The Big One This is the big one. It’s our largest paper of the year. More than three pounds of gift-giving ideas, recipes and turkeys. Not the bad kind of turkey, but the good kind. The ones roasted golden brown and set before the family. And the turkeys drawn by school children. Inside these four special sections of the paper you will find turkey recipes and crayon drawing of turkeys from four Putnam County elementary schools: Cane Creek, Park View, Capshaw and Jere Whitson. First graders drew turkeys, while second graders provided recipes. Toward the back of these special pages, you’ll find some of the best recipes our readers shared with us this year, including the 10 best recipes from our food columnist, Drucilla Ray. So, sit back, relax and enjoy this newspaper. It may be the only relaxation you get for the next month.

Drucilla’s best holiday recipes A

s the holidays approach, our thoughts and stomach turn to food. It’s that time when we get to enjoy those foods that we don’t ordinarily eat during the year. I call them my special foods. And Drucilla’s Little Helpers enjoying the food is what it’s all about. I teach my students in nutrition classes to take their time and slow down to enjoy the taste. It Drucilla takes our Ray brain 20 minutes to recognize that we are full. So why not take your time and enjoy what it tastes like. After all, that cook has worked hard to make sure that it tastes just right. Sweet potatoes are a must at the holiday meal. You can fix them mashed or in a casserole or glazed. I like to bake mine, then scoop out the middle to use for mashing or casseroles. Sometimes it is hard to peel those sweet potatoes. When I fry my sweet potatoes, I peel and slice them and put them in an iron skillet with a little butter and put a lid on the skillet. I cook them very slow. If it needs a little water I add that when I add my brown sugar. But the secret is cooking very slow. That’s what George’s Grandma Swack taught me, and she was a very good cook. Glazed Sweet Potatoes 6 medium sweet potatoes 3⁄4 cup water 1⁄3 cup granulated sugar 1⁄3 cup light brown sugar 1⁄2 teaspoon salt 3 tablespoons lemon juice 1⁄2 teaspoon freshly grated nutmeg 3 tablespoons unsalted butter Preheat oven to 350º. In large

pot, place potatoes with enough water to cover. Bring to boiling. Reduce heat, simmer 10 to 12 minutes or just until potatoes are tender but not soft. Potatoes should be tender on the outside but resistant in center when pierced with tip of pairing knife. Drain potatoes; cool. Meanwhile put water, sugars and salt in nonreactive small saucepan. Bring to a boil, stirring just until the sugars are dissolved. Simmer 8 minutes; remove from heat. Stir in lemon juice, grated nutmeg, and 2 Tbsp. butter. Butter a large shallow glass or ceramic baking dish with remaining butter. Peel potatoes; cut crosswise into 3⁄4-inch-thick slices. Arrange slices in single layer in baking dish. Pour lemon syrup over. Bake in the preheated oven 40 to 50 minutes, basting occasionally, until potatoes are well-glazed and begin to caramelize on edges. Remove from oven; cool slightly before serving. Serve hot or warm garnished with lemon peel. Whipped Potatoes 2 1⁄2-lbs. potatoes, peeled, quartered and cooked 3-oz. cream cheese 1⁄2-3⁄4 cup sour cream 1⁄4 cup butter or margarine, softened 1⁄2 tsp. garlic salt In a large bowl mash the potatoes. Add the cream cheese, sour cream, butter and garlic salt. Transfer to a greased 1 1⁄2qt. baking dish. Bake, uncovered at 350° for 30 minutes, or until heated through. cranberry apples 4-5 medium apples can use Gala or a combination of Grannie Smith , Gala and Red Delicious 1⁄2 cup water 1 tablespoon cinnamon (or to taste) 1 can whole berry cranberry sauce Wash apples, peel, halve, and remove the cores and stems.

Chop into large chunks. Place apples, cinnamon, and water in medium size sauce pan and cook on medium heat for about 20 minutes until fork tender. Do not put a lid on the pan as it will make the apples mushy. Remove apples from heat. Gently stir in canned whole berry cranberries sauce. Can be served immediately while hot or chilled and served up to two weeks later. Serves 6. Turkey Broth To prepare turkey broth, take giblets from turkey cavity and rinse under cold running water. Place all giblets except the liver in 3-quart saucepan and add enough water to cover. Bring to boil and skim off white foam; reduce heat. Simmer 1 hour, add liver and continue cooking 15 minutes. Remove giblets, cool and remove meat from neck. Chop all meat from giblets and if desired add to gravy. This broth is good to use in stuffing and gravy. Any leftover may be frozen and used as base for turkey soup. When I make my giblet gravy, I use this broth, add a couple of chopped boiled eggs. I take about 1⁄4 cup flour, with a dash of salt and pepper and add about 1⁄2 cup of milk to it to make a gravy then add it to the broth and cook until slightly thick. Sometimes I may add about a half can of cream of chicken soup. CHRISTMAS KICKOFF Peanut Butter Chiffon Pie Submitted by Melissa Morphew 1 cup pretzels, finely crushed 6 tbsp. butter, melted 3⁄4 cup, plus 3 tbsp. sugar, divided 1 envelope unflavored gelatin 1⁄4 tsp. salt 1 cup milk 2 eggs, separated 1⁄2 cup creamy peanut butter 1 1⁄2 cup frozen whipped topping, thawed chocolate syrup Combine pretzel crumbs with butter and three tbsp. sugar. Press into an ungreased 9” pie plate and bake at 350º for 8 minutes. Cool completely. Mix gelatin, 1⁄2 cup sugar and salt in a saucepan. Add milk and egg yolks. Cook over medium heat until boiling, stirring constantly. Remove from heat and stir in peanut putter; stir until smooth. Refrigerate until chilled. Beat egg whites with electric mixer until foaming. Gradually stir in remaining 1⁄4 cup sugar and beat until stiff peaks form. Fold chilled peanut butter mixture into egg whites. When combined, gently folded in whipped topping. Five Day Coconut Cake Submitted by Lane Spivey 1 lb sour cream 2 12-oz packages frozen coconut 2 cups sugar 1 Duncan Hines butter cake mix Make frosting on first day, combining sour cream, coconut and sugar. On the second day, bake the cake using the cake mix. Make two 9” layers. Let cool, then slice the 2 layers into 4 layers. Put frosting on each layer. Refrigerate, covering with Saran Wrap. Leave in the refrigerator on the third and fourth day. Eat and enjoy on the fifth day. You may eat cake on the third day, but it is better to leave it longer. Oyster Stew Submitted by Lane Spivey 1 quart milk 2 tsp. salt 2 tbsp flour mixed with 2 tbsp water 1⁄4 cup margarine 1 small chopped onion 1⁄2 to 1 tsp Worcestershire sauce 1 pt. oysters with liquid cayenne pepper and black pepper to taste Put all ingredients except oysters in crock pot. Cover and cook on high 1 1⁄2 hours. Stir well. Add oysters and cook on low for 1-3 hours. Sprinkle with cayenne pepper and serve. Bacon-wrapped Chicken Submitted by Lane Spivey 12 small chicken strips 2 cans cream of chicken soup 1 (8 oz.) carton sour cream 1 pkg. dried beef 1 (8 oz.) pkg. cream cheese 1 lb. bacon Wrap chicken in bacon. Put dried beef in bottom of Pyrex dish. Lay chicken wrapped in bacon on top of beef. Mix cream of chicken, sour cream, cream cheese (softened) together and pour over chicken. Bake at 350 degrees for about 2 hours.

Angel Rolls Submitted by Lane Spivey 1 pkg dry yeast 2 tbsp lukewarm water 4-5 cups plain flour, sifted 1 tsp. soda 2 cups buttermilk 3 tsp. baking powder 2 tbsp. sugar 1 1⁄2 tsp. salt 1 cup shortening Dissolve yeast in warm water. Sift all dry ingredients together. Add buttermilk and yeast mixture. Stir well. Knead 1 minute. Roll out 1⁄2 inch thick and cut into small rolls. Brush top with butter. Bake in 400 degree preheated oven until brown. Fennel and Chicken Salad Submitted by Diane Torgerson 2 medium heads fennel (about 1 1⁄4 lbs.) 2 cups chopped cooked chicken or turkey 1 large shallot, minced 1 cup mayonnaise 1⁄2 teaspoon Dijon mustard 2 tablespoons Pernod salt and freshly ground black pepper Trim the stems from the fennel and peel the bottoms. Chop the fronds so you have about 1 tablespoon; reserve. Chop the bulbs and combine with the chicken/turkey and shallot in a medium bowl. Beat the mayonnaise with the mustard and Pernod in a large bowl until smooth. Add the fennel and chicken mixture. Mix well. Add salt and pepper to taste, and sprinke with chopped fennel fronds.

CHRISTMAS KICKOFF Potato-Crab Choweder Submitted by Diane Torgerson 1 package (10 oz.) frozen corn 1 cup frozen hash brown potatoes 3⁄4 cup finely chopped carrots 1 teaspoon dried thyme leaves 3⁄4 teaspoon garlic-pepper seasoning 3 cups fat-free reduced sodium chicken broth 1⁄2 cup water 1 cup evaporated milk 3 tablespoons cornstarch 1 can (6 oz.) crab meat, drained 1⁄2 cup sliced green onions Place corn, potatoes and carrots in slow cooker. Sprinkle with thyme and garlic-pepper seasoning. Add broth and water. Cover. Cook on low for 3 1⁄2 to 4 hours. Stir together evaporated milk and cornstarch in medium bowl. Stir into slow cooker. Cover. Cook on high for 1 hour. Just before serving, stir in crab meat and green onions. Garnish as desired.

Combine well and press into 9x13 ungreased pan. Bake until lightly browned, about 25 minutes. Remove from oven and cool. Filling: 2 (8 oz.) cream cheese 1 cup sugar 3 eggs 1 tsp. vanilla extract 1 tsp maple flavoring Combine cream cheese and sugar, beat until smooth. Easy Cherry Cream Pie Submitted by Cindy Bellis 1 (8 oz.) package cream cheese 1 (14 oz.) can sweetened condensed milk 1⁄3 cup lemon juice (fresh or bottled) 1 tsp. vanilla extract 1 graham cracker pie crust 1 (21 oz.) can of cherry pie filling Melted butter Brush some of the melted butter on the graham cracker pie crust. In a medium bowl, beat cream cheese with electric mixer at medium speed until creamy. Gradually beat in condensed milk, lemon juice and vanilla. Pour into pie crust, chill 4 hours. Spoon cherry pie filling evenly over chilled pie. Store in refrigerator. Also, you can get the larger size graham cracker pie crust and double the cream cheese filling. Salted Caramel Cookies Submitted by Cindy Bellis 1 box chocolate cake mix 1⁄2 cup vegetable oil 2 eggs Rollo candy Sea salt Mix all ingredients together. Roll each cookie into a ball the size of a walnut, insert Rollo candy in the center of it, making sure it is covered with dough. Sprinkle sea salt on top. Back at 350 degrees for about 8 minutes.

This Thanksgiving Dr. Chuck Olds, his wife, Mary, his patients and his staff at Olds Chiropractic Clinic have so much to be thankful for! DR. OLDS IS BACK WORKING IN THE COOKEVILLE CLINIC AND PLANS TO BE WORKING BACK IN THE SPARTA CLINIC AROUND THE FIRST OF THE YEAR! Dr. Olds started getting sick about three years ago. He thought it was just a bad flare up of the Ulcerative Colitis he has suffered with for about 30 years. He fought very hard to carry on with his practice as usual. He was extremely fatigued all the time and losing weight. There were many days that he had to ask Jessica to cancel and reschedule his patients because he did not have the strength to stay at the clinic. Finally in December of 2013, he was almost past going. After two emergency trips to Cookeville Regional Hospital, he went to a highly recommended gastroenterologist at St. Thomas Hospital West in Nashville for a colonoscopy in January of this year. In less than 24 hours, the biopsy results were back with a diagnosis of colorectal cancer. Both he and Mary were in shock as well as their family, friends, staff and patients. He decided to undergo radiation and chemotherapy as well as partake in an “off label” cancer treatment overseen by a medical doctor in Brentwood. As soon as Dr. Jayson Johnson and his precious wife, Meshia, heard the news, they made a decision that has proven to save the clinics for Dr. Olds & Mary. They spoke with their associate chiropractor and then called Dr. Olds. They told him that Dr. Pamela Nickels was going to come and fill in for him so that he could concentrate 100% on getting well and beating the cancer! On February 19, Dr. Pam came to work at Olds Chiropractic. Unfortunately, Dr. Olds became extremely sick very shortly after Dr. Pam came to work with him. She only got to work with him for about two weeks before he could no longer work even a part time schedule. Dr. Pam was thrown into filling some awfully big cowboy boots! She went from working two days a week to taking over all of Dr. Olds’ duties on a full time basis in just a few weeks. After discussing the situation further with Dr. Olds & Mary and Dr. Pam; Dr. Johnson and Meshia made the unbelievable sacrifice of releasing Dr. Pam to come and work for and with Dr. Olds permanently! This was a very tremendous gift to Dr. Olds as well as an extreme hardship to Dr. Johnson & Meshia. Without their selfless generosity, Dr. Olds would most definitely have had to close his clinics. Dr. Pam graduated from Dr. Olds’ and Dr. Johnson’s alma mater, Palmer College of Chiropractic in Davenport, Iowa in June of 2012. She not only obtained her degree at (in Dr. Olds’ opinion) :”the VERY BEST college of chiropractic” but she had also worked with Dr. Johnson for two years. There, she learned a lot of what Dr. Olds had taught Dr. Johnson when he worked at Dr. Olds’ clinics after he obtained his degree and before he opened his clinic in Smithville, TN in November 2000. Dr. Pam has a wonderful personality and Dr. Olds’ patients love her! She is a very good adjuster and knows a little bit of the Applied Kinesiology that Dr. Olds is so well known for. She and her husband, Jeremy, reside in Smithville. After receiving the three chosen treatments from February to April, Dr. Olds returned to his gastroenterologist for a follow up colonoscopy on April 14th. The tumor had grown so much that his colon was completely obstructed therefore making it impossible to do the colonoscopy. Dr. Olds was admitted to St. Thomas Hospital West immediately for emergency surgery. Because the situation was so grave, the surgeon was forced to do emergency surgery immediately. Due to the complications from the obstructed bowel, this first surgery would then be followed by a second surgery a week later to complete the process, but his life would no longer be in danger. On April 22, Dr. Olds underwent the second surgery to complete the permanent colostomy. He spent from April 14th until April 30th in the hospital and then was released to go home with home health care nurses three times a week for a month. He had lost a total of 66 pounds during the course of his illness! In September (just after getting enough strength back to work his first full week in the Cookeville clinic), he had to undergo a third surgery to do some touch up work. This came about very fast because the surgeon just happened to have an opening in his schedule the very next week after Dr. Olds was in his clinic for a follow up exam! During the surgery, the surgeon discovered a hernia under the intestine where he was working, so

he repaired that while he was in there to keep from having to do a fourth surgery! It has been a VERY LONG, painful and stressful year to say the least! By the grace of God, Dr. Olds life has been spared. He and Mary want to convey their overwhelming gratitude to their family, their many wonderful friends, and the unbelievable patients of Olds Chiropractic for their continual prayers, get well cards and gifts, visits, phone calls fund raisers and generous donations that continue to come in every month. Dr. Olds comments, “Without the unbelievable generosity of this community, not only would we have had to close the clinics, but there is no way we could have afforded the medical care, the specialized nutrition and supplements, the prescribed drug regimen to help me on the road to recovery -- not to mention pay the rent and buy the gas to get us back and forth to Nashville so much this year!. We have been Blessed beyond measure throughout this entire experience!” He continues on to say, “Both the Cookeville and Sparta communities have had our backs every step of the way! Mary and I have both always told people that we have met the kindest people since moving here, of anyplace either one of us has ever lived, and that covers a lot of towns! Nothing proves that more than the loving support we have gotten from everyone we know and even people we have never met! Accepting help is very difficult for both of us, but Mary’s dear brother and two very close friends all told both of us within just a day or two of my diagnosis that we had both spent our lives giving to other people and now it was time to graciously accept whatever help was offered to us and simply say thank you! That is a very humbling thing to learn to do. Thanks to God and a lot of very special Guardian Angels that walk the earth with us, we have tried very hard to accept graciously and give thanks to our Lord several times every day for these amazing blessings that have been bestowed upon us. We hope that everyone involved in whatever way they felt moved to do so, knows how much their acts of kindness have meant and continue to mean to us! Your prayers, positive thoughts, phone calls, visits, offers to help with anything and everything, very generous gifts of not only your money, but also your extremely valuable time will be remembered for the rest of our lives! Our patients have been so loyal to give Dr. Pam the chance to earn their trust and therefore played a major role in us still having the clinics open and fully operational for me to have a place to “come home to” as soon as I was able to begin working again at a profession that I love and would be lost without! CHRISTMAS KICKOFF Pumpkin Spice Cake Submitted by Cindy Bellis 3 1⁄2 cups flour 1 tbs. pumpkin pie spice 2 tsp. baking powder 1 tsp. baking soda 1⁄2 tsp. salt 1 1⁄2 cups sugar 1 cup real butter, softened 4 large eggs 1 can (16 oz.) solid pack pumpkin 1⁄4 cup milk 2 tsp. vanilla extract Brown Butter Glaze 6 tablespoons butter (1/4 stick) 1⁄2 cup packed light brown sugar 2 tbs. milk 1 tsp. vanilla extract 1 cup confectioners sugar Preheat oven to 350 degrees. Grease a 10-inch bundt pan. Dust with flour. In a medium bowl, mix flour, pumpkin pie spice, baking powder, baking soda and salt. Set aside. In a large bowl with mixer at low speed, beat sugar with butter until blended, scraping bowl after with rubber spatula. Increase speed to high, beat until creamy, about 2 minutes, occasionally scraping bowl. Reduce speed to low, add eggs one at a time, beating well after each addition. Mix together pumpkin, milk and vanilla. With mixer at low speed, alternately add flour mixture and pumpkin mixture, beginning and ending with the flour mixture, until batter is smooth, occasionally scraping bowl with spatula. Pour batter into pan. Bake 5560 minutes, until toothpick inserted in center comes out almost clean. Cool for 15 minutes. With a small spatula, loosen cake and slip out. When cake is cooled completely, make glaze. Melt butter until golden brown on stove. Take off and mix other ingredients. Cool glaze in fridge about 10 minutes. Poor glaze over cool cake, allowing glaze to drip down the side of the cake. This Ain’t Yo Mama’s Nana Pudding Submitted by Cindy Bellis 3 1⁄2 cups of milk 2 small boxes vanilla pudding 8 oz. sour cream Small amount of Cool Whip for pudding, more for topping Pepperidge Farm Chessman Cookies Mix milk, pudding, sour cream and cool whip. Beat until thick. Layer pudding, bananas and cookies. Pudding and banana layer. Pudding and banana layer. Top with Cool Whip or real whipping cream. You can mix and match, more cookies if you like, more bananas, etc. The Chessman Cookies make it buttery rich! Cindy’s Caramel Monkey Bread Submitted by Cindy Bellis 1 cup packed brown sugar 1 cup chopped walnuts 3⁄4 cup melted butter 2 cans of Hungry Jack honey or butter biscuits Sugar/cinnamon mixture in a bowl Melt butter, stir in brown sugar and walnuts. Get a small Bunt pan. Spoon half of the mixture in the bottom of the greased (with Pam) Bundt pan. Cut each biscuit in half. Roll them in the sugar/cinnamon mixture. Put the

first can of biscuits, cut side down in the bottom of the Bunt pan. Spoon the rest of the mixture on top of the biscuits. Put the second can on top of the mixture and the biscuits. Bake at 350 degrees (pre-heated) for 30 minutes. Have a small tray covered in aluminum foil ready. When you take it out of the oven, put the tray on top of the Bundt pan and flip it over. To keep it war until serving, keep the Bundt pan on top of the monkey bread. This will hold in some heat. Cranberry Pineapple Relish Submitted by Cindy Bellis 2 tbsp. of butter 2 tbsp. minced onion 1 clove garlic minced 1 (16 oz.) can whole berry cranberry sauce 1 (8 oz.) can crushed pineapple, drained 1 tsp. sugar In a small saucepan, melt butter over medium heat. Add onion and garlic, cook for 5 minutes or until tender. Add cranberry sauce and pineapple. Bring to a simmer and cook, stirring occasionally, 18-20 minutes or until thickened. Stir in sugar until it melts. Miss Belle’s Tomato Pie 1 deep dish pie shell (baked) 3 large tomatoes, peeled, cubed and drained 1⁄2 tsp. salt 1 tsp. pepper 1⁄4 tsp. basil 1⁄4 tsp. oregano 1⁄4 tsp. dill 1⁄2 cup mayonnaise 2 green onions, chopped 1⁄4 cup mozzarella 1⁄2 cup cheddar cheese 2 tbsp. parmesan cheese 1⁄2 cup sharp cheese, shredded Put 1⁄2 cup sharp shredded cheese in baked pie shell, then put tomatoes on top. Mix the rest of the ingredients together and spread on top of tomatoes, then sprinkle on 1 tbsp., plus or minus, chopped parsley. Bake 40 minutes at 350 degrees. For extra cheesey flavor, use 1 cup cheddar and 1 cup mozzarella instead. Pecan Tassies Submitted by Cindy Bellis Crust: 3 oz pack of cream cheese 1⁄2 cup margarine or butter 1 cup sifted flour Filling: 3⁄4 cup brown sugar 1 tbsp. soft butter 1 tsp. vanilla dash of salt 3⁄4 cup finely chopped pecans Pastry: Mix cream cheese, margarine and flour. Chill for an hour. Shape into two dozen 1” balls. Place in ungreased 1 3⁄4” muffin pans. Press dough against the bottom and sides of each. Filling: beat egg, sugar, butter, vanilla and salt until smooth. Put half of the pecans on top of dough in muffin cups. Add egg mixture evenly over top of the pecans. Top with remaining pecans. Bake at 325 degrees for about 25 minutes.

1 8-oz. can crushed pineapple, well-drained 1 cup flaked coconut 1⁄2 cup chopped macadamia nuts or almonds 1 tbsp. butter, melted Glaze: 1⁄2 cup powdered sugar 3-4 tsp. milk 1⁄4 tsp. rum extract Heat oven to 350º. In medium bowl, mix flour and 1⁄2 cup sugar with fork. Cut in 1⁄2 cup butter until crumbly. Press in bottom of ungreased 9” square pan. Bake for 10 minutes. In a small bowl, combine cream cheese, 2 tsp. sugar, 2 tbsp milk, vanilla and egg. Beat until smooth. Stir in pineapple. Spread over partially baked base. In small bowl, combine coconut, nuts and 1 tbsp. melted butter. Spread evenly over pineapple mixture. Return to oven and bake for 18-20 minutes or until coconut is golden brown and filling appears set. Cool completely. In small bowl, mix glaze ingredients. Drizzle over the bars. Refrigerate until served. Chocolate Coconut Peaks Submitted by Cindy Bellis 1⁄4 cup real butter 2 cups powdered sugar 1⁄4 cup evaporated milk (NOT sweetened condensed) 1 tbsp. vanilla 7 oz. flaked coconut 1 bag semi sweet chocolate chips Melt butter in microwave. Stir in sugar, milk and vanilla. Add coconut. Put in fridge until ice cold. Take out of fridge and roll into balls. Put coconut balls on a cookie sheet that has been lined with buttered waxed paper. Put in fridge until ice cold. Melt chocolate over hot water or in a pan over low heat. Dip the bottom of the coconut balls in the chocolate. Put back on waxed paper and put in fridge until chocolate is set. Store in a closed tin in fridge for up to several weeks.
