The Green Chile Tradition The chile pepper is one of New Mexico’s state vegetables, and is referenced in the New Mexico state question “Red or Green?”
Chile peppers are grown all over New Mexico, and are a lifestyle ingredient for New Mexicans! The majority of the chile is in the Southern part of the state, concentrated along the Rio Grande river. The New Mexico green chile pepper is five or six inches in length, and has a flavor described as lightly pungent similar to an onion, or like garlic with a subtly sweet, spicy, crisp, and smoky taste. The New Mexico chile peppers, which typically grow from a green to a ripened red, are popular in the cuisine of the Southwestern United States, the broader Mexican

The Legend of Bloody Maria Some argue the Bloody Mary drink was first created in a small New Mexican village with the remedies of Bloody Maria. Maria was a legendary healer and herbalist otherwise known as a Curandera.Her clothes appeared blood stained with nectars of fruits and vegetables used for her healing remedies. As Maria’s legend grew beyond the community, she is remembered for the Bloody Mary creation and honored with every cocktail.

How To Use Your Leftover Jars: Bloody Maria Mix was created in a jar for freshness, and functionality. Many of our used jars have a second life as they transform to demonstrate one of the 3 R’s Reduce Reuse Recycle. REDUCE

Bloody Maria jars are often saved, and used as glassware for cocktails in many bars and restaurants throughout the region. The jar is dishwasher safe, and the labels are waterproof. As the product is used, the jars can be replaced to keep the vessel looking great for your next event. The size of the jar is perfect for bloody mary bars or a Michelada beer cocktail.
If you do not want to use jars for drinking glasses or vases, donate them to a thrift store so crafters or home canners can claim them. Bloody Maria jars, aka canning jars are a necessity when harvesting or pickling vegetables from your garden. Besides the most obvious uses, the jar can be repurposed as a candle holder, planter, baking kits, spice and bulk storage, seed storage, craft/ hardware organization, or change collecting!
Turning old glass jars into new ones represents a big win for the environment. New glass can be made with up to 70% cullet, so using recycled glass means less mining for new materials. It also means less energy (cullet melts at a lower temperature than brand-new materials); a longer life for glass furnaces; and reduced carbon emissions. Every 6 tons of glass that gets recycled saves 1 ton of carbon from being released into the atmosphere. Glass is one of the most common items included in curbside collection programs, although most communities require you to separate glass from other items for safety reasons.

Mix equal parts mayonaise with Bloody Maria Mix to make a perfect dressing for your stuffed avocados. 2. Add in your preferred fillers like garbanzo beans, crab, and tuna. 3. Top with a squeeze of lime and cilantro.

Bloody Maria Deviled Eggs Spicy Mayo Dressing recipe above Eggs 6 1. Hard Boil Eggs. Our method is to add cold eggs to a pot and cover with water. Bring to a boil. Once water is at a rapid boil, cook for 8 minutes. Remove from heat. Rinse in ice cold water. Peel when cool. Drink ~ Mix ~ Cook

2. Slice eggs in half. Remove yolks into a bowl. Mash with a fork and top with enough Spicy Mayo Dressing for desired consistency. Mix together. 3. Refill hard boiled egg whites with filling. Bloody Maria Spicy Hummus Garbanzo Beans/ Chick Peas 1 cup Bloody Maria Mix 3/4 cup Tahini 2 tsp Olive Oil 1 Tbsp Lime 1/2 - juiced Salt pinch 1. Blend together in a blender. You can subsitiute olive oil with water, lemon juice or more Bloody Maria MIx. The key to this recipe
Bloody Maria Baba Ganoush Eggplant 1 small Bloody Maria Mix 1/4 cup Tahini 1/4 cup Salt & Pepper to taste
3. Blend together eggplant, Bloody Maria Mix, tahini, salt and pepper. Chill and serve.
1. Pierce eggplant with a fork to allow steam to get to the meat of the eggplant. Bake at 375’ until skin is wrinkly, about 45 mins. Cool and seperate meat from skin into a bowl. A small eggplant yields about 1/2 cup to 1 cup of eggplant.
*Baba Ganoush is best when it can set a litte, so this is a great recipe for events where you want make-in-advance recipes!
2. Use a ratio of 2:1. If you have 1/2 cup of eggplant, use 1/4 cup mix. Adjust recipe accordingly. Tahini quanity is half the amount of Mix or as desired.
You can also get creative by adding in roasted peppers, chiles, roasted garlic, fresh herbs, & lemon juice too. Hummus is so easy to customize! Have fun!

Gazpacho Red Onion 1/4 cup Celery 1/4 cup Zucchini 1/4 cup Cucumber 1/4 cup Red Pepper 1/4 cup Bloody Maria Mix 1 cup Lime 1 - juiced Salt & Pepper Dice equal amount of veggies. Add Bloody Maria Mix, lime juice, veggies and blend. Save a small portion of the veggies to add to the blended soup if you want a thicker texture. Add salt & pepper to taste. Chill for an hour and serve cold. Top with avocado, crab, or shrimp.
For a fun party appetizer, add vodka & serve in shooters! Pickled Bloody Maria Cheese Camembert Cheese* 1 small Onion 1 medium to large Bloody Maria Mix 1/4 cup Garlic Cloves 8 Bay Leaves 3 Oil 1 Tbsp Black Peppercorns 1 tsp Thyme 2 Tbsp
1. Cut the cheese into bite size cubes and put into a lidded jar with all the spices and oil. 2. It may take a few experiments to see how much garlic, onlin and spices taste best to you. Start with the amounts listed above then shift the quantity. 3. Let the mixture marinate and soak for five to seven days, until it becomes very soft. Makes a great cheese spread. *Substitute with your favorite Brie.

Bloody Maria Grilled Wings Brining / Kosher Salt 1 cup Chicken Wings 2 pounds Bloody Maria Mix 1 jar Agave Nectar 4 Tbsp Garlic Cloves 4 Cilantro 1 small bunch Melted Butter 2 Tbsp 1. Mix salt and enough water to cover chicken, creating a brine bath. Brine chicken with or without skin 8 to 24 hours refrigerated then rinse in cold water before marinating.

Bloody Maria Chicken Cacciatore Chicken Thighs 2 pounds Bloody Maria Mix ~ 1/2 jar Onion 1 small Garlic Cloves 4 small Carrots 2 - diced Pepper 1 - red or yellow - diced Thyme 1 tsp dry or fresh Olive Oil 1 tbsp Salt & Pepper *Olives 1/4 cup (optional) Season chicken with salt & pepper. Sear the skin of the chicken thighs in a skillet on medium heat in olive oil. Cook just enough to brown the skin on each side. Set aside. Stove Top: Saute over medium heat in olive oil the garlic, thyme and veggies until onions are transparent.

Add seared chicken to pan. Cover with Bloody Maria Mix. Cover and simmer on low heat, stirring occassionally, for 30-40 mins until meat is falling off the bone. Slow Cooker: Add seared chicken, garlic, thyme, diced veggies and Bloody Mary Mix, using enough to cover everything in pot. Cook on Low for 8 hours. Medium for about 4 hours. High for about 2 hours - until meat is falling off the bone. Add olives during the last 10 minutes. Garnish with herbs. *Great freezer friendly meal.*

Important: let marinate for the full 3-4 hours as this is how it cures the fresh seafood. Serve over a bed of sliced romaine lettuce.
1. Cook, peel & devein shrimp. Finely slice fresh fish and scallops. You can use any of these by themself or a combo of all 3 together.
1. Dice your veggies. Add ingredients to large pot. Cook on a low simmer for 2 hours until meat is tender and fully cooked.

Garnish with radish, lime, and cilantro.

Cocktail Salad Bloody Maria Mix 1 cup Shrimp 1 pound Cucumber 1 Avocado 1 Red Onion 1/4 cup diced onion Lime 1-2 juiced Cilanto 1 tsp or as desired Salt to taste 1. Clean, devein, cook and peel shrimp. 2. Chop all ingredients. Combine in a large bowl and mix it up! Add more onion if you want, add cilantro and salt to your desired taste. 3. Refrigerate for about an hour, if you can wait that long! 4. Salt the rim of your favorite glasses before you serve it up, if you’d like to make this cocktail salad pop!

Bloody Maria Mix 2 cups Ketchup 4 cups Tomatoes 1 16 oz can / 4 small Garlic Cloves 6 Chipotles in Adobo 1 small can Molasses 3/4 cup Worcestershire 1/2 cup Liquid Smoke 1/2 cup Brown Sugar 2 cups Black Pepper 1 Tbsp Garlic Powder 2 Tbsp Onion Powder 1 Tbsp Celery Seeds 1 1/2 Tbsp 1. Combine all ingredients in a large sauce pan, simmer on medium heat for 2 hours, stirring occasionaly. 2. Remove from heat, cool, and puree with immersion blender or food processor.

Bloody Maria Chili Ground Beef 2 pounds Cooked Beans 2-3 cups Bloody Maria Mix 1 jar Onion 1 medium Celery 2 stalks Garlic Cloves 2 Tomato 2 cups diced or 2 cans crushed tomatoes *Tomato Sauce 1 can 1. Dice onion, garlic and celery, ground beef. Season with salt and pepper. Cook until beef is browned. 2. Add Bloody Maria Mix, cooked beans of your choice, and tomatoes. Simmer on low for 45 mins. Use extra tomato sauce if needed for your desired taste and consistency.

Simply add chili to a skillet with your favorite additions. Once hot, create small divots and add a fresh cracked egg in each. Cook for a 2-4 minutes to cook eggs. Bloody Maria New Mexican Rice Rice 1 cup Bloody Maria Mix* 1/2 cup Oil 2 tsp Frozen Peas & Carrots 1/2 cup 1. Toast rice in oil until the color changes to a light brown as you keep stiring so it doesn’t burn. 2. Add water per the recipe depending on what rice you are using. *Omit 25% of the water and add Bloody Maria Mix. If recipe calls for 2 cups of water, add 1 1/2 cups plus the 1/2 cup Bloody Maria Mix to make the same amount of liquid. 3. Add in frozen vegetables and cook until the liquid is absorbed.

Rarebit, known also as Welsh Rabbit, is a vintage savory beer and cheese recipe served over toast, slightly similar to a fondue. It makes a great dip for fresh cut vegetables and chips. It’s also is a great addition to nachos! Rarebit is made with Worcestshire sauce, some seasonings, beer, and an egg yolk. Okay, it’s a little more complicated than that, but the combo of melted cheese and Bloody Maria Mix is a close match. Here, we use it on top of our shrimp tacos!

Bloody Maria Stuffed Peppers Bell Peppers 3 Ground Beef, Turkey or Meatloaf Blend 1 pound *Black Beans - 2 cups Grain Of Choice 2 cups cooked Bloody Maria Mix 2 cups 1. Cut and clean bell peppers. Bake in oven for 15 mins to steam the peppers before filling. 2. Cook ground meat/ beans and grain. Mix together so you have an even mix of 1:1 or even amounts of all 3.

Stuffed Zucchini Green Zucchini Squash 1- 2 medium Ricotta 1 cup Mozzarella 1/2 cup shredded Parmesan 1/4 cup Italian Seasoning 1/4 tsp Garlic Powder 1/4 tsp Onion Powder 1/4 tsp Salt 1/4 tsp Pepper 1/4 tsp Egg 1 Bloody Maria Mix 2 cups Mix cheeses and seasonings together with the egg to create a filling for your zucchini. Rolled Zucchini: Use a microplane to create 1/4 inch thin strips to use to roll the filling. Add a small amount of Mix to your pan. Place rolled zucchini in pan and top with filling! Cover and Bake at 375’ for 30-45 mins depending how thick you cut the squash. Zucchini Boats: Cut zucchini in half. Remove any large seeds but you don’t have to go crazy scooping. Bloody Maria Orange Margarita Bloody Maria Mix 1/2 cup Orange 1 juiced (1/2 cup) Lime 1 - juiced (1/4 cup) Tequila 2 Oz Jalapeno - sliced as garnish 1. Juice the orange yielding about 1/2 cup of juice. *Substitute Orange Juice if desired. Juice the lime yielding about 1/4 cup juice. 2. Add orange juice, lime juice, Bloody Maria Mix, Tequilla with ice in a shaker.
3. Strain into the glass of your choice with a salted or sugared rim. Garnish with jalapeno slices, orange wedge and lime wedge.

There are even images where this cake was baked inside a soup can! It’s also known as Mystery Cake and has had variations that include dried fruit and nuts baked in. Today, many of us have had a similar carrot spiced cake, and now can enjoy a different twist on this moist seasoned cake.

Not only does adding our all natural mix give you more nutrients but the spicesn including New Mexico Hatch Green Chile, make a fabulous cake! When you want a sweet, spicy and easy cake mix, this is your new (or old) go-to!! What makes it even better is the ability to top with simply a light dusting of powdered sugar or better yet with cinnamon & sugar, giving it a familiar churro flare.

Bloody Maria Rosy Rock Cookies
Bloody Maria Tomato {Soup} Cake Flour 1 1/2 cup Oil 1 Tbsp Sugar 1 cup Eggs 1 Bloody Maria Mix 1 cup Baking Soda 1 tsp Salt 1/2 tsp *Cinnamon 2 tsp *Nutmeg 1/4 tsp *Ground Clove 1/4 tsp 1. Mix ingredients together. *You can omit and vary the spices to your desired taste. You can also use pumpkin spice blend in place of individual spices. 2. For Cupcakes: Scoop and fill 3/4 of the cups using cupcake liners. Bake in preheated oven at 350’ for about 20-25 minutes. For Cake: Bake at 350’ in a greased cake pan for 35-45 mins depending on the size of your pan. Use a toothpick to test. 3. Sprinkle with powdered sugar. Or mix 1 Tbsp sugar and 1 tsp cinnamon and dip cupcakes in cinnamon sugar mix. Or make your favorite icing! Cream Cheese Icing is the favorite, but a mocha butter cream also works and is so good! Bloody Maria Popsicle Bloody Maria Mix 2 Oz *Spirit - 1/2 - 1 Oz to taste 1. Freeze Bloody Maria Mix in your favorite popsicle mold for 6+ hours. Remove, salt and enjoy! 2. Add in Spirit or choice to make these “Adults Only”. Vodka & tequila work well!
