Editor’s Message Welcome to the July issue of the Konect Directory. I strolled into the Livingston skate park recently intending to take some photos for the front cover of the magazine, met some of the local skaters and stunt cyclists there and ended up deciding to write a short article about it. It's a fantastic local facility, see the article and pics on pages 8-9. With the summer holidays in mind, if you're lucky enough to be going away we've got a column on travel gadgets, plus India Neckel's style column this month is a packing list of holiday essential clothes to save you having to think about it! We have a new column from local writer Victoria Tickle, and of course our regular columnist Chrisselle. The Pitstop in Addiewell is running a competition this month on page 57, with a great prize of gym membership and/or soft play party, so don't miss out on your chance to win. “Skating is my life and livelihood, in fact I pretty much owe my life to skating.” Meet Benson, Livingston-based skater whom I met when I strolled into the Livingston skate park one warm afternoon recently to take some photos for this magazine. Benson and fellowskater Luke spent some time telling me about skating, and specifically the Livingston skate park and why it matters so much to them. The Livingston skate park is a unique and, in skating circles, world famous facility. The original part of the park was built in the 1980s and is well known worldwide for its great design. It's home to various groups of skaters as well as bikers, host to events and competitions, and is definitely a second home to Benson. “I come here almost every day, and have done for the past 15 years” he tells me. “If I didn't have skating, if I hadn't had it when I was growing up, I'd have been on the streets getting into all kind of trouble. But instead I spent all my time here.” When something plays such an important part in your life, you're dedicated to it and care about the details. Which explains why Benson, Luke and others are deeply disappointed with the results of the recent extension to the skate park.

“We were just unbelievably excited when we heard that the park was to be extended. We were shown an artist's sketch of what ramps would be going in, and it looked good, although there were no details of height, dimensions or gradients shown. We didn't see the detailed plans.” And, as I learnt from chatting to them, the height, dimensions and gradient are the essential elements. They are happy enough with the design, although there are one or two potential safety issues, but they are just gutted with the quality of the finished concrete. Climbing a steep ramp depends on a smooth gradient and on keeping your speed up so that your wheels stay on the surface. But a bump in the concrete across the new tunnel ramp means that you are thrown off part way up – it's very difficult for skaters to safely get to the top. Other ridges and bumps elsewhere in concrete work are cause for concern

and are stopping the skaters from being able to use it to what should be its full potential. “You wouldn't dream of building a play park for little kids that had any safety concerns or shoddy workmanship. So why a skate park?” says Luke. “I've done concrete work in the past and would have been laughed off the site if I left a piece of work as shoddy as this.” he adds. Their view is that if you're getting some building work done at your home, say an extension or a new kitchen, and spending good money on it, you wouldn't be happy if the workmanship isn't up to scratch. “And that's exactly how we feel about this place.” It's not just about the hoodies, baseball caps and shoes. It's about physics, performance, achievement, pride and attention to detail. These guys are passionate about their sport, skilled experts in their field. They care about the Livingston skate park and they deserve the very best. They take ownership of it in a really healthy way. Here's hoping that West Lothian Council can make sure they get the very best, and that the problems the new park has will be fixed so that Livingston skaters and bikers can once again take pride in their park.

Mindfulness is paying attention, in the present moment, with an open heart and in the process discovering the inner qualities of kindness, deepening awareness and acceptance. Life is full of good times and challenging times and nobody can escape difficulties, but we can learn to live in each and every moment with acceptance and deeper awareness. In decades gone by it used to be the norm for everyone in a neighbourhood to know each other. Atmospheres were friendly and everyone felt safe – togetherness was the key to a happy community. Since then, technology has advanced immensely making it possible to stay connected to people without any physical closeness. They have also helped the decline of the close-knit community. Virtual environments, such as social networks, have drained emotional attachments between people to the point where the most interactions amongst a lot of neighbours are the sharing of an occasional ‘like’ or comment. Whilst technology and social networks have their place, it is important not to lose sight of traditional values, and not to forget how important local communities are. It’s time to get back your sense of community, but borrowing a cup of sugar is a little cliché, so try sharing Herman, the German friendship cake around your neighbourhood! Herman is all about sharing and friendship – which is why ‘he’ is the perfect candidate to help bring a neighbourhood together! Think of ‘him’ like an edible chain letter. One person starts ‘him’ off and follows very simple instructions for 10 days. Once the time is up, ‘he’ is divided into 4 – one portion gets cooked and the other 3 get passed on to others so that ‘he’ can continue to spread love, friendship and deliciousness. The recipients then repeat exactly the same instructions as the initiator, and it goes on and on. Herman requires very little attention throughout the 10 days, (‘he’ mostly just sits on the worktop with a tea towel over ‘him’) but the results are amazing. There are so many recipes that you can make with Herman, which can be shared with other Herman owners. I turned my Herman into mini muffins with apple and cinnamon and served ‘him’ with ice-cream. Why not start your own Herman and help bring your community a little closer together? What you’ll need: 2tsp active dry yeast 5oz plain flour 8oz Caster sugar Half a pint of warm milk 60ml warm water

What to do: 1- Dissolve the yeast in the warm water for 10 minutes and then stir. 2- Add the sugar and flour and mix together thoroughly 3- Stir the warm milk in slowly 4- Cover the bowl in a clean tea towel 5- Leave for 24 hours in a cool, dry place 6- Start from day 1 on the instructions Instructions: Hello, my name is Herman. I am a sourdough cake. I'm supposed to sit on your worktop for 10 days without a lid on. You CANNOT put me in the fridge or I will die. If I stop bubbling, I am dead. Day 1: Put me in a large mixing bowl and cover loosely with a tea towel. Day 2: Stir well Day 3: Stir well Day 4: I’m hungry. Add 1 cup each of plain flour, sugar and milk. Stir well. Day 5: Stir well Day 6: Stir well Day 7: Stir well Day 8: Stir well Day 9: Add the same as day 4 and stir well. Divide into 4 equal portions and give away to friends with a copy of these instructions. Keep the fourth portion. There are plenty of recipes for cooking me, so have a look online or create your own!

Some of the most useful travel gadgets are the simplest. The TanSafe is a great example: it looks like a standard bottle of sun cream, but it's a secret safe that's big enough for your cash, cards, keys and even your mobile phone (but not a phone case). It's even watertight, so it can protect your phone from the odd splash. At £7.99 it's cheap too. Some of our favourite technology solves problems we thought were with us forever - such as creased shirts. For £34.99, the Shirt Shuttle MK2 is a hanger that you wrap your freshly ironed shirt or blouse around, folding it and clipping it shut to protect your shirt from creasing. How attractive it is depends on how much you hate ironing: a travel iron will set you back around £10, while a portable garment steamer such as Rowenta's DR5050 promises to unwrinkle anything for £30.
If you're travelling with children, there's no shortage of technology that can keep them amused on even the longest trip. Apple's iPad Mini is ideal, providing all the fun of an iPad without the weight or price, but it's still quite expensive at £269; an iPod touch does much the same thing in a smaller case for half the price, or a quarter of the price if you're buying used. If you prefer Android tablets Google's Nexus is a good buy at £159.

Have a very happy holiday with some high-tech help All of these devices can run apps, and you can copy video from your computer or buy or rent videos from wherever you can find an internet connection. We'd advise against 3G devices that connect to the mobile phone network: there are often very high charges for data roaming. The problem with many travel-related gadgets is that they can be very large and very heavy. For example, a wireless speaker such as the Supertooth Disco weighs a massive 1.1kg, and it's a hefty size too. When it comes to travel speakers, small can be beautiful: the £18 X-Mini II Capsule speaker weighs just 82g but it punches way above its weight. It doesn't sound as good as a top-end speaker system but it's a vast improvement on any smartphone's speakers. If size really does matter, you can even cut the size of your plugs - but beware, because it can be pricey. The Mu Folding Plug is a 3-pin plug with a USB socket on the other side, and it folds down to a titchy 1.4cm - but at around £25 for one, it's considerably more expensive than standard plugs. Now that we're travelling with lots of gadgets, powering and/or recharging them can be a problem: it's not unusual to have a camera, an e-reader, a smartphone and a music player competing for the same plug socket as the TV or hairdryer. Rather than packing multiple chargers or 4-way extension leads, it might be a better idea to invest in a 4-port worldwide travel charger, which comes with 4 USB ports in the top and a collection of interchangeable plugs that work almost anywhere in the world, all for around £10. Such chargers aren't powerful enough for iPads, which draw massive amounts of power, but they're fine for smartphones, cameras and other popular bits of kit.

Spotlight on: Wurst Cafe By Moreen Watson
W
Wurst is a takeaway food business located in Houstoun Industrial Estate opposite ScrewFix and next door to Tile Giant. Our speciality is German sausages called Bockwurst, Bratwurst and the outrageously delicious Currywurst - and we don't speak German! Most of our customers are local factory, office and retail workers with occasional undecided shoppers from our neighbouring businesses who can't decide on tiles, carpets or just need a place to hang around until their car gets MOT'd. I based the design of the cafe around my own needs when I worked as a kitchen designer; following an initial client meeting I would like to gather my thoughts and sketch out some layouts. Ideally, I'd want to do this before going back to the studio because that's when a whole load of other distractions begin to cloud over the creative juices. But finding a cafe with good coffee, reasonable prices, clean toilets, a place to sit work for 30 minutes and park right outside the door was all too elusive. Now I've started the Wurst Cafe I wish I could use the place because it ticks all those boxes! The name was thought up by my husband while visiting a trade fair in Germany. He saw a place specialising in sausages called Wursthellenden and thought to himself, I wonder if Hellenden means 'cafe' in English? That was the lightbulb moment, he came home and said I've got the name for your takeaway business, Wurst Cafe. We both thought visitors would come in just to experience the 'worst cafe' in West Lothian, but we couldn't have been more wrong; nobody has come in and said "is this the worst cafe?" No, instead our new customers ask if we speak German and are generally much more knowledgeable about the Wurst we have for sale. Deciding to source authentic wurst from the Hartz Mountain Region in Lower Saxony was just downright lucky, we were tempted to buy our sausages from a local cash & carry but, because my husband works for a German lighting manufacturer, he was able to set up a direct supply and narrow down the 105 different wurst to just three. We are simply a takeaway and small cafe with an edge, please don't think you're going to walk into lederhosen, thigh-

slapping and feathers in your hat. No, simply good, fresh-made daily baguettes, panini's and belly busting currywurst with imported Kuhne ketchup, senf and curry-ketchup. Craigshill Good Neighbour Network is a local charity which aims to provide practical help, friendship, support and social contact to people in Craigshill and South Howden, with particular emphasis on those who feel isolated or vulnerable because of health, age, disability, circumstances, relocation, bereavement or any other reason.
The services we provide include: • Home and hospital visiting • Provide transport for those who have difficulty using public transport • Collect shopping & prescriptions • Escorting • Wheelchair pushing • Odd jobs when no one available. • Provide a Lunch Club • Offer practical help and information • Pass on to other agency if we cannot offer help • Provide opportunities for volunteers Through groups and one to one contact, we help individuals to maintain their independence for longer by creating a network of social contacts and support. Members of our groups feel less isolated and report improvements in their general well-being. We recruit local volunteers to provide befriending services, assemble homeless starter packs, coordinate the weekly lunch club, provide transport for those who require it and organise various social activities and outings for our members.
Craigshill Good Neighbour Network Homeless Starter Packs We need donations of good quality second hand goods to be included in our homeless starter packs. Items required are mugs, dinner plates, bowls, cutlery, bedding and towels, any of these items suitable for children are also gratefully received as we often support homeless families. Items can be donated at our office at the Almondbank Centre or may be collected. Volunteering Opportunities Volunteering is a fantastic way to contribute to the local community and allows people to gain experience and skills which are a useful addition to anyone’s CV. At Craigshill Good Neighbour Network we depend on volunteers and are always recruiting. Whether you can be involved short or long term, give a regular commitment or an occasional hour or two your input will be welcomed. We are currently looking for volunteer helpers in the following areas: Lunch club; driving; befriending; gardening and practical help. Some volunteer positions require (Protection of Vulnerable Groups) PVG registration. Training, support and out of pocket expenses are provided. Salt is the exception in food seasonings in that it's a mineral; all other herbs and spices are derived from plants.
Sodium chloride - NaCl - occurs naturally in huge under-ground deposits where it is mined, or extracted from seawater by evaporation. Salt is essential to all animal life but excess in the diet is harmful. There is evidence to show that man has traded salt since the Neolithic era - some of the first over-land trade routes were salt roads. Salt has been used as a display of wealth and importance since ancient classical Greek times. In medieval Europe the placing of the salt and your position relative to it at the table indicated how important you were thought to be. The most elaborate and beautiful salt pot may be the one made by Benvenuto Cellini in 1543 for Francis 1 of France. Salt cellars have been made from gold, silver, crystal, fine porcelain, turned woods and are collected and used still. Some people put a few grains of rice in the pot to help keep salt dry and easy to shake. Cellini salt pot
The salt most commonly consumed at home is rock salt, much of it mined in Cheshire. It's washed and processed with some additives to ensure it flows easily, and has iodine added to prevent goitre, or Derbyshire neck - so named because this

disease was often found in people who lived away from the sea. Sel de Mere, Maldon Salt and pink salt from the Himalayas are all on offer in the shops. All these salts have their special properties and do taste different but their food value is the same as other salt. They look lovely and people enjoy milling their salt or displaying crystal salt in fine salt-cellars on the table. Before refrigeration and frozen food a huge amount of salt was needed for storage and preservation of meat and fish. Without its skilled use people would have had a very restricted winter diet. Salt and brine conserved pork and other meats and without it we would not have corned beef, bacon, kippers or ham. Olives are too bitter to eat unless soaked in brine for about five weeks, and anchovies could not have become enjoyed world wide and enhance foods as varied as pizza or Gentleman's Relish. It would not have been possible for town dwellers to enjoy cheap butter from New Zealand or Ireland without the preserving qualities of salt. Think how dull baking would be if we had been restricted to lard and dripping, remembering we were not traditionally users of oils until the 1960's. It has been suggested that the fine quality of Scottish cured fish is directly related to the purity of Scottish salt made from unpolluted sea water. There is a growing interest in curing and smoking meat and fish at home and kits are available giving instructions and recipes. Try it. The results will be interesting and fine to eat; practice improves the quality. I have eaten delicious home-cured smoked mackerel made by the man who caught the fish. All the equipment he used was a plastic bucket for the salting and a metal biscuit tin as the smoker. He had been doing it for years. Gravaladlax is salmon preserved with salt and sugar, so are most pickles. I gave a receipt for piccalilli before, but to encourage more home preserving do try:

Pickled red cabbage 1 large red cabbage, cut in half, the core removed and very finely sliced salt teaspoon cayenne pepper cold vinegar either good brewed malt or cider vinegar Method Put the shredded cabbage in a bowl and cover lightly with salt. Leave over night. Next day give it a mix and then drain off all the liquid. Pack into clean glass jars, putting a little cayenne pepper in each and then pouring over cold vinegar to cover the cabbage. Tie down a plastic cover or put 2 layers of cling-wrap over the top before tightening the lid (vinegar will eat the metal otherwise). This needs 2 weeks at least before ready to eat. Good with cold meats and ham.
Method If you can't buy blanched almonds, start by blanching and skinning the almonds. Salt drying on rock Put the nuts in boiling water for about 3 minutes. Pour the water away and then just squeeze each nut between your index finger and thumb. The creamy white nut jumps free of its skin. Aim them into a bowl. It's a pleasant enough job but if you feel there is more in life than doing this the end result is less elegant but still good. Very lightly butter or oil with olive oil a shallow metal dish. Nothing else will do (Elizabeth David is very rude about other oils especially corn oil)! Shake the almonds in this and place in the centre of a cool oven, gas mark 2 / 110oC. Bake for about 45 minutes till they are the palest biscuit colour. Over cooking will make the oil taste “off� Have ready kitchen paper scattered with salt and a suspicion of cayenne pepper. Coat the warm nuts in the salt by gathering the paper and shaking. Leave to cool and serve eat within 12 hours. This is usually not a problem!

Almost everybody enjoys salty snacks. Salt and vinegar or plain salted crisps are the top sellers in Britain, closely followed by salted nuts, mostly peanuts. The best drinks nibble nuts must be salted almonds. This recipe from Elizabeth David is a little more work than some but it is the best: Salted Almonds Blanched white whole almonds. small amount of butter salt small quantity cayenne pepper to taste
Flavoured salts are good stand-bys and some are very traditional, for example celery salt offered with quail's eggs and an essential ingredient, some say, in a Bloody Mary. There are other salt mixes recommended as personal favourite additions to stews, egg dishes, bread or soups. These range from a mixture of herbs, ground cloves, ginger and cinnamon to Vanilla Salt, Rose Salt and Pepper Salt. Some are more for decorative effect and the Rose Salt is said to be a room freshener as it absorbs cooking smells. Look in Tessa Kiros’ book Limoncello and Linen Water. It must be the prettiest cook book around.
