During the lockdown period, we had the opportunity to think differently about things and also be open to new, creative ideas. With the flood of ideas from businesses and online portals pushing useful tips, business tools, kids activities and audio links there is no reason to complain about a lack of things to do.

However with the relaxation of some lockdown rules, many of us will be reluctant to visit busier public places. If like us you are craving a good coffee shop hangout, take a look at this fun

Melting Chocolate

Nothing goes better together than coffee and chocolate. An international go-to combo that seems to miraculously melt problems away. This is the perfect winter recipe; warm chocolate cake oozing with chocolate lava, otherwise known as melting chocolate cake.

24/7 DURING LOCKDOWN DIRECTIONS: Preheat your oven to 200”C. (make sure the fan is off) Grease 4 small ramekins, around 8cm in diameter. Melt the chocolate and butter together on the stove over a medium heat. Once the chocolate and butter are melted remove from the stove. In a separate bowl whisk the eggs and sugar together for around 4 minutes until creamy. (This is the perfect opportunity to use your arm muscles seeing as gyms have been closed for lockdown.) Fold the flour into the egg mixture. Nice and gentle. You don’t want to remove all the air you beat into your eggs. Combine the chocolate mixture with egg mixture. That’s all the mixing needed! Pour the mixture into the 4 ramekins. Make sure to only fill them half way or they will bubble over. Bake in the oven on the middle shelf for 14 minutes. You don’t want to over bake them or there will be no lava, making it a plain chocolate cake. The cakes should have risen to the top of the ramekin but still need to wobble a little. Take them out of the oven and allow to rest for 5 minutes before enjoying them. If you have cooked them correctly the top will sink once they have cooled meaning you have achieved the perfect chocolate lava in the middle. INGREDIENTS: 170g dark chocolate (we use Lindt) 170g butter (not margarine) 4 eggs 85g sugar (adjust to your sweet tooth) 60g flour

Shortbread Fingers

Yields: 12 – 24 fingers (depending on width & length) Prep Time: 5 - 10 mins Baking Time: 12 – 20 mins Utensils: Measuring jug, Mixing bowl, Wooden spoon, Large flat knife, Biscuit tray, Fork or skewer.

24/7 DURING LOCKDOWN METHOD: Preheat oven to 180ºC Add all ingredients to the mixing bowl and mix well until a firm dough forms. Generously dust a smooth flat surface with flour, roll dough to 1cm height and gently poke with a fork or skewer. Cut into desired length and width and place onto a biscuit tray. Bake for 18 – 20 mins or until light or golden brown. Leave on biscuit tray and allow to cool for about 5 – 10 minutes. Dust with castor sugar while biscuits are still hot. Once cooled serve with your favourite cup of tea, coffee or hot chocolate. Enjoy it curled up under some warm blankies and in front of the TV watching your favourite movie or show. Lemon Cheesecake No Bake - No Cheese

Utensils: large mixing bowl, microwave, and a microwave friendly glass dish. INGREDIENTS: 1kg plain yoghurt 5ml vanilla essence 5ml lemon essence 1pkt lemon cream biscuits 1 tin condensed milk 100g butter

24/7 DURING LOCKDOWN METHOD: Pour all your yoghurt into a mixing bowl and add the vanilla and lemon essence mix by hand. Add all condensed milk and mix until blended (by hand). Crush your lemon cream biscuits with a mixer or in a plastic bag with a roller. Then melt 100g butter and add to your biscuit mixture. Cover the bottom of the dish with the biscuit mixture to ensure a good strong base. Pour your yoghurt mix evenly over the top and place in the microwave for 5 minutes 800KW 70% – no less no more. Then place in the refrigerator for 40 minutes to set.

Homemade Ice - Cream Delectable 101

Ice cream is basically a combination of milk and cream, which are both great sources of calcium, Vitamin A and D, riboflavin and phosphorus. Some food for thought, calcium is key in ice cream and calcium rich products keeps your body strong and metabolism working.

INGREDIENTS 1L Fresh full cream 1 Tin (385g) condensed milk 300g of your choice of ingredient

UTENSILS 1 Large mixer bowl 1 Electric mixer 1x 2 Litre container (for use in the freezer)

METHOD Pour the full litre of cream into your mixer, whisk on medium until your cream has soft peaks, then fold condensed milk into the cream, add in whichever flavouring you desire. Stay away from liquid flavourings such as fruit juice or coulis. In this recipe we use caramel and for our second-best Oreos. Once added, pour into your container and freeze for a minimum of 2 hours. Then simply serve and enjoy.
