven years. She received a call about the position while working at the Smithsonian’s Freer and Sackler Galleries in Washington DC. Claire said, “I had been thinking about moving closer to my family by that time, but I also wanted the position and the institution to be the right fit. It certainly has been.”
The arts aren’t just stimulating and enjoyable, they are vital. They have a direct impact on the local economy and education says the PMA executive director. Citing an economic impact study carried out by Americans for the Arts and the Polk Arts Alliance last year, Orologas explained that the arts generate $46,589,847 in Polk County annually.
Her job entails a little bit of everything – financial management, program guidance and oversight, staff support, fundraising, donor cultivation, strategic planning and management, working with their Boards, advocacy and community relations. Claire explained her delight with her career, saying, “There is nothing like working with the right people in a productive and healthy work culture that is focused on making life better for others.” Also impactful to the executive director is seeing the mission of “making life better for others” be carried out through visual arts. Claire elaborated, “When I see people become curious, moved, thrilled by, learn from, or somehow affected in ways that are expansive and meaningful through their engagement with works of art and our programs, that is what means the most to me.” One example of this was an exhibition at the museum years ago about the passage of time. A couple sat and observed the exhibition knowing that the husband didn’t have long to live. A poignant story, Claire said, “They shared that experience with me and it was beautiful.” The museum recently had a program based on the exhibition SUN + LIGHT, Charles Edward Williams’ works based on the civil rights mug shots of the Freedom Riders. “It was incredible to experience personally, but also to observe our visitors taking in what the artwork meant and the experiences that the Freedom Riders went through to create a more just society for everybody,” she said. OUTSIDE OF THE MUSEUM When she isn’t curating an exhibit or managing the museum, Claire loves driving back roads, hiking, and clearing brush and planting gardens at her family home in rural North Central Florida. She says, “One day I’d like a couple of donkeys, some chickens, and probably some goats to keep the brush on our property in check.” She also loves exploring Greece and is interested in “issues of leadership and workplace culture.”

The return on investment of the arts in Polk County is $9 to $1 return to local and state treasuries. Engagement in the arts leads to higher graduation rates, general academic achievement, and greater development to “creatively work through problems, and are better prepared for the workforce,” she explained. “It is also important to acknowledge that the arts are unique in stimulating the kind of curiosity in us that helps us learn; helps us to expand our understanding of the world; challenges us to reconsider deeply seeded assumptions; moves us, and makes us more empathetic toward one another – all of which strengthen our society,” said Orologas. Peebles Bar-B-Q A fixture in Auburndale for over 70 years, Peebles BarB-Q has fed generations of Polk County families. If you ask lifelong customers, they’ll tell you it’s more than the bar-b-q that makes Peebles a local tradition.
Peebles is closed July and August to refresh, repair, and repaint the building.
But, it’s also because of the family that’s been created through this culinary connection.
THE MEAT OF THE MATTER
Though it was 3 o’clock, a time you’d expect any restaurant to be in a lull, Peebles had a steady stream of customers arriving to pick up take-out orders along with diners sharing stories over a good meal.
Pork ribs, chopped pork, sliced beef, baked beans, coleslaw, and potato salad were the only items on the original menu. The eatery has evolved over its seven decades of operation while staying close to its roots – and keeping those coveted family recipes intact.
“We’ve got a great customer base,” said Dale. “When they don’t show up, we call them.”
The scent of savory smoke pervaded the restaurant – a small enclosed structure only separated from the outside by mesh screen windows. A sporadic breeze brought some cooling relief along with a new waft of appetizing smells from the bar-b-q pit which opens into the dining room, as Dale Strickland sat down to tell the Peebles story. 4 GENERATIONS OF HISTORY Dale and Marsha Strickland are the current owners of the bar-b-q hot spot. According to Dale, in 1947 Ellie and Gladys Peebles lived in a house next door to what is now, the current restaurant. At that time, people would bring Ellie meat and he’d cook it in his carport for them to take home. He eventually put picnic tables in the yard so folks could enjoy their meal beneath the generous shade of Australian pines. In the early 1950s, the Peebles built the original building where the restaurant now stands. They continued serving up the best hometown bar-b-q around out of that structure until the late 1960’s when they expanded, adding on the sides and front. When Mr. Peebles passed away, his sons Jerry and Ronnie took on the family business. In 1981 Dale Strickland, husband of Marsha Peebles Strickland joined the Peebles brothers in running the establishment and eventually took it over in 2010. Peebles Bar-B-Q has seen four generations of the family carrying on the torch. Today, three generations work there. Dale and Marsha are joined by their daughters Erica and Jessica, Erica’s daughter Hannah, along with cousins and people who’ve worked there so long they have become part of the family. Only open weekly, Thursday through Saturday, Dale explained, “As I understand it, Mr. Peebles when he originally opened it, was a custodian and a school bus driver for the school system. When he was off work there, he’d work here. Originally I think it was open Saturday and Sunday.” They didn’t want to be open on Sunday’s so they changed their days to Friday and Saturday, and when the brothers joined on, Thursday was added. Don’t be fooled, three-day weeks don’t mean an easy job. “There’s a lot of hours in those three days,” said Dale of the time that goes into preparing and smoking their county-famous fare. havenmagazines.com
The menu now includes more meat and side options as well as a dessert addition of banana pudding and monthly specials. Ribs and chopped pork continue to be patron favorites. It could be argued that North Carolina, Tennessee, and Texas run the gamut on bar-b-q with their individual takes on the southern culinary custom. Many bar-b-q restaurants find their stride by putting their twist on an homage to one of these states – not Peebles. When asked just what kind of bar-b-q is served up at the family-owned Americana eatery, Dale replied, “It’s Auburndale bar-b-q.” “I’d say it’s the old time bar-b-q,” he added. There is no gas involved in the cooking process. All of their meat is smoked over 99.9% Oak wood with Hickory and Pecan occasionally added to the pile. They don’t fuss over the meat either. The meat’s natural juicy flavor and smoky cooking method do the talking at Peebles. Ribs are seasoned only with salt while other meats have no seasonings while cooking. The only thing you’ll find sauce in that you didn’t add yourself is their chopped pork which is seasoned and finished off with bar-b-q sauce. The over 70-year old recipes and methods are so finger-licking good that the restaurant has a history of celebrity regulars. George Jones, Tammy Wynette, and Bernie Little were said to frequent it in the past along with visitors like Rosey Grier, Ricky Skaggs, and Red Skelton. Oh, what’s that? A secret menu item? “We also have sliced pork which is not even on the menu, you’ve got to know about that,” revealed Dale. Order it up the next time you stop in for a bite to eat! FOOD AND FAMILY Peebles seems to have captured some long lost nostalgic wonder for all those who have eaten there throughout the years. A usual customer, Keith, who comes every few weeks, says that his appreciation for Peebles comes from, “Knowing the people – it’s been here for a long time. It’s a family atmosphere, laid back, and the food’s really good too.” “People come here because it’s the old way,” posited Strickland. 30
That’s his favorite part of the job is going from table to table, visiting with old friends and making new ones. As we talked, a gentleman walked up and joked, “Don’t believe too much he’d tell you!” Dale retorted with a laugh, “Don’t believe anything he’d say!” The two, clearly old friends, exchanged niceties and the man explained that he was in his early eighties and has been coming to Peebles since he was just 10 years old. The people behind the pit also make up the heart of the establishment. People like Carla who has worked at Peebles for close to 18 years according to Erica, Jenny who has been with them for 35 years, and Lori for 10 years. Erica said, “If something happens we grieve together, we celebrate together. It’s like a big family.” WHO NEEDS A FORK? Dale served up a fine representation of what Peebles is all about – chopped pork, sausage, chopped chicken, and beef, with a side of sliced pork. Served on a paper plate, which is arguably the best way to enjoy bar-b-q, the meat was melt-in-my-mouth tasty. On the table was their dark molasses-hued sweet bar-b-q sauce and signature original bar-b-q sauce. Next to be tried were the ribs. We started out with forks like the dainty ladies that we are, but bar-b-q, especially ribs, are meant to be eaten messily. So, pinkies up, we tore into the ridiculously tender ribs which were complete with the occasional crunch from a tasty charred bit that had accrued from being in the smoke pit. The meats were joined by the usual southern accouterments – potato salad, mac and cheese, coleslaw, and baked beans which were all just as good, if not better than Grandma’s cooking (don’t tell her I said that). Hank Longo Thinks You are Incredible A snappily-dressed man with an electric energy about him, Hank Longo has taken his dreams and ran with them. He is in three Halls of Fame, worked on Prince’s limo (I’ll let him tell you that one), built his own log cabin by hand, written books, told stories, designed, created, and about a million other things one could do to have an incredible life. He is a National Water Ski Jump Champion and Record Holder. He performed a record-setting stunt on the tv show, “That’s Incredible” by water ski jumping over 14 Mastercraft Boats. Hank has had his own line of sportswear – Hank Longo Designer Sportswear and has designed and built many display exhibits like the Polk County and Florida Sports Hall of Fame and Museums, and is currently working on the Wisconsin Water Ski Federation and the USA Water Ski Foundation Hall of Fame Museums. An educational program that he’s been working on for 15 years, SOAR, seems to be getting its wings. With this program, Hank has set out to make his dreams, and yours, come true. EARLY LIFE Born in New York, Longo’s family moved to Michigan when he was six. Across the street in the rural subdivision they moved to was the lake where he learned to water ski. He eventually joined a ski club only 8 miles from his house known as “The Lake Oakland Ski Demons.” Continuing to ski in local state and regional championships, by winning the 1974 Michigan State Jump Championships, Hank qualified for his first National Water Ski Championship, where he placed 6th, followed by many other state, regional, and national wins. During spring break of his senior year of high school, Hank grabbed his skis and hopped on a Greyhound bus to Winter Haven to, “see the best skiers in the world.” At that time, Cypress Gardens was the “Water Ski Hollywood” of the world, according to Longo and seeing them ski was a dream of his. He had so much fun hanging out and skiing with the team, “As I got on the Greyhound bus going out of town, I said, ‘One day, I’m moving down here to Winter Haven, Florida,’” he said. After high school, he went to Eastern Michigan University and moved to Minneapolis a few years after graduating. He lived there for 18 years and owned a car stereo shop and gas station. In 1991 he had the opportunity to sell his business and move to Florida.

A NATURAL BORN STORYTELLER Hank was first emboldened to write by his mother, Gladys Longo Kind. “She knew that I was creative and that I liked to write, so she encouraged me to do all the things I loved to do,” he beamed. He started creating fairytales and telling them to his friends, his mother’s 4thgrade class, and soon other teachers approached him to do the same. “I knew the whole story before I ever wrote it down,” he said. His first story was called, “The Kingdom of Anybody” which he told for his speech class final exam and got an A+. Next, he started writing books. “Farmer Dilly and The Potato Who Wanted to be a Tree” followed by “The Yummy Cookie Company and the Bicycle Dream.” The later was about a boy who wants a bike, but his dad tells him he’ll have to earn the money. So, he starts a cookie company. “I started a cookie company with the fifth grade at Sacred Heart Elementary School in Minneapolis,” said Longo. They got the company statelicensed and use this to teach the kids how to start and operate a business. At the request of The Minneapolis Star Tribune, Longo broke down the basic principles of economics using the newspaper as a guide for how economics affects the world in a book called “Gravity Makes the Earth Spin, but Money Makes the World Go ‘Round.” Next was a wrestling comic book inspired by his work with Curt “Mr. Perfect” Hennig, called, “Golden Boy Headlock vs The Villain Vito Varmint” and a manners and morals guidebook, “The Golden Boy Headlock and Tiger How to be Cool Guide and Survival Tips.” SOAR EDUCATION One of Longo’s best friends and fellow skier stopped skiing so that he could teach his twin daughters the sport. With this focused guidance from their dad, the girls went on to be “the best women water trick skiers of all time,” according to Hank. “For them to be able to ski at that level, to be able to ski under such pressure… it just fascinated me how they could concentrate on that,” said Hank. He thought, “If you taught kids how to run a business at that age, they could do it. If they could compete at that level and handle all that pressure, why couldn’t they run a business or be whatever they wanted to be?” For the last 15 years, he’s been creating an education program called SOAR.

When he started teaching the program, Hank would hand the children a notecard and ask them to write down what they dreamed of doing and what they loved to do. He continues to be blown away by their eager responsiveness to the question. He earned a teaching certificate from the Polk State College Prep Institute for Teachers to better understand how to teach his program to students. Advertising from local business allowed Longo to print the first batch of mini books and give one to each of the students and teachers at Winter Haven High School, accompanied by a weekly video to go along with the lesson. “My Philosophy: I believe if you ask a student what they dream of doing and then structure their education with a blueprint and direction of how to accomplish making their dream a reality and encourage them to pursue their passions and to believe in themselves, they will be more engaged in their education and successful in making their dreams come true while in school and in their future after graduating from school,” he explained. Like his mother did for him, Hank wants to encourage these kids to believe in themselves. “I’ve come up with my new science that’s called Incredibleology. I’m an Incredibleologist and what I do is study incredible things. There’s something incredible about all of us,” said Longo. He delivered 2500 SOAR mini books to Winter Haven High School last fall and has them in Polk State College where his mentoring the Men’s Basketball Team. He is starting the program at Auburndale High School. One day, he’d like to see them around the world. He’s currently working to find a major sponsor to make expanding the program’s reach, a reality. The Best Kept Secret in Eloise Hundreds of cars pass by a small sign in front of a church in Eloise. “Angels Care Center” it declares with a drawing of an angel... truly, angels abound at this site. Every Tuesday, there is a sign out front with the words, “Clinic Open.” At 4 pm patients start lining up for free medical care. This is a free clinic for anyone needing medical assistance. If you have no insurance, earn under a certain amount, and live in Polk County, you are eligible. Volunteer Doctors from Winter Haven donate their time to treat those that show up. This all started with a dream. Janey and Larry Powell had a vision. Their church, Saint John’s Methodist, had access to the small building in Eloise. The couple had been at a meeting discussing the best use for it. Larry said, “You know what the people need in this area? Medical Care.” So began their saga. With no knowledge of the medical business, they began seeking answers as to how to make this a reality. Janey’s background was as a teacher in Polk county and Larry had worked as director of recreational activities and volunteer programs at Florida Southern College. Larry knew about fundraising and Janey knew how to convince people to volunteer. “God will provide the help along the way” was their mantra. With some guidance from Eugenia Barton, a very involved resident in Eloise who worked for the school system, they investigated the needs of the local community. It became evident that the area was underserved medically. They then needed someone to be a medical director and guide. Dr. Honer, from the Gessler Clinic, became the first director. Next, they needed a knowledgeable CPA to set up the paperwork for a non-profit which is no small feat. Janey’s student from the fifth grade many years ago, Steve Crisman, agreed to the task. The year of 2010 was spent jumping through the many legal aspects involved in a start up clinic for the indigent. Money was raised through private donations, local churches, and grants to finance the program. The building was renovated by Reggie Whitehead and many sub contractors.Through the help of donations, the building was paid off a month after it opened!

The big boost came from Polk County’s Indigent HealthCare Division. The money for this program comes from the half-cent sales surtax. This is where you may see your tax dollars at work! Angel Care is faith-based and actually partners with 12 churches. Larry Powell says, “We average 80 to 90 patients each month. In the eight years we’ve been serving we have had close to 10,000 patient visits.” Every Tuesday the lines form at four o’clock for “intake.” Volunteers take basic information and a chart is formed for each patient. When they come for follow up their medical history is there. Janey adds, “Each clinic day we need 12 to 15 volunteers- these include doctors, nurses, translators, intake counselors and receptionists.” The volunteers range from young nursing students, medical students, nurses (some retired, some still working), and many practicing physicians as well as retired physicians. Dr. Eduardo Torres has recently replaced Dr. Richard Honer as medical director. Some volunteers are translators for the doctors as many patients only speak Spanish. Members from local churches show up to help also. There is a great feeling among the volunteers that they are making a difference. There is joy in being able to help others and actually see the positive effect the health care makes on the patient’s lives. Winter Haven hospital, now under Baycare, does lab work and x-rays for free. Ultrasounds and MRIs are paid for with grant money from the county. At times, the patients may get help with the cost of prescriptions. One day a month is the Diabetic Clinic. Patients may have lab work done, be seen by a specialist, and be given the tools necessary to test themselves and be followed up as needed. The clinic has an Ear, Nose and Throat specialist who comes in as needed. The equipment for this speciality has been donated so many procedures are done on site. Not all specialties can be treated at the clinic but some issues may be referred out. For those needing help, it is worth the trip on any Tuesday afternoon to find out what is available.

Project Love is another program held in the same building. Those who have needs other than medical, may seek assistance. Project Love has helped families with uniforms for children, electric bills, bus passes, and with a food bank. English/Spanish classes are held here also. Monthly boxes are prepared with food and items donated by Publix and other sources. About 130 families are helped, 50 or 60 are senior citizens. After filling out an application showing family income etc. those eligible can pick up staples at the same site. This program is run by Eugenia Barton. Project Love is a sister ministry and is totally self supporting. “We are blessed to have over 200 volunteers serving Angels Care Center and Project Love. They come from all walks of life but they all have in common a beautiful heart that wants to help others and share God’s love.” Janey continues, “Angels Care Center motto is God’s people caring for God’s people.” Larry adds,”Project Love’s motto is ‘Sharing God’s Love, loving God’s people!’ We strive to carry this outing everything we do!” Between the two programs, the lives of many in this area have been enriched. Janey and Larry are showing that you can have a dream and make it a reality. Along with Eugenia Barton, and so many volunteers, there are truly Angels in the Angel Care Center. I BUILD When Amy told me about the feature for this month, I was immediately struck with the desire to share how bricks and building with different mediums, has influenced my life on many levels. It has made what we do here in Polk County make more sense and hit the nail on the head, in a Manifest Destiny sort of way. I grew up with a (still existing) sawdust covered woodshop in my basement. After getting degrees in Fine Arts and Woodworking, it was only natural that my raw talented parents had a full-time furniture making business (until they had me). They then moved on to careers in Building Design, Engineering and Sculpting. Needless to say, my mom was not one to let me paint her fingernails and my dad preferred to build birdhouses with me in the shop for playtime. They did however, indulge me in wearing the elaborate paper clothes and shoes I created for them when I was five to attend the movie theatre that I had transformed our living room into. Returning from my first day of Kindergarten, mom asked, “Sal, What did you learn?” I said, “So and so had on two different socks, Johnny’s T-shirt was on inside out and I didn’t like the teacher’s shoes.“ My formative years, I was pretty much focused on clothing but I also adored building with my Airport LEGO set. I also spent my weekends in the woodshop where I did a lot of pencil drawing on scrap wood with Buzzy our shop dog by my side. Dad had made the move from being self-employed to working for a major construction company in Pittsburgh. One snowy Saturday morning, the company was having a competition for the kids of the employees. The competition was building with LEGO and it was called, “Kids Build.” At the workstations, each child was provided with the same amount of LEGO and other mediums to work with. We got aluminum foil, string, paper, sawdust, popsicle sticks and rubber bands. Two hours were allotted to create. “Use all your Legos and three additional materials, build an innovative playground that can be environmentally friendly.” The clock started ticking. When time ran out, judges went around the room interviewing us and rating what we had created. Then, they came together and decided whom the “Expert

Builder” was. I was up against the company owner’s two sons (that were destined to become the next “engineers of the world” and LEGO fanatic children that had every LEGO kit sold by Toys R’ Us, they were mostly boys. Two hours of building and two hours of judging later, the results were in. Who won the “Kid’s Build” competition that snowy Saturday afternoon in 1993? Yours Truly. I won. I beat ‘em all. I’m not quite sure that I had built the best structure but what I can tell you is that I had built the best concept and story. The judges probably spent the longest time with me listening to my “vision.” Being an only child, playing often alone, we tend to get overly creative ending up building and overbuilding something different than others. Can’t remember what I won but… I remember being proud of myself but more so for my dad in front of his coworkers. I could see a peek of him grinning through his beard. Something even bigger had come out of that day. Besides the fact that my parents probably had restored hope their daughter would be an architect and the whole, “girls rule boys drool” thing… I’d won my first commission. A week later, the head of the “Kids Build” committee called up my mom and said that the judges were really impressed with my building and they had also made a note of something else. The foil clothing that I had tailored for my “mini-figure environmental park goers” was top notch. Highlighting my design diversity, they’d decided that they would like to hire me to design the T-shirt for next year’s LEGO “Kids Build” Competition. Fast Forward… I designed the T-shirts and won the competition again the next year! (The owner’s sons were still just as shocked) especially since they had been practicing to beat me. I eventually took more Architecture Classes and tried to love it, but ended up getting a degree in Fashion Design and Merchandising. To make up for it, or in an attempt at balance, I married a fashion model that is also a carpenter like my parents. Nando and I create, incubate, design and decorate together. We design a variety of items from T-shirts and apparel to interior decorating and working on Films.

The point of my story is the boomerang. We had managed to make our way back to Winter Haven where Nando grew up and start an apparel company embracing the town and the history. (Clearly, I’ve never gotten the T-shirt designing thing out of my system!) One afternoon, we were hanging out on Central Avenue. Two women came up to us and said, “We love your T Shirts.” We said, “Thanks! They are our designs and our local brand.” Their response was, “Wow! Well, we are the buyers for LEGOLAND Florida Resort and we love Local. It would be great if we could have y’all possibly design some T-shirts for us to sell at Legoland.” I got chills, was kind of speechless and then managed to say, “I love LEGO! Oh my gosh, that’s awesome. You know, I already have a design that I’ve been working on for a very long time now…” 24 years later… Nando and I found ourselves presenting a T-shirt to LEGOLAND Florida Resort that says “KIDS BUILD” and another that said “I BUILD.” Hence the Boomerang… We are right back where he grew up and I was right back designing LEGO T-shirts again. Our guests will have so much fun on all three rides, but the land’s marquee ride, THE LEGO MOVIE Masters of Flight encompasses the only 180-degree turn on a flying theater in the world.” THE LEGO MOVIE Masters of Flight takes guests on a suspended ride aboard Emmet’s Triple Decker Couch surrounded by a full-dome virtual screen, giving the

sensational feeling of flying through a world created completely from LEGO® bricks. Unikitty’s Disco Drop takes guests through a rainbowfilled journey based on Unikitty and her many moods. Once on the ride, guests will swoop to the tiptop of Cloud Cuckoo Land, then drop, spin and bounce back down to earth in sync with Unikitty’s wide range of emotions, creating a thrilling and frenzied experience. At Battle of Bricksburg, the only water ride at LEGOLAND Florida Resort, riders are challenged to stop DUPLO aliens from invading and stealing LEGO bricks by spraying water at targets from their boats. The riders aren’t the only ones who can enjoy playing in the water, outside of the ride will be water cannons for guests to spray and help the riders save the day. Guests can also climb, slide and explore a space-themed playground structure inspired by Benny’s spaceship. Once you’ve worked up an appetite stopping aliens, riding on flying couches, climbing on spaceships, you can eat everyone’s favorite food, tacos! In Bricksburg, it’s “Taco Tuesday Everyday!” Refuel at the restaurant where every day is a fiesta! Tasty tacos inspired by THE LEGO MOVIE characters, sweet treats and cold refreshments come together to build a meal sure to satisfy any hunger.
To continue the fun beyond the Park, guests can enjoy the ultimate vacation (or slumber party) just steps away at LEGOLAND® Hotel in the new THE LEGO MOVIE themed rooms.
