Mini Chicken and Broccoli Pot Pies Ingredients:
Vegetable oil cooking spray Pot Pie Filling: 2 tablespoons unsalted butter, at room temperature 2 tablespoons all-purpose flour 3/4 cup whole milk, at room temperature 1 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 1/4 cup grated Parmesan 1 small store-bought rotisserie chicken breast, chopped into 1/4-inch pieces (about 3/4 cup meat) 1 cup broccoli florets, cut into 1/4 to 1/2-inch pieces, steamed (about 2 ounces) To Assemble: All-purpose flour, for dusting Two 10-inch round unfold-and-bake frozen pie crusts, thawed 1 large egg
Directions:
12-cup mini-muffin pan; 3-inch round cookie cutter; 2-inch round cookie cutter Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a 12-count mini-muffin pan with vegetable oil cooking spray. Set aside. For the pot pie filling: Melt the butter in a 1-quart saucepan over medium-low heat. Add the flour and whisk until smooth, 1 to 2 minutes. Gradually add the milk, whisking constantly to prevent lumps. Simmer over medium-low heat, whisking constantly, until the sauce is thick and smooth, about 6 minutes. Remove the pan from the heat and stir in the salt, pepper, Parmesan, chicken and broccoli. For assembly: On a lightly-floured work surface, roll out the dough 1/8-inch thick. Using the 3-inch round cookie cutter, cut out 12 pieces of dough. Using the 2-inch round cookie cutter, cut out another 12 pieces of dough. Press the large rounds of dough into the bottom of the prepared pan. Spoon the sauce into the pastry. Combine the egg and 1 teaspoon water in a small bowl, using a fork. Brush the edges of the pastry with the egg mixture and place the remaining pieces of dough on top. Lightly press the edges of the dough together to seal. Press around the edges of the pies using the tines of a fork. Brush the tops of each pie with the beaten egg. Cut a 1/2-inch-long slit into the top of the pies using a paring knife. Bake until the tops are golden and the filling is bubbling, 15 to 18 minutes. Cool for 10 minutes and serve.
Spaghetti Nests

Ingredients:
Pasta: Kosher salt 1/2 box spaghetti (about 8 ounces) 2 packed cups spinach leaves, finely chopped 1/4 cup grated Parmesan 2 tablespoons extra-virgin olive oil To Assemble: 1/3 cup grated Parmesan 2 tablespoons whole milk 3/4 teaspoon kosher salt 1 large egg Olive oil, for drizzling 2 cups marinara sauce, warmed 12 small fresh mozzarella balls, such as ciliegine or bocconcini Special equipment: Four 4-inch-diameter springform pans
Directions:
Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter the bottom and sides of four 4-inch-diameter springform pans. For the pasta: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain the pasta and place in a large bowl. Add the spinach, cheese, oil and 1/2 teaspoon salt. Toss well until the spinach is wilted. Set aside to cool. For assembly: Beat the Parmesan, milk, salt and egg together in a large bowl until smooth. Pour the sauce over the spaghetti mixture until well combined. Twirl 1/2 cupfuls of the spaghetti mixture around tongs or a large fork and transfer to the prepared pans. Make an indentation in the middle of each nest of pasta and drizzle with olive oil. Bake 15 minutes. Let cool 10 minutes before removing the sides from the pans. Remove the bottoms of the pans from the nests using a thin metal spatula. Spoon 1/2 cup of the marinara sauce on each of 4 serving plates. Place the spaghetti nests on the sauce. Place 3 balls of the mozzarella in each nest and serve.
Indoor S’more Sundae Ingredients:

6 tablespoons unsalted butter, plus more for greasing 4 cups miniature marshmallows 1/2 cup smooth peanut butter 6 cups puffed rice cereal 1/2 cup whole roasted peanuts 4 ounces good-quality semisweet chocolate, chopped Flaked sea salt, optional
Directions:
Lightly butter a 13- by 9-inch baking dish. Melt the butter in a large saucepan over low to medium-low heat until light brown specks start to form and the butter starts to smell nutty, 10 to 12 minutes. Add the marshmallows and stir until completely melted. Remove the pan from the heat and stir in the peanut butter until melted. Add the puffed rice cereal and peanuts. Stir until well coated. Press the mixture evenly into the prepared baking dish. Cool completely. Meanwhile, place the chocolate in a medium heatproof bowl. Microwave in 30 second intervals until the chocolate is melted. Drizzle the chocolate over the cooled crispy rice treats and sprinkle with flaked sea salt if desired. Cut into 18 bars.

For the graham cracker crust: Mix the graham cracker crumbs, butter, sugar, cinnamon and a sprinkle of salt together in a bowl. Firmly press the crust into muffin tins to make individual crusts. Top each crust with a scoop of vanilla ice cream. Press the mini marshmallows into the ice cream, covering the scoop completely. You will have 4 s’more “domes”. Freeze at least 1 hour. For the quick chocolate sauce: Immediately before serving, heat the broiler to low. Toss the chocolate chips with the milk in a ramekin or small bowl and microwave 30 seconds, stir until smooth and set aside. Place the s’more domes under the broiler until marshmallows brown, about 30 seconds. Watch them constantly as they burn easily. RAIN STICKS: You’ll need: Cardboard tube (long, sturdy ones work best) Aluminum Foil Watered down Glue or Mod Podge Colored tissue paper Nails or tacks Filler: rice, corn kernels, small buttons, pony beads etc. Directions: Push, hammer or tap your tacks and nails into the tube. Once you have all of your nails and tacks in, roll your tube up in aluminum foil. Give a good squeeze all the way around so the foil is tight to the tube, and stuff the excess at ONE of the ends into the tube, plugging that end good and tight with foil. Now, pour your filler items (beads/rice/small corn kernels etc.) into the open end of the tube. Keep your items small so they don’t get jammed between the nails and tacks. Now seal up the open end just like you sealed the bottom. Decorating: Brush them with some watered down white glue, and then coverd them with squares of colored tissue paper, giving the tissue a light coating of the watered down glue. When dry, jazz them up with covered them craft-foam stickers. When you’re finished decorating your rain stick, tip it end to end, and SPRING DAFFODILS: You’ll need: Paper of varying yellow shades, Scissors, Glue stick Pipe cleaner Directions: Start with a 4” square of paper. Fold in half diagonally. Fold in half diagonally again. Fold in half diagonally one more time. Cut into a petal shape and snip a hole in the tip. Open to reveal the petals. Now cut the center circle to 2 1/2”. Cut this circle in half. With the glue stick, apply glue to one side of an edge. Shape the half-circle into a cone. Fold down one end of the pipe cleaner. Apply some glue to the center of the flower. Assemble by putting the cone into the flower opening, then putting the pipe cleaner through this hole, securing with the pipe cleaner. 20
