Is it an essential part of what the Maltese people are about? Can we possibly live without water? This issue it's all about water– spa water, pool water, pond water, rushing water, still water, unworldly water...we even covered fish water. Take in the most exquisite Madliena indoor spa and outdoor lagoon you’re likely to see in Malta (page 018)and this side of the Mediterranean. Intrepid writer and ultra cool designer Maria Scerri helps real estate mogul Chris Grech follow suit in designing the perfect spa for his Gharghur home(page 048). Mona 'on a mission' Farrugia goes on a quest to find the ideal water feature for her back garden within a reasonable budget (page 040). The first mistake is that this is not an anagram, but a mnemonic (pattern of letters or words used as an aid to memory). The major error is that when light hits a prism and fractures it creates the spectrum (or rainbow), which consists of seven colours, not six. The mnemonic I learnt 45 years ago in Physics is: Richard of York Gained Battle in Vain -the “I” giving us the missing colour of Indigo. “My garden is my living room. Here and the spa. In summer, what else would I want?” the owner asks, not really asking. He seems consumed by tranquillity and his voice is almost lulling. Here is a far cry from his business – Paceville bars and restaurants. It’s another world and that’s precisely how he’s designed it to be. The fact that the garden was built way before the actual house is an indication of how significant this garden space is to him. Yet to be finished, the project was started two years ago and will take another eight to nine months to complete. “It’s been a long project, but it’s worth it. It hasn’t been easy. I really like involving myself so that everything gets done properly. If you just leave it in other people’s hands, things don’t get done the way you want them. Anyway, I’m not in a rush, I have a little flatlet here with everything I need, so I don’t need to move in straight away. I have time to finish it exactly the way I want.” A multi-level lagoon winds its way around the garden, emptying into different bodies of water. The main swimming pool is situated at the top, letting its water cascade through the rocks onto the different levels. The effect is that of a waterfall. It is almost utopian – I get the feeling this was the idea. The beguiling garden is built around the lagoon adding to the intrigue. Various plants and trees hide different areas of the garden so that when you walk around the path, you keep finding distinct spaces.

As with every sweet thing, there’s always a less sweet side. This garden requires an enormous amount of maintenance. Besides watering the plants, cleaning the pool, feeding the animals, cleaning the glass and making sure the water feature is kept in good condition, there are the things that weren’t accounted for. The swans keep eating the nice green lawn, the emus keep defecating on the patio and some of the more exotic plants can be quite temperamental. High sheets of glass in a semi-circular structure allow the enormous mosaic-tiled indoor pool to overlook the garden. Complete with a smashing spa, impressive bar and soon-to-be home cinema, this area is the ultimate living room. The glass inspires a flood of sunlight illuminating the blue mosaic, white couches and crystal clear water. Fluffy dark rugs and pristine white couches create luxurious repose, making the space an unusual mix of intimidating cosiness. The substantial bar takes up one corner of the room and from the three showers and ample lounging space, it’s evident that this area was really built to accommodate guests. I could see how bathing by the spa or lying out by the swimming pool could be a social activity. I can visualise this lifestyle people networking, being part of a crowd. Many might think that a home like this is unreachable, beyond possibility. In the vast majority of cases this is true but maybe if homeowners can’t have flamingos and emus in their back garden lagoon, they can capture miniature versions of these features. The point wouldn’t be to necessarily imitate this spot, but more to capture its essence, to be inspired. HW 026

don’t think I’ve ever driven up to this house and found the drive empty. There are always at least five cars crammed into the space in front of the gate. This Madliena home-of-many-visitors lends itself to company. The garden is split into sections and the different areas are suited to various versions of relaxation - whether chatting and sipping tea on the lawn, swimming in the pool, or sprawling on a couch in the conservatory...

This house definitely lends itself to visitors. People just seem to feel comfortable coming over all the time, laughs Joanna.

I’m not so certain - I think she has created this comfort, making every area as charismatic and comfortable as possible. I’ve never seen anything like it - this is the styling queen. Joanna can make something from nothing – the power line wheels that were once used to conduct electricity are now used as tables. Vibrant cushions are made from genuine sari material, tiles that were found in one place are juxtaposed against tiles found elsewhere, canopies are made from different materials, candles are absolutely everywhere, lanterns are abundant (found either in Bali or Sliema). Colourful glasses and crockery from completely different sets all come together and somehow...simply...match. It’s not just the space itself that’s stunning; it’s all the little details that bring it together. Arrange it they did. Walls were knocked down and rooms were opened up, the courtyard was closed in and the back yard was completely transformed. This magic garden all started from one small patch of land and field. The wall dividing the two was knocked down, opening the space up. “I have worked so hard on this garden. I planted every single seed, every tree. I used to check on them every day and wonder to myself if I would ever see them fully grown.” The outdoor kitchen was built later, to accommodate all the guests and to make catering easier in summer. “I used to see the concept of an outdoor kitchen in all the French magazines. I got my inspiration from that. In fact, I get a lot of ideas from magazines. Well, that and travelling around. I’m always on the internet looking at places for rent because I love to see new ideas and what people are doing with their outdoor spaces.” As everything was done in something of a jiffy, the pool was built quite quickly. “Sometimes it’s a nightmare because all the leaves from the surrounding trees end up in the pool. Somehow, I don’t mind it though. I actually enjoy cleaning the pool!” Joanna and the family find peace in their outdoor area, living outside in the summer and in the conservatory during the winter months.

I just couldn’t imagine myself anywhere else. Every morning I have my cup of tea and go around all the plants, checking on what’s happening. I feel so safe here. I know all the sounds of the house and what’s around me... even the sound of the neighbour’s cat scaling the wall late at night. HW 035

Few things get us truly excited these days. Call it a bit of enthusiasm, a stirring of the blood cells, or maybe even enough energy to raise an eyebrow, but darlings, excitement it ain’t. All we wanted was somewhere to live.

A

ll we wanted was somewhere to live. Our criteria was simple – a house with a garden. Preferably, a garden with a house. Within a couple of weeks we cottoned on to estate agents’ descriptions where ‘cosy’ means ‘not enough space to swing the thought of the cat having kittens’, where ‘rustic’ covers more stone than you’ll find in a quarry (including in the bathroom, bedroom and kitchen), where a 100 foot garden is actually 4x4 metres, underground, and with 6 neighbours overlooking it. After two months, the fatigue set in. The agents' calls brought a disgruntled resignation to ‘go view’; a head-hung-low approach to another Saturday spent traipsing Malta’s villages. And then, eureka, the moment when we walked into a local bar, were pointed to a house with no ‘for sale’ sign outside, finding its owner a couple of doors away, and being completely wowed over from the second the door opened, to the moment we realised that yes, those were real plums, lemons, grapes. Yum. That is, um, we’ll think about it. And think we did. For one hour. Within two, we had Adrian Mamo on site. And so it came to be that we bought our garden with a few rooms attached, the rooms being an unidentifiable quantity of bizarrely placed walls, where the yard had become a bathroom, and the kitchen was a pokey enclosure behind the tree. As the cliché goes, you know it’s right the second you step in. You know it’s really right when the hard slog of conversion starts and you’re still excited when the plasterer comes over. Project One:

The Water Feature. The What..err? The two words that were bound to strike fear into our hearts: water and feature in the same breath. The strange thing about planning is that you have to visualise the end rather than set off from the beginning, like catching a plane somewhere in order to walk it back.

First things first,

the garden came complete with a round pond and a Virgin Mary statue which, although kitsch enough to be cool, had eyes so googly they would frighten the most die-hard, 3-masses-a-day, believer. And the grotto was made of seashells and concrete. Peter - the almost perfect electrician and plumber - is the embodiment of every decent thing a workman should be but never is (smart, on time, precise, wears headgear that amounts to a little more than a maktur), is already advising us to keep the round pond, as it’s ‘genuine’, ‘good quality’ and ‘bloody expensive to buy’. So in comes the lovely Melina, the garden designer from Calamatta, with her gorgeous red hair and calm smile. What is it about these people connected with plants that make them so chilled-out? Whatever, Melina is on to my endless magazine clippings of the ‘feel’ we want for the garden (um...Dreamy? Cool? Morocco/Thai-ish?) in a jiffy. Some of them are totally bizarre, like the leaf-shaped plate I found in June’s Vogue, which I thought would make a good pond base. She doesn’t balk or express disdain at anything. I like her already.

Once she visits with Herman and they both explain how, in order to put in a pool, we have to eradicate half the space for the flowers, the idea of me in a bikini on a deck while TW brings me cocktails at 12pm quickly flies out the window. That’s one less problem for all the team, and a smaller headache for us and the lovely Pat at the Bank who had to handle our mad begging for more loans. Melina finds Ayman, an architect who will actually draw the idea for the water feature to blend in with her sketches for the whole garden. We may have got most of our ideas out of this country, but in it, we learn to be decisive, because designers are driven nuttier by those who can’t decide what they really want. So the round pond stays, the water can’t make too much noise, the garden is as relaxing as possible, and the existing trees are enhanced. Within two weeks, Melina delivers the sketches, and Ayman shows us how to make water spout. Now we’re really excited. HW

This highly appreciated retreat to “sanctuaries” of health and pleasure is suitable for everybody. Those that can’t find the time to go to a spa are now letting the spa come to them.

The driving force behind the intervention of this spa was the concept of creating a sensory sanctuary of health and well-being. I needed to create an interaction between the inside and the outdoor terrace so it was necessary to remove the internal dividing walls. A new raised floor had to be built onto a steel structure to avoid excessive weight on the existing stone slabs below, which roof over a traditional double-height mill room. Different heights were created to build up a platform for a sunken Jacuzzi, which steps down onto an external decked terrace or onto an internal open shower. The external raised flooring is made up of several layers; the main steel beams supported over the existing main up-stand beam spanning across the room below, with smaller steel joists spanning laterally onto the beams, spaced at lesser distance to support timber joists. In turn, these support the teak decking panels.

The open shower is a minimalist platform of exposed refined concrete, with a shower of water that falls from a recessed showerhead, draining gently onto a shallow pool, tiled in glass mosaic, which also covers the back wall of the shower. The result is a glimmering texture that contrasts and compliments the warmth of the timber and the rawness of the concrete.

The main space of the home spa is floored with pebbles set in clear resin (tile format), which were also laid vertically in the entrance passageway to create a tunnel effect that initialises one’s experience, these are complimented by a backlit translucent stretched ceiling to further emphasize the volume as well as breaking the passage visually. Due to the condensation a spa incurs, linear A/C grills were placed in the soffit along the large apertures, and the furniture is made of Iroko. The design of the space, technical considerations, execution of the works, consulting to achieve proper techniques and the choice of materials led to the transformation of this space into an intimate sensory pleasure haven ideal for relaxation and meditation - a place to benefit fully from the potential of water and the modern facilities of a spa, all from the luxury of the owner’s home. A

quiet revolution is happening in interior design. Water features traditionally reserved for gardens and solariums are moving indoors. As the world becomes more technological and people increasingly retreat from their interaction with the outdoors, more homes and businesses are seeking to bring natural elements inside. Flowing water in water features is becoming prevalent. The latest trend in design, wall fountains, can completely transform a house or public space. These water features can alter a room with the soothing sounds of gently falling water. The dazzling visual of water provides instant relief from the white noise of modern existence. Water can slow down or activate energy in a room. The sound and sight of water in your immediate environment can significantly improve your state of mind and general well-being. Indoor water features can increase the humidity levels which in turn decreases dust, pollutants and static electricity. The idea of walking off a busy street in St. Julian's in a hot climate country like Malta is what inspired Pippa Toledo to incorporate water into her design plans for the reception area of the Hotel Juliani. The aim was to have 'the outdoor feel inside' – a waterfall gave the space, the simplicity and the relaxation people look for in their busy everyday lives. “The sound of water from an indoor waterfall can truly enrich your senses and leave you feeling relaxed,” Pippa says. “The inspiration is not really from Feng Shui but, a lot of my ideas do come from Eastern philosophy where personal well-being has much to do with the effects of the environment. Hotel Juliani doesn’t have any internal windows, so the natural soothing sounds of the waterfall harmonise the space.” Pippa uses water in her designs, but it always depends on the atmosphere requested by the client. “Many people actually don’t like the sound of running water.” This particular waterfall was not easy to install as Pippa wanted the water to flow in a specific way and so, “It entailed precision and a lot of detail.” Pippa recommends water for domestic interiors – “Given the chance I would use water wherever I could.” HW

M

uch has been said about a garden being an outside room. In Malta this is even more so because we can enjoy our gardens at night for the best part of the year. It is for this reason that every effort has to be made in order to light up our gardens efficiently, effectively and safely. Currently, the great majority of our gardens are lit in one of two ways; either by flood lighting which can often be offensive and invasive, (the best example of light pollution) or with festoon coloured light which, though less offensive, make a garden look like an ice-cream kiosk somewhere in a seaside resort. Professional garden lighting is a much more subtle exercise which brings our trees form, our plants sculpture and gives a dramatic dimension to our landscape. Achieving this result is

not always easy unless pre-planning is done at the design stage, thus ensuring that safe lighting services can be found within easy reach and can be flexible enough to allow for change as the plants mature. One of the most basic requirements in any lighting scheme is that the light source should not be visible, thus cutting out glare and light pollution. It is also true that the lower the lights are placed, the more flattering to objects and plants they are. Lighting every tree and object we have in the garden should be avoided. The result could be a chaos of shadows and confused light. Illuminate your specimen plants, especially those such as agaves and palms, that have architectural foliage. Your other plants will enjoy the spill over light that is more than enough to achieve the right balance. 069

Lighting decorative waterfalls, ponds and pools can be very effective if carried out properly. Water brings gardens to life and therefore needs to be illuminated at night. It is important that the water is kept crystal clear and that light sources cannot be seen since water can act as an enlarging lens.

Outdoor Lighting (OLS) Catalogue.

Fully-shielded path lights produce the best visibility by eliminating glare that could create difficulty in recognizing obstacles or steps. Partiallyshielded path lights create a pleasant effect when placed with taller shrubs. The surrounding shrubbery filters light on the pathway, reducing glare while also lighting the adjacent shrubs.

SILHOUETTE

Trees and shrubs with interesting branch structures are dramatic when silhouetted against a wall or building faรงade. This combination of landscape and faรงade lighting provides additional security near the building. Be sure fixture spacing is close enough to yield good light uniformity on the wall.

MOONLIGHTING

The effect of moonlight filtering through trees is another pleasing and functional outdoor lighting technique. Both up- and down-lighting are used to create this effect. With fixtures properly placed in trees, both the trees and ground are beautifully illuminated. Ground lighting provides security, and is accented by shadows from leaves and branches.

UP-LIGHTING FOR DIRECTIONAL VIEWING

When the lighted object can be viewed from one direction only, above-grade accent lights are the logical choice. To prevent direct glare, fixtures should be aimed away from observers. Place the accent lights behind shrubbery to keep a natural-looking landscape.

In all the schemes mentioned above dimmers can be incorporated if changes in mood need to be introduced. Some love to use colour filters, but on a home scale these tend to vulgarise the lighting scheme. Varying effects should be achieved with the use of different types of bulbs, of varying intensity and the use of modern LED lighting technology. The latter eliminates the need for light bulbs but uses Light Emitting Diodes sealed in a metal casing, which is fully waterproofed. Chuchi Lobster Ingredients: 1 piece Fresh uncooked lobster (between 400g – 500g) 50g Red curry paste 20g Vegetable oil 20g Garlic & coriander root minced 40g Sugar 45g Fish sauce 50g Dried shrimp powder 300g Coconut milk 2g Kaffir lime leaf 2g Thai sweet basil leaves Method: Place the lobster on its stomach on a cutting board. Starting from the head to tail expose the flesh with a shrimp knife by cutting the top of the shell in a rectangular form about 15cm long and 2.5cm wide. Set aside. Grill the lobster on an open charcoal fire for about 10 minutes. Arrange the lobster in a serving dish. Heat the oil in a wok. Add the minced garlic and coriander root, red curry paste and stir-fry for about 1 minute. Add coconut milk, fish sauce, sugar and dried shrimp powder. Put the Thai sweet basil leaves on top of the lobster and sauce to garnish.

Method: Heat the oil in a wok until very hot. Add the Lamb chop and put in red curry paste, red onion and minced garlic. Stir-fry for about 3 minutes until cooked. Add the stock and fish sauce, light Soya sauce, oyster sauce, and sugar. Stir-fry for about 2 minutes. Transfer to a serving dish. Garnish with fresh basil leaves.

Rung Nok Ingredients: To thicken 4g Tapioca flavour 10ml Water Potato Basket 80g Potatoes sliced, matchstick 1g Tapioca flour Filling 5g Vegetable oil 80g Small cubes of boiled chicken breast 20g Chicken stock

Seasonings 6g Soya sauce 6g Oyster sauce 6g Magi sauce Vegetables 10g Baby corn 10g Green peas 5g Carrots cut in small cubes 5g Water chestnuts cut in small cubes 2g Red capsicum cut in small cubes 2g Green capsicum cut in small cubes 45g Quail eggs boiled and deep-fried

Method: Make the potato baskets by mixing 1g of tapioca flour with the sliced potatoes. Take a slice of 14cm diameter. Line the potatoes evenly. Get the sieve and press another sieve of the same size on it. Immerse the two sieves together in hot oil and deep fry for 5 minutes. When golden brown remove from the oil carefully, detach the potato basket from the sieve and set aside to drain on absorbent paper. Dissolve the tapioca flour in 10ml water. Heat the oil in a wok, add the chicken and prawns, and stir-fry. Add chicken stock and the seasonings. Mix well, add the vegetables and let it come to a boil. Add the quail eggs and tapioca dissolved in water. Mix and remove. Fill the basket with the stir-fried mixture.
