It wasn’t too many years after that before he started his first business, Jesse’s Fresh Eggs, selling organic eggs all around Wimberley to friends, neighbors and a natural foods store. Three years later, when Jesse was nine, his flock had grown from 12 to 77 hens, comprising 10 different breeds. Featured on the cover of the August 2000 issue of the Hill Country Sun, he told about training chicks to come to him by hand-feeding them meal worms and pondered the possibility that the extreme heat was lowering egg production. JESSE HUTH, from page 4 pear on supermarket shelves in cartons or wrapped in plastic. Huth Avian answers questions about poultry behavior and offers expert advice on how to set up and care for a flock. Predators pose the biggest problems and the chief culprit is not the fabled fox in the hen house, but the rascally raccoon. “Raccoons will come in and kill the whole flock,” Jesse says. Protecting hens against predators, particularly the raccoon, that can easily get past a simple latch, may require multiple latches, locks and protection at the base to prevent their digging in. Other services Huth Avian provides are walking or grid driving surveys for wildlife exemptions and guided birding tours. Jesse has conducted wild bird surveys, especially in April and May during the spring migration, for properties ranging from ten acres to over 4,000 acres. For these surveys, he identifies and counts species, inspects and determines placement of nesting boxes, feeders, and water sources. Identifying 50 to 60 different species in a couple of hours is fairly typical, but spotting an endangered Golden-cheeked Warbler is such an important find that Jesse records the exact GPS locations of their nesting sites. The tiny birds nest in only 13 counties in Central Texas during the summers, arriving in March and leaving in late August for Mexico and Central America. Jesse’s interest in wild birds started when he was six and a neighbor taught him to identify bird silhouettes and field marks – patterned areas and colors on the bird’s body, head and wings. He has birded in Central Texas for more than 15 years, and extensively in High Island, but is open to trips to other areas in Texas, or extended trips. Now affiliated with the Partnership for International Birding, he hopes to become a Partner/Guide in 2016.

In 2014, he made the trip of a lifetime to the see the site of the 1986 Chernobyl Nuclear Power Plant explosion that forced a massive human evacuation. Entering the still radioactive exclusion zone, with a government guide and a geiger counter, he saw “red deer, wild horses, and many birds including five white-tailed eagles.” The radiation destroyed the area, but the wildlife that returned, although in lower numbers than in other protected areas in Europe, is thriving. When asked about his persistence in turning a childhood hobby into a profession, Jesse is quick to credit his mom, Jaci, for encouraging him all along the way to learn by doing. “She said, ‘you like chickens, let’s get some chickens,’ and we just took it from there.” Jesse still “likes chickens and thinks they’re neat.” His enthusiasm, whether for raising chickens or birding, is contagious and inspires one to do either or both. “It’s a challenge to find birds and relaxing to watch them, observe their varied sizes, colors, and shapes, study their behavior and recognize their songs,” Jesse says. “They’re spectacular creatures and they are wherever you go.” FYI • To learn more about poultry consulting, wild bird surveys, scheduling birding tours and speaking engagements, see photographs and read about previous trips, visit the web site at HuthAvian.com. t’s that wonderful time of year when joy and peace abounds. The air seems to thicken, and the old timers (like me) huddle near the stove. Huddling near the stove ain’t bad at all. There is hot chocolate, popcorn, and stories to be told. Stories, like the one John Hoag sent me, about a stranger he met the other day who was new in town. Strangers always draw attention in the Hill Country. John’s poem “AKA Grandpa Bill” is a wonderful Christmas piece to share with your little ones. John lives in Dripping Springs. I like John’s poem because it paints a picture of eternal youth, and the mystery that is Santa Claus. You can almost see the twinkling eyes and hear the jolly laughter, which would surely erupt from the old man if you even hinted at him possibly being Santa. Thank you, John, for sharing this poem with us. This is a neat little poem. Its simple rhyming couplets are delivered in a style that would appeal to all ages. The rhyme scheme is aabb. This poem is a great demonstration that poetry does not have to be complicated or contrived. It is just a simple story, told in an engaging way. Good going, John. Our subject next time, as always, will be the Texas Hill Country. I know of no

other place more inspiring. Poetry is everywhere around us. So pick up that pen, or poke that keyboard, and write away. Be brave. Harness those reindeer and let your imagination fly. Be creative. If you write it, and you like it, then you are done. Please do not try to wrap your gift in someone else’s paper. Box it up and share it with me! I can’t wait to see what you write! Send your poems to Ernie Lee at bardoftheblanco@hotmail.com. I’ll read each one, and print the one we liked best. We’ll talk about why and how the poem worked. We’ll discuss the devices the poet used, such as simile or metaphor. Don’t be shy. You will be surprised how many people are already writing things down and keeping them hidden. What a tragedy – you never know when something you write may touch someone else. Thank you for participating in this column. If you are a published or practiced poet, you can reach out and share your work with us. Give us some insight into your poem. How, why, and what method you chose to express your work. I’m pleased and honored to be your host and facilitator. You can read more of my poetry and sign up for my newsletter at www.ErnieLeePoetry.com. So, until next time, happy writing. I’ll be waiting to read YOU!

WIMBERLEY

AKA Grandpa Bill by John Hoag Dripping Springs Texas I met a man the other day, his hair was full and thick. His long white beard and t winkling eye, reminiscent of St. Nick. His jolly laugh and jiggly belly, for sure, they gave me pause. Yes, I could swear that standing there, it must be Santa Claus. My inner self, it said to me, “Why, that’s a silly notion. Old Santa, he is just a myth, based solely on emotion.” But I admit, I felt real strange, I got this funny tingle. A different inner voice, it said, “Step up and meet Kris Kringle.” And then I knew, right then and there, I had to know the truth. Was he for real, or merely just imagined from my youth? And as he fed a coin or t wo, his parking meter whirred, I saw my chance and stepped right up, “Might I just have a word?” With measured gaze, he turned my way. He looked me up and down. He smiled and offered me his hand, “I’m Bill. I’m new to town.” Before I could respond in kind, somebody tugged my sleeve and I looked down, a smiling face, and this you won’t believe, “I see you’ve met my Grandpa Bill. He’s come to town to stay.” And little Billy’s hand took his, in a very special way. “Grandpa used to live up North, but Mom and Dad they said, he should come and live with us, right here in town, instead.” You’d think that bit of news would put my anxiousness to rest. But truth be known, I’m still unner ved by Billy’s special guest. You see, “up North” could be that place where Santa and his elves Make dolls and trucks and other toys that wait upon the shelves. So, Grandpa Bill, he’s on my list. I’ve got him in my sights. I’ll know if he has gone and booked any trans-Atlantic flights. And if perchance on Christmas Eve, his face you do not see, Though Santa may be just a myth, old Bill’s not fooling me.

Born, bred, and based in Texas for over 125 years, we know the kind of hard work it takes to start, care for, and maintain successful hives. The BeeWeaver Queens and Bees are organically raised, and most of our customers choose to manage chemical free honey bee hives, as we do. Our honey bees, hive equipment, protective gear, honey, professional consultation, and education have raised the industry standard - you might even qualify for an Ag-Use Exemption!* With multiple central Texas pick ups and shipping options, it’s easy to get to work with our queens, bees, equipment, and gear.
