EDITOR’S NOTE 14
MAY & JUNE 2022
One salutary lesson we have learnt over the past two-plus years is to avoid any premature celebrations. The ride through the coronavirus era has been a bumpy roller-coaster, from heartbreaking peaks of adversity to comforting moments of respite when we thought we were back on a gentle trajectory – only to be reminded of the harsh reality of the ongoing pandemic. Now, however, there truly does seem to be justifiable cause for, if not riotous festivity, significant optimism. It is also important to note that the Costa del Sol home décor market has remained strong throughout the pandemic, and currently it is actually booming. This buoyant situation is reflected in Home & Lifestyle Magazine’s own experience in recent months, with the May-June edition being our biggest ever. It is also highlighted in the European exhibition sector, which is already back on track for a resurgent 2022. Following the resounding success of Maison & Objet in Paris in March, attention is turning to Salone del Mobile from 7 to 12 June in Milan, where the 60th edition of this showpiece European fair is expected to offer exciting new levels of cutting-edge design excellence. Also shining a positive beacon on the market in April was Rebuild, the innovative new industry exhibition in Madrid for the building trade, while Casa Décor continues in the Spanish capital until mid-May. Later in the year, from 30 November to 2 December, Lisbon takes centre-stage with the World Architecture Festival, where the theme will be a simple but poignant “Together”. As WAF curator Jeremy Melvin writes, “a natural choice given the circumstances of the last two years, when being together has been impossible… One challenge of this year’s WAF theme is to demonstrate that true beauty in architecture is its capacity for bringing people together – of being the essence of a tolerant and inclusive way for eight billion people to cohabit on a small planet.” After that it’s on to Germany for the IMM Cologne trade fair (16–21 January 2023), which will be focusing on decluttering or the “tidyism” trend. “What needs does a home really have to fulfil in order for it to be a place of well-being?... It goes beyond having a more orderly home – it’s about achieving inner order as well. Our relationship to our homes is being redefined. How do our homes make us feel? What can I do to feel more at ease? How can I make my home healthier?” As we cohabit here, on our own wonderfully multicultural planet of the Costa del Sol, the prospect of once again being able to enjoy a deeper sense of togetherness sets just the right mood for this spring-summer season. An appropriate state of mind not only for chilling out at home with family and friends, but also for exploring the Coast’s diverse home décor treasures – many of which are stunningly showcased in this bumper issue of Home & Lifestyle Magazine. OUTDOOR LIVING ...
THE WONDERFUL OUTDOORS As we are once again enjoying the warm weather, this is a good time to start assessing our outdoor area so that we are all-set for the summer. After all, we want to soak up the sun and dine al fresco in style. Also, it is scientifically proven that spending time outdoors brings great benefits for our health, both mentally and physically. If you don’t have a garden to enjoy, there is no reason why a small patio or terrace cannot be transformed into a mini oasis. Blurring the lines between the indoors and the outdoors – by creating cosy outdoor lounge areas with comfy sofas and armchairs, cushions, firepits, rugs and good shade solutions, for example – creates a luxurious homely feel that makes the outdoor area feel like an extension of your indoor space. With outdoor furniture, investing in quality materials that can withstand harsh weather conditions will pay-off in the longrun, so don’t be afraid to take the plunge.

SHELTERING IN THE SHADE With summer around the corner, it’s a good time to start considering where you are going to retreat so you can enjoy your outdoor space in comfort away from the harsh rays of the sun. If you don’t already have cover over your dining area, this would be an obvious place to start. The simple pleasures of dining al fresco or reading a book on your favourite sun lounger are often taken for granted by people living in southern Spain, but when the sun becomes intense the experience can take its toll. Whether you are looking for a simple parasol or something more elaborate such as a pergola or daybed, there are many options available on the Costa del Sol – to enable you to enjoy your outdoor space for longer and make your summer more comfortable.

LIVING ROOMS ...
LIVING ROOMS TO RELAX IN When styling your living room, the size and shape of the space has to be carefully considered. Large furniture items and accessories can easily take over the room, making it feel cluttered and claustrophobic, if the space available hasn’t been well thought-out in terms of layout and design. The room should be easy to walk around, with good storage solutions and sufficient tabletop space for placing drinks, books, devices and the like as conveniently as possible. A statement furniture piece or accessory is an attractive way to bring focus and show some artistic flair, such as a striking armchair, rug or pouf. Modular sofas are useful if you entertain guests, as the seating can be moved around to suit the moment. Many contemporary brands have brought out low-sitting block-like sofas and armchairs which have soft edges that invite you to relax – offering more casual lounging. This area of your home should reflect your personality, so individual touches such as a beloved piece of artwork on the wall or a small collection of your favourite books on the coffee table are just some of the easy ways to bring character into the room. Plants and/or freshly-cut flowers immediately make the space feel homely, and inject a natural accent and calming feel when you enter the space.

DON’T THROW AWAY... UPHOLSTER INSTEAD!
Many of us have now veered away from the throwaway culture, when furniture items look tired or out-of-date, and upholstering is a much more resourceful option – especially if you use an ecological fabric in order to do so. Upholstery fabric is heavier than regular fabric, as it should pass the double-rub count (meaning that it is abrasion-resistant), and it should be easy to clean, fire-retardant and, of course, aesthetically beautiful. Upholstering allows you to put your own design stamp on a piece of furniture. However, if the thought of tackling an armchair or sofa is too daunting, consider re-covering your cushions, as surprisingly this can be quite transformational.

CREATIVE WALLS Walls don’t have to be stark blank spaces but instead an expression of your personality. This could mean a cherished piece of artwork or sculpture, a statement wallpaper, tapestry or fabric, or simply lined with all your favourite books. DRESSING-UP WINDOWS Windows are an integral part of your home’s architecture. They allow you to view the world outside, enabling all-important natural light and fresh air to enter, but sometimes this needs to be controlled in order to create a comfortable living environment. Curtains are not only decorative but also serve as cross-ventilation, insulation, noise control and light control – and provide a way for the household to create privacy from the outside. Aesthetically, curtains can make a room look taller, more spacious and homely, and it is always a good idea to leave it to the professionals when it comes to hanging curtains, so you achieve the perfect finished look.

BATHROOM BEAUTIFUL The bathroom is often viewed as lacking in style and personality and simply being a utilitarian space. However, with the health and beauty market constantly growing with revolutionary new self-care products and technology, the modern bathroom feels more like a veritable sanctuary, offering the perfect environment to relax, pamper and beautify yourself. When updating your bathroom, white is a popular choice – and rightly so – as there is no better colour to represent cleanliness and purity. Nevertheless, white can sometimes feel quite cold and clinical, so earthy tones have been introduced into the colour palettes of more recent collections – offering a warmer aesthetic and a sense of reverting back to nature. Rain showers, the inclusion of natural stone and botanicals are also great ways to create your own calming natural oasis at home.

THE JOYS OF DINING AT HOME Your dining area should not only accommodate the household at mealtimes but also reflect your design style. A major trend in this area of the home – similar to many contemporary restaurants that have opened in recent years – has been to make the design style less formal. This encourages a relaxed atmosphere that is warmer, more welcoming and less conservative than our previous generations were perhaps accustomed to. These days the dining table not only serves as somewhere to eat, but also as a place where we can work and chat. Most commonly in contemporary homes, the dining area is not placed in a room isolated from the rest of the house, but instead is part of the main living area and/or in the kitchen – where bar areas are built-in to the kitchen design for casual dining and socialising. The dining area has gone through quite a transformative era, and it has been elevated to new heights in terms of importance, which means investment in this part of your home is worth the time and effort and can offer a long-term reward and a whole lot of new memories.

THE ART OF TABLESCAPING “Tablescaping” has become a new buzzword in the world of interior design. In layman’s terms, this means the artistic form of arranging tableware and decorative items on a table. Whether you want to set a formal mood or one that is more casual, your tableware is an expression of your style and plays an important role in how you present your culinary delights. Plain white plates and bowls are always elegant but lately darker colours have been appearing more than ever. This enhances the colours of the food, making it look more enticing and, of course, more photographable for social media likes. Bold patterns add creativity to the final dish’s presentation, and can be combined with plains if you want to break up the busyness of the table’s overall set-up. For a more understated look, crockery made from stone or ceramic with uneven edges and earthy colours is a great way to present food in a timelessly casual way. Here are some ideas to inspire you…
British-Israeli chef Yotam Ottolenghi created this vibrant tableware collection for Serax. “We have tried to tell the Ottolenghi story in objects,” he explains. “It is a story of the tension between the earthy and the sophisticated, between passion and refinement, tradition and novelty. Ostensible opposites, existing together in dynamic harmony.” The collection is in stock available from Alison Bethell-Collins Interior Design in Avenida del Mediterráneo, San Pedro de Alcántara (www.alisonbethellcollins.com).

SEEING THE LIGHT FOR YOUR HOME Great illumination can be the key to rejuvenating your home, as lighting is pivotal to creating ambience. A tired old room takes on a whole new lease of life when lit up with well thought-out lighting… and there is so much out there to choose from. The world of lighting is always exciting, with designers creating lamps that also often serve as works of art or sculptural pieces in their own right. Lighting not only enhances the aesthetic aspects of a home, but also the technological, playing a large role in smart home systems. Whether you have a large budget or one that is more conversative, lighting can be a great and easy way to make a home feel cosy, welcoming and more comfortable.

Tell us about how Escandi Design started… We have always loved furniture and design, so it came quite naturally for us to help clients in our other company, Escandi Designed Vacation Homes, decorate their new holiday homes. But our passion for design and furniture took a big leap the day we landed on the island of Bali over five years ago and rented a private villa. When we took the first step into the villa we saw something both unexpected and surprising: a fantastic mix of traditional Balinese building and modern, almost Scandinavian-style furniture with a tropical touch of teak wood and stone. That second we absolutely fell in love with the ambience and style, and we also understood that it was something unique that we had to do something about. So how did it progress from there? We didn’t have a shop or any idea about how to get everything all the way from Bali to Spain. But that never stopped us, so as time went on, and as we were still absolutely mad about Bali, the second year we visited we could not 176

resist any more and we went all in and ordered a full 40-foot container of furniture and decoration pieces – and figured we would solve the rest later. Maybe not the best idea but we just had to do it. The precious container landed in Spain a few months later, we found ourselves a warehouse, and our thoughts started to focus on how we needed to find a way to show these amazing pieces of furniture and design to everyone. What was the next step? One year passed and we finally found the perfect small shop where we could create a design centre and space for our other businesses to work in harmony, but the dream was short-lived due to Spanish bureaucracy. Nevertheless, things have a way of sorting themselves out and just a few months later we stumbled onto a large space, too large really, and on top of that we had the horrible pandemic sweeping across the world with all the problems and sadness It brought. Still, we carried on and believed in ourselves, the shop and our products. Now, over one year later, the shop is doing fantastically well. We have so much in
production of our own collections, and we could not be more happy and blessed for the welcome we have received from both locals expats and, of course, our beloved designers. What has been their response? They travel far just to see us, letting us do their entire projects and becoming a part of the Escandi Design family. And the same phrase is always spoken over and over again to us: that they have never seen anything like it. And that makes us extremely happy and helps us carry on and do better and create more blow-your-mind experiences when people come to us.
In conclusion… The shop is our everything but we could not do it without the help of our new store manager, Allan Petersen, who has a long history in the furniture business. Plus, of course, all the small factories and carpenters who work hard for us on the incredible little island called Bali. We love you! Escandi Design Crta. de Mijas Km. 3.5 Tel. Where did your passion for architecture come from? I was born in Casares – a classic Andalucian town, highlighted by its white houses, long walls and narrow streets – so the essence of Andalucian architecture was in my childhood subconscious. Another key period that defines my architectural style was when I was studying in Mexico, where I discovered and fell in love with the emotional architecture of Mexican architect Luis Barragán and his way of incorporating light and colour into spaces.
os or outdoor views, playing with visual axes that create surprise and mystery. Finally, Japanese architecture has taught me to bring simplicity to my projects, where aspects such as ease and simplicity take on added importance. Following the Japanese wabi-sabi philosophy, which is based on the concept of beauty in the imperfect, I try to find beauty in handcrafted, local materials that are characterised by an imperfect and unique touch. Today the real luxury is craftsmanship.
What provides the inspiration for your projects? For me, architecture has to embrace the identity of the climate where the home is being built, and it must be closely related to its landscape. In Mexico my teacher Jose María Buendía told us to look around us, as it is what we have there that is a source of inspiration, something unique – opening our eyes to those wonders. Our architecture tries to find its inspiration in the values of Andalucía, in its towns, its exceptional materials, seeking to create contemporary spaces with a Mediterranean soul. Another aspect influencing my projects is Arabic architecture, which I find is so full of mystery and seduction. I try to create spaces and routes that encourage you, as you enter, to discover pathways that are enveloped by pati-
How would you describe your style of architecture? Single-family homes with a Mediterranean soul that transmit local identity in a contemporary space. You can see this, for example, in Casa Hikari, a project located in Estepona’s historic centre where the façade is integrated into the composition of the other houses. It is a home distinguished by the thickness of its structure, the use of rough plastering on the walls, and esparto grass curtains integrated into the façade. The amplitude and luminosity of its spaces is achieved through double heights and spaces such as interior patios that fill the entire home with natural light. In addition, energy efficiency is paramount, with the thickness of the walls providing excellent insulation, and their orientation enhances natural venti-

lation (cross ventilation) that achieves a cool environment in the summer and warmth in the winter. Its sloping roof allows the solar panels to be installed at optimum orientation, taking advantage of the sun in the best way possible. What are the main materials, colours and ambiences that define your projects? Our projects originate from the simplest possible palette, the tiles, the clay floors, deriving from the land itself and introduced into the roof of the house. Walls comprising lime and baked earth are typical features of local architecture. I try to combine high-quality materials such as wood, clay and whitewashed walls with the objective of creating attractive contrasts while reconciling the functional, traditional and modern. In outdoor areas – spaces that are just as relevant as the interiors – vegetation plays an important role. Bougainvillaeas are a very common plant in our gardens, adding colour and contrast to the project. On the other hand, water is also an important element in our architecture. I always try to introduce outdoor fountains that help create atmospheres which transmit peace, calm and freshness.
In conclusion… Our architecture aims to promote an identity based on Andalucian towns and roots. We try not to lose the Mediterranean soul that makes us different, which is why people choose Andalucía. I believe this vision is especially necessary on the Costa del Sol, which tends to be exploited by the tourist boom, and is suffering from a loss of architectural identity. Throughout the Costa del Sol “white cubes” are sprouting up: houses with flat plastering and giant windows that transmit a sense of coldness and have nothing to do with our landscape and represent an architectural style that is contrary to the values of classic Andalucian architecture. So, our main objective is to seek universality in a local context, respecting what we are and what makes us unique.

A Swedish photographer especially known for her creative portraiture work, Jeanette Hägglund has also established a highly regarded reputation for skillfully capturing abstract architectural elements and features. Her technique (showcased on Instagram under the name of @etna_11) involves interpreting buildings – the whole structures, not just their individual parts – and transforming them into abstract works of art. So she considers herself to be both a photographer and an artist. Her scope also extends well beyond architectural projects, including general commissions, adverts and branding – mostly comprising studio portraits. Jeanette recalls receiving her first camera at eight years of age, and subsequently expanding her photographic knowledge by dabbling with various different methods. Originally more into art and exhibitions as she studied at photography school, she eventually launched her own art photography business. She says her passion for photography is broad, and she constantly moves between architecture and portraiture genres. She balances a sense of restlessness (and perfectionism) with patience, the key to being able to successfully cover such a wide spectrum of contrasting art and photography. 182
MAY & JUNE 2022
Understandably, light is the most important aspect of all her work, whether it is a building or a person – particularly early or late afternoon – and she also places significant emphasis on colours. With every architectural project, her goal is to highlight the individuality of the structure, whether it is a building she has discovered through an internet search, business commission or simply exploring a new city. One of Hägglund’s most prominent projects, a private commision called “Secrets” shot in 2016 and 2017, presented the work of Ricardo Bofill, who designed the renowned Muralla Roja in Calpe (Costa Blanca, Spain) and who sadly died earlier this year. This ground-breaking contemporary architectural work combines two worlds – the Mediterranean landscape and the architect’s admiration for Kasbah traditions in northern Africa. The plethora of rich colours provides a strong visual impact that makes this expansive building so iconic, creating a play on shadows and colour palettes as the sun rises and falls during the day. Estepona is closer to welcoming a new hostel, the first initiated by the municipality. Due to open its doors in time for the summer season, Hostel La Veranera is located in the evolving Old Town of Estepona. The Brazilian developer behind the project visited 35 cities around Europe to select the ideal location for the hostel and in the end settled on the Costa del Sol town, which in recent years has benefited from a wealth of investment and improvements, including improved infrastructure and a new hospital. The renovation, by Atlas Group, is nearing completion. According to Director General Mike Gregory, “The Old Town of Estepona is an iconic location, one which is receiving great attention in renovation and rejuvenation. We were pleased to have been selected for an exciting project and eager to see the final results. The renovation has been more difficult than typical projects due
to the central location, but the Atlas Group team have been exercising their care and expertise in the construction work.” Hostel La Veranera can house up to 36 people and has several dormitory style bedrooms, private double bedrooms, a kitchen and dining area, co-working spaces and laundry facilities. A contemporary-styled open-air terrace on the roof has a plunge pool, seating and bar area perfect for the Andalucian climate. Article supplied by Atlas Group CC Atenea, Estepona Tel. In Málaga city centre next to the famous Teatro Cervantes, you will find the Vino Mío restaurant, which has been established for an impressive 19 years and is the brainchild of Dutch entrepreneur Hélène Mostertman. Hélène is usually seen front-of-house overseeing the operation while greeting and chatting to guests. An upbeat and positive young lady, she oozes happiness and warmth through her contagious smile, and this general feeling emanates throughout the restaurant as the staff also seem happy to be part of her team and keen to create a warm and relaxing environment for the diners. The menu offers not only Spanish dishes but also a wide range of delicacies that Hélène herself has enjoyed on her worldly travels, featuring the likes of South African crocodile, Australian kangaroo tenderloin, tuna tataki and Moroccan Bouznika kofta – to name but a few of the many interesting options available, including vegetarian dishes. Unlike many of the neighbouring restaurants, their plating veers towards a more contemporary style and the decoration also follows suit, with an all-singing bar lit up in neon LED lights and slick polished wooden floors. Every evening in front of the bar a flamenco show is put on, and this has proven to be quite a hit with tourists, adding an authentic Spanish ambience to their dining experience. Diners can enjoy several performances and they are even invited to participate if they so wish (!). 188
MAY & JUNE 2022
Their flamenco show is a respectful nod to how culturally rich and vibrant Málaga is and, surprisingly, a rare treat for visitors to the city. Very few performances take place there, making Vino Mío quite special in that respect. For those who would rather soak up the buzz of the city, there is outdoor dining looking out over the charming square of Plaza Jerónimo Cuervo. With the famous Cervantes theatre just across the square, art and culture play an important role in the area. Hélène has chosen to embrace this by supporting local artists, hosting exhibitions and displaying their works of art on her walls for all visitors to enjoy. Her charitable work doesn’t stop there however, as she is also an ambassador of the Ronald McDonald children’s hospital, a fundraiser for Cudeca, Piel de Mariposa and AECC, and a key collaborator in a project called Heal The World, which raises the profiles and helps generate funding for NGOs. RESTAURANTE VINO MÍO Plaza Jerónimo Cuervo 2, Málaga Open Wednesday from 7pm and Thursday to Sunday from 1pm onwards. The flamenco show takes place every evening from 8pm to 9.30pm. Tel. A S O M M E L I E R’S G U I D E O N H OW TO CO L L E CT A N D STO R E W I N E I N YO U R H O M E BY CASSIE M @WINEPOSTER The storage of wines can be exciting, profitable and challenging for your patience. There are many obvious reasons why you would like to start storing wine. One could be that you want to keep a wine for a special occasion. Another, to impress your new acquaintance when he/she finally accepts your dinner invitation at home. It doesn’t have to cost a fortune to start, and you don’t even have to be an ace when it comes to using such nerdy and pretentious wine terms such as, “I can really smell the percentage of Petit Verdot in this Bordeaux blend”. Similarly, you don’t have to mention the terroir of your Grand Cru Chablis. Relax… and just follow these easy steps. Store your wine correctly: If you are lucky to own a wine cellar that’s great – otherwise you might start off with a wine fridge/cooler with similar attributes. Temperature control: Wines cannot store well with high temperature fluctuations – a wine cooler maintains the same temperature all year. Store your bottles on their side: This is more important for long-term storage. A natural cork needs to be in contact with the wine to stay moist and keep oxygen out of the bottle. Correct humidity: This is important for long-term storage. If the air is too dry it could dry out the cork, allowing oxygen to enter the bottle and spoil your wine. If too wet, mould will surely start to grow. This will mainly cause damage to the labels and thus reduce the bottle’s value, which is especially important if you have plans to sell it. Between 50 and 70 per cent humidity is a good level to aim for. Avoid direct sunlight: Keep your wine in a place away from the sun, because UV rays react with the phenolic compounds in wine, creating sulphureous compounds. In other words, this will change the wine’s smell and taste for the worse. Now that your storage is resolved, it’s time to choose what wines to store. I suggest you start with a pleasant mix of wines with different prices and ageing preferences. Choose some classics, with good collector’s value and from highly respected wineries. You also might want to have different quality ranges, for everything from a cosy dinner at home to a wedding gift, or when you meet up with old friends. Finally… some wine suggestions, including classics to start with. CHAMPAGNE A must-have for either a planned or a hastily organised celebration. Buy at least one cheap bottle for any occasion, and one sought-after special Vintage, Cuvée or Limited Edition. The cuvées are usually the more prestigious wines from a range and a great investment, depending on which brand. BURGUNDY This famous area in France includes some of the most expensive wines in the world. Focusing on the more affordable ones, I suggest you take a look at Joseph Drouhin. They start from a Chablis from €25 up to a Montrachet Grand Cru for €800, with many wines in between from the same producer – including excellent-quality reds and whites. Collecting different wines from the same producer can be very rewarding and fun from a collector’s point of view. ITALIAN I always suggest a great Barolo riserva, such as Fratelli Serio & Battista Borgogno. Their vineyards are located on the famous Cannubi hill, described as
“A vineyard kissed by God” by James Suckling. He loves this place so much he even made a film about the area. The Barolo wines usually have high tannins, high acid, and great flavour complexity and length, so they normally have excellent ageing potential and will increase amazingly in value. You can expect to pay between €50 and €100 for a complex Barolo in the starting range. Then we can find a “Super Tuscan” like Sassicaia, from Tenuta San Guido. The average critics’ score for all Sassicaia vintages in history is 94 points, and many of the best vintages receive perfect 100 point scores. A classic musthave for a wine collection, they are renowned for their excellent investment value. A bottle of Sassicaia 2018, for example, will cost around €250. SPANISH R. López Heredia is one of my absolute favourite producers. A family-owned winery in Haro (Rioja) dating to 1877, they offer magical wine cellars and an excellent range of wines. Their Viña Tondonia Reserva is a classic favourite if you must choose only one of their reds, and it’s only around €35/bottle for the newest vintage (currently 2010). If you get your hands on any older bottles, buy them, as these wines are known for increasing in value. Their rosé and white wines are quite rare now – and have cult status among reserva wines. If you want to know more about storage and collections for beginners or experienced-level wine lovers, do not hesitate to contact me as I offer a wine cellar service along the whole Costa del Sol. I find the best wines possible for your collection according to your wallet, preferences and purpose. From smaller wine coolers to advanced cellars, I can create a professional tailor-made solution for a fixed-hour price at your home. No surprises – just a great service. VINOTECA BAROLO Urb. In this edition you are in for a real special Scandinavian treat, with a beetroot touch and spiced up with vodka. During the Middle Ages, gravlax was made by fishermen who salted salmon and lightly fermented it by burying it in sand directly by the sea. The word “gravlax” comes from the Scandinavian word “grav”, which means “grave and lax” – or “laks”, which is “salmon” in the Scandinavian languages. So “gravlax” means “buried salmon”, to be exact. Nowadays, nobody needs to bury salmon because, fortunately, the fridge has been invented. INGREDIENTS · 1 side of fresh (raw) Norwegian salmon fillet MARINADE: · 3 raw beetroots · 1 cup of Maldon salt · 1/4 cup of white sugar · 1 spoonful of 5-Pepper mix · Handful of fresh dill · Zest of 1 organic orange · Shot of vodka If you are feeling like a Viking, you can also add a spoonful of powdered
with beetroot, as the colour is rather intense and tends to be a challenge to remove. Place all the ingredients for the marinade into a blender and emulsify. Put half the marinade into a large glass or plastic container that accommodates the size of the fish. Place the salmon on top and cover with the rest of the marinade. Cover with kitchen wrap, and into the fridge it goes for around 48 hours. Give the cured salmon a good cold water wash to remove the marinade, and dry softly with some paper towel. Place it into the fridge again for a minimum eight hours without a top, to dry and finish the curing process. Notice the firm consistency and beautiful colour of the salmon when cured – all ready to impress your guests and family. Cut the salmon you need in fine angled slices, then only your imagination sets the limit for the thousands of ways to serve this delicacy. Some of my favourite servings are traditional carpaccio or salmon roll bites, filled with Philadelphia cheese with lime and dill, cut into sushi pieces and topped with caviar and dill. It is also delicious on top of roasted sourdough bread, with Danish Lurpak butter, lemon, salt roasted pumpkin seeds, red onions and capers, and on top some fresh dill and karse sprouts (the spiced Viking cress). If you need a day off, treat yourself and your guests with a complete catering experience at your home. Like I always say, “A chilli a day, keeps the doctor away”.

In today’s world we tend to forget how important sustainable garden design is. So here we would like to share with you our thoughts about the subject. During the process of garden design we are focused on the owner’s needs, living style and beauty priorities. As human beings we love low-maintenance spaces and enjoying our free time engaging in pleasant activities in an attractive environment. Many modern gardens comprise a concrete patio, artificial lawn and swimming pool. We all know that concrete and steel become very hot during the summer months, especially here on the Costa del Sol, and that’s why sustainable garden design is so important – that is, connecting garden structures such as patios, paths and pergolas with nature. There are many ways to achieve this. Our way is to not force the laws of nature, as you simply cannot win against its power: drought, hot weather, salt from the sea suspended in humid air... Rather, our designs are based on observations of nature: what is growing in the fields, mountains, valleys, and taking into consideration what kind of plants are growing next to the sea. These observations, and our research of plants, provide us with the opportunity to adapt our designs to the natural environment surrounding the garden. A mixture of native and garden (specially-selected) plants creates breathtaking landscapes in different styles and accommodating particular needs. 192
MAY & JUNE 2022
So, how can you achieve a sustainable garden design? Some of the key factors that make our garden sustainable include reducing biologically inactive spaces such as concrete flooring or artificial grass, and reducing lawn areas. Why? Biologically inactive spaces become hot, leaving loads of waste during production – much of which is extremely difficult to recycle. Lawns are monoculture, requiring water and artificial fertiliser, which is the opposite to biodiversity, water-saving and natural fertilisation. Sustainable garden design is about taking care not only of us but of all living beings… bees, butterflies, birds and the many other creatures that visit our garden. Think about the contrast between living in a hot place without shade and full of concrete and plastic (artificial lawn) and somewhere that offers a balance between paths, patios and plants that give you shade, lower the temperature, and surround you with scents, views and positive energy. MORGAN SUPER 3
THE LEGENDARY CRAFT OF THREE-WHEELED MOTORING
Since its foundation 113 years ago, Morgan Motor Company has based its car manufacturing ethos on three principles – character, thrill and adventure. Unveiled earlier this year, and succeeding the 3 Wheeler (produced between 2011 and 2021), the new Super 3 honours that design language while also drawing inspiration from the jet age. Built upon the company’s new three-part aluminium platform, it is the first Morgan with a monocoque structure and – powered by a 1.5-litre Ford three-cylinder engine – it significantly exceeds the power and performance figures of previous three-wheeled Morgan models Described by Morgan as “one of the most intriguing and distinctive vehicles the company has ever built”, the Super 3’s character is at the heart of its driver engagement. “Primarily,” notes the company, “a three-wheeled Morgan is a vehicle that entices you to get behind the wheel, offering a unique combination of mechanical feel, connection to the environment and visual differentiation from anything else on the road. Few vehicles will engage their occupants like Su194

per 3, which encourages owners to feel present in the craft of motoring and entices them to embark on incredible adventures. “As the company’s most configurable model to date, Super 3 offers an extensive list of options and accessories that allow owners to tailor their own experience. From adventure touring accessories to race-inspired liveries, Super 3 adopts multiple personalities to reflect the individuality of its owner.” The same as every Morgan before it, the Super 3 will be built in Malvern (Worcestershire) at the company’s Pickersleigh Road factory, where craftspeople have been handcrafting cars since 1914 – five years after HFS Morgan invented the first Morgan, known as “The Runabout”. The Super 3 represents a new design philosophy from Morgan. “In comparison with the outgoing 3 Wheeler, which was created in the style of the 1920s V-twin-engined three-wheelers, Super 3’s designers and engineers have drawn influences from the mid to late century. The jet age was an era in which there was a logical relationship between function and form, as the horizons of imagination were broadened.”
To that end, aerodynamic and mechanical requirements have heavily influenced the form and proportions of Super 3, highlighted by cast aluminium structures that provide the face of the vehicle, brace the engine and control the corner packages and direct air into the side-mounted cooling packs. Two rectangular “diffuser plates” (or “sideblades”) manage cooling requirements while also presenting a platform for panniers, luggage racks and liveries. As Morgan’s first clean-sheet design since the launch of the Aero 8 in 2000, and the company’s “biggest visual departure” since the 1962 Plus 4 Plus, the Super 3 challenges the typical perceptions of Morgan design but still remains true to the company’s underlying principles and heritage. A choice of seat materials includes vinyl, water-resistant leather, saddle leather with enhanced durability, and a technical fabric that combines a high level of water resistance, UV resistance and ease of maintenance. Available for the first time is a footwell heater, and comfort is further enhanced by a reach and rake-adjustable steering wheel and a quick-release
adjustable pedal box. A universal fixing is mounted under the dashboard that allows for a cup holder or Quad Lock phone mount to be fitted, bungee cords can be fitted to the chassis impressions in the outer cockpit to provide a storage solution for coats, maps and small bags, and a discreet lockable underseat compartment allows for more valuable items to be stored. “Morgan 3 Wheeler owners are individual, relish doing things in their own way, and actively seek adventure,” says Morgan Motor Company head of design Jonathan Wells. “With Super 3, we aimed to exaggerate these qualities through design. Super 3 stands out as something different. It looks towards our past, is relevant in the present, and reinstates a firm vision of Morgan’s design future. “Super 3 gives you a deep mechanical connection to the car and your surroundings. It takes the idea of adventure and escapism beyond just a romantic notion, whilst presenting a blank canvas for self-expression. Life is rarely more complicated after a drive in a Super 3.”

TO S L E E P P E R C H A N C E TO D R E A M ? BY RACHEL GARROD
Sleep is of course essential to our well-being. After a bad night’s sleep we feel understandably drowsy and groggy, often lacking in motivation and focus. Poor sleep affects our cognitive ability with respect to decision making and execution of goals. How much harder is it to exercise after a bad night’s sleep? We know that too little sleep, as well as too much, is associated with increased risk of heart attacks, diabetes and stroke in men and women. The sweet spot seems to be between seven to eight hours of sleep a night. Brain health is also dependent upon adequate sleep, with research suggesting six to eight hours of sleep reduces the risk of dementia. During sleep the brain cells grow smaller, allowing an opportunity to flush away damaging chemicals that accumulate between cells during the day. Even more compelling is that researchers in Toronto and Chicago found that better sleep not only reduced the likelihood of developing clinical Alzheimer’s disease, in people with a genetic risk, but also reduced the development of tangle pathology in the brain – another substance that accumulates in this dementia.
Whilst it is not always easy to get an adequate night’s sleep, there are a few things we can do to help ourselves. 1. Turn out the lights and close the blinds. Even very small amounts of ambient light in the bedroom have been shown to negatively affect metabolism the next day. 2. Stick to a routine. Being consistent in the time that we wake up and go to bed helps the body’s internal clock; changing it about at weekends can often be counter-intuitive. 3. Try to avoid the temptation to use your phone/tablet last thing at night. The light from most screens seems to “trick” the brain into thinking it is daylight. 4. Avoid alcohol before sleep. Whilst alcohol may help us fall asleep more quickly, it impacts negatively on the sleep stage, Rapid Eye Movement, which is thought to be particularly beneficial. 5. Try to keep active during the day. Being physically active helps us fall asleep quicker, and it has been associated with more restful sleep. As always, if you need help increasing your activity please get in touch.

L AT E ST R E S E A R C H N E WS… T H E B E N E F I TS O F P R U N E S, G O L F A N D CO F F E E MEDICAL MINUTES BY JOHN SCHIESZER PRUNES PACK POWERFUL NUTRIENT PUNCH
A prune or six a day may help keep inflammation at bay, according to a new study looking at daily consumption. It found eating nutrient-rich prunes every day may be beneficial to bone health, and reduce inflammatory factors that contribute to osteoporosis. Osteoporosis is a loss of bone strength caused by reduced mineral density in the bones, which increases the risk of fracture, especially in older adults. Previous research has shown that the polyphenol extracts in prunes promote lower levels of oxidative stress and inflammation in a type of bone cell called osteoclasts. In a new study, researchers at The Pennsylvania State University explored the effects of prunes on bone health after menopause. Postmenopausal women with a bone mineral density score that was defined as low were divided into three groups. One group ate 50 grams of prunes (about six prunes) daily for 12 months. A second group ate 100 grams of prunes (about 12 prunes) daily for 12 months. A control group ate no prunes. The research team looked at blood samples taken from all volunteers before and after the trial and found significant reductions in inflammatory markers in both of the prune-eating groups compared to the control group. “Our findings suggest that consumption of six to 12 prunes per day may reduce pro-inflammatory mediators that may contribute to bone loss in postmenopausal women. Thus, prunes might be a promising nutritional intervention to prevent the rise in inflammatory mediators often observed as part of the ageing process,” said study first author Janhavi Damani with Pennsylvania State University. HIDDEN HEALTH BENEFITS OF GOLF
While golf was once known as the game of kings, the American Heart Association says you don’t have to be royalty or a professional player to reap health benefits from hitting the links at your local golf course. Studies suggest that golfing regularly (at least once per month) lowers the risk of death, especially among older adults.
Golf can provide benefits such as stress reduction and regular exercise. Due to its social nature and typically slower, controlled pace, people of all ages and physical fitness levels can play the sport. “The regular exercise, time spent outside enjoying nature, social interaction and even the friendly competition of a round of golf are all elements that can foster mental and physical well being,” said Dr. Donald M. Lloyd-Jones, president of the American Heart Association and a professor at Northwestern University’s Feinberg School of Medicine in Chicago. He said the past couple of years had been hard and many adults picked up some unhealthy lifestyle behaviours, such as more eating and less physical activity. “I think golfing can offer a great opportunity to start venturing back out into an enjoyable activity that can feed our hearts and our souls,” said Dr. Lloyd-Jones. “The American Heart Association recommends most people get at least 150 minutes of moderate-intensity exercise a week. Golfing qualifies as a moderate-intensity exercise, specifically if you are walking an 18-hole course, carrying your golf clubs.” GOOD NEWS FOR COFFEE DRINKERS
Drinking two to three cups of coffee a day is not only associated with a lower risk of heart disease, but also with living longer, according to the latest data. These trends are true for older adults both with and without cardiovascular disease. Researchers said new analyses provide reassurance that coffee isn’t tied to new or worsening heart disease and may actually be heart -protective. “Because coffee can quicken heart rate, some people worry that drinking it could trigger or worsen certain heart issues,” said Dr. Peter M. Kistler, with the Alfred Hospital and Baker Heart Institute in Melbourne, Australia. “This is where general medical advice to stop drinking coffee may come from. But our data suggest that daily coffee intake shouldn’t be discouraged, but rather included as a part of a healthy diet for people with and without heart disease. We found coffee drinking had either a neutral effect, meaning that it did no harm, or was associated with benefits to heart health.” Dr. Kistler and his team used data from the UK BioBank, a large-scale prospective database with health information from over half a million people who were followed for at least 10 years. The current investigation showed that having two to three cups of coffee a day was associated with the greatest benefit, translating to a 10 per cent to 15 per cent lower risk of developing coronary heart disease, heart failure or a heart rhythm problem, or dying for any reason. The risk of stroke or heart-related death was lowest among people who drank one cup of coffee a day. They also make excellent gift ideas for jetsetting family friends who are celebrating a birthday or special anniversary. HOME FOR NOMADS: INTERIORS OF THE WELL-TRAVELLED Photographer Jan Verlinde and writer Thijs Demeulemeester showcase 20 homes that house objects collected from around the world. These exotic touches of far away places include a Vespa, tiki bar, surfboard and African mask, which “embody memorable and meaningful travels, and represent the nomadic spirit of the traveller in daily life”. Verlinde and Demeulemeester reveal how these elements can be displayed creatively, “giving the sense of travelling at home without leaving home”. CURVED: BENDING ARCHITECTURE Author Agata Toromanoff explores 60 case studies from around the world of contemporary buildings that incorporate wave-like, rounded forms into their design, and includes a short historical overview and the most recent design and technical developments. The book notes that curved forms in architecture have been found throughout history (for example, the Colosseum in Rome) while adding that today’s constructions explore the curve to its utmost fluid and free-form potential. “From Zaha Hadid to Bosjes Chapel and from Brussels to China, this is a selection of amazing buildings by worldclass architects who think outside the box and have redefined the built world around us.” 202

BOTANICAL BUILDINGS: WHEN PLANTS MEET ARCHITECTURE This latest book from Wonder Plants author Judith Baehner refers to the green architecture movement that has become a worldwide phenomenon – addressing sustainability and how the built world is enriched by nature. Presenting stunning and innovative buildings from around the world, it explores how they incorporate plants and architecture in both interior design and construction. VAT O N TO U R IST ACCO M M O DAT I O N I N S PA I N ARTICLE SUPPLIED BY WELEX LAWYERS & ACCOUNTANTS
The rental of a property in Spain can be exempt from VAT (IVA) but also subject to different VAT rates, specifically 10 per cent or 21 per cent depending on the type of property and services provided to clients. The VAT Law (LIVA) indicates that entities or persons engaged in the rental of tourist accommodation are considered, for the purposes of this tax, to be entrepreneurs, and when the activity is carried out by entrepreneurs “the rental of tourist accommodation shall be subject to VAT”. The activity of accommodation is different from the activity of renting accommodation, as the former normally includes other services that complement the letting of the property. These services (as defined in the law), are, among others: · Catering · Laundry service · Cleaning services Other services outlined by the General Directorate of Taxes, include: · Reception and/or permanent and continuous customer service in a space set aside for this purpose · Periodic cleaning of the property or accommodation · Periodic change of bed and bath linen · Custody of luggage · Newspapers · Reservations · Food and catering services 210
MAY & JUNE 2022
These types of services will be invoiced with 10 per cent VAT, like a hotel establishment in Spain. The activity of a tourist flat is included in group 685 of the Economic Activities Tax (IAE). It is an “extra-hotel tourist accommodation”, itself included in “accommodation services”. Included in this group are most of the accommodation services that are different from the more common, such as (for example) a hostel, hotel, guest house, apart-hotel, campsite, etc. If the services indicated above are not offered – and, on the other hand, another series of services listed below are carried out, which are not understood to be complementary to the hotel activity – VAT should not be charged and will not have to be declared in invoices for that holiday rental to the AEAT. · Cleaning of the property before the stay and after the departure of each client · Change of textiles (towels, sheets, etc.) before the stay and after the departure of each client · Cleaning of the communal areas of the building and/or urbanisation where the property is located · Maintenance, repairs and assistance for occasional problems with electricity, plumbing, locks, electrical appliances, etc. Welex Lawyers & Accountants C/ Ramón Gómez de la Serna 23, Local 7, Marbella Tel.
