CONVENTION CENTERS | 8 Colorado Convention Center The Colorado Convention Center is the premiere convention center in Colorado. The Convention Center is conveniently located in the theatre district of downtown Denver. This Convention center is well equipped to handle any size convention. Las Vegas Convention Center The Las Vegas Convention Center Phase two expansion project will feature design, cutting-edge technology and contemporary meeting and working spaces. It will add 1.4 million square feet to the current convention center facility, including at least 600,000 square feet of new, leasable exhibit space.

EDITOR’S COMMENTS THINKING OUTSIDE THE BOX WHEN IT COMES TO TRAVEL PLANS
T
he first time I ever visited Washington, DC was in April of 2001 right before my 30th birthday. It was a short business tripped
mixed with a bit of vacation time but I loved every minute of it! I have wanted to take my son to DC ever since he was a little boy but timing and scheduling issues always seemed to prevent it. My son Alex has been traveling with us, with this magazine, since he was 3 years old. He's traveled throughout the US and Mexico and learned at a young age how to manage a booth at a conference or trade show. As parents, we were fortunate that he loves to travel and his elementary teachers were always supportive of our trips. They all recognized that travel is an educational tool that more children should be exposed to. Once he got into middle school it became more difficult to pull him out of classes and convince 7 semester teachers of the value of travel versus the 1 or 2 teachers he had each year of elementary. His traveling days due to 4 HM&T | Hispanic Meetings & Travel
business and the magazine diminished so family vacations became his reason for travel. As a result my desire to take him to our national's capital grew stronger as the years went by. This year we are being afforded that trip to DC. Alex was invited to be a junior groomsman at his cousin's wedding set to take place in Williamsburg, VA over Memorial Day weekend. As we began to make travel arrangements it was becoming difficult to obtain a flight from Houston to Richmond or Norfolk that fit our schedule. Looking at the map I noticed how close DC is to Williamsburg. I Googled the distance between them - only 153 miles apart. I thought to myself 'Hmm, this is a shorter drive than from Houston to San Antonio". So, I convinced my husband and son that we should fly in and out of DC so Alex can see the city, drive to the wedding and back to spend time in DC. They were on board with my idea and excited about it! It was not hard to convince my suegros, sister-in-law and nephew who were traveling with us because they are always game when it comes to travel. In the next issue, I'll let you all know how Alex's first trip to DC turned out and whether or not thinking outside of the box on this trip was worth the trouble. In this issue of Hispanic Meetings & Travel we are featuring conventions centers. On the cover we have the beautiful Colorado Convention Center in Denver that is fit to host any size meeting or conference. We also feature the Las Vegas Convention Center with information on its expansion phases. These convention centers are a great fit for any Hispanic association looking to meet out West.

Groups Invited to Experience Mexico's 16 Denominations of Origin With Special Crafts, Food, Beverages, at Grand Velas Riviera Maya

he AAA Five Diamond Grand Velas Riviera Maya is offering groups a new way to explore Mexico with several new meeting breaks and special events in special homage to the country's 16 denominations of origin. Products include crafts, foods and beverages. The current products recognized with unrivaled quality include: Cacao from Tabasco; Morelos Rice; Ataulfo Mango of Chiapas; Chile Yahualica from Jalisco; Papantla Vanilla from Veracruz; Chile Habanero of the Yucatan Peninsula; Talavera from Puebla; Olinalá from Guerrero; Amber of Chiapas; Bacanora from Sonora; Charanda; Mezcal; Sotol; and Tequila. he Colorado Convention Center is the premiere convention center in Colorado. The Convention Center is conveniently located in the theatre district of downtown Denver. This Convention center is well equipped to handle any size convention. The Convention Center features outdoor and indoor meeting space for all size meetings. There is on-site parking for 1,000 vehicles and load docks for easy delivery to exhibit halls. Some Downtown hotels include the Sheraton Denver Downtown, Hyatt Regency Denver at the Colorado Convention Center, Hilton Denver City Center, Grand Hyatt Denver, Four Seasons Hotel Denver, the Curtis Denver - A Doubletree Hotel by Hilton, Aloft Denver Downtown, and the Hyatt House Denver Downtown. The Colorado Convention Center has a number of in-house service providers for catering, event, meeting technology, electrical, and telecommunications. Centerplate is the exclusive caterer and they provide everything to do with food for on-site events. Centerplate is an international company that has been providing hospitality solutions since 1929. The exhibit level has 584,000 square feet of exhibit space and is made up of six event halls. The event halls can be divided up into sections from 100,000500,000 square feet. Nine concession areas serve the exhibit floor and trade show offices over look the halls. The meeting Room level has 100,000 square feet of meeting room space. This level features sixty three meeting and event rooms fully equipped with computer controlled audio visual. The Ballroom level features the High Ballroom, a 50,000 square feet meeting space with 18 dividing walls, and The Four Seasons ballroom. Each ballroom has over 10,000 square feet of pre-function meeting space. The Bellco Theatre is an on-site meeting space option for planners. The theatre seats 5,000 guests and can be divided into three sections. The theatre has access to all levels of the convention center and features all of the audio visual components to suit presentations. Backstage there are three dressing rooms, five offices and a green room. The theatre is also served by its own loading dock. The Colorado Convention Center Is a green convention center. The Convention center has an on-site Sustainable Programs Manager that oversees a sustainability programs, and a 300,000 kilowatt solar array. The Colorado Convention is a Gold Certified Exhibit Building.
The Colorado Convention meeting rooms, exhibit halls, ballrooms and theatre are all connected to a high speed network with overseen by Cisco Certified Support Staff. During breaks or off time attendees may visit many of the downtown Denver attractions in the area. Some notable destinations include the Denver Art Museum, the Denver Zoo, the Denver Botanic Gardens, Coors Field, and the Denver Museum of Contemporary Art.

There are 144 meeting rooms with seating capacities ranging from 20 to 7,500 for meetings or convention trade show exhibit booths. Lobby and Concourse areas are over 109,500 sq. ft. All the exhibit halls on ground level have unlimited floor capacity. Exhibit halls are air conditioned/heated and fire sprinkler protected. The center has parking for 10,000 cars. level by allowing us to welcome more shows, more exhibitors and more delegates” said Lawrence Weekly, chairman of the Las Vegas Convention and Visitors Authority and Clark County Commissioner. “In addition to ensuring our economic future, this project will give us a cutting-edge facility with a dynamic design fit for one of the world’s most iconic cities.” Phase Three will be the complete renovation of the existing 3.2 million-square-foot facility, with a projected completion date of 2023. The phased approach ensures that no business will be displaced during the construction and renovation. LVCVA staff worked in partnership with Cordell Corporation, the agency’s contracted owner’s representative, to develop the vision for the expansion and renovation project. Each year, Las Vegas hosts approximately 22,000 meetings, conventions and trade shows, which support an estimated 65,000 jobs paying $2.7 billion in wages and salaries. The LVCC District Expansion (Phase Two) and Renovation (Phase Three) are expected to support nearly 14,000 construction jobs and more than 7,800 full-time permanent jobs upon completion. The project will generate an additional $2.1 billion in economic activity during construction and upon completion will have an annual incremental economic impact of $810 million while attracting more than 600,000 additional visitors each year. The project will allow the Las Vegas Convention and Visitors Authority to pursue new business opportunities while also growing the shows currently taking place in the destination. Las Vegas hosts approximately 22,000 meetings, conventions and trade shows each year. The destination boast more than 11.5 million square feet of meeting space in addition to a wide array of event, dining and entertainment venues that are also used for group business. City-wide Las Vegas has nearly 150,000 hotel rooms.

As Executive Chef for JC Resorts, Chef Ron Fougeray now oversees culinary programming for all of the brand's restaurants including Rancho Bernardo Inn's Veranda Fireside Lounge and AVANT, as well as Splashes at Surf and Sand Resort in Laguna Beach. Passionate and adventurous, Chef de Cuisine Chris Gentile is set to be a true force in the kitchen at AVANT. He has introduced a variety of daring dishes to the spring menu and more of his creative cuisine is on the way. Chef Gentile found his way to AVANT after staging at 4 Michelin Star restaurants across the United States, leading the kitchens at L'Auberge Del Mar's Kitchen 1540 and NineTen in La Jolla, and launching his award winning Parma Italian Roots in Scottsdale, Arizona. Chef Gentile is thrilled to progress the menu at Rancho Bernardo Inn's signature restaurant, utilizing fresh herbs and organic produce from the property's sprawling garden. His goal: to give every single guest a one-ofa-kind dining experience. With his new menu including an incredible nettle Spaghetti & Clams, Wild Alaskan Halibut with morel mushrooms and green almonds, and Colorado Spring Lamb with matcha, beets and nasturtium, his goal is certain to be achieved.
Instilled with a passion for food from the moment he could reach the stove, AVANT Chef de Cuisine Chris Gentile started with the basics mastering the perfect breakfast eggs and homemade ravioli from his father. Growing up in an Italian family with a true love for food, Chris learned valuable lessons from his father early. One lesson he recalls fondly, "You can always add more, but you can't take it out." While in high school, Chris's family moved to North Carolina from Vero Beach, Florida. Chris got his professional culinary start at The Inn on the Biltmore Estate in Asheville. He progressed
from dishwasher to line cook quickly. During Chris's freshman year of college, he was promoted to Sous Chef at the prestigious eatery. Spending a total of 3 years as Sous Chef, Chris focused on learning the basics of French cuisine.
At the age of twenty, Chris traveled across the US and staged at 4 different Michelin Star restaurants before ending his tour in San Diego. Chris spent time with the Enlightened Hospitality Group as a Sous Chef and eventually Chef de Cuisine. Next for Chris was a renewed focus on the world of fine dining. He became Chef de Cuisine at L'Auberge Del Mar's Kitchen 1540 and then lead cook at Nine Ten in La Jolla, under the direction of Chef Jason Knibb. After this, Chris received an offer to have his own restaurant and in 2014 opened Double Standard Kitchenette in San Diego. He then opened Parma Italian Roots in Scottsdale, Arizona. The restaurant won best new Italian restaurant, best new restaurant and Chris took home the title of best new chef in the Phoenix area. Chris longed to return to San Diego, however, and yearned to live in this gorgeous city permanently. AVANT was the right answer. As Chef de Cuisine at AVANT, Chris is excited to be at Rancho Bernardo Inn and progress the menu at its signature dining establishment. His goal - give every single guest a one-of-a-kind dining experience.
Executive Chef Ron oversees the culinary operations at JC Resorts, including the signature seaside restaurant, Splashes, combining the resort's celebrated California coastal fare with his passion for locally sourced ingredients and sustainability, as well as Rancho Bernardo Inn's AVANT which offers California cuisine with a strong focus on artisanal foods and garden-to-table offerings. Gobbling up homemade chocolate chip cookies has been a culinary primer for kids in the kitchen for generations. For Splashes Executive Chef, Ron Fougeray, the techniques and ingredients were more intriguing. His quest for knowledge eventually led him to study at the respected Johnson & Wales University in the Culinary Arts Program. Time spent at Philadelphia's most famous restaurant, Le Bec-Fin proved instrumental for Chef Ron. Considered an institution in Philadelphia, the restaurant was rated America's finest French restaurant, and the Mobil Travel Guide consistently awarded it five stars for 40 years. During his nearly seven year tenure, Chef Ron was mentored by renowned owner and French chef, Georges Perrier, and worked his way up to Chef de Cuisine. Perrier left an indelible impression on Chef Ron, teaching him to expect only the highest standards for his menu, staff and cooking equipment. Chef Georges continues to be a mentor
and personal friend. In 2009, Chef Ron transitioned to Bibou BYOB, where he worked side-by-side with owner and chef, Pierre Calmels. World's Tallest Modular Hotel Set To Rise In New York City This Fall 26-story, $65 million modular tower plan marks turning point for industry confidence in prefabrication

The world's tallest modular hotel - which will carry a brand of Marriott International - is on track to be stacked in late fall in New York City with prefabricated and pre-furnished guestrooms to be topped with a modular roof and modular rooftop bar, the world's tallest modular hotel is expected to open in late 2020 as the AC Hotel New York NoMad.
The 168-room, 26-story AC Hotel New York NoMad is scheduled to rise at 842 Sixth Avenue with prefabricated guestrooms arriving at the hotel site fully constructed, inside and out. Besides finished, painted walls, each "module" will contain a fully outfitted guest room - with beds, sheets, pillows, flooring and even toiletries. "This is the moment where modular construction takes center stage," says Danny Forster, a leading modular building advocate whose firm, Danny Forster & Architecture, designed the project. As he explains it, "This hotel takes every advantage of off-site manufacturing, as you might expect. But it does so in a way that defies expectation. We wanted to demonstrate that modular building can do more than just harness the efficiencies of the factory. It can produce a graceful and iconic tower. And yes, it can do so at the rate of an entire floor a day." Marriott sees a modular future Marriott, which has the largest pipeline of hotels in North America, began researching modular construction in 2014. Since the launch of Marriott's initiative, the company's development partners in North America have opened
31 Marriott-brand hotels - all low-rise structures - that incorporate prefabricated guestrooms and/or bathrooms, including a Fairfield by Marriott Inn & Suites in Folsom, California; a Courtyard by Marriott in Pullman, Washington, and three AC Hotels in Oklahoma City, Louisville, Kemtucky, and Chapel Hill, N.C. To date, the largest Marriott-branded modular-built to open is the 354-room, dualbrand Courtyard and TownePlace Suites by Marriott property in Hawthorne, California, while the first to also incorporate a prefabricated elevator bank was the Fairfield by Marriott Inn & Suites in Prairie, Wisconsin. orton Group's celebrated concept, La Cave Wine & Food Hideaway at Wynn Las Vegas, has unveiled its new garden lounge and a stylish refresh of the restaurant, as well as several new dishes and wines. Now totaling 6,300 square feet, the most dramatic enhancements can be found in La Cave's garden lounge, which is now enclosed in operable glass windows. Farther outside of town lie beaches only accessible by boat. The most popular is Playa Las Animas, a remote stretch of sand that's one of the most famous in all of southern Puerto Vallarta and entirely worth a day trip. It's packed with restaurants and bars perfect for spending the day lounging underneath the palm fronds of a traditional palapa shelter, frosty margarita firmly in hand. Visitors can rent paddle boards, take banana boat rides, snorkel or simply relax on one of the many lounge chairs that line the shore. Las Animas can be the starting point from which to explore some other hidden beaches, such as El Caballo Beach, a hidden oasis of calm, clear water and bleached sand with just a single bungalow-style hotel and beach restaurant/bar. Another such hideaway is Colomitos Beach, a small strand fringed in the greens and blues of the jungle-covered mountains above it and the rolling waves gently lapping against its sands. One stop farther lies the private paradise cove of Yelapa, where attraction and activities include not only the fantastic beach but jungle hikes to a stunning nearby waterfall. This safe, beautiful walk to the falls takes about 30 to 40 minutes and ends at a refreshing natural pool perfect for a refreshing dip. While Yelapa makes for a wonderful day trip, visitors should consider renting a room at one of the basic hotels lining the beach.
