Burgess, much like all of you, is ready to embrace a holiday season renewed with crowded dinner tables, festive family gatherings, and plenty of laughter and love. Not too long ago these gleeful images evoked nostalgia. Today, they emit the revival of old traditions. Burgess is here to help you celebrate those traditions, as we always have, and as we always will.

The following pages include a collection of bespoke offerings meant to be enjoyed at those festive celebrations. From family to neighbor to friend, you’ll find in these pages a Burgess wine for every guest at your table. It seemed only right to us that while you rejoice in the season’s merriment you are able to enjoy a wine that was made in the same spirit.

This year, it is not only the holidays that Burgess is celebrating. 2022 marks our 50th anniversary! Meghan and I invite you to celebrate this milestone with us and raise a glass to 50 years of winemaking tradition and legacy in the Napa Valley. Contadina, Italian for female farmer, is our way of paying tribute to the original Swiss-Italian farming families that first planted our Howell Mountain slopes to grapevines in the 1870s. Often led by their strong matriarchs, these families laid the foundation for Burgess. Their heritage, tradition, and legacy are carried forward today by our cherished Winemaker, Meghan Zobeck.

HERB AND BUTTER ROASTED BEEF TENDERLOIN SERVES 6 | TOTAL TIME: 4 HRS

A MEAL TO TREASURE

Gathering at the holiday table is an annual tradition that we look forward to each year. It brings family and friends together to celebrate and share the magical warmth of the season. Our recipe for a slow-roasted beef tenderloin creates an unforgettable meal to treasure. This decadent and delicious roast also pairs beautifully with Burgess Cabernet Sauvignon.

It would be our honor to have our recipes and wines grace your table and be part of your cherished holiday traditions.

INGREDIENTS FOR THE BEEF TENDERLOIN

• 1 3-pound trimmed beef tenderloin

• 1 to 2 tablespoons kosher salt

• 1 tablespoon freshly cracked black pepper

• 1 bunch of fresh sage

• 1 bunch of fresh rosemary

• 1 bunch of fresh thyme

• 1 fresh pomegranate

• 6 tablespoons unsalted butter for melting

INGREDIENTS FOR THE CARAMELIZED ONIONS WITH THYME

• 4 tablespoons unsalted butter

• 2 sweet onions thinly sliced

• 1/2 teaspoon salt

• 1/2 teaspoon chopped fresh thyme

INGREDIENTS FOR THE HORSERADISH SAUCE

• 1/2 cup sour cream

• 1/4 cup heavy cream

• 1/4 cup prepared horseradish

• 2 tablespoons mayonnaise

• 1/2 teaspoon Dijon mustard

• 1/2 lemon, juiced

• Salt and pepper to taste

• 3 tablespoons freshly chopped chives

INSTRUCTIONS FOR THE BEEF TENDERLOIN

1. Place the tenderloin on a wire rack on top of a baking sheet. Season the meat liberally with the salt and the pepper. Place the sheet in the fridge and let the tenderloin sit uncovered overnight.

2. Pull the beef from the fridge at least an hour or so before you start roasting it.

3. Preheat the oven to 225°F.

4. Place the beef (still on the baking sheet) on the center rack in the oven and roast for 2½ to 3 hours or until the internal temperature reaches 120°F to 125°F. Remove the beef from the oven and set it aside for 10 minutes.

5. During those 10 minutes, place the butter in a saucepan to melt so it is slightly brown.

6. While the butter is melting, adjust the oven rack so it’s about 6 inches from the broiler and heat the broiler to high.

7. Spoon some melted butter oven the roast and place it on the rack. Turn the beef every 30 seconds, continue to add butter as turning, until the outsides are golden and browned. Do this for about 2 to 3 minutes total. Remove the beef from the oven and drizzle with more melted butter. Let the beef rest for another 10 minutes or so before slicing and serving with the caramelized onions, pomegranates, and horseradish.

INSTRUCTIONS FOR THE CARAMELIZED ONIONS WITH THYME

Note: this part takes about an hour to complete.

1. Heat a skillet over low heat and add the butter.

2. Add the onions and salt and stir. Cook, stirring occasionally, until the onions caramelize and turn golden, about 45 to 60 minutes.

3. Stir in the thyme after 45 minutes.

INSTRUCTIONS FOR THE HORSERADISH SAUCE

1. Whisk all ingredients together (aside from about 1 tablespoon of chives for topping).

2. Let sit in the fridge for 30 to 60 minutes.

3. Top with fresh chives and serve.

BAKED BRIE WITH FIG JAM AND HONEY

TOTAL TIME: 50 MINUTES

A SENSATIONAL HOLIDAY HORS D’OEUVRE

Holiday celebrations deserve a grand beginning.

Our easy recipe for baked brie with fig jam and honey makes a sweet and savory combination for an impressive start to your holiday gathering. This exquisite dish finds an ideal companion in our Burgess Chardonnay.

INGREDIENTS FOR THE BAKED BRIE

• 1 sheet puff pastry

• All-purpose flour, for dusting the work surface

• 8 oz brie wheel

• 2 tbsp fig jam

• 2 tbsp chopped dried apricots

• 1 tsp thyme, plus extra for garnish

• 1 egg beaten with 1 tsp water

• Coarse salt

• Honey FOR SERVING

• Crackers

• Sliced apples or pears

• Extra fig jam

• Fresh figs

INSTRUCTIONS

1. Preheat oven to 400°F with a rack centered in the oven. Ready a glass pie plate or line a baking sheet with parchment paper.

2. Sprinkle some flour onto a clean work surface. Lay the puff pastry on the work surface and unfold it. Using a lightly floured rolling pin, roll the pastry out a little in all directions, starting from the center. You do not need a huge piece of pastry; you are just looking to thin it out a little so it bakes more evenly.

3. Using a serrated knife, slice the top and bottom rinds off the brie wheel but leave the outside rind. This will prevent the brie from collapsing in the oven.

4. Place the brie wheel in the center of the pastry. Trim the edges of the pastry into a square, leaving an approximately 2 ½-inch border between the brie and the edges of the pastry.

5. Spread the jam over the top of the brie. Add the apricots and thyme. Fold up the edges of the pastry around the brie toward the top center and seal the folds with a little water on your finger. Brush the top of the pastry with some egg wash.

6. Transfer the wrapped brie to the pie plate or baking sheet (no need to grease). Sprinkle with a couple pinches of coarse salt.

7. Bake for 35 minutes, rotating halfway through the baking time, until the pastry is puffy and deep golden brown. Transfer the hot baked brie to a serving board or platter. Drizzle with honey and sprinkle with extra thyme. Serve with crackers, sliced apples, fresh figs, and extra fig jam.
