Refrigerator Notes In this issue.. Our kids’ health is always at the forefronts of our minds. My son is a student-athlete. So, while he loves junk food, we do our best to keep those things at a minimum around our house. This month, we have a fun recipe on page 14 from Mary Walsh from My Healthy Kids for Fudgy Chickpea Brownies. Yes, you read that correctly... chickpeas. I’m eager to try this recipe because I’m equally craving chocolate and curious. But, that’s not all. Mary has contributed a great article about healthy foods for your kids. We briefly introduce it here in print, and you can read the full article and see two more great recipes on our Refrigerator Notes blog on SpringfieldKids.com. We’re also launching a reader survey in May. The link to use for it is on page 16. We want to know more about you and how you use Kids Directory every month. And, our advertisers want to know, too. Remember last month when I lamented about my son’s high school graduation? Well, the day is almost here. And, I’m sad...and happy...and nervous... and.... Many of you have graduations of your own. Fudgy Chickpea Brownies
These brownies are seriously fudgy and so good with no weird flavor at all! From Mary Walsh @myhappygutfood on Instagram. 1 15-oz. can of chickpeas, drained ½ cup natural no-sugar added peanut butter (or other nut butter) ½ cup honey or maple syrup 1 tbsp. coconut oil or butter 1 tsp. vanilla
¼ cup almond flour ¼ cup cocoa powder ¼ tsp. baking soda ¼ tsp. baking powder ¼ tsp. salt ½ cup chocolate chips
Drain and rinse the chickpeas. Process all ingredients except the chocolate chips in the food processor till very smooth and creamy. (A blender doesn’t work very well.) Remove blade and stir in chocolate chips. Spread batter in a greased 8x8 pan. Sprinkle with more chocolate chips, if desired. Bake at 350 for 21-23 minutes.
