Wimberley Market Days innovates for new season

arch 2017 marked the beginning of the 48th anniversary of the funfilled Wimberley Market Days season. Through December, each month, Lions Field will be decorated to represent a certain theme to celebrate popular events like the Fourth of July, Halloween, and Christmas. More than 470 new and returning vendors offer a wide array of unique “treasures” and functional items ranging from antiques, works of art, hand-made crafts, home decorations, indoor and outdoor furniture, and many more kinds of shopping-finds. New to Lions Field, a ninth concession stand playfully called “Fun L Cakes,” will serve up those namesake sweet treats. Many other concession stands have made a few changes to their menus. Concession 1 adds a “Soup of the Month” using hearty and homemade recipes. Not ones to mess with success, the Lions Club’s famous barbecue and chicken fajitas are still Market Days staples. Introduced in 2016, the “hide and seek” game continues as a dozen especially shaped coupons are hidden around the marketplace and are redeemable for a free meal. For the shoppers’ listening pleasure, live music is performed at three on-site venues, the Pavilion, Hilltop, and Shady Grove stages. Another fun feature at Market Days is the “Café a la Cart,” navigated by a Lions Club member and mascot, Roary, who travels around with a variety of snacks and beverages including hot dogs, cotton candy, chips, fruit and lemonade. The Wimberley Lions Club also implements a new recycling program, with the help of members of Wimberley High School and Katherine Anne Porter School Leos Clubs. Each concession stand has two collection containers, one for aluminum and the other for plastic recyclables. Another important community service added this year, the Courtesy Cart provides free mobility assistance for elderly, or dis-

All profits generated by Wimberley Lions Club Market Days go back into the community through projects and activities. It is projected that, in 2017, the Lions will reach a considerable donation milestone. Some of these include scholarships for 32 Wimberley students, assistance for 10 students to participate in the Lions Club Youth Exchange program, Special Olympics and the Hays County Youth Shelter. The Lions Club also gives grant money to a variety of non-profit organizations such as Crisis Bread Basket, the EmilyAnn Theatre & Gardens, and KWVH 94.1 FM, Wimberley Valley Radio. Even local animal rescue organizations, namely WAG, PAWS, and ARF receive grant money. Your purchase of food and drink at any of the concessions stands or parking in the Lions attended parking lots, help to support many worthy area organizations and projects, as well. Wimberley’s natural swimming holes attract crowds

imberley is home to three natural spring-fed swimming holes open to the public for seasonal or year round swimming. Jacob’s Well, the source for all three pools, is an artesian spring that pushes water up from 140 feet below the surface, and its depths contain the longest underwater cave in Texas. Nearby Blue Hole, consistently rated as one of the best swimming holes in the state, is fed by the Jacob’s Well spring that feeds Cypress Creek, and Cypress Falls was created when the dam was built on Cypress Creek forming the waterfall and the swimming hole.
All three swimming holes are renowned for their beauty and clear cool water. The 126-acre Blue Hole Regional Park is home to natural forests, wildflowers, native grasses, and gigantic slabs of limestone, and the famous swimming hole that is the focal point is shaded by towering old growth cypress trees. Cypress Falls, formerly known as the swimming hole at Eagle Rock, showcases the Eagle Rock natural rock cave formation that runs along beside the creek. Jacob’s Well is a constant 68 degrees and, because Cypress Falls and Blue Hole are fed from that same spring, their waters are similarly cool. Sometimes this cool or
cold blast of water, depending on one’s perspective, is described as invigorating (just this side of too cold), but most of the time it’s a welcome respite from the Texas heat. Jacob’s Well and Blue Hole are wildly popular destinations, not the hidden treasures they used to be, and as such can
be crowded during the swim season. Blue Hole summer visitors number more than 30,000, according to a park employee. To protect these natural areas and provide a more enjoyable and safer experience for visitors, the parks limit the See SWIMMING HOLES, page 7

number of people who can swim at one time to 60 at Jacob’s Well, which is only 12 feet in diameter, and 250 at Blue Hole where there is a three-acre swimming area. When the maximum number of swimmers is reached, no one else is allowed in the water for a minimum of two hours. Cypress Falls can get crowded in the summer, say event center workers, but so far there has been no need for capacity limitations. Also, as an added appeal to those who like to avoid the summer crush, swimming is allowed year round at Cypress Falls. Certain characteristics of natural swimming areas require visitors to exercise a little extra caution. At Jacob’s Well the path to the well narrows as you approach the water and surfaces can be slippery. It’s a good idea to wear swim shoes because of the rocky creek bottoms at Jacob’s Well, Blue Hole and Cypress Falls. As an added warning, there are no lifeguards at any of these three swimming holes. Although the foremost appeal of Jacob’s Well, Blue Hole and Cypress Falls is the natural setting of each swimming hole which might include little fishes between your toes, slippery rocks, and really cold water, there are facilities and amenities made and tended by human hands — restrooms, walking trails, picnic areas, rope swings (at Blue Hole), a nature center (at Jacob’s Well) and nearby bar and restaurant (at Cypress Falls) – that make the overall experience
much more pleasurable. FYI • Jacob’s Well main entrance is at 1699 Mount Sharp Road. The 2017 swim season begins on May 1, and continues through Labor Day with hours from 9 AM - 6 PM. Wimberley Valley Art League brings art to community

he Wimberley Valley Art League (WVAL) has several events planned for Spring and Summer which promise to be fun for the whole family. Arts Fest returns April 22-23 at The Waters Point Retreat at Rio Bonito. This is the League’s ninth annual festival, and this year will be bigger than ever with 115 selected artists and close to a dozen musicians. Participating artists will show works in a variety of media, including jewelry, sculpture, glass and metal, pottery, photography, oil and watercolor - to name a few.
Continuous live music is sure to keep things hopping, with performances from bands like Gypsy Moon, Three Hands High, The Jazz Messenger Boys and Gerry Burns, among several others. The Wimberley Classic Car Club and local dog adoption group, WAG, will be also be on-site during Arts Fest. This is the organization’s biggest event of the year and promises to be a relaxing day along the scenic banks of the Blanco River. Admission is free, dogs are welcome. Wimberley Valley Art League artists will present a “Cool Art Show” July 7-9, a great opportunity to see fresh art not yet submitted into other shows. Each league member will exhibit up to four paintings or small pieces of art and jewelry. Guests can cool off with cold drinks, snow cones and ice cream and admission to the show is free. The League will host a Studio Tour September 22-23. Six to eight participating artists host an open house at their studio (with many guest artists) and the public can see them work and purchase art. Admission to the studio tour event is free, maps are provided by the League. The Wimberley Valley Art League is made up of about 172 members (and counting). The group has grown considerably since its was started more than 20 years ago by a small group of

Jefferis Peterson, president of WVAL, explains, “About 61 percent of the members come from Wimberley; the rest from Austin, Driftwood, Dripping Springs and other cities within 100 miles of Wimberley. With such a large group, the League represents a wide variety of art styles and media, and the quality of the work keeps escalating.” In addition to the events listed above, the Wimberley Valley Art League also hosts monthly juried art shows at the

A student art show will be on display May 27 to July 22 and group members will exhibit their work July 22 through September 16. “About every two months, WVAL hires a professional artist to jury incoming art and select only the best – about 40-50 pieces for display,” Jefferis explains. “This has become a prestigious show and only art league members can exhibit.” Stop by the Wimberley Community Center Monday through Friday to enjoy the display from 8:30 am to 4:30 pm. The center is also open some evenings and weekends. Through the Wimberley Valley Art League’s Art in Public Places program, you’ll find displays at Ozona Bank, Central Texas Medical Center in San Marcos, the Wimberley Valley Visitor Center, Wimberley Village Library, the Wimberley Dental Center and Hackett Financial Group. Make plans to attend the Second Saturday Gallery Trail the second Saturday of each month from 4 pm to 7 pm, when more than a dozen galleries stay open late, often serving small appetizers and wine. Maps are available for download from the WVAL web site, or pick one up in any art gallery. “Even though Wimberley has a dozen art galleries,” explains Jefferis, “the WVAL members enjoy partaking in the many functions the League offers so that they can exhibit their work in more places and stay in the public eye.” In 2015, the Wimberley Valley Art League held a special art show and sale to benefit the Memorial Day flood survivors. It was received with overwhelming public support. More than $40,000 was raised at this benefit, thanks to the member artists who donated their work. Year-round fun for families at EmilyAnn Theatre & Gardens

he EmilyAnn Theatre & Gardens, where founders Ann and Norm Rolling and their team warmly welcome visitors daily, is truly a Wimberley treasure. Oh, the fun of the EmilyAnn...where you can bring a picnic, stroll the paths, play in the musical gardens and enjoy a game of chess or checkers on the oversized board. Or hike to the top of the hill to the Veterans Memorial Plaza, and enjoy 360-degree views around the Wimberley Valley. In addition to providing a relaxing retreat, the EmilyAnn Theatre & Gardens offers a wealth of family entertainment and theatre, as well as a special place of remembrance of loved ones. The spring season officially begins April 22 at the 19th Annual Butterfly Festival from 9 am to 5 pm. 3,000 butterflies will take flight during the fest, with releases every 30 minutes all day long. The event also features fun, educational activities, displays of butterfly art, games, concessions and music. June 2 - July 1, enjoy an outdoor production of the classic “West Side Story.” An indoor children’s series production of “The Three Little Pigs” runs July 15-30 on Saturday at 10 am and Sunday at 2 pm in the Burdine Johnson Theatre. Two sessions of “Shakespearience,” a Shakespeare day camp for kids age five
to 11 will be offered this summer June 12-16 and June 19-23. Tuition is $200 per week per camper. Shakespearience sessions run from 9 am to 3 pm Monday through Friday, culminating in a final performance for friends and family. Shakespeare Under the Stars, “a six-week high school Shakespeare intensive.” Students design and create sets, costumes and props; design and execute lighting and bring the works of Shakespeare to life on stage. Auditions are Saturday, May 20. Students will perform “Macbeth” August 3-12 (no show Sunday, August 6) every night at 8:15 pm. September 1-24, enjoy an indoor production of “The Winter’s Tale,” followed by “Thumbelina” September 30 - October 22, “The Diary of Anne Frank” October 27 – November 19 and “A Christmas Carol” November 25 – December 17. The season rounds out with the EmilyAnn Theatre & Garden’s beloved Holiday Trail of Lights, a favorite community event, opening the Saturday after Thanksgiving. atching a movie under the starry skies is a Wimberley summer tradition that started nearly seven decades ago when twin brothers, Ray and Roy Avey, decided to build an outdoor walk-in theater and bring a little Hollywood movie magic to their home town. Most people in those days didn’t want to travel 30 miles or more over narrow, winding country roads to see a show in Austin, so a local theater showing first run movies was a crowd-pleaser from the start. The Avey brothers and their wives managed the theater for about 20 years before selling it in 1966 to the first owner of Rocky River Ranch, Carol Knolk, who moved the fence enclosure and other structures, movie screen and antique carbon arc projector to the present location on the grounds of the 26-acre summer camp for girls. Jay Bachman is responsible for this oasis in our “little bit of heaven,” where guests can enjoy all the components of a perfect Texas day – gathering friends and family, a good home cooked meal, and the ability to splash and play in Wimberley’s beloved creek. “Chef Jay” is well known in the Wimberley community as someone who has been providing for others through his catering company, “Chef Jay Events.” It was also through this company that he took on the task of donating more than 13,000 home cooked meals to those in need following the 2015 Memorial Day flood. Once the community was stable, he then deployed to Houston and Louisiana as part of Mercy Chefs to assist others in flood-ravaged communities. It’s easy to see that utilizing his skill set to provide for others is where his passion lies. Jay started in the kitchen when he was just five years old, working under the mentorship of his mother and grandmother in the family bakery. He studied music after high school while managing several restaurants and high-end nightclubs in Dallas, Houston, and Fort Worth - but ultimately, music could not compare to his love of being in the kitchen. He opted for the small-town charm of Wimberley in 2008 to raise a family and has not looked back since. Restoration of the Lodge at Cypress Falls was the perfect opportunity for him to bring his dream to fruition. The creek here was used as a sacred ceremonial site by Native Americans; numerous artifacts were found when it was dredged in the late 1930’s that had been placed as offerings in much earlier days. Jay explains, “It is important to me that the community has a place that reflects the spirit of Wimberley - friends, family, natu-

If you still have room for dessert, he includes the favorites one might be offered at Grandma’s house: hot fudge brownie sundaes, root beer floats, and seasonal cobblers (which can be ordered a la mode)! His recipes are family classics made with high-quality ingredients. “Our goal is to take classic Texas recipes and elevate them to new levels through a combination of traditional and cuttingedge techniques,” Jay explains. “I don’t write down any of my recipes, nothing is in black and white because we believe they can and will be improved upon. This is a creative kitchen with deep Texas roots. It’s exciting to see the concept evolve and take on a life of its own.” He smiles and adds, “My grandmother taught me to keep things simple, honest, and made with love, and you’ll see her wooden spoon hanging above the kitchen door reminding us of that.” Be sure to inquire about his Hudson Valley Foie Burger, which is made with a ½ Pound Angus burger and humanelyraised duck Foie Gras that’s grilled on the
flat top (which gives the exterior a slight crispiness). To complete it, he then adds a splash of sauternes, truffle oil, and stacks it with Wimberley Valley Gourmet’s sweet & sassy pickles on a toasted ciabatta bun. It’s definitely a luxury item, but those who have tried it proclaim its worth! The Back Porch has outdoor and “indoor” seating, and the 10’ farm tables are sure to remind you of simpler times. Guests can get their wristband for river access at the front desk at The Lodge at Cypress Falls for $6.00. Available for rental are canoes, paddleboats, paddleboards, and kayaks. The Back Porch does not have a liquor license but does allow patrons to bring in wine or beer. “It’s such an honor to see friends and families gather in this ancient, sacred setting,” Jay says. “We’ve been entrusted with a great responsibility - representing much of what is good and unique about Wimberley to the world, and we don’t take anything for granted. imberley Institute of Cultures (WIC) preserves the natural, historical, and cultural resources of Wimberley. Beginning in 1986 with $500 and just a few members, WIC has since grown to more than 500 members who dedicate their time, diverse skills and talents to promote an appreciation and celebration of the area’s archeology and rock work, historic sites, ranches, camps and resorts, rodeos, cowboys, artists and founding families. WIC is committed to preserving local historic sites. Their first restoration project was the Winters-Wimberley house, built before the Civil War, the town’s oldest documented stone house, and now designated recipient of a State of Texas Archaeological and Historic Landmark and a National Register of Historic Places marker. In 2016, another completed WIC renovation project, the Wimberley Hughes house (also known as the Zach House) received a Recorded Texas Historical Landmark, a testament to the diligent research and hard work of WIC volunteers. Professional quality exhibits in the Winters-Wimberley House have charted important milestones in the town’s history. Enhanced by WIC’s large collection of historic photographs, these exhibits have illustrated the village’s milling heritage, cattle and goat ranching, and early summer camps as precursors to tourism that were and are so important to the development and character of the town. William Winters built a gristmill on Cypress Creek in 1856. For the next 70

After Winters’ death, his son-in-law John Cude took over the operation until he sold it to Pleasant Wimberley, and at various times the original gristmill was expanded, razed, and rebuilt to process lumber, shingles, flour, molasses, and cotton. One of WIC’s favorite programs is the living-history educational experience they produce every year at the Winters Wimberley House for local students in the fourth grade (the year they study Texas history) that connects them to their state and hometown in an enjoyable and memorable way. Scott Johnson, the current WIC President, says “our plan now is to use the Winters Wimberley house for a Wimberley Valley Museum, with rotating exhibits of the large collection of photographs, digitized images, oral histories and other See WIC, page 23

Collector’s shopping paradise at Broadway Paul’s

aul Burleson has been collecting things all his life — in fact, he doesn’t remember a time when he wasn’t collecting things. His passion for the past is what led him to open the first Broadway Paul’s Collectibles shop 30 years ago, in Colorado. He currently owns Broadway Paul’s Collectibles in the Old Town Plaza in Wimberley, as well

as a shop in Fredericksburg. Paul jokes, “I’ve been known as Broadway Paul for so long, that most people don’t know my last name.” As a young boy living in Houston, Paul would drag things in from the bayou, clean them up, and peddle them. He started his own coin collection when he was 10 or 12, and he still has every one of those coins today. “I built a box when I was 13, and I still have the box today,” Paul explains. “It’s full to the top.” Since he was the second to youngest of six children, he outfitted his coin box with a lock so his siblings wouldn’t get into his collection. Paul says “My youngest son who is now 24 has pushed me to get into that box. I told him ‘No, you’re going to get that one day.’” He laughs, “The key that went to the lock is probably 20 years gone.” In Broadway Paul’s Collectibles, you will find a large selection of auto memorabilia (including gas pumps, oil cans, and coke machines), political memorabilia, trinkets, die cast cars and Hot Wheels, a Star Wars collection, and late 1800’s memorabilia which currently includes a turn of the century dress and a hanging dinner lamp. He also occasionally has stamps and stamp collections. “Signs are my number one seller,” Paul says. If he doesn’t have something you’re looking for, stop in and let him know what

He keeps a wish list registry that contains customer requests. “Every now and then I thumb through my registry and I’ll see what someone is looking for and think, hey, I just picked that up,” Paul says. “It’s fun to thumb through and call them eight months later and let them know I acquired one. Paul explains, “We opened up in Wimberley because there was nothing else like that here.” Paul attends several swap and trade shows a year, and really enjoys going out “picking” and returning with truckloads of merchandise, to which he selects his favorites to add to his personal collection. “I’ve been collecting all my life, Paul says. “That’s what drove me to open a store — to support my own habit, I guess.” Paul also restores old treasures and has a deep knowledge of heirloom pieces. His Wimberley store has grown tremendously in the three and a half years since he opened— to 2,500 square feet (plus inventory in storage). Because he’s always adding to his collection, his inventory is
never stagnant, and customers can always find new treasures in his store. “I have fun with the customers, sometimes too much fun. Customers have come in and shared my lunch with me,” Paul laughs. “To me, it’s never been about the satisfaction of the money, but the satisfaction at the end of the day. I enjoy people, I really do. tepping into Billie Lorraine Jewelry Store is a bit like getting a glimpse of South Texas. Owner Billie Lorraine Lopez opened her doors in October of 2016, after designing jewelry for ten years. Her arrival to the Wimberley Square was well received, but a month after opening, she was affected by the 2015 Halloween flood and forced to start over again. After reestablishing her store but feeling uncertain about her location on the banks of Cypress Creek, Billie decided to relocate to her current location on Old Kyle Road. This more spacious location holds a certain charm. Here, you can see the influence of a girl who grew up on the South Texas ranches. Nestled among her beautiful creations are antlers deer have shed, feathers her father has lovingly collected for her, and arrowheads found on her family ranch that’s situated along the Mexican border. “When I was a little girl I would hang out with my Dad on the ranch,” she says. “When I told him I wanted to open the shop, he went into the barn and gave me my grandmother’s antique pieces to use around the store.” These include many of Billie’s current display tables. Billie’s jewelry is comprised of three lines — classic, vintage, and collegiate. She feels much of her inspiration comes from her family’s influence in her life. Growing up, her mother and grandmother tried to guide her toward classic wardrobe pieces that were of good quality. “As a little girl, I thought I wanted to do fashion,” Billie says. Since her grandmother was raised during the Depression, she collected and re-purposed things, and Billie has inherited this ability to an art. When the electrical company changed out the insulators in their small town, Billie’s grandmother went along and picked up the old glass pieces lying along the road. “When my Grandma downsized her home, we found more than 300 of them in

Photo by Colleen Brooks. the attic,” Billie smiles, “I’ll eventually do a lighting installation with them.” Billie’s jewelry pieces are best described as unique, classic, and interchangeable. Most are hand-crafted with semi-precious stones, including opals, mother of pearl, and Keshi pearls. Her creations include necklaces, rings, earrings, and bracelets. “My jewelry are all my designs, so you won’t find them anywhere else. My stones are custom cut to my specifications,” she explains. Billie’s jewelry designs range from elegant and dainty to artistically bold statement pieces. Billie also offers local pieces that include Texas necklaces (one of her best sellers), and she’s licensed to produce any Texas State University logo product. “I am a Texas State alumni and saw the opportunity to create jewelry for the fans. She explains that she arrived at this point in her career through a culmination of soul searching, inspiration from years of seeing the creations in Anthropologie magazine, and an appreciation of her younger days in South Texas when she was working with her father’s saddles and tooled work. Billie smiles, “It’s funny how life puts you on that journey where you really start reflecting more and more.”
Stepping inside her shop, it’s clear to see how the time on her South Texas ranch was instrumental in making Billie the designer she has become. Her father’s nature influence compliments her mother’s classic style beautifully through Billie’s jewelry designs. “It’s like I’m caught between two different worlds,” she laughs. imberley Inn feels like a quiet and cozy country inn, despite its location less than half a mile from the lively music venues, cafes and shops lining the historic downtown square. The inn, like the town, utilizes the area’s abundant natural resources – trees and native plants, limestone, and clear sparkling water – to create a hill country hideaway that makes guests feel as if they’ve discovered a treasure when they find it. Owner and innkeeper Peggy Crakes says, “I love the outdoors, so the outdoor setting – the decks, paths, fountains, and patios – are very appealing to me.” The natural landscaping includes many shrubs, flowers, live oak, elm, and cedar trees. Nine outdoor seating areas are tranquil retreats where guests can slip away alone to read or watch the squirrels and birds, or gather in larger groups for socializing somewhere other than in their rooms. The two original buildings on property’s five and a half acres were built in the 1990s, with more added later for a total of six buildings, in the Hill Country style of native limestone with a metal roof. 19 rooms available to guests are in four separate buildings. Four larger, deluxe rooms with choice of two queens or a king bed feature large picture windows overlooking the forested back acreage and Sleepy Hollow Creek. A spacious common area is also available for use as a meeting space or game room. Peggy grew up in Austin where her father was a professor in the business school at the University of Texas, but she is well aware of the charms of life in Wimberley since her parents later moved to Woodcreek and she often visited the area. new adventure for her, but she says it is something she has wanted to do for a while. “I was looking at B&B’s in Austin when this inn came on the market.” Peggy made the decision to buy the inn and take a leap into the exciting and, sure to be demanding, new venture after her son, Dan, and his fiancee, Sophie, expressed interest in helping her in the venture. The past several months have been busy for Peggy, Dan and Sophie as they made their respective moves from Austin and Seattle, set up for business at the inn, renovated landscaping and began to install walking trails on three and a half acres of the property. Yvette not only administers laser treatments and injectables, she has also personally undergone treatments, including Botox injections and laser hair removal. She tells customers, “I’m a patient who sits in the chair, too, just like you.” Regarding some of the bad press that Botox has received in the past, Yvette considers Botox treatments today as just another way to take care of your appearance, and says, “Part of the problem is the Hollywood standards that are unrealistic and have resulted in overuse of Botox or other injectables.” At the Med Spa, the approach is moderate and tailored to the individual. Fun cooking classes at The Blair House Inn

transform anyone’s cooking skills. Each series of three-day cooking classes runs Monday through Wednesday and includes approximately 16 hours of instruction. Owner Chris Mahoney explains, “Our cooking schools are a very active, hands-on experience. Our goal is for students to be able to go home and confidently recreate everything they did in the class for their friends and family.” Nine themed classes are offered. Students will participate in all aspects of the meal making process, then enjoy the meals with fellow students in a dinner party atmosphere. “BBQ Camp” will school participants on how to prepare summertime favorites on the grill, such as Texas brisket, St. Louis Style baby back ribs (with a cherry cola glaze), cedar-planked wild King salmon with jerk spice and mango salsa and chicken fajitas. Dessert will include a Fredericksburg peach cobbler topped with homemade vanilla bean ice cream. “BBQ Camp” dates are June 19-21, August 7-9, September 4-6 and November 13-15. A“Classic French” class gives students opportunity to prepare roasted duck, beef bourguignon, coq au vin, steak au poivre, shrimp scampi and French onion soup. Dessert instruction will include a chocolate torte with raspberry coulis and crème caramel. “Classic French” class is offered April 3-5, July 1719 and October 30-November 1. Register for the “Taste of New Orleans” class to learn how to prepare Creole and Cajun favorites such as gumbo, a Louisiana brined roasted loin of pork, cajun barbecued shrimp, blackened snapper, king cake, and of course, beignets. This class is offered May 1-3 and September 18-20. “Spanish Cuisine,” offered April 1719 and August 21-23, promises instruction on cocido (a traditional stew prepared with pork, chicken, vegetables, chick
peas, and smoked paprika), in addition to potato and chorizo trinxat, tortilla espanola, and salmorejo. Students can learn to create classics such as Fresh basil marinara, roasted garlic alfredo, fresh pasta and potato gnocchi, in addition to osso buco milanese, roasted red pepper risotto with pine nuts, and Italian espresso tiramisu

im Moore is a native Texan who grew up in the oil fields of north Texas near Wichita Falls. After attending school in Lubbock, he and his wife, Brooke, spent 15 years in the western Colorado town of Paonia, where Tim was minister for the Paonia Church of Christ. She has served small congregations in Southwestern Minnesota as well as large congregations in the Minneapolis area. She grew up in Coon Rapids, Minnesota attending Augsburg College and Luther Seminary. She and her two daughters came together as a family through adoption. As a family they enjoy traveling, playing games and keeping up with each other through texts and Facebook. ob and Tracey Wilson started Dripping Springs Chocolate Company to sweeten up life for people – on both sides of the equator. In 2014, when the couple traveled to Nicaragua on a mission trip with the Hill Country Bible Church, they were struck by the poverty they found there and wanted to do something to help. Charity would b e good, they thought, but what the people there really needed was jobs, they realized. The Wilsons, who have owned and run a globally-marketed business for years, researched likely exports from tropical regions and were interested to discover that cacao (the chocolate plant) grows only within 10-15 degrees of the equator. They also learned that the worldwide chocolate industry is notorious for
using child slave labor. Buying chocolate beans from small farmers who ethically grow their crops seemed the perfect answer for their objective. After conducting multiple taste tests and quality checks and researching supply availability, Bob and Tracey chose organic chocolate beans from Ecuador. All of the beans they use are certified by the Rain Forest Alliance to be organically grown, ethically sourced and raised on plantations that don’t disturb the rainforest to produce them. Learning to transform those raw beans into chocolate bars of exceeding quality has been an adventure, says Bob. “Yeah – tasting all that chocolate was some really difficult research we had to do!” chimes in Tracey. Photos courtesy Dripping Springs Chocolate Company. family and friends, they arrived at a 65% dark chocolate made in five varieties: Plain, Almond and Sea Salt, Dried Cherries, Coffee, and Spicy. More recently, Bob and Tracey have added a new Tactical Line with 75% cacao, plain and with added cocoa nibs. They’ve also come up with seasonal varieties, such as the Pumpkin Spice and Pecan bar they premiered this fall. At Dripping Springs Chocolate Company, the raw chocolate beans go through six different processes to transform them from “bean to bar.” First, they’re roasted, then cracked. The husks are winnowed
with a rueful laugh. Since much of the final tempering depends on weather (humidity/ambient temperature) and the ratio of ingredients in each chocolate, they do a lot of tinkering to come up with final processes for each variety of bean and bar. Once their product was ready, the Wilsons tested the market at a booth at the Dripping Springs Farmers Market last August. That evening, they posted on Facebook: “Thank you…to everyone that came out and supported us today. You all exceeded our expectations and we enjoyed talking with everyone, sharing our love of chocolate and getting some feedback and experience.” They also sell their gourmet chocolates at local fairs and events. The Wednesday afternoon Farmers Market, however, remains their primary sales location.
