BATTER APPLICATORS Uniformly apply tempura, standard and light batters, along with marinades of different viscosities, to all product surfaces. SureCoat速 Universal Batter Applicators are uniquely designed for quick conversion from submersion to top curtain coating. Batter underflow is also available, as are dip or top-flow only and custom designs. Continuous filtration removes lumps. Thorough cleaning is simplified with tilt-up conveyors and easily accessible batter contact parts.


BREADING APPLICATORS Use the same breading applicator to coat a wide range of products. With the simple change of the top hopper, apply flour pre-dust, Japanese crumb, and other free-flowing and non free-flowing breadings. Gentle handling reduces crumb breakdown yet quickly transports heavy breadings. Adjustable top coating, variable bottom density using a patented lifter conveyor, interchangeable hoppers, sifter conveyors, and other features give you precise control of coating quality. Customized or standard, all breading applicators accelerate productivity and trim the costs of maintenance and sanitation. • • • •

FRYERS Heat and Control provides more choices when it comes to selecting a new fryer. Direct and indirect-heated fryers are individually engineered to fit the required process. Choose from thermal fluid, steam, natural gas, oil, or electric heating. Conveyor systems designed to fit process requirements, tempura and Teflon infeed sections, multiple temperature zones and a variety of continuous oil filters can be included. Optimal product handling, uniform oil heating and flow control, efficient fines removal, fast oil turnover and CIP sanitation are all part of the fryer package that produces the highest quality product with a long shelf life. • • • • •

OIL MANAGEMENT Superior oil quality produces the best fried foods with a long shelf life. Every component of a Heat and Control system is designed to maximize oil quality. Advanced control of oil heating, filtration, cooling and storage, with rapid oil turnover rates, results in superb oil quality for the freshest product possible.

Heating Whether the fryer is direct or externally heated, a variety of heat exchangers are available using natural gas, thermal fluid or steam. All deliver gentle, yet rapid oil heating and extremely responsive temperature adjustment to changes in product load to maintain consistent product quality.

Cooling Gain additional production time and cooking control by quickly cooling oil before sanitation. Automatic oil cooling systems reduce thermal damage to the oil and minimize delays between production and sanitation.

Filtration Rapid removal of product particles is essential to preserving oil quality. This also eliminates unsightly specks on product and reduces fryer cleaning time. From slipstream fines removal to filtration of the total system oil volume once every minute, a variety of oil filters are available to remove large and/or sub-micron size particles from our continuous fryer systems.




FRYER SUPPORT MODULE Significantly reduce the time and cost of fryer system installation by centralizing oil pumps, filters, valves, piping and other components on a Fryer Support Module. Fully piped and wired to single-point utility connections, simply set the module in place and connect the fryer. This module simplifies maintenance, reduces piping runs and floor space requirements.

NUGGET FORMER Create naturally shaped meat nuggets and crumbles for pizza topping, soups, and taco fillings. Specially shaped extrusion holes produce crumbled nuggets from beef, pork, poultry or meat blends. The Nugget Former mounts on the infeed conveyor or feed end of the cooking system for easy integration and maximum versatility.



CONTROL + INFORMATION SYSTEMS Rely on the same company that designs and builds the processing line to also supply operating and data management controls. As a certified systems integrator and hardware supplier, Heat and Control provides user-friendly controls utilizing widely available industry software. INFORMATION THAT MATTERS Information That Matters速 (ITM) delivers production line information metrics in real-time to plant floor dashboards, computers or smart phones.
