ello and a warm welcome to our Winter issue and final magazine of the year. What a year this has been and I’m sure we’ll be all glad to see the back of 2020! In addition to having to deal with the Covid lockdown and restrictions Stockbridge has also had the misfortune to have to contend with major roadworks, however these are now complete. On a positive note it’s nice to see Dobbies now occupying one of the units in the Raeburn development and hopefully we’ll see the remaining units open before too long. As I write this it’s just been announced a vaccine will now soon be available which should give us all hope that there is light at the end of the tunnel; perhaps we can enjoy our festive period. This issue has its usual mix of seasonal adverts and editorial which I hope you’ll find useful. Local businesses need your support especially this year, so please shop local wherever possible. Finally may I wish you all the best for a more ‘normal’, happy and healthy 2021.

OUR QUICK INTRODUCTION TO FERMENTING If you’ve always wondered about fermented foods and the potential of making your own, we are here to let you know that not only do fermented foods provide many health benefits, but with a little experimentation you can make them easily at home too!
T
he benefits of eating fermented foods include the increase of ‘good’ bacteria in your gut and protection from ‘bad’ bacteria, enhancing the inherent nutrients of the food, building your body’s immunity and aiding both digestive and pre-digestive processes. Fermenting is also useful for converting food into a long-life form and transforming an indigestible food such as soya beans (which are toxic to humans in their raw form) into an edible and digestible state. There are two main ways of fermenting, both of which you can do at home. Wild fermenting uses the organisms already in the food, but you can also opt to use a starter culture to get the ball rolling. We recommend first-time fermenters to experiment with something simple, such as kimchi. Get started with our Kimchi recipe.
RECIPE FOR KIMCHI Ingredients • • • • • • • • •
Shortcrust pastry 375g 1 finely sliced turnip or radish 1 finely sliced/grated cabbage 2-3 shallots 1 sliced apple 2-3 chopped carrots 2 crushed cloves of garlic 1 finely chopped chilli 2 tspns mineral or rock salt
Method Massage the salt into the cabbage and cover with water in your bowl, leaving for a minimum of 10 minutes. In the meanwhile mix together the rest of your ingredients. Rinse the cabbage and mix all ingredients together before squashing down into a large jar. The vegetables should be covered in their own natural juice, however if there is not enough you can simply add salted water (brine) or celery juice. Make sure to cover the vegetables completely, and leave at least the top inch of the jar empty to allow space for your mixture to bubble.
Close the lid tightly and allow the Kimchi to ferment, we recommend tasting it daily until you find it to your taste as the longer it is left to ferment the stronger the flavour will be. Once you have the flavour you enjoy, transfer it to the fridge and enjoy! Enjoy!

Indian Prison Dhurries The end of the 19th century in late colonial India bears witness to a revival of textile industry and carpet weaving. Interestingly enough, many products of this re-emerging economy, fine quality rugs in intricate designs, came from Indian prison factories. The so-called Jeeli or jail carpet was not a new idea; earlier, in the 16th century, Mughal Emperor Akbar is said to have brought skilled weavers from Persia to teach the art to inmates in Mughal jails across the Subcontinent. The idea appealed later to British authorities who decided to continue the Mughal tradition in the 19th and early 20th century. Apart from the obvious economic reasons, weaving was viewed as part of prisoners’ ‘reform’ therapy. Jeelis were produces in a variety of styles; opulent wool pile carpets emulating ancient Persian designs, or simple kilim-like Dhurries, an Indian tradition from the time immemorial. It is however the humble cotton yarn dhurries that have of late become most coveted home décor floor coverings and a popular choice of many designers in the west. 10 NEM

So that you can drink your merry way around this spirited city, explore our edit of the perfect pub walks in Scotland’s capital.

The First-Timer Tipple Trail
Yes, we call this route — Dean Village to the Botanics to Canonmills — the all-inclusive bottomless buffet walk, as the wealth of possibilities are never ending! This circular walk showcases some of the city’s best architecture, authentic drinking dens, shopping and striking scenery. Begin at the picturesque Water of Leith Walkway and meander towards Stockbridge. Swing by Dean Village, a UNESCO World Heritage Site, weaving in and out of the alluring gift and second hand shops while you’re at it. Stop at the Orchard Bar and Restaurant situated in Canonmills at the corner of Howard Place
Perfect for those looking to become acquainted with the city, the Halfway House to the Bow Bar and then the Blue Blazer is a braw way to start. Begin your drinking journey by Waverley train station and tackle the mighty steps up to Market Street. This enchanting confined stone alleyway is a prime example of a Scottish close. Infused with character, Halfway House will make the best first impression. After the first brew, trudge up the famous cobbled Royal Mile and swing a left towards Upper Bow. The compact Bow Bar is unpretentious and sports superb cask beers,

and Warriston Road. After refueling, head to the Botanics and stroll through the grounds punctuated with beautiful plants and eyecatching Victorian glasshouses. After exiting through the East Gate, make your way to the Orchard and pick your poison. Next, the New Town. Embrace the beautiful architecture and wander forward in the direction of Circus Lane and then King George V Park. For the final destination, hit up The Antiquary, an intimate subterranean bar.
Then trace the Water of Leith Walkway all the way until you can smell the fresh sea air and see some of the best pubs in town. Although you could frequent Leith bars all day and night, extending the walk accordingly, two that stand out are Malt & Hops, an age-old pub dating back to 1749, and Teuchters Landing, a drinking institution overflowing with banter and endless booze choices. King’s Wark and The Lioness Of Leith are also strong contenders.

The Hard Liquor Historic Run-Around
It may be a tad dramatic of a name, but this route is not your average amble-andpint kind of trail. It will, however, be worth the wandering when the insanely striking panoramic views set in. Start by scaling Arthur’s Seat, Edinburgh’s mystical mountain peak attached to legends of King Arthur, and stop at the Sheep Heid Inn, perhaps the oldest pub in the city and even Scotland. This veteran booze palace has an old-school bowling alley and personality for days. If you can pry yourself away, saunter along the Innocent Railway Path until you reach the bottom of the hill. Next, canter along to the Auld Hoose, a trendy spot with a determined jukebox.
The Water Way Wander
We all know that nothing goes better with water than whisky and a lone ice cube — at least in Scotland we do. Start this postcard perfect pub walk with a generous hydration session at the trusty old Stockbridge Tap.
Begin your urban architecture adventure at Café Royal, a joyful vision to look at, and make sure to sample every whisky, ale and seafood platter in sight. Although Café Royal is striking enough to merit an all day kind of drink fest, start strolling along the magical lane that is Rose Street. Turn right at Charlotte Square and prowl Young Street until Oxford Bar enters the radar. This dynamite gem of a drinking den is as basic as can be and yet, nowhere else will you find better banter, sumptuous ales and a delightfully frill-free atmosphere. Literature lovers will know this place as an inspiration for Scots author Ian Rankin. When the next bar beckons, head to Kays Bar on Jamaica Street, a unique Victorian style Bar with an intimate atmosphere. It’s worth meandering the nearby streets, if only to absorb the striking Georgian edifices and welcoming windows.

2020 Review – look ahead to 2021 the number of homes coming to market is still significantly up compared to last year. For those selling in Stockbridge, the last 6 months of 2020 have been fantastic.
2020 is a year that most of us will want to forget but we will not be able to. It has presented us all with challenges that we’ve never faced before. The property industry certainly hasn’t escaped unscathed with landlords, tenants, sellers and buyers, facing uncertain times and those that operate short lets, struggling with travel restrictions for many months. In property sales, we went from a point where everything including viewings, negotiations, and conveyancing all came to a shuddering halt in March, to the strongest market Edinburgh has seen in over a decade between June and October. Zoopla estimates that the current average value for any property type in Stockbridge has risen by 4.42% in the last 12 months, with the current average value of a flat placed at £257,531. The ESPC has estimated that between August and October 2020,
The number of new listings in Edinburgh and the Lothians, more generally, is up 44.4% year-on-year. The average sale time dropped from 21 days to just 17 days at the height of the boom. We believe that this is down to people’s priorities changing after periods of reflection during the March-June Lockdown, leading to massive pent-up demand. Families are placing more emphasis on space and less on location with working from home looking set to continue into life after Covid. Make the fastest Xmas mincemeat pies ever!
Until you actually make these you’ll never appreciate just how easy and fast these are! You can freeze them and re-heat in a hot oven straight from the freezer.
Ingredients • Shortcrust pastry 375g • Mincemeat of your choice 400g (use only 3/4 of jar) • Almonds 42 • Cranberries 42 • A little milk • Golden caster sugar • Icing sugar to serve • Lightly greased baking sheet
Method Pre-heat oven to gas mark 7 Begin by unrolling the packet of pastry and leaving it on the cellophane then cut 28 five cm discs and arrange them on the baking tray. Next using a 4cm cutter press this into the centre of each disc, making an incision to just 3/4 of the way into the pastry, (but be careful not to go right through). Now brush the edge of each disc with a little milk, the pile about a teaspoonful of mincemeat into the centre of disc. Arrange 3 almonds on half of the mince pies and 3 cranberries on the rest, then dust the nuts and cranberries with a little caster sugar. Bake the mince pies on the high shelf of the oven for 10–12 minutes or until golden, then remove them to a wire cooling tray. Serve warm dusted with icing sugar. NB: if freezing the pies allow them to cool, then transfer to a plastic freezer box layered with baking parchment. To re-heat, cook from frozen in an oven pre-heated to gas mark seven and cook for 4-5 minutes, then dust with icing sugar. Enjoy!
