Autumn 2014 Cooking Courses (1) Sushi Hands On Workshop Wednesday 5th November Guest chef Sofia Warsaeus is hosting an introduction to sushi at Delicioso from 5-9pm. Sofia Warsaeus trained as a chef in Switzerland and has spent the last 14 years working as a chef on super yachts over 50m. Trained with a Japanese sushi chef in London and has for many years prepared Japanese food for owners and charter guests. The course will cover: • Introduction to sushi preparation Equipment and ingredients needed Sourcing and selection of fish needed Filleting of the fish for sushi preparation Sashimi, nigiri and maki The art of sushi rice making Preparation of sushi Rolling maki, futimaki, inside out roll and rainbow roll Sashimi Nigiri Miso soup A selection of Japanese dipping sauces Tempura prawns Presentation and garnishing Usage of authentic Japanese tableware. Small Foods Hands On Workshop Wednesday 12th November 2014 Guest chef Sofia Warsaeus is hosting a hands on workshop "small foods" at Delicioso from 5-9pm. An evening making "small dishes" both sweet and savoury, incorporating the use of creative presentation as its a well known fact that you eat with your eyes first! These dishes can be served as a bite size snack... Canapé..... Tapas starter or dessert or as part of a buffet selection. In the workshop, we will prepare up to 5 savoury and 3 sweet dishes. Below is a few of the tasters but not all... The Asian Tasters: Vietnamese salad rolls with a chilli dipping sauce Tuna tataki with wasabi peas and kimchi veg Thai fish cakes with a cucumber relish Sweet Tasters: Key lime pie two ways Chocolate tiramisu in shot glass She will share her knowledge regarding different presentation styles, using several types of tableware, explain the formulas and pass on hints and tips for professional looking food. Sofia's expertise has been gained through hands on experience over the last 14 years working as a chef / head chef on super yachts over 50m both private and charter. She has extensive experience in all cuisine and has cooked for a varied range of top end clientèle, varied both in nationality and expectations.
