Hello neighbours Welcome to the March issue of the Konect Directory. This month our writer Yvonne MacMillan has been chatting to someone you will almost certainly recognise if you’ve ever been to the shops at Carmondean.... Dan Priester is pretty much a local ﬁxture there outside Carmondean Connected, so you can read his story on pages 8 and 9. A Carmondean Character By Yvonne MacMillan

or the last 12 years, Tuesdays to Saturdays, rain or shine, Daniel Priester (Dan), has been selling his popular, char-grilled hot dogs outside Carmondean Library. Dan’s hard to miss as he serves up a treat for all the senses – there’s his colourful, Canadian logo T-shirt and trademark, bright orange braces, the distinctive, Canadian accent and the tempting, mouth-watering smell from his grill. Sheltered by a blue windbreak behind the hot dog cart, and surrounded by bottles of mustard and tomato ketchup and supplies of sausages and buns, Dan and I chat as he greets and serves his hungry customers. He grew up near Niagara Falls in Canada, and at 17 years old, moved to Toronto where he spent the next 28 years living in and around the city. Back in Canada, Dan tells me, he had lengthy spells doing a variety of jobs. After college he worked in a bank, a job in ofﬁce management came next, followed by work as a warehouse supervisor before he took on a gas station franchise. This turned out to be Dan’s kind of job. He talked to customers as he ﬁlled up their cars and washed the windscreens and loved it because, “I like people,” he says. “I like talking to them, and I like the outdoors.” Then fate took a hand in October 1995 when Dan went on a wellearned holiday to the Dominican Republic and met Elaine, a Glaswegian from Livingston, also on holiday. This meeting blossomed into

a holiday romance, and Dan, as lovestruck as a teenager, ﬂew back and forth between Canada and Scotland for 3 years, ﬁnally moving here in March 1999 and marrying Elaine a couple of months later. “A holiday romance that went badly wrong,” jokes Dan, “I ended up marrying her!”

Getting married and moving to a different country weren’t the only momentous decisions Dan made that year. Looking to ﬁnd a way of earning a living and, ideally, a job that involved meeting people and working outside, selling hot dogs, he felt, ticked all the boxes. The purpose-built hot dog cart was shipped out from Canada and soon he was in business. Dan settled on the Carmondean pitch – he lives in the area too - after short spells selling hot dogs at Bathgate Market and a couple of other venues. Building the business has taken time and patience, he says. Dan feels about 95% of his customer base are regulars. Some people stop just

to have a chat and, he says, “It’s a good way of catching up with the neighbours.” When it’s quiet he likes doing the crossword in the paper. And the secret of a good hot dog? “You have to have a good product,” says Dan. “I use 70% beef, the rest is good quality filler. Char-grilling the hot dog is a must for flavour too.” He makes three cuts in each sausage and explains that, “It stops the sausage spitting hot juices when the customer bites into it, and the cut edges get crispy and take on more flavour.” Asked what he likes most about Scotland, Dan says, “This might surprise you – the weather – it’s never too hot or cold, and you can’t shovel rain!” His memories of Canadian winters are three long months of snow – and that’s a lot of shovelling.

Dan’s Christian faith is very important to him and it was his church he missed most when he moved to Scotland. Now, he attends the Lutheran Church in East Kilbride where he is an elder. Away from work, he enjoys playing poker and pool and a friend gives him a helping hand with his Facebook page. Dan tells me this was his third interview. He was interviewed a year or so ago for a Canadian magazine, and earlier this year for a Norwegian newspaper - he’s trying not to let it go to his head though! Thanking Dan, I’m just about to leave, when Ryan, Michael and Steven, in their late teens and regular customers, stop for hot dogs. So what about the taste? I ask what they think of Dan’s hot dogs and, like an X Factor judge, Michael says, “11 out of 10.” Mouths full, Ryan and Steven nod in agreement and get on with their lunch.

Thought for the Month Observe your mind By Tina Gilbert

he mind rarely stops thinking; it moves from one thought to the next, like a butterfly moves from flower to flower gently and effortlessly. The mind’s habitual pattern however is to move to negative thinking. Do you get in from your day and think or talk about the bad things that have happened, even if they are only small things? Do you ever notice your thoughts and whether they are positive or negative? Just like the body needs a rest, so does the mind. Why don’t you start this year with a new intention of observing your thoughts to see what they consist of. Give your mind a rest from negative thinking. “Energy Follows Focus” - if your focus is negative, your energy will be negative; if your focus is positive your energy will be positive.

Set the intention of bringing about happiness in your thoughts. Engage ﬁrst by observing your thought patterns; what do you think about, what do you talk about? Do you want to be happy but focus on the negative in your day, not seeing any of the good around you? When you climb to the top of a mountain, you look at all there is around, whether it is toxic waste or beautiful parkland. Start by seeing all that is good and bad; the whole picture and then if you change your intention and focus on seeing more of the positive your thinking patterns will, slowly over the year, change to see the good and the energy that follows that focus will be positive. Have buggy, will walk. By Karen Murray

ake your baby, your buggy and enjoy the great outdoors.

Regular readers of Konect will know that we like to recommend a good walk for you to try out, but perhaps those of you with babies and small children might ﬁnd the terrain of some of these walks a little tough to negotiate with a buggy. Thanks to a website entitled simply ‘walks with buggies’ we have found some suggestions for walks that can include wee ones not yet walking. I decided to try one of the suggestions for myself and found a delightful walk, enjoyable for anyone - with buggy or without. The walk starts out from Livingston South railway station, which means that for drivers there are plenty of parking spaces.

Buggies at the ready and you are off. Facing the station, with Sapphire Chinese Restaurant on your left, you walk under the tunnel ahead of you following the signs for Murieston Trail. At the top of the lane, you come onto Robin’s Lane. A right turn will take you eventually to the Centre at Almondvale and you may feel everything is very built up here. However go left onto Robin’s Lane and take the second path on the left - red grit - and you are very quickly in a much leaﬁer environment.

enjoyable walk but not for those with buggies. Buggy walkers turn right following the Campbridge Park sign. The path immediately veers round to the left behind some houses and you shortly arrive at Murieston Mews where you might want to stop to admire some beautiful houses. If not, cross the road and rejoin the path straight in front of you. The red grit gives way to grey grit but is still ﬂat and easy terrain. There are a number of paths, grassy or gravel, that go off this path. Those on the left will take you down to Murieston Water but are not suitable for buggies. Stay on the main path all the way to the end, through another tunnel of trees enjoying the greenery as well as the bird song and the odd squirrel that is bound to scamper across your way. The path becomes a restricted access road so be careful of the odd car. Just before the end of the path, you will see a sign to Campbridge Park on your left. 

Follow the red grit path walking through a tunnel of trees and breath in the air. The path is totally ﬂat and perfect for perambulating. Continue to the end of this path where there is a wooden fence. Left will take you to Murieston Water and an equally 26

Local Walk (Continued)  If you are simply out for a walk, you

can then about turn and retrace your steps. If however you are up for more exploration, then go through the park entrance. The path splits in two and both will give a bit of a bumpy ride for a buggy but are negotiable. The right path takes you to a pond, which in reality is a ﬂooded disused quarry but rather pretty nonetheless, complete with lily pads and very peaceful. Boardwalks take you up to the edge and there is a bench for a rest, snack, escape from buggy time, before heading back. If you are walking sans buggy, you can follow the boardwalks, up and down some steps, through the trees to the other side of the pond and over a bridge to reach another boardwalk that follows along Murieston Water. This path will

eventually take you back to ﬁrst part of your walk where you turned right to follow the Campbridge Park signs. The buggy walk (2.5 miles) takes just over an hour taking into account squirrel watching and a rest by the pond. The non-buggy route takes a little longer and there are various paths off shooting the main path which you can also explore if you have plenty of time. I was very pleasantly surprised to ﬁnd such a leafy haven nestled within a built up area and even better that it is accessible to all. If you get a chance, head to Murieston and enjoy. Surveys show that after the age of three years, about seven out of ten pets have some kind of tooth disorders. If left unattended these may cause irreversible damage to the teeth, gums and jaw bones. If plaque is allowed to accumulate, it will inﬂame the gums - a condition called gingivitis. If left untreated, gingivitis frequently develops into periodontitis, a painful condition involving destruction of bone and tooth supporting structures and eventual tooth loss. Cats may also suffer from one or more tooth resorptive lesions, usually found at or below gum level. Here the tooth is progressively destroyed leading to exposure of the nerve. Although these are extremely painful lesions,

cats will frequently show no obvious outward signs of toothache. In the wild your pet’s teeth would be much cleaner because its diet would contain harder materials than are found in commercially tinned or packaged foods. Cats and dogs naturally eat the bones, fur, etc. of their prey which wear away the deposits of tartar. Replacing soft foods with dry or ﬁbrous materials will slow the build up of plaque. The extra chewing involved helps control infection because it stimulates the production of saliva which has natural antibiotic properties. There are special diets available to help maintain clean teeth, please ask your vet for further advice. Regular dental examinations are of great help in identifying dental disease before it becomes a serious problem.

March Recipe and Food Notes: Pancakes By Anne Pinkerton

ancakes are not only for Shrove Tuesday! Pancake races are fun; tossing a pancake on the run is a skill but the food value of the leathery subject of all the activity is pretty low! The reason for eating pancakes at the beginning of Lent is to use up rich ingredients before the 40 days of fasting as preparation for Easter. The end of winter used to be a time of hardship before modern methods of food preservation. Now we have fresh food from all over the world in great variety, so we may have lost touch with the importance of the old food rituals. However let’s not forget the pancake. They are cheap, versatile and make a good supper or lunch dish. The simple pancake is really easy to make. It is a little time consuming to start with but pancakes freeze well and you can make a stack and then have reserves stored for quick meals when you are busy. Crepe Suzette are the luxurious cousin of the Scots drop scone and Yorkshire pudding, but all are made from the same ingredients: flour, egg, milk and water and a little oil or butter. Pancakes can also have potato flour, buck-wheat flour or a purée of starchy vegetables enriching the batter and making them more filling. They can be savoury or sweet; in fact they are a very versatile Basic Batter 120gm plain flour 10gm melted butter or sunflower oil, 1large or2 small egg walnut or other flavoured oil depending on the flavour you want. ¼ pint or a little more cold milk Method Sift the flour into a bowl - this helps to prevent lumps. Make a well in the middle and crack in the egg(s) and add a little of

the milk and the oil or melted butter. Mix to a smooth, thick batter. Do this with an electric hand-whisk, balloon whisk or wooden spoon. By adding only some of the liquid at ﬁrst you are more likely to avoid lumps. Then mix in the rest of the liquid. Leave the batter to rest, at least ½ hour or up to 4 or 5 hours.

Cook the pancakes in a thick-bottomed oiled or lightly buttered pan. Regard the ﬁrst pancake as a test run. You can judge whether the heat is correct and tell if you need to thin the batter. Thin lacy pancakes are nicest so just add a little cold water. Cook till the batter changes colour and looks a bit transparent, then turn with a palette-knife and cook the other side. Tossing is not expected. If you are making to freeze, pile the pancakes 2 by 2 interleafed with clingwrap or grease-proof paper. Then you can defrost as many or as few as you need. This amount should make 10 or 12, depending on your pan size! Fillings : Orange juice and sugar with a little marmalade. Slice banana onto the pancake before turning and roll up with brown sugar. Fill with stoned cherries or good cherry jam and grated chocolate. Maple syrup and whipped cream. Or, my favourite….Add crispy bacon and drizzle with black treacle as in Holland. 

March Recipe and Food Notes: (Continued)  Chocolate Pancakes 150gm plain ﬂour 2 tablespoons cocoa powder 2 large eggs 300ml milk 50gm melted butter + extra for cooking Nutella warmed for spreading. Make the batter in the usual way and leave to rest. Cook in a non-stick pan if you have one. Be careful about the temperature, do not burn the chocolate. Spread with warm nutella, roll up and serve with cold whipped cream. Not for slimmers, but wonderful.

Fill 4 pancakes as before, if there is too much sauce just pour it over the pancakes in the dish and bake in the oven 160oC for 30 minutes, till bubbling and hot. Other ﬁllings such as chicken and peas, mixed seafood, smoked haddock with cheddar, tuna and sweet corn or spinach with feta are also delicious.

Savoury supper pancakes Leek and ham. 4 leeks sliced, half cooked and squeezed dry 125gm ham or bacon bits rough chopped. White sauce made with 10gm butter, 1015 gm plain flour and ½ pint milk, salt, pepper and mustard or lemon juice to taste. Mix the leeks and ham into the sauce and fill 4 pancakes, roll them up and, lay them in an oven-proof dish. Grate a little cheese over the top and bake in 160oC oven for about 30mins, till bubbling and hot all through. Mushroom and onion 2 large onions sliced fine 10gm butter and 10gm oil 450 gm mushrooms slice or rough chopped A pinch of dried thyme or mixed herbs 10-15 gm plain flour 1/2pt milk Salt and pepper and a taste of sherry or white wine if liked. Fry the onion in the oil and butter till golden brown, drain and then fry the mushrooms in the same oil. Return the cooked onions to the pan and use the 36
