The family and the restaurant's long-standing staff have appreciated the support of the local community over the past ten years. See their article on page 46. Scotland's famous singers are an interesting genre; in 2009 Susan Boyle from West Lothian hit the headlines courtesy of Simon Cowell's Britain's Got Talent, and three years later the much younger Emeli Sande from Aberdeenshire sang at the London Olympics and won two categories in the 2013 Brit Awards. Balerno has it's own fast rising star in singer songwriter, and one time medal winning gymnast, Nina Nesbitt. After Balerno High School Nina was on track to compete at the Commonwealth Games as part of the national team; she did Rythmic Gymnastics and was training all of the time but then "decided to do music instead" Nina started posting music videos online when she was 14. Because you need to be 18 to perform in many venues this makes a lot of sense for young teenage artists who

Fashion icon and rising music sensation; Don't stop thinking about... Balerno want to be heard. Her music videos didn't attract much attention for the first couple of years but she realised that it was easier to get attention if you did a song already in the charts, as that is what most people search for. A school friend, with film-maker ambitions, helped make the videos and Nina chose more inspired settings than the usual 'made in your bedroom backdrop' by setting one in a forest and one on a loch (enter the excellent free video backdrops on our doorstep, guaranteed moody Midlothian weather, a real positive in this case). Before her music career took hold Nina was also briefly a model and, in an interesting twist that she has cleverly been able to exploit, worked part time in high street fashion store River Island. She wrote a song of her experience and frustrations of working there due to her growing determination to make her way in the world of music. The lyrics, now released as a song titled 'Way of the world' say it all:
I'm working in a retail store It's not what I'm cut out for I live for my breaks and always something more So much to explore But it feels so far away Now, in a fashion retail industry role reversal, possibly as cute and clever as our budding Balerno lass, and alongside another major high street example of her career trajectory, she's become the face of trend setting English fashion store chain Yumi. For those Konect readers from an older generation like me (Nina, on the other hand, is just 19) she is likely to become even more of a household name as she is the voice behind the new John Lewis Household Insurance TV commercial; backed with her remake of the 1977 Fleetwood Mac hit 'Don't Stop' from their album Rumours. I don't know where it will air but it can be seen here : http://youtu.be/Wy2hrrI5BKY. 'Don't Stop' is listed as her next 'to be announced' single release. Nina's highest chart success was when 'Stay Out' reach number 21. A previous John Lewis Christmas 2010 commercial, sung by Ellie Goulding, helped Ellie reach number 2, so Nina might well benefit in the same way. John Lewis are again sticking to a strategy of using up and coming artists and classic songs. Nina has said she was inspired by Ellie Goulding, but used to think she was too shy to sing live. All that has now changed as she tours the UK from T-in-the-Park to venues in London and across England.
It's one thing to be a talented singersongwriter but quite another to have fans describe you as 'royalty' when it comes to the quality of your interaction with fans. She works hard to show appreciation to her fans (known to some as Nesbians - Nina is at a loss to understand why such a slightly skewed term has stuck) with her regular online engagement, and her considerate persona at her increasingly popular live events. Nina was signed by Island Records last year; she had made sure her grassroots fan support was already established so that she could negotiate the kind of terms that gives the more savvy and creative singers a respectable amount of control, and her first full album is due to be released early next year. Part of the album is due to feature the vocals of students from her old school, Balerno High, on a song called 'The People'. The recording was made at the school in February this year; and yes, she's only just turned 19. Go Girl!

Mental health charities report that the number of people calling mental health helplines has risen by 50% in the last year. So many of us may be struggling with our own mental health, or living with someone who is. This can be a confusing time whether we are affected directly or indirectly, because it seems as though the person we used to know has changed in some quite fundamental ways, and we can find ourselves asking how we can continue to live alongside the people we have previously been close to. For people who are carers there are a few things that we can do which ensure that we still have a life and a relationship with the people who are directly affected, for example….

Develop good listening skills, attend to what they are saying, reflect your understanding back using something like, ‘so what you are saying is….. have I understood that right?’ This helps everyone to feel understood and valued. Beware of being overprotective, but gently make the person aware of possible consequences of a particular course of action.

Encourage everyday activities and socialising. They form good building blocks for the next stages of recovery. Encourage as much independence in making decisions as is prudent. Encourage people to have some relaxation and rest, some exercise and a good diet each day. Plan some time for yourself and set limits on how much the other person can encroach on it. You need to stay well too!
Worries about finance, relationships, jobs and families all contribute to mental stress, and life is getting more complicated and problems more acute than they were. Help is available from the following organisations which you can find through the internet… The Scottish Association for Mental Health; The Samaritans; NHS Mental Health helplines. PALM is a social group cafĂŠ for people in Balerno, Currie or Juniper Green with advanced loss of memory or dementia, and their carers. PALM have just launched a cafe in Balerno which will be held on the last Tuesday of each month from 2.30pm to 4pm, in the newly refurbished St Joseph's Centre at Balerno Parish Church. With the ageing population there are increasing numbers of people in our communities experiencing problems with loss of memory (with and without a formal diagnosis of dementia). The PALM cafe will provide a much needed monthly meeting space for social interaction and support for people with advanced memory loss and their carers. Whilst other organisations provide respite services for people with a formal diagnosis of dementia or support carers on their own, there is no facility for people with memory loss and their carers

A social group for people with memory loss and their carers to attend a group targeted to their needs. The PALM cafe will provide a safe, welcoming and enjoyable environment. A variety of activities will be used to provide appropriate stimulation for the person with memory loss including music, movement, craft activities and reminiscence activities such as story telling, sharing of pictures etc. We would like to act as an information channel for carers and would seek to invite relevant speakers to facilitate this. We are also looking for volunteers to help in the running of the group. You do not require any previous experience and any time you can give will be greatly appreciated. Are they still a good buy? It is difficult in the current climate to find an instant access savings rate of much more than 1%, so using this comparison 1.3% is indeed better. However, in a savings account your money will grow, albeit by not very much, whereas with Premium Bonds you may in fact get no return at all.
What are they? Individuals can invest a minimum of £100 and a maximum of £30,000 into Premium Bonds but you do not receive any interest. Your numbers are entered into a monthly draw which offers prizes from £25 up to £1,000,000. Any capital is guaranteed but it does not increase and hence it is losing its buying power. The odds of winning a prize are 26,000 to 1, giving an effective equivalent return rate of 1.3%. Interest rates! Up until recently the equivalent interest rate was 1.5%. but NS & I maintain that they have had to cut the rates because other alternatives such as bank and building society deposits have recently slashed their savings rates, resulting in a surge in demand for premium Bonds. NS & I say that this cut is to ensure the stability of the broader financial services sector.

September can bring frosts and high winds associated with the equinox; on the other hand it can also bring an Indian Summer which extends the growing and planting season. Tidy the garden. Burn cuttings and perennial weeds rather than composting them. Gather leaves as they start to fall and collect them for leaf-mould. Mulch and feed with the summer’s compost. Start a new pile for use in the spring. Tie in climbing plants, dead head all roses, cut back border plants so they are not damaged by wind. At the end of the month dig up “soft” plants and tubers like dahlia and geraniums and store in a frost free place. Start planting bulbs for next spring. Buy or order others for forcing for indoor flowering, plant at the end of the month for Christmas. Plant strawberry runners, cuttings of currents and peg down blackberry or loganberry to make them root, giving new plants next year. Plant fruit or other trees while the soil is still warm. Harvest pumpkins and squashes also potatoes and main crop carrots. Clean out the bird feeders and start to feed the birds again. Don’t stop once you have started as they come to rely on you. Leave the berries on your shrubs till the birds have eaten what they need, then prune. Plant out spring brassicas and the last of the salad plants. Lift and dry onions and garlic. Be it a stroll en famille or a brisk walk alone or with friends, walking to work or going round the block a few times - it is all exercise and good for you. But more than that, walking is good for the head as well as the heart - as getting out the office or house and doing something that is not computer-based is something we should all consider. One place that has always had me intrigued as I have driven by on many an occasion is the Korean War Memorial near Bathgate, so on a recent drive by I decided to take the time to stop and have a proper look. From Bathgate you take the B792 towards towards Torphichen, following the signs for Beecraigs Country Park - a great place itself for walking of course. The War Memorial can be found at Witchcraig, one mile up this road and there is a lay-by opposite to park the car in. The Scottish Korean War Memorial The memorial comprises a small wooden pagoda, surrounded by 110 Korean pine trees (one for every ten Britons who died in the conflict), 1090 birch trees (one for each of the fallen) and picnic tables along a pathway named United Nations Avenue. This avenue is surrounded by 21 trees, representing the twentyone nations involved in the UN force in Korea. The traditional Korean pagoda contains lists of those who died in the conflict, the vast majority of whom were young National Servicemen. Maintained by the Scottish Korean War Memorial Trust, the site opened on 27th June 2000, marking the 50th anniversary of the start of the war. 34

Although a walk was what I had in mind, it is really worth taking the time to wander around this unique memorial before heading off for a walk - or why not walk and then take the time for a picnic after your exercise at one of the picnic tables? The walk begins at the memorial and follows a path uphill. You cross a stile and follow the signpost to the Refuge Stone and Witchcraig Wall. Here there is a viewpoint where you can see across the Forth over to the Campsie Hills. The Witchcraig Wall is an enclosure with 43 special stones built into it, collected from across Central Scotland, while the Refuge Stone is built into the wall behind this enclosure - another object of interest. I usually find that walks that include features are more enticing if you are taking small people along! From the information sign follow the path north, walking downhill and through woodland - Witchcraig Wood. At the bottom of the hill the path veers left and after approximately 175 yards you should see a stile on your right. Cross this stile and follow the path to a

gate, taking the right track. As you pass a metal gate take an immediate right to pick up a smaller path (Guthries Path) which takes you uphill. At the top, after a dip, take the path to your left until you reach a wider path. It is then first a left turn followed by a right turn onto a track signposted Balvormie. Follow the Balvormie sign and head through a meadow and along to the BBQ site at Beecraigs before reaching the road. You could make a picnic stop here or actually utilise the BBQ. There are also loos so a good place for a break (and if totally desperate you can mention the word play park - there is a large one across the road from the BBQ site). To continue the walk, turn right on the road and head up a tree lined avenue.
At the top of the hill take the path to the right at the Beecraigs Country Park boundary sign, which will take you back onto Guthries Path. You can then retrace your route back to the War Memorial. This route is about 4km and will probably take you around 1.5 hours. If however you are short of time or maybe trying to fit in a bit of exercise in your lunch hour, then you can walk up to the Witchcraig Wall, across to the Refuge Stone, enjoy the view and make your way back down again. It doesn't matter how short the walk - you will still see the benefit. Current research shows us that we are all living far too sedentary lives and that we sit in front of computers all day not even taking a break to walk around. So why not grab the opportunities for fresh air and exercise when they arise?
The Refuge Stone This stone is said to have been one of the refuge stones that formed a circle at a distance of approx one Scots mile around Torphichen Preceptory in medieval times. The origin of this “right of sanctuary� is unknown and some of the stones may have dated back much further, but there were originally five stones, marking four points of the compass plus a central stone in the Preceptory Kirkyard (which is still there). The area within the circle formed by these stones was a sanctuary, offering protection from anyone seeking revenge to those who remained within it. The gadgets that'll save you cash and do your bit for the planet too

mode, and there's an equivalent for PCs. Expect to pay £21 for a TV standby saver and around £16 for a PC one. The Energy Saving Trust also recommends the WAHL Eco Kettle, which uses 60% less energy than a normal kettle - but don't spoil the savings by boiling more water than you actually need.
Beat the utility bills With summer already a distant memory, energy companies are rubbing their hands with glee. Cooler weather means bigger energy bills. Time to review a few energy saving devices then. You don't need to spend a fortune: some of the most effective changes are the simplest. For example, one of the best bill-busters is to replace existing bulbs with low-energy ones. Halogen bulbs are better than incandescent ones, but LED bulbs are better still: for example in a typical 6-light kitchen spotlight, you can replace six 50W halogen bulbs with six 3W LEDs - so the total energy use would drop from 300W to just 18W. Look for "warm white" LEDs if you want a natural light: some LEDs have a bluish light, an effect not everybody likes. Note if you want dimmable lights you'll need dimmable bulbs and LED-friendly dimmer switches.
Don't forget about batteries either: swapping from normal batteries to rechargeable ones can save you hundreds of pounds in a relatively short space of time: according to Which? magazine, you could save as much as £500 over 100 charges.
While the bulbs do cost more than traditional ones the price is coming down, and they last much longer than even halogens, so they'll pay for themselves quickly and save you money over a long period of time. If you have an outdoor security light, consider swapping that too: while halogen security lights can use 400W or more, LED ones can be surprisingly bright with bulbs rated at just 10W.
Cutting down your gas usage isn't quite as simple, but it's still possible. Fitting a flow regulator such as the £5 Showersave to your shower slashes the amount of hot water your showers use, and the £25 Radiator BOOster can reduce the time it takes to heat a room, cutting energy usage in the process. Shower flow reducers can reduce your bills if you're on a water meter too, as can the Hippo water saver, which reduces the amount of water used to flush your toilet.
Turning things off can slash your energy usage too, and computers are particular offenders. Investing in the Ecobutton, which costs around £15, can pay for itself very quickly: press it when you take a break and it'll put your PC into the most energy efficient standby mode. For TVs, a TV standby saver can put all your home entertainment kit to sleep when you put the TV into standby
For really big savings on gas, give some thought to a new boiler: by replacing a D-rated boiler with an A-rated one, you could save around £181 per year in a typical detached house. If that's a step too far, don't forget the obvious, affordable options: you'll save a fortune by insulating your house if its current insulation isn't up to scratch and by turning the thermostat down a notch. You'll find that energy efficiency work is often subsidised by government grants, and you might even be able to have it done for free.

Sugar is as vital to the human diet as salt, existing in one form or other in all living creatures. Like salt it is also a health hazard if over used; excess of sugar in the diet leads to overweight, rotten teeth and among other disease, diabetes and heart attacks. Most of the world’s sugar is still refined from sugar cane which is a grass-like plant. Since the Napoleonic era Europe has grown more and more of its own sugar from Sugar Beet (Beta Vulgaris), a relative of beetroot. Because Britain was so involved in the West Indies it was slow to develop sugar from beet. It was not until the 1920’s that production and processing became organised. Now Europe is the world’s third largest producer of sugar and we still need to import more. Today each of us in Scotland consumes about 40kg of sugar each year. The sugar we buy is all made from the refined liquid extracted from plant juices. The least refined is molasses, good in gingerbread and used to preserve hams, then the dark soft Muscovado used in fruit cakes and toffee , pale primrose and so on till you reach white caster sugar which is so fine it melts easily in sauces and sponge cakes. Sugar Cubes were patented in UK by Tate and Lyle in 1872. Some skill is needed when using sugar in cookery because at different temperatures it gives varying tastes and textures. When making cakes, biscuits, jams, syrups or sweets it is important to weigh the ingredients; using the correct proportions makes the difference between a crumble topping and a light sponge cake. The temperature for toffee and the setting point of jam is only a few degrees different, but vital. Sugar is also an interesting seasoning: tomatoes in any guise benefit from a little, as do rich meat stews with wine in their sauce.

Sugar is a very good medium for preserving food. Jams, bottled fruit, chutney, and fruit syrups using sugar can be made at home, with a little skill and attention to detail, to bring variety to the diet and preserve summer fruits. Meringues These are standing up sugar. If cooked slowly, almost only dried out, they are crunchy and keep for a week or so. If cooked quickly as a topping to a fruit pie, there is a beautiful goo under and crisp surface. For each 1 large egg white 2oz sugar. (This is usually translated as 55g, but use slightly under rather than over the amount). There must be NO egg yellow in the white if you want to make meringue. The fatty yellow prevents the white bulking up as you whip it. When separating white from yellow it is best to do it over a separate cup or glass and then collect the whites in a scrupulously clean bowl. The yellows can be kept, covered in water, for a day or two in the fridge, to be used in custards, cakes or bread. Whip the whites until they stand in peaks, then, a spoonful at a time, sprinkle the sugar over the whites as you whip them. Continue till all the weighed sugar is incorporated and then whip some more till very stiff and glossy. Cover a baking tray with non-stick paper and spoon out blobs of mixture . Three eggs will yield 20 medium meringues. Bake in a very slow oven 110oC for 2-3 hours till dry and pale biscuit coloured, turn off the oven and leave them in to go completely cold. Offer with fresh berries, fruit compote or sandwich together with whipped cream.
Summer fruit jam 500g mixed fruit (strawberries, red, black or white currents, raspberries and/or gooseberries) Juice of 2 lemons. The juice is to bring out the flavour AND help setting, especially if you use more strawberries than other fruit. 500g granulated sugar. Put all the fruit in a china, glass or stainlesssteel bowl. Cover with the sugar. Leave aside for 24 hours. The juices will have started to run and begun to dissolve the sugar. When you think about it give it a turn with a wooden spoon to encourage this. Put everything into a large saucepan scraping in every last drip. SLOWLY raise the heat under the pan so the sugar dissolves and liquid syrup is made. Then raise the heat and boil till the setting point is reached. Stir the jam to prevent sticking or burning. This will take about 10 minutes boiling. Test by putting a small amount of jam on a cold saucer and see if it will ruckle up when you push the surface. When this happens setting point is reached. Take off the heat and pot into clean glass jars and seal with cellophane or screw tops. Do not try to cook large quantities of jam at one go, up to 1.5kg of fruit at a go will be fine. The

Ten years of Italian food in Juniper Green

Ristorante al Borgo is family-friendly and children are welcome - as in Italy, there is no separate children's menu, instead you get a smaller portion size of the same good food as the adult menu.
Celebrating ten years in Juniper Green this month, Ristorante al Borgo is an Italian restaurant run by the Carpico family who have successfully brought an authentic taste of Italy to Juniper Green. Chef Elio arrived in Edinburgh from Italy in 1973 and brought fish and chips to Juniper Green in 1980, opening the Pentland Fry with his father in law, Rino Alonzi. Elio and his wife Silvia opened ‘Dolce’ in 1987 selling their traditional homemade ice cream and confectionery. But Elio always wanted to run a restaurant, so 10 years ago, in September 2003, Ristorante al Borgo (literally meaning restaurant in the village) opened its doors. The local community has been enjoying Elio and Silvia's hospitality ever since. Ristorante al Borgo serves homely Italian food in generous portion sizes, a huge range of pizzas and pastas of course, as well as fish and meat dishes. Italian cheeses, hams, salami and olives sourced from good Italian suppliers are teamed with fresh local ingredients. Their selection of Italian wines is second to none - their wine supplier was voted Italian Wine Merchant of the Year in 2013 by ‘Sommelier Wine Awards.’ Elio's specialities include his ever-popular Minestrone soup, Veal Cardinale and steaks available with a range of sauces – one to look out for is the creamy haggis and whisky sauce bringing a Scottish touch to the menu. For dessert, try al Borgo's ice cream still made on the premises. The recipe is practically a family heirloom. Silvia’s father, Rino, still makes it according to a recipe that has been in the family for many years.
