This season, we’ve turned our focus to the natural world around us. From the soil to the sea, we ‘re celebrating the beauty of Mother Earth and putting a spotlight on the businesses doing more to further the future of sustainability.
Morgendagens Grøntsager (Tomorrow’s Vegetables) is an organically certified farm producing vegetables, herbs, edible flowers and honey. The farm is run by Lars Benko who was born and raised on the Tomorrows Vegetables farm, Drastrup Østergård and has grown up surrounded by a culture of homegrown produce. From a young age, Benko harvested fresh berries and vegetables from his home, with potato digging and collecting fresh eggs an integral part of daily life on the farm. A born-and-bred champion of sustainability, Benko realised that not everyone has the time and opportunity to ‘grow their own’, which led to the creation of Morgendagens Grøntsager. The farm provides the highest quality, fresh and nutritious vegetables to local restaurants and farm visitors.
Benko is passionate about transparency in agriculture and food production and sees it as his mission to provide more insight into vegetable production and cultivation. Morgendagens Grøntsager strive to grow crops of the highest quality, both in terms of taste, texture and appearance. The secret to this? Healthy and nutritious soil. No
