Cauliflower is one of the cruciferous vegetables which means it is nutritious, delicious and can even make a perfect healthy substitute for rice and pasta, as we all know, rice is a base in most of the delicious meals and recipes out there, however, rice and specially white rice lacks any nutritional value while packing lots of calories and carbs, so looking for healthier substitutes that would benefit our bodies and still taste as delicious sounds more convenient.

The good thing about cauliflower is that, it can literally replace rice in any recipe with only 30 calories per cup and 6 grams of fiber while a regular cup of boiled white rice provides about 130 calories and no fiber at all. First step is to roughly chop your cauliflower using a knife, you can use the florets only if you wish, one medium size cauliflower should be enough to yield about 5 cups of rice. Second step toss those peices if cauliflower in your food processor and get them to rice or coscos size pieces. In a large skillet, spray a nonstick spray and cook your cauliflower for 8 minutes with regular stirring, and there you go, you have your cauliflower rice. You can use this rice as a side dish with your favorite curries, Chinese and you can even use it to make your low calories fried rice using more tasty vegetables and chicken or shrimps.
