Welcome to
HOMEWORKS 20 edition. th
It seems extrodinary to me that in Gozo, for its miniscule dimensions, everything seems to exist on a large scale: its history, its people, its food and of course, its architecture. The island’s history is so exciting – it has been inhabited since the 5th millennium BC, as witnessed by the megalithic structures at Ggantija and they figure that the first Neolithic settlers probably crossed over from Sicily. Gozo has witnessed so many changes, almost completely separate to Malta. I even found out (to be contested by some) that while the French occupied Malta in 1798, Gozo was part of Sicily for two years! It’s this past that has made Gozo what it is today – an island so close to Malta, yet entirely different in its people, architecture and way of life. This issue, we hope to illustrate this by featuring a variety of Gozitan based features. People from all over the world seem to be investing in a slice of peace - English gent Colin Best created a space to completely accommodate his relaxed and entertaining-for-friends based lifestyle (page 18). Canadian/British Janet and Terry Criswell converted an old school into a spacious home with a glorious garden that not only serves as a tranquil space, but also bears fruits and vegetables (page 30). Young and beautiful Lisa Grech describes Gozo as “a short journey away and yet a world apart” from Malta. Her summer home in Gharb is an interesting mix of Thai-chic and Gozo-rustic (page 40). Lace expert Nicholas de Piro gives us a short rundown on the history of Gozo lace and its place in the home, making it very clear that Gozo lace is Maltese lace! (page 48) The extraordinarily talented Gozitan photographer Daniel Cilia contributes a photographic essay on Gozo, which speaks for itself (page 52). Celebrated Painter Pawl Carbanaro invites us to his art studio based above his flat in Zebbug, Gozo to answer our questions about art in the home. Gozitan Landscape Designer Joseph Bonello takes us to a lovely and practical Gozo garden he just designed. Joseph highlights the pitfalls of having a garden in Gozo and shows us the solutions (page 80). This issue holds a very exciting cuisine section with Joe Vella’s barbecue recipes and Joe Xuereb’s wine cocktails. Gozo has so much to offer in such a small space – it’s impossible to capture the essence of the island in one issue. Hopefully this edition of HOMEWORKS will make you feel the urge to pop over to Gozo or even better like you’ve just been.

OUR READERS WRITE ON ISSUE 19 EVERY ISSUE WE INVITE OUR READERS TO SEND US THEIR COMMENTS AND OPINIONS ON WHAT THEY LIKE OR WOULD LIKE TO SEE IN HOMEWORKS... “I believe that new apartment owners do not find enough information on condominiums as well as Owner Associations. Most new apartments are close together with shared communal spaces that make lifestyle and noise differences inevitable.
HOMEWINNERS 19TH EDITION…
Congratulations to Judie Haysworth – our nineteenth HOMEWORKS reader suggestion winner. Judie has won the Football Fever Hamper from Living Interiors Judie Haysworth wrote: I have to congratulate the whole team behind this excellent magazine, which has become part of my international magazine collection. I would like to see more about architecture in the magazine. We are currently doing up a house and are having a very hard time in the architectural area.
This is why I would like to suggest that HOMEWORKS creates awareness of the problems owners should expect from living in a community, to put new owners aware of their responsibility for the behaviour of their household, including their visitors and to comply with the conditions of their tenancy or lease, prohibiting nuisance and anti-social behaviour.” Sandra Borg
We can’t seem to find someone who we really gel with. I know that architects aren’t allowed to advertise, so is it possible to do a feature on recommendable architects in Malta?
“Thank you for all the work you clearly put into HOMEWORKS. Now that we are mid-summer, I have to start thinking about solutions to protect my roof from the rain in the coming winter months. Which are the most cost effective, which last longest and which can be done easily by ourselves, without having to get people in to do the jobs?” Durstan Hamilton

"IT’S A HOUSE OF
PERFECT IMPERFECTIONS..."
C
olin greets me dressed in crisp white linen from head to toe and proves to be the perfect English gent – hospitable and accommodating, even at this early hour. We walk through the gate at the back of the property and the contrast to the understated entry is truly impressive. Everything unfolds before me – the views are breathtaking as a massive expanse of Gozo pans out with the Citadel standing proudly in the distance through the hazy morning sunshine. The exterior of the property is constructed of tiered levels that step down to he pool, tennis court and spa area. The mature gardens that envelope you create privacy whilst also serving to break up the hard landscaping and softening architecture. The advantage of the tiered construction is that it creates hidden areas and twisting stairwells that tempt you down to explore further. Tunisian tiles flank the pool and the lower section of its surrounding decorative arches giving an
exotic yet classic Moorish feel to the pool area. Although the tiled wall fountain is Roman style, it works; the colours and textures of the materials running throughout pull the eclectic mix of styles together. In total the property itself consists of a living room, formal dining room, study, home theatre, cellar, conservatory, six bedrooms and bathrooms, plus the sauna and steam room adjacent to the pool. What’s amazing is that you have no idea that the property is this vast. The hidden layout and discreet scale lends itself to a cosy and intimate atmosphere. I don’t consider myself nosey by nature, but I find an insatiable desire to peek around the next corner or stairwell to see what else there is to discover. It’s quite easy to get lost in this house – while it has a satisfying sense of flow and balance from room to room, it’s like a warren of different levels, rooms and staircases.
Tunisian tiles flank certain areas, giving the pool area an exotic yet classically Moorish feel.

The spacious kitchen lends itself to entertainment and group cooking.
To maximise use of the dining room space, Colin commissioned the rustic dining room table to be made from reclaimed ceiling beams. There are two semi-circular sections that attach to both ends that can be added on when required and soften the hard edges. Using reclaimed wood is not only environmentally friendly but creates a rustic finish you wouldn’t be able to achieve with new wood. Original parts of the farmhouse are thought to be some 200-300 years old and have all of the advantages and disadvantages of being so, especially the metre thick walls that gently shed stone dust. While they serve their purpose in summer keeping the house cool, they previously caused the house to be freezing cold in winter. As a solution, central heating was installed in the kitchen in the form of an Aga. Run on solid fuel, it’s not only a cooker with two ovens, but also heats the water and heating radiators. Adding a real farmhouse feel with its homely appearance, it’s also a great device to come in and warm your bottom on after a chilly winter walk.
The elongated rustic dining room table was constructed from reclaimed wood beams and completes the gothic style décor. 023

First floor cloister style conservatory where Colin displays his unique collection of sculpture and objet d’art. The arches provide the perfect frame for each piece.
“The original farmhouse was converted badly,” says Colin. It took many years of planning and reconverting to hone it to (near) perfection. In Colin’s opinion it will never be perfect, but that doesn’t bother him, “It’s a house of perfect imperfections.” The home is a direct reflection of its owner’s personality and can be very revealing. Though a true bachelor at heart, Colin’s home is a far cry from the stereotypical ‘bachelor pad’. It has warmth, character and life within its rustic (albeit dustshedding) walls. What’s very apparent is that Colin loves to entertain; there are numerous places to enjoy food and friends, the most beautiful being the elongated terrace table under the shade of the carob tree.
Under the sweeping arches several seating arrangements are grouped together to create cosy nooks to sit and chat. 025

“Unfortunately I’m not a decent cook, so friends are often invited to contribute the culinary skills I lack”. Colin often invites friends over for dinner. They each bring a course to share and after dinner they often wind up watching opera in the home theatre, which features state of the art home cinema equipment. Colin enjoys his retirement and laid-back Gozitan lifestyle. First arriving here some 25 years ago he was attracted by the peace, tranquillity and relatively undeveloped countryside. However, he feels things are changing fast: “There have been many positive developments over the past 25 years but also, unfortunately, some very negative ones of which over-development is the most obvious. Like others, I believe Gozo teeters on the brink of selfdestruction if developers are allowed to destroy more of the countryside.” He feels strongly that areas of outstanding beauty and historic importance such as Ta Cenc should be protected. “If permission for development is granted

it effectively means that any area of great beauty can be developed, and a major reason to continue living in Gozo disappears.” Colin hopes Gozo continues to keep its unspoilt rural charm for decades to come. He enjoys being part of Gozitan life and wants future generations to enjoy the benefits we all take for granted today. HW 027

OLDSCHOOL BRITISH TERRY AND CANADIAN JANET HAVE CREATED A CASUAL GOZITAN FARMHOUSE FOR RELAXATION, ENTERTAINMENT AND WORK WITH A RUSTIC CHIC ATTITUDE. WORDS ELISABETH CARDONA PHOTOS PAUL MIZZI
T
erry and Janet have managed to achieve the best of both worlds by living in Canada for half the year and Gozo for the other half. Their homes are disparate; the Canadian home is contemporary with simple and clean lines while the renovated Gozo farmhouse is casually rustic.
They opted for Gozo as Terry wanted to reside in a place close to the sea with the added benefit of a good legal system in a safe environment. Although he had flown over the small island at 500’ (he was stationed in Luqa for a year with the RAF in the 50’s), he had never set foot on Gozo. When someone suggested to him at a dinner party that Gozo was an interesting place to settle, he flew down for a weekend and found the one existing estate agent. The decision to buy the Old School was instant and has never been regretted. An Italian Count who used it for his summer villa originally built the house in 1880. During the war, the Maltese government took it away from him and in 1914 turned it into the village school. It remained a school until 1964 and Terry and Janet purchased it 12 years later. As it had been sitting empty, it was merely a shell with walls and a number of small rooms, but with no water or electricity. However, it was bone dry and the structure was sound.

HOMEWORKS WE WERE PAINTING AND THEN REALISED THERE WAS WORDING UNDER THE ORIGINAL PAINT. WHEN WE WIPED IT ALL AWAY, THIS IS WHAT WE GOT: ‘FOR GOD AND COUNTRY.’ It took Terry and Janet one year to do the basic work and they moved in during the summer of 1977. It has been an ongoing project for them ever since and they go from one job to another and then start all over again; they’re currently starting to redo bathrooms and just two years ago they created a new master bedroom and bathroom. The pool only went in four years ago and they did the garden at the same time.

Terry’s stab at photography a while back.
The kitchen is the "primary hub of the house"
then leads to the kitchen, which is truly impressive with its high ceilings and rustic-chic style. As the couple loves to cook and entertain, this is the main room of the house for them. “It’s usually pretty chaotic,” Janet says. “It really is the hub of the house and where I spend the most time. Keeping in mind that it was built in the 70’s and there just wasn’t that much to buy, it’s not a very sophisticated kitchen, but it’s a great working space.” A stairwell made of polished Gozitan stone and walls lined with Terry’s artistic black and white photography leads to an outdoor area, which then leads to the upstairs office that the couple share and then on to the master bedroom. Previously, this bedroom was located on the floor below, but for space reasons, they decided to add another room onto the top floor, complete with a contemporary en suite bathroom. This is the only room that shows signs of anything contemporary with its frosted glass, chrome and extensive use of white. “You have to check this out,” Terry calls out to me. I reluctantly go to the bathroom to see what he’s up to, as I can’t see beyond the opaque glass. He lifts the toilet seat and lets go. Instead of the seat slamming, it slowly descends. “A hydraulic toilet seat,” he says to me smugly, with smiling eyes.

HOMEWORKS This is how the couple are – humorous, happy and capable. They love entertaining and seem to want to share their beautiful house as much as possible: “The house is large and spacious and lends itself to a lot of guests. We can sleep sixteen at a push and have done so many times. It’s a casual place and was designed specifically for that - we want our guests to feel comfortable putting their feet on sofas and relaxing. When we want to enjoy it just for ourselves, we downsize internally and use just a few rooms.” Apart from the glorious kitchen, probably the most alluring part of the house is the lush garden and pool that’s divided into three sections. The couple is practically self-sufficient with fruits and vegetables and there is a special alcove that overlooks the glorious view of the church which promises serenity. I ask Janet if she would change anything if she could do it all over again: “This house has been developed over many years. During that process and until fairly recently, you had to buy what you found. If you wanted new tiles, you took what was in stock as it might take six months to order anything. If we were doing it up now, it would undoubtedly have a more cohesive look. But the layout works well and we’ve never had a thought of ‘oh, if only we had done...” HW

LISA GRECH HAS BROUGHT INSPIRATION FROM THAILAND TO HER SERENELY PRETTY GOZITAN SUMMER RETREAT.
T
he people that have summer homes in Gozo all say the same thing. It’s a great escape from the hustle and bustle of Malta. Lisa Grech chose Gozo because it’s the opposite of Malta: “a short journey away and yet a world apart”. Apart from that, the restaurant guide that she publishes – The Definitive(ly) Good Guide, requires her to be aware of the restaurant scene both in Malta and Gozo. “It has retained a natural beauty that Malta has for the most part lost, and is a space where you can soak up the natural beauty and peacefulness, which Malta lacks. A weekend in Gozo does feel as though you have been away,” Lisa says. Once a traditional Gozitan farmhouse, the house is around 300 years old. It’s complete with a mill room and old food troughs as well as the birthing rooms in the living areas upstairs. In the early 1970’s, it was converted into a holiday home by a foreign couple and Lisa moved in 10 years ago, by which time the space was due another conversion, including replacing electrics, kitchen, bathrooms and various additions throughout the house. She added the pool six years later. “Thanks to my father’s watchful eye and the Gozitan builders’ hard work, it took all of six weeks to complete the pool. The design was inspired by my trips to Thailand. I wanted to create a space that would work well as an extension of the mature tropical-like garden and feel serenity. The Thai landscape lent itself well in that respect.” Lisa has retained a simple style to the house and garden and has purposefully understated the furnishings in order to retain a hideaway/getaway feel and relaxed atmosphere. She has created the perfect space for her to relax alone and with friends.

Lisa relaxes most in the garden.
THE KITCHEN IS ALSO ONE OF MY FAVOURITE AREAS, ESPECIALLY WHEN IT’S A HIVE OF ACTIVITY WHEN FRIENDS STAY
Bright and cheery kitchen in the summertime while cosy during the winter months.
Spacious living area with interesting symmetry. Looks out onto the garden.
“The house is large enough to accommodate ten people at one time, but when the house is full you never feel that it’s too crowded. It allows for individual space as well as areas for excellent parties and social gatherings. The garden in particular is a joy with its magnificent mature palm trees providing shade in the summer months.” The front door leads to the central courtyard, with exterior stairs leading to the bedrooms upstairs. Downstairs is divided into the spacious living room, the kitchen and a shower bathroom, with both the kitchen and living space leading on to the garden. The coolest room in the house during the summer months is the main bedroom, with its large white cavernous space that creates a feeling of serenity. Through patterns, textures and colour, its style is unmistakably Moroccan. The most popular room in the house and the one closest to the garden, the kitchen is a beckoning area and while bright and cheery in the summer months, it’s also cosy in the wintertime.
The spare bedroom overlooks the courtyard, adding a soft touch with the antique bed. 043

The coolest room in the house during the summer months, creating a feeling of serenity with its white cavernous space.
“The kitchen is also one of my favourite areas, especially when it’s a hive of activity when friends stay. All hands are on deck when it comes to meal times. Of course, the garden is my ultimate joy and is the perfect extension of the house. I wouldn’t have done anything differently in this space. Every year, however, I normally have a project for the house. For example, one year it was the swimming pool, another year it was the fireplace, this year it’s installing an outdoor shower outside the main bedroom and next year it may be a water feature in the garden, or perhaps a sand pit for the baby due in November... who knows?” Lisa is feels strongly about preserving her haven: “If the development is permitted in Gozo as it has been in Malta, then we are shooting ourselves in the foot and will lose a national heritage that can never be replaced. Malta has become a monstrous building site and apart from the old cities, is ugly. Surely we should learn from that mistake? This is my first place in Gozo and hopefully my last, as I love it here.” HW 045

NICHOLAS DE PIRO INDULGES US IN THE SOPHISTICATIONS OF LACE. PHOTOS MAS
H
ere you have it: kneel behind a young woman wearing lace and see if you can concentrate on the sermon without wondering what she's like. Lace is a dangerous focus – a puller – and lingerie proves this. The essence of romance is the colour of imagination enslaving two hearts on the vertiginous path to unfocused perfection. You need the lace. Lace is alluring; it can be tempting; it also preserves gentility and adds refinement to vulgarity. Lace, really stupendous lace, is so valuable that most of us cannot really afford it, especially at times when it is in fashion. It fades away with revolution and returns to celebrate civilisation.
By the 18th Century the inhabitants of Malta had increased with a stolid middle class. With a close eye on the grand style of the Order, the locals started to emulate quality and the decorum of class became important with Malta trying hard to follow the style of the courts of Europe. By this time, and some will argue, Maltese style became subtly recognisable. There was influence from Venice as can be seen in the paintings of Pietro Longhi. There were other influences from France, Spain and Germany, but perhaps especially from the Royal Bourbon court of Naples.
Lace remained in high fashion - the trimmings, the collars, the cuffs. There were items for a lady’s head – Malta produced its own famous wimple. We can see it in so many paintings. The men too wore lace: cuffs again; collars which we call ‘jabots’ Take a look at Favray’s great portraits of Grand Master Pinto at St John’s and at the Museum of Fine Arts – they even wore lace under the buckles on their shoes. There was white lace; corn coloured lace; gold coloured lace; black lace – indeed, there was metallic silver lace and real gold bobbin lace as well. Silk lace, if it was of the finest quality, became so valuable in Europe that its weight was sometimes priced as high as gold. The creation of fine quality lace in Malta in the 18th Century resulted first from the demands of fashion and secondly from the needs of the church. Malta did very well indeed: the Favray and Zahra portraits give testimony to the skills of local lacemakers. Cotton and silk were produced in Malta and Gozo as the climate was favourable. Cotton fields were everywhere, and Grand Masters encouraged the planting of Mulberry trees, as the leaves were the main source of nourishment for silk-producing worms. We can come to the interesting conclusion that the social structure of the times respected skill more

Has Malta ever produced quality lace? than it did brawn. I have been able to calculate that a lacemaker at the Palace was paid six times more than a sedan chair carrier for a day’s work. Malta’s lace tradition declined after the departure of the Knights of St John. There was a revival under the British through the good efforts of Lady Hamilton Chichester and then, after yet another decline, came the re-establishment of the tradition by Dun Guzepp Diacono through his Casa di Carità in Gozo and his Casa Pia Industriale. (This is why we often call Malta lace Gozo lace as the tradition here moves into the direction of the sister island of Malta.) Dun Guzepp’s designs survive to this day, and it was through his excellent artistic and organising talents that his production would enter and compete with demanding and sophisticated foreign markets, which were essential to the industry. I read recently that at one point some eight thousand women (and among them men too) were lace-makers. Every day, more items come to light and, perhaps, at last, they are being appreciated more and more. Some examples are occasionally shown at Casa Rocca Piccola and others will be displayed when the Government gives the final go-ahead for a National Museum of Costume. There is more in Gozo at the crafts centre. A number of authors have written about the islands’ lace, among them Pat Ernshaw, who has contributed a general history to the book ‘Costume in Malta’, to enable us to see where we fit into the international scene. Gerald de Trafford has written about his mother Cecilia’s work and her contribution to the revival of fine bobbin lace, especially in Gozo. Consiglia Azzopardi of Gozo, grande dame of the local lace scene has also done much for the revival of lace-making: she has raised lace studies to a university subject, and has written in depth on its history and techniques. HOMEWORKS WHY DO YOU LIKE GOZO SO MUCH? I’ve always liked Gozo. It’s more of an island than Malta is and far less spoiled and chaotic. To this day, I still enjoy visiting other small islands. It must be the feeling of being cut off from the rest of the planet!
DOES YOUR ART REFLECT GOZO? Probably in the subconscious it does. I am occasionally inspired by the light, the earth and land colours of Gozo.
HOW DO YOU FEEL ABOUT PEOPLE HAVING YOUR ART IN THEIR HOMES? I’ve never really thought about it all that much. They make more sense when they're displayed together under my roof.
HOW OFTEN DO YOU PAINT? Practically every day.
WHEN DID YOU FIRST REALISE THAT YOU WERE AN ARTIST? Probably when I became aware that other people look at things through another lens.
WHAT ARTISTS HAVE INFLUENCED YOU? Who were the artists who have influenced you? Various movements have probably influenced me. As a kid, I enjoyed the French Impressionists, and later the Expressionists, especially the “Fauves”. Action painting, where incidence has its share, has made its mark upon me as well.
I'M A PAINTER AND I'LL STAY THAT WAY!
WHAT OTHER INTERESTS DO YOU HAVE (BESIDES PAINTING)? (Sighs as he thinks about it for a while.) Literature and travel. Gastronomy and sport. I also like to ski a lot in the winter.
WHAT DO YOU HOPE PEOPLE WILL SEE IN YOUR PAINTINGS? My paintings today get more minimalist, very sketchy and fast; brushstrokes are economical so I expect my viewers to kind of fill in the blanks through their own perspective. HW

THERE’S NOTHING BETTER THAN A GOOD BARBECUE AT THE END OF A LONG HOT SUMMER DAY. HILTON EXECUTIVE CHEF JOE VELLA SHOWS US FOUR DISHES THAT PROVE BARBECUING CAN BE DONE IN STYLE.
PHOTOS MAS
GRILL HAPPY CHARGRILLED FRENCHED LAMB SCENTED WITH GARLIC AND ROSEMARY INGREDIENTS: 2x8 8 large 2 90ml/6 tbsp 30ml/2 tbsp
Chop racks of lamb French trimmed Fresh rosemary sprigs Garlic cloves, thinly sliced Extra virgin olive oil Red wine
METHOD:
Cut the racks into eight pieces. Lay them in a single layer in a bowl. Mix the garlic, oil, cumin powder and wine, pour over the lamb, then cover and chill overnight, turning them as often as possible. Bring the lamb to room temperature 1 hour before cooking. Prepare the barbecue. Remove the lamb from the marinade, and discard the marinade. Season the meat 15 minutes before cooking. Once the flames have died down, position a lightly oiled grill rack over the coals to heat. When the coals are medium-hot, or with moderate coating of ash, stand the lamb chops upright on the rack, propping them against each other. Cover with a lid or tented heavy-duty foil and grill for 2 minutes. Carefully turn on to one side, and grill for a further 4 minutes each side for rare meat or 5 minutes if you prefer lamb medium cooked. Remove chops from the grill, cover and rest for 5-10 minutes before serving. Serve with some grilled vegetables.
AUBERGINE AND PUMPKIN SALAD WITH CRUMBLED FETA INGREDIENTS: 2 Aubergines 1 Pumpkin (about 1kg), peeled 120ml Extra virgin olive oil 5ml Paprika 150g Feta cheese 50g Pistachio nuts, roughly chopped Salt & ground black pepper METHOD:
Slice the aubergine widthways into 5mm / ¼in rounds. Spread them out on a tray and sprinkle with a little salt. Leave for 30 minutes. Slice the pumpkin in the same way, scooping out any seeds with a spoon. Place the pumpkin slices in a bowl, season lightly and toss with 30ml/ 2tbsp of the oil. Heat the griddle. Lower the heat a little and grill the pumpkin slices in batches. Sear for about 1½ minutes on each side, then put them on a tray. Continue until all slices have been cooked, then dust with a little paprika. Pat the aubergine slices dry. Toss with the remaining oil and season lightly. Cook in the same way as the pumpkin. When all the slices are cooked, mix the aubergine and pumpkin together in a bowl. Crumble the feta over the warm salad; scatter the chopped pistachio nuts over the top and dust with the remaining paprika. (Serves 4) 068

HOMEWORKS CRUSTED MONKFISH WITH CHORIZO AND PEPPERS INGREDIENTS: 1 Monkfish tail (about 1kg), trimmed and filleted 10ml Smoked red paprika 2 red (bell) Peppers, halved and seeded 15ml / 1tbsp Extra virgin olive oil 16 Thin slices of chorizo Salt & ground black pepper 4 long skewers
FOR THE CUCUMBER AND MINT SAUCES: 150ml / ¼ pint Greek yoghurt ½ Cucumber, halved lengthways and seeded 30ml / 2tbsp Chopped fresh mint leaves
METHOD:
Place both monkfish fillets in a flat dish. Rub them all over with 5ml / 1 tbsp salt, then cover and leave in a cool place for 20 minutes. For the sauce, pour the yoghurt into a food processor. Cut the cucumber into it, season with a little salt and pulse to a pale green puree. Transfer into a serving bowl. Prepare the barbecue. Rinse the salt off the pieces of monkfish and lightly pat them dry with kitchen paper. Mix the smoked red paprika with a pinch of salt and gently rub the mixture evenly over the fish. Slice each pepper into twelve long strips and cut each monkfish fillet into ten equal pieces. Thread three pieces of fish on to each skewer and brush one side with a little extra virgin olive oil. Once the flames have died down, position a lightly oiled grill rack over the coals to heat. When the coals are medium hot, or with moderate coating of ash, grill the skewered food, oiled-side down, for about 3½ minutes. Lightly brush the topside with oil, turn over and cook for 3 minutes more. Remove the skewers from the heat and keep warm. Grill the chorizo slices for a second or two until just warm. Thread two pieces on to the end of each skewer and serve the rest alongside on individual plates. Serve with the prepared cucumber and mint sauce. (Serves 4)

METHOD FOR PORK:
Cut the pork into 4 cm cubes. In a shallow glass dish, stir together the wine, orange zest, juice, tarragon, mustard and garlic. Turn the pork into the marinade and let stand in the fridge for 1 hour. Alternately, thread the pork cubes, orange wedges and onion wedges onto soaked wooden skewers. On a greased grill over medium high heat, cover and cook the skewers, turning occasionally and basting them with the remaining marinade for 20 minutes or until pork is no longer pink inside. Sprinkle with salt & pepper and serve over couscous. METHOD FOR COUSCOUS:
In a medium size bowl, mix the couscous with the oil, cumin and salt, pour the vegetable stock over the couscous and set aside until all the stock has been absorbed (15 minutes). 069

JUST EIGHT MONTHS INTO MATURATION, THIS GOZO GARDEN HAS DEVELOPED EASILY. LANDSCAPE GARDENER JOSEPH BONELLO TAKES US THROUGH THE FIVE THINGS TO TAKE INTO CONSIDERATION WHEN STARTING A GARDEN, AS WELL AS THE ASPECTS THAT APPLY SPECIFICALLY TO GOZO GARDENS.
T
he basis to this garden is that we had to keep certain characteristics of the garden while adding the new, and still make it work. The client’s brief was that she wanted a pool, a deck area, a BBQ area and fruit trees. Inflexible were the two palm trees (a Phoenix Canariensis and Washingtoni Robusta), a 200 yearold olive tree and an artisan well. I had to keep these features, make a water reservoir and all this had to be within MEPA’s instructed perimeters. We had a lot of limitations and then we had the typical Gozo wind problem. I also wanted to have all the materials for the hard surfaces in the garden from Gozo. We achieved this - even the stones around the pool and hard stone paving were found in Gozo. I intergrated the olive tree as a feature instead of trying to ignore it, so I planted two vines on either side and created a rustic wooden trellis. I added a small herb garden on to the other side of the flowerbed. In order to create balance, I felt it necessary to actually plant another palm next to the existing two.
I divided the garden into two levels. The dining area, which is close to the house, has chairs and tables made from old and neglected wooden beams. We used the same type of wood for a small rustic-style gazebo, which I then surrounded in Bougainvillea and made as the centre of the garden. I allocated the lower area for the kitchen – rocket, tomatoes, mint, basil, dahlia and asparagus, plus the fruit trees – lemon, mandarin, orange, black mulberry and plum. There is a beautiful pathway from the main area to the gazebo and we used local stone planted with euonimus. This is very inexpensive to do and the effect is unique because the design was created from long and short stones with plants alongside and in between them. The pool sits in between the old olive tree and the lower area. The client gave me very clear instructions for the design of the pool and wanted it overflowing, lagoon style. It wasn’t easy bringing in the massive lower coralline limestone boulders 081

HOMEWORKS and positioning them exactly as we wanted them. The result was a natural waterfall that gives the garden a softer, more natural look. We planted around it and also incorporated the vegetation within the stones. This garden needs pretty low maintenance as it’s full of perennials which only need one pruning per year. The irrigation is semi-automatic, programmed with a timer. All the client has to do is mix fertiliser with water through the diluting system. The upper garden needs deadheading, which a lot of people don’t do. However, this is what keeps a garden looking nice all the time. To be entirely maintenance free, you have to forget real plants and plant plastic ones instead! Everything that grows needs some care. The more care you give it, the better it will look. The one aspect I had to worry about was the Gozitan wind that has sea spray - the wind from the northwest. 20% of Gozo’s winds are from this direction and the garden happened to be facing this way. As a solution, I planted 20-year-old olive trees to protect the garden. I chose olive trees as they blend with the Mediterranean environment, are productive and they also resist the wind quite easily. The area where we planted the olive trees was lower so that they would serve this purpose without obstructing the view.
EVERYTHING THAT GROWS NEEDS SOME CARE. THE MORE CARE YOU GIVE IT, THE BETTER IT WILL LOOK When starting off a garden, the five main things that you have to take into consideration are availability, location, space, personal lifestyle and budget. If you don’t have an unlimited water supply, you need to use plants that have a low water demand. You have to see which direction the garden faces – if it’s north facing, you’ll need to use plants that love shade and are wind resistant, otherwise you’ll need to create a barrier to protect them from the wind. In Gozo, there is no real place that is protected from the wind, so this is a solution that is used a lot. You need to evaluate what you have either as a positive feature or as something that should be covered or blended in with the surroundings. Everyone has particular requests and these should be taken into consideration before beginning the garden. What works for some is not appreciated by others. You can work around budget as this depends on the materials you use. Nowadays, there are a lot of inexpensive materials that are still good quality. The same goes for the actual planting. You can go for mature trees (if you have a large budget) or plants that will grow bigger with patience and time. However, this means more work for your gardeners, as in this case, they’ll have to foresee how the garden will mature! HW 083
