Whilst it might not quite be the season, we’re all dreaming ahead to the lazy summer afternoons basking out on patios whilst slurping down sumptuous fresh oysters. The age-old tradition is to pair this with a Champagne, but with so many options out there, it’s hard to even know where to start. In all honesty, an oyster should be paired with a beverage you love most to emulate the flavor. But if you’re looking for some suggestions that embellish the sensation, you can check out our opulent selection below.
Champagne It is an effortlessly chic combination we see everywhere, but with so many styles of Champagne, it’s essential to pick the right one to unleash the maximum flavor from this timeless pairing. Firstly, the greater the vintage the more expressive the flavor is going to be. This is because older vintages have a higher level of ‘free glutamate and nucleotide content.’ Essentially, this is what gives a vintage a unique umami-like savory flavor, which when paired alongside an oyster creates a magical outcome. Of course, it’s also all about the texture. The subtle pop of the bubbles that arise like magic from the fizz is a great contrast to the velvety texture of the oysters. This is why sourcing a Champagne that is Brut Nature is important. It’s wine without any additional dosage so you’re magnifying the ‘bubbly’ element by going for this profile.
Muscadet Bright and crisp are the first words that come to mind when imagining a classic Muscadet flavor. The wine comes from the Loire Valley where the river meets the Atlantic and wild oysters grow in abundance in the coastal town of Nantes, making it a sublime pairing from its roots. Hailing from one single native grape, the melon de Bourgogne offers a unique salinity and delicate flavor. The result assists in lifting the sumptuous taste of an oyster, instead of overpowering as a more oaky alternative would be at risk of doing. Muscadet can often be a hard sell due to its characterization of being a wine without a lot to offer. But in the case of this pairing, the simplicity of the wine is its greatest quality. The best Muscadet comes from the Sèvre-et-Maine region and a wine that is aged on lees creates a drier outcome, which is essential when matching with an oyster. This will be labeled with ‘sur-lie’ on a bottle, so keep an eye out for this hint. Subtle acidity, yet elegantly crisp, it comes as no surprise that these two marry together delightfully. Louise Chereau, the co-owner of Château l’Oiselinière de la Ramée in the Loire Valley highlighted the complimentary flavors. “The salty and citrus hint in the mouth is a result of the soil that brings a unique freshness to a Muscadet. This is what makes it the perfect pairing with oysters, our favorite being the meaty varieties that grow along the coastline of Nantes.” It’s possible to find it in most premium beverage stores around the hills. The Classic Martini You don’t have to be restricted to wines when pairing drinks with an oyster. A classic dish calls for a cocktail of the same caliber and a stiff martini (shaken of course, not stirred) perfectly complements the buttery texture of an oyster. But what’s the best oyster for a gin or vodka martini? If you prefer the botanical, herbaceous aromatics from a gin garnished with a single olive or aromatic lemon twist, the crisper and saltier the oyster the better. The botanics from a gin martini provide a jammy and plump finish, a great contrast from the initial salty hit. If you’re more of a vodka mogul then a simple martini and lemon garnish makes for a wonderful pairing with a more meaty and juicy oyster. You certainly won’t need a squeeze of lemon on top of an oyster for this one. Pavel, owner of the trendiest spot in Portugal’s quirky capital Lisbon with the appropriately named ‘Oyster and Margarita’ bar gave us his insider expertise on why this combination is their best seller: “The charcoal and citric combination that comes from the cocktail is like a warm blanket for the silky texture of the oyster. It’s the perfect palette cleanser with a surprise smoky kick between each meaty bite.” Combining two flavor profiles with such ferocious intensity is a risk, but one that we can guarantee transports you straight to its origins. An oyster is not just a decadent dish we enjoy with friends on a lazy afternoon. Regardless if you are in the blazing southernEuropean Lisbon sun or Beverly Hills hottest new restaurant opening. Of course, there is the iconic Louvre, but that is just one among a list of select choices for visitors to the City of Lights; there are many more and more than a few that visitors won’t want to miss. Three of the more contemporary museums stand out in this crowd, specifically the Foundation Louis Vuitton, Foundation Cartier, and the Pinault Collection housed in the ancient, stately Bourse de Commerce.

Pinault Collection - Bourse de Commerce Home to the Pinault Collection, the Bourse de Commerce is a stately, 19th-century building originally constructed to house a corn exchange before later transitioning into a commodities exchange and, now, a museum. The Bourse’s iconic dome is even mentioned in Parisian author Victor Hugo’s Notre-Dame de Paris and is considered a historical monument. Leased to Francois Pinault in 2016 to house his collection of art, the building was soon converted into a dynamic, functional modern museum space. Housing more than 3,500 works from both Pinault’s personal collection as well as others, the combined value of $1.5 billion makes the Bourse home to some of the world’s finest art without exception. Renovations to the Bourse expanded its total exhibit space while also outlining how visitors would experience art in the main gallery. A 2017 addition by Tadao Ando, a thirty-foot concrete cylinder, serves as the Bourse’s main exhibition gallery as it spirals upwards towards, putting visitors on a contemplative journey that shows off the best the museum has to offer. When renovations are completed, the Bourse will have 32,000 sq ft of exhibition space available as well as a new underground auditorium for performances, lectures, and other events. but may not be able to express that in the language of the design exactly. “Every equestrian property, like every residential development, is unique. I’m fortunate to spend time with our clients and find out what their specific needs are, both practically and aesthetically. That’s the starting point, and it must inform all other areas of the work we do.” In her own life, Annie enjoyed riding horses throughout her childhood. When an accident prevented her from developing this passion further, her continued involvement developed her keen understanding of the needs of a busy stable and the business of running large multi-use areas. Combining functionality and
practicality with design execution is often easier said than done, particularly when you factor in the list of statutory requirements that developers often conform to when building a project. For Annie and her team, these are everyday challenges, but that, nonetheless, require a level of expertise and familiarity that others may not have. One of these areas is the precise nature of Florida’s unique climate which, while ideal, also presents a range of challenges when it comes to building projects. “Florida has very specific building requirements due to its extremes of weather. With frequent high temperatures and high numbers of tropical storms, an important factor is keeping the horses relatively cool

and dry. This obviously influences material and design choices, as well as the fact that developments need to exist in harmony with either pre-developed buildings or residential spaces that we will also design.” Comparing these realities with designs in the desert wilderness of Abu Dhabi, where there is a constant forbidding heat and perpetual lack of water, creates a very different set of design challenges. Even so, understanding what the client wants is central to the design process. Meshing the external environment with this internal urge is the process of design and architecture in many ways and one that Carruthers understands on a spiritual level. “Clients know their horses and their own day-to-day needs better than anyone. We have the benefit now of creating 3D architectural designs and documentation, 58 | HILLS VIEWS & VALLEYS
which means we can ideate and present a vision of the concept to our clients wherever in the world they may be.” The results clearly speak for themselves with many developments showcasing their own subtle iteration of Annie and In-Site Design’s ideals, including expansiveness, visual appeal, and practicality. Each development understands its central purpose but also anticipates unspoken needs and hidden desires that residents might have, such as access to conveniences or a comprehensive residential system. For centuries, British gentlemen have had their garments sewn by hand in the workrooms of the many historic tailoring houses. Huntsman, established in 1849, is one of these legendary houses and has been outfitting kings and queens of Europe and cultural figures for centuries. In recent years, many have been introduced to the world of tailoring from the movie series “Kingsman” which is filmed in the Huntsman tailoring shop. This flagship of tailoring has both tradition and the best of today’s craftsmanship and states that “Huntsman has been proudly contemporary since 1849.” Compared to Huntsman the tailoring house of Kathryn Sargent is a start-up, although the company celebrates its 10-year anniversary this year. Kathryn was the first ever woman to rise to the position of Head Cutter on Savile Row and after 15 years of experience, she decided to launch her own tailoring shop in Mayfair. ezcal is having a moment. U.S. sales are expected to exceed $500 million by 2027, and more spirits connoisseurs are beginning to appreciate the
distinction between mezcal and tequila. “Tequila is colorless and tasteless after distillation, and it takes on most of its character from barrel aging,” says Yelena Simonyan. “You can make hundreds of thousands of liters at a time. Mezcal is a handcrafted, artisanal product, deriving its character from the soil and from family recipes.” Simonyan is the wife of Eugenio Sernas Jr., the thirdgeneration

grandfather began planting agave in Oaxaca in 1927, and by 1955 had established one of the five recognized mezcal brands in the state. During the 1970s, his father Juan led the campaign to ban the addition of sugars and artificial flavorings from the spirit. “Three factors are crucial when making mezcal,” she says. “The first is the agave. We use mature, 12-year-old plants with high sugar levels to allow us to achieve the desired alcohol naturally. Next is the terroir, or soil: the best mezcaleros grow their own plants from estate-owned plots. Most important is the family tradition—the knowledge and experience passed along from generation to generation.”

Without the addition of artificial yeast, open-air fermentation allows the sugars to naturally convert to alcohol. The fermented agave is then distilled in small copper pots, similar to the production of Cognac or single-malt Scotch. While Victorioso is just beginning to be exported into the U.S., it has already made inroads into upscale restaurants, retail shops, cigar bars, and golf clubs in both New York and Los Angeles, and the brand won the titles of Best Mezcal and Best in Show at the 2022 L.A. Spirits Awards. Five different varieties of agave are available in a stunning glass bottle inspired by the Oaxacan pyramids and ancient Zapotec culture; entry-level offerings start at $150, while the rarer expressions can easily cost $1,000. Regardless of price, all Victorioso mezcal is distilled to an alcohol level of 90 proof, or 45% ABV. “The grade of alcohol is very important,” says Eugenio Sernas. “38% or 40% is very low, and it makes it hard to clearly distinguish the real essence of the maguey [agave]. We distill to at least 45% to bring out the best flavor.” The result is a spirit with a floral perfume that mirrors the character of the earth where it is grown, with a hint of smokiness and the qualities of fine wine. While producers urge consumption in moderation, many mezcaleros claim that the lack of additives makes their product hangoverproof (“the more you drink,” says Simonyan, “the more energy it gives you”). For the ultimate enjoyment, she recommends drinking mezcal neat, like a good Scotch. She stresses the fact that Victorioso is a much cleaner and purer product than other brands on the market, so there’s no need to mask the flavor by mixing it—although if you choose to do so, you’ll certainly end up with a smoother cocktail. Regardless of how you drink it, a top mezcal will be an unforgettable experience. “Eugenio is producing mezcal that his ancestors would be proud of,” says Simonyan. “For us, it’s a product of passion.”

eeping the world’s most famous secret agent on time is no simple matter. But with the OMEGA Seamaster, 007 is certain never to miss an
appointment. A feature accessory since 1995, the watch is now the centerpiece of a 60-year celebration of the iconic James Bond films. The signature Seamaster has been in production since 1948 and is based on concepts originally developed for the British Royal Navy. It has been a trusted timepiece through both Pierce Brosnan’s and Daniel Craig’s incarnations of the legendary character. Time has been a central theme in many Bond outings. Tomorrow Never Dies and No Time to Die both play on 007’s perpetual tussle against a genius villain and a rapidly

The famous helium release valve (with the button at 10 o’clock) is a stylish nod to more extreme activities that perhaps only a real Bond figure will ever undertake. longside its reputation as one of the most demanding sports that anyone (and a trusted steed) can undertake, the storied sport of polo is usually associated with a luxury lifestyle that few will ever be able to achieve. The Chamounix Equestrian Center, some six miles north of downtown Philadelphia, is located at the tip of Fairmont Park and west of the meandering Schuylkill River. To the casual eye, it’s a fitting home for the practice and perfection of this elite activity. With a dedicated staff, an outdoor riding arena, barns, pastures, and multi-use facilities leading off into 1,400 acres of open space and trails in West Fairmont Park, the Center is a perfect respite from the surrounding city and suburbs. It offers riding and polo lessons, summer camps, horse boarding, and leasing options. But central to the Chamounix mission, and its notable standing within the Philadelphia community, is Work to Ride—a non-profit prevention program with a reach that has extended well beyond the entitlements of the equestrian world, to the trails and trees within Fairmount Park, and the underprivileged areas within central Philadelphia. For the children who call those and other housing projects their homes, the program is a passport to a better life.

Founded in 1994, Work to Ride was established to enable disadvantaged urban youth through the sport of polo, as well as stable activities, tending horses, and riding. A minimum of a one-year enrolment is required, with many children staying on the program for many years through to college, where they can get assistance with academic funding. Work to Ride achieved national success in the United States Polo Association’s National Interscholastic Championship in 2011 and 2012, fielding the first African American team to win the competition. Central to Work to Ride’s success is its founder and Executive Director Lezlie Hiner, who is keen to emphasize the challenges facing enrolling children and their parents. Polo is a year-round sport that demands a complete commitment, with the necessity to (as Hiner calls it) “code switch” from the tough realities of their 122 | HILLS VIEWS & VALLEYS
home environments to the very different demands of working at an equestrian center. “When the kids are here,” says Hiner, “the rules, lessons, and guidelines that they learn here… you want to have them translate. But at home, things are very different than they are here. So, the challenge for us, and also for the kids, is learning how to straddle those two worlds.” Dedication and hours of commitment from the team at Chamounix can become burdensome says Hiner, not including the financial costs inherent in the yearlong upkeep and training of animals, as well as land and stable management. “We have 35 horses to feed every day and it’s super expensive. Anyone fortunate enough to be involved in the horse industry, whether that’s as a rider, a competitor, or somebody that has backyard horses… You make choices because it’s an expensive endeavor.”

The Center actively campaigns for funds to improve both indoor equestrian and inter-stable teaching capabilities. Its vision, in keeping with its responsibilities, is sober but bold. As Hiner puts it, “Watching the kids become balanced and successful individuals, that’s the biggest thing.” For the sport’s lofty reputation and its perceived glass ceiling (members of the British Royal family are adept polo players), its costs and impracticalities are steep. The polo season is year-round and competitive events require teams and horses to travel. Even so, Work to Ride has proved an unprecedented success. A member of the 2011 and 2012 Interscholastic Championship team, and possibly Work to Ride’s most famous graduate, Kareem Rosser published a memoir in 2021 of his time in the program. Crossing the Line is both a harsh document of the realities of life in the cities for many underprivileged children and a testament to his own determination to move up and out of these conditions with the help of Work to Ride. 124 | HILLS VIEWS & VALLEYS
“Kareem came into the program when he was eight,” says Hiner. “He graduated high school, went to college, and got involved. But we have other kids who come into the program very young. We have one kid at the moment whose mum paid for him to have a summer camp for two years. And then when he was seven and old enough to come, he came. He’s still on the program and he’s a senior in high school this year.” Another reason for the attention that Work to Ride has received is its relationship with its funding partner, the luxury clothing brand Ralph Lauren, whose long-standing association with the sport led to an introduction via the world’s most famous polo player (and Ralph Lauren model) Ignacio “Nacho” Figueras. “We had met Nacho at an event in 2006 and he had kept in touch. Then after that, it was Sean Burke from Ralph Lauren who said, “Hey let’s bring this organization into the fold.’ So he pitched it and that was the genesis.” The shoot featured in these pages has since garnered international attention. Hiner is timid about her reasons for starting Work to Ride and her role in making it such an astounding success. “It was basically that I’d been involved in various equine jobs throughout my whole life, and I just designed the program, and wrote my very own job description.” There’s no hiding the fact that in its 28 years, Work to Ride has achieved remarkable results, including the empowerment of young lives through activities that would appear beyond their reach, the coalescing of contrasting worlds across both city and racial lines, and incorporation into the world of luxury fashion. Work to Ride does not minimize the difficulties and realities of its young participants’ lives, nor the commitment necessary to make their time on the program a success. The Outer Banks have been a well-kept secret for decades until the Netflix series of the same name hit the airwaves. And while the show has created a buzz about the area, it is not actually filmed on location. The series setting is The Outer Banks, a 200 mile long chain of barrier islands off the coast of North Carolina and southeastern Virginia, but filming actually takes place off the coast of South Carolina. While the filming location is intriguing, even the show’s creators admit to taking liberties with the geography that is portrayed in the popular series. The good news is that Duck, North Carolina is a crown jewel of the region and simply an unforgettable destination. The northernmost community in Dare County, and one of the most popular resort towns on the east coast, Duck earned it’s moniker from the waterfowl, including the wild ducks that have called the area home for so many years. The area is believed to be a center point on the Atlantic flyway for the ducks that migrate from the Arctic to the tropics. Established in 1937 by none other than Bing Crosby, the world’s first multimedia superstar, Del Mar Fairgrounds (or more specifically, the Del Mar Thoroughbred Club, “Where the Surf Meets the Turf ”) is the only seaside horse racing track in the United States. Given that, it’s little wonder that Campbell has collaborated with the iconic car maker to produce the BMW XM, the company’s first high-performance automobile with M HYBRID drive, which will become the most powerful series-production vehicle ever approved for road use. Co-creator Campbell was particularly attracted by the new vehicle’s slogan of “Dare to Be You,” which echoes her philosophy. ”The BMW XM slogan immediately appealed to me because it describes exactly the confident attitude that is necessary for progress and positive change," says Campbell. The built-in stereo headphones can also be an alternative to earphones. A prototype for swimming goggles is also in the works. Imagine, swimming while streaming your favorite show underwater and with built-in sensors to track your session and progress. But what does it mean for health care? Vuzix is teaming up with AI facial recognition software. The aim is to recognize and detect covid-19 carriers, especially in hospitals, event venues, and retail outlets (users need to opt-in for this feature). AR-assisted surgery is also becoming closer to reality. In June 2020, the first surgery using a Vuzix M400 happened in Paris, France.
