A lot of your Instagram posts are about cooking and staying healthy. What are some health tips you can remind us of, as we move into the colder months? Try and be as physically active as possible: a 30-minute session on YouTube; perhaps a local pilates or yoga class where you can create community. For food, try to shop local, utilize ingredients that we have in the winter, and make cooking fun for yourself. Whether that's following a chef (online) or inviting people over to your house for a dinner party, I would stick to doing things that make you happy. Lastly, exposing yourself to light within the first 20 minutes of waking up helps with your energy and mood. Community and giving back is important to you. Can you share some specific initiatives that you’ve been a part of recently? During summer solstice this year, we hosted a yoga class and all of the proceeds from that class went to Kids Kottage, a family shelter. We’ve worked with the food bank in the past, and we also volunteer at Radius Community Health & Healing (formerly Boyle McCauley Health Centre), one of the most multidisciplinary clinics that exists in the city. It's for underprivileged populations who feel that they cannot afford these services elsewhere. One of us tries to volunteer once a month to provide care. It’s a beautiful community initiative and I'm so grateful to be a part of it.

Can you share some of your favourite luxuries? Food, in general, is a luxury item—like, good food. Going to the butcher and getting a beautiful cut of meat; buying the Malden sea salt; going to the nice restaurant. Food and experiences [related to that] would be one of my biggest luxuries. Next, accessories: I have to give a shout-out to Poppy Barley. They make a wonderful product and they're local! If you have a great pair of shoes or a great bag, it can make your outfit. If I’m using an item many times, then I don't mind investing more. And lastly, loving where you live. I’m okay with paying a little more to be in a neighbourhood that I love or spending a bit more on my house to make it cozy. Family and community are important to me, so I love when people come to my house and feel comfortable. A beautiful candle or pretty plates and cups—those things feel very luxurious to me, and they help me establish a safe and comfortable home for guests to feel welcome.

Fish, too, is plentiful and is sourced from around the world. The salmon selection alone can feature up to six species (wild and farmed) and is available both fresh and frozen. The sustainable Blue Atlantic salmon from Nova Scotia is a beautiful fish served at some of Edmonton’s top restaurants as well as the Fairmont Jasper Park Lodge. Ora King, a farmed salmon from New Zealand is another top-tier fish served in local establishments, including Japanese restaurants that offer sushi. The flesh of this fish is velvety-rich and flavourful. Wild BC salmon is a wonderful choice for pan-roasting or barbecuing on a cedar plank. Lobsters are popular this time of year, as well, with Tryon bringing in a few hundred pounds per week to keep up with customer demand. Crab, clams, scallops, prawns, and mussels round out the selection. Want to impress the guests? A seafood tower would do the trick. Northern Divine, a Canadian caviar from Sechelt, BC, is a hot ticket, too, in December. The briny little beads pair perfectly with bubbly (or vodka!). If high-calibre sturgeon roe is part of your festive menus or New Year’s Eve plan, then plan your purchase well in advance. Seafood and Bubbles Keeping the season merry and bright with perfect pairings Bubbles are an excellent choice of wine any time of year, especially so during the festive season. Quality seafood, historically, has been light on availability in Alberta stores, but over the past few years has become increasingly available, with both fresh and frozen products stocked at places like Effing Seafoods, Ocean Odyssey, and Fin’s at Home. If you’re tasked with planning a festive party or dinner menu, read on for some no-fail seafood and sparkling wine pairings.

Prosecco This popular bubbly is widely known as an aperitivo and is used to make classic drinks like the spritz, mimosa, and bellini. Its crisp, refreshing flavours and delicate bubbles pair well with everything from sweet treats and salty snacks to a variety of appetizers, mains, and even desserts. Prosecco comes in different sweetness levels, indicated on the label as extra brut, brut, extra dry, or dry. For Prosecco, brut has the least amount of residual sugar, whereas dry has the highest. This doesn’t translate to sweetness, but rather to creaminess in your mouth. Choose brut for seafood and salty dishes, and dry for desserts. Don’t pick up just any Prosecco though, look for a top-tier Valdobbiadene Superiore, like Jeio Brut Prosecco. Salmon is an excellent pairing with Prosecco—think mini bagel with cream cheese and smoked salmon, garnished with capers and red onion slivers. Jeio Brut Prosecco can be found in many fine boutique wine stores for about $24 per bottle.

Cava Cava is a sparkling wine made in the Penedes region around Barcelona, Spain. Being so close to the sea, pairing Cava with seafood is a given. Cava is made with indigenous Spanish grapes of macabeu, xarel-lo, and parellada, but made (like Champagne) with a second fermentation in the bottle. The flavours of brioche, biscuit, and meringue, coupled with bright acidity and marked salinity, make it an excellent choice to pair with fried calamari or fried anchovies. Cava is an excellent choice for those who want the same flavour profile as Champagne, but at a fraction of the price. The Augusti Torello Mata is a high-quality cava, with ageing of 24 months on the lees and available for around $28 per bottle.
Champagne Not every sparkling wine can be termed as Champagne. Only if it is made in the Champagne region of northern France can it be called this, and for many it is the crème de la crème of the sparkling wine world. It is often expensive and certainly a luxury item, but ‘tis the season to celebrate and maybe even splurge a little. For a truly decadent pairing, pick up a bottle of Krug Grand Cuvée and pair it with beluga caviar on blini, topped with a dollop of crème fraiche. Caviar can be ordered from your favourite fish merchant, and surprisingly, even from Amazon. Krug Grand Cuvée might set you back around $400 per bottle, but the caviar and Champagne combination is most assuredly a match made in heaven.

Scenic oil paintings, fine bone china, and other traditional heirlooms find their way more readily to thrift stores than they do to relatives' homes. Made well enough to survive the ages, yes, but out of place now in modern times. Ask former chef, Kevin Kent, about passing along something beautiful that’s made to last and he’s got the answer: any one of the handmade Japanese knives displayed in his Knifewear stores. Kent was working at St. John, the prestigious restaurant in Smithfield (London), under master chef Fergus Henderson when he attended a chef’s convention in the late 1990s. It was there that he became familiar with the unique craftsmanship of Japanese knives. Kent says that feeling the blade effortlessly slice into a tomato (like it was butter) was a life-changing experience. In 2007, he returned to Calgary and immediately plotted to import the knives. His sole intent was to sell them to other chefs and make some money so that he could afford more for his personal collection, but the reception and demand were so overwhelming that it became a full-time business, and Knifewear was born.

When asked what makes these knives so special, Kent explains that unlike machine-manufactured knives made in Europe or North America, these blades are handmade by Japanese blacksmiths whose family history of creating swords dates back 32 generations, to 1293. Post-war, these blacksmiths shifted their business from swords to straight razors and knives, with families refining their skill ever since. These craftsmen are involved at every stage: purchasing the steel, hammering it down, punching it out, polishing, sharpening, heat treating, and finally attaching the handle—each step of the process is done by hand. The technology used to make the best swords in the world 730 years ago is still implemented in making these knives today. Knifemakers also use this craft to produce the stunning and unique patterns created using Damascus steel. “That pattern you see [in the steel] is basically history in Japan. The way the old swords were made, they would make their steel, and then they would hammer it flat and then fold the steel over [and over again],” says Kent. “What all of this work did was make the steel tougher. It made the steel harder because it knocked all the impurities out. By hammering it many times they made it harder and tougher. When they finished the knife and looked at it, they’d see all these little lines in it. So now the blacksmiths are doing it to show off what [they] can do.”

He has also diversified the inventory to include chef-loved gadgets, cookbooks, and even unique spices and products not commonly found elsewhere. In addition to the cool and beautiful things available for purchase, Knifewear also offers knife sharpening, even if knives have been purchased somewhere else. Half of the proceeds from knife sharpening fees go to support several charities, including ‘The Centre For Autism Services Alberta’. “We like to say we’re sharpening our communities,” Kent says. “We're trying to spend our money in ways that we think impact our communities because the sum of money [donated] has become so large that it can actually make big differences.” A potential heirloom that offers direct benefit to the community makes a knife from Knifewear a gift that keeps on giving. Annesley works mainly in watercolour, which she is a clear master of, being an elected member of the Federation of Canadian Artists, the Canadian Society of Painters in Watercolour, and most recently a signature member in the American Watercolor Society, but she also appreciates working with the bare-bones nature of charcoal. “Watercolour’s the hardest medium, as they always say,” she shares. “But I think it has a real ability to render light and luminosity because you’re using the white of the paper as the source of light.” This helps her achieve in her art a “poetic realism”—a term she credits to fellow Edmonton painter, Robert Lemay. Annesley doesn’t give her work descriptive titles because she wants the viewer to find their own sense of self in it, a concept that her mother coined as a “silent transfer of beauty.” She wants anyone who brings home one of her paintings to have an emotional attachment to it: “I hope they see a sense of place and that it speaks to their heart.” WWW. While he didn’t always consider himself to be an artist or a designer, James Chizen has always been interested in creating something magical. After studying electrical engineering nanotechnology/biomedical at the U of A, he worked in the oil and gas industry, finishing that career as vice president at Precision Drilling. He began flipping homes on the side as a passion project, before incorporating his home building business, Chizen & Company, in 2021. “I've just always loved art and design. I think that's what led me into engineering; being able to create things,” he says, adding that art exists even in programming. "[It] looks beautiful when code is laid out.” His passion for art and building led Chizen to a hobby of renovating and flipping houses before incorporating it into his home-building business, Chizen & Company, in 2021. I wanted to build “mini” castles and bring in all those nice, regal designs. That's kind of how this came to be.” The grand estate home is recognizable from a distance, standing out with elegant yet charming details that Chizen thoughtfully incorporated into every design aspect. Chizen focuses on building art by designing clients’ homes from the outside in. Instead of working with architects from the outset, he brings his sketches and visions to an artist, first, to help him bring the project to life.

“I did the same thing that Walt Disney did when he designed Disneyland,” he explains. “He had artists draw and design the park prior to giving those drawings to an architect. The same concept he came up with 50 years ago is the thought process I had creating these fairy tale homes.” To expand his portfolio and continue to create designs he loves, Chizen’s future is focused on trying out new projects like tiny homes and multi-family housing, while still maintaining a strong focus on the details required to create unique, one-of-a-kind dream homes. “I like to go against the grain,” he says. “Obviously, I'm paying attention to style and design, but breaking the mould: I love that.” Chizen & Company’s "Enchanted" project can be seen at 183 Windermere Drive, by appointment only.
